The Kanabec County Ministerial Association administers the Good Samaritan Fund to help local folks in emergency situations such as gas vouchers, a hot meal, one night’s lodging as well as emergency propane and electricity needs.

Wash grapes and take out stems. Put in a plastic bag. Add a pkg. of dry Jell-O (red). Shake well and put on a tray and refrigerate.

1 C. brown sugar 1/2 C. butter 1/4 C. corn syrup 1/4 tsp. baking soda 1/8 C. amaretto liqueur 1 bag puff corn

Cheeseburger Cups 1 lb. ground beef 1/2 C. ketchup 2 T. brown sugar 1 T. dry mustard 1 1/2 tsp. Worcestershire sauce 1 tube refridgerated buttermilk biscuits 1/2 C. cubed Velveeta cheese

Combine brown sugar, butter and corn syrup in saucepan. Boil for two minutes. Stir constantly. Remove from heat. Stir in baking soda and amaretto. Stir. Pour over popcorn. Bake on large pan at 250 degrees for 30 to 45 minutes. Cool and break into pieces and store in plastic bags. Submitted by Lois Kramer, Inver Grove Heights

Brown beef and drain. Stir in all other ingredients but cheese. Remove from heat. Press biscuits into bottom and up sides of greased muffin cups. Spoon beef mixture and top with cheese cube.

DESSERTS Marbled Orange Fudge 1 1/2 tsp. butter Butter a 9 X 13” pan 3/4 C. butter 3 C. sugar 3/4 C. whipping cream 1 10-12 oz. Whip Chips or vanilla 1 7 oz. marshmallow creme 3 tsp. orange extract 12 drops yellow food coloring 5 drops red food coloring In a heavy saucepan combine sugar, cream and 3/4 C. butter. Cook and stir over low heat until sugar dissolves. Bring to a boil - cook and stir 4 minutes. Remove from heat - stir in chips and marshmallow creme until smooth. Remove 1 C. - set aside. Add orange extract and food coloring to remaining mixture. Stir until blended. Pour in buttered pan. Drop reserved mixture by tablespoons on top - cut with knife to make swirl. Cover and refrigerate until set. Cut in squares. Yields 3 1/2 lbs. Submitted by Marie Noxen, Rush City

Bread Pudding Cups with Bourbon Sauce

1 pkg. yellow cake mix (without pudding) 1/2 C. sugar 1 (6 oz.) pkg. instant chocolate pudding 1 C. vegetable oil 4 eggs 1/4 C. vodka 1/4 C. Kahlua 3/4 C. water Glaze (below) Powdered sugar

Bread pudding cups:

Grease and flour a 12-cup bundt pan. Preheat oven to 350 degrees. Combine cake mix, sugar, pudding mix, oil, eggs, vodka, Kahlua and water. Mix at low speed about 1 minute. Beat at medium 4 minutes. Pour into prepared pan. Bake 60 to 70 minutes. Prepare glaze. Let cake cool in pan 10 minutes; invert onto plate. Poke holes in cake with fork. Slowly pour glaze over cake. Cool completely. Sprinkle with powdered sugar. Yield: 16 to 24 servings. Glaze: Combine 1/2 C. powdered sugar and 1/4 C. Kahlua; blend until smooth. Submitted by Lois Kramer, Inver Grove Heights

Nonstick cooking spray for spraying liners 4 C. half and half 2 C. packed dark brown sugar 1 T. ground cinammon 1 tsp. vanilla extract Pinch of salt 6 large eggs, lightly beaten 2 C. chopped pecans 2 sticks unsalted butter, melted 12 slices stale cinnamon-raisin bread, torn into 1-inch pieces Bourbon sauce: 1 C. apple cider 1 C. bourbon 1/2 C. packed light brown sugar 4 T. unsalted butter 1 T. fresh lemon juice Pinch of salt For the bread pudding cups: Preheat the oven to 350 degrees. Prepare a muffin tin with paper liners and spray the liners with nonstick cooking spray. (Alternatively, spray the insides of twelve 2-oz. ramekins with nonstick spray). In a large bowl whisk together the half and half, brown sugar, cinnamon, vanilla, salt and eggs. Add in the pecans, butter and bread and stir to coat. Let the mixture sit for 10 minutes. Carefully fill the muffin tins about

2/3 of the way up with bread pudding mixture. Cook until the puddings set, about 25 minutes. For the bourbon sauce: In the meantime, add the cider, bourbon, brown sugar, butter, lemon juice and salt to a saucepan over medium heat and bring to a simmer. Simmer until the sauce reduces by 1/2, about 10 minutes. Remove the bread puddings from the oven and let cool for 10 minutes. While still warm, use a skewer to poke a few holes into each pudding and pour in a couple of tablespoons of sauce. Serve immediately.

Date Oatmeal Cookies Mix together 2 C. flour, 1/2 tsp. salt, 3 C. quick oatmeal, 1 tsp. soda, 1 1/2 C. brown sugar. Cut in 1 C. shortening with pastry blender until well blended. Stir in 1/3 C. and 2 T. milk. Chill dough. Roll out 1/8 inch thick. Cut in desired shapes. Bake at 350 degrees 8 - 10 minutes on ungreased cookie sheet. Cool. Fill with: 1 lb. dates, 1 C. sugar, 1 C. water. Boil until thick. Add 1 tsp. butter and 1 tsp. vanilla.

Melt butter in saucepan. Add graaham cracker crumbs. Mix well. Press down evenly in 9x13 cake pan. Spread on coconut. Pour on condensed milk. Bake at 350 degrees for 25 minutes until light brown. Grandma Olga’s Peanut Butter Cookies 1 1 1 1 3 3 1

Package of frozen bread dough (4 - 6 loaves) 1/2 C. butter 2 T. milk 1 C. brown sugar 1 tsp. vanilla 1 large box vanilla pudding mix 1/2 tsp. cinnamon Slice frozen dough (each loaf into about 4 - 5 rolls). Combine all ingredients and microwave until melted. Line glass pan with dough, pour caramel mixture over. Cover overnight with wax paper. Bake at 350 degrees for 20 minutes. C. sugar C. brown sugar C. butter C. peanut butter eggs, separate C. flour (scant) tsp. soda

Cream sugars, butter and peanut butter together. Add beaten egg yolks, flour and mix well.

1 (12 oz.) pkg. chocolate chips 1 (12 oz.) pkg. butterscotch chips 1 (18 oz.) jar peanut butter 1 (16 oz.) jar dry roasted peanuts 1 C. butter 1/2 C. milk 1/4 C. regular vanilla pudding mix, not instant

2 lbs. powdered sugar 1 tsp. maple flavoring

at a time. Add flavorings. Add powdered sugar.

Melt first three ingredients in a heavy pan over low heat. Spread half of mixture in buttered pan (2 1/2 C.) Refrigerate until firm (1 hr.).

Pour over crust and top with pecan pieces.

Stir peanuts into remaining chocolate, then set aside. When firm combine butter, milk and pudding mix in a large pan. Bring to a boil. Stir in sugar and maple flavoring. Spread over firm chocolate. Mini pretzels 20 Rolo candies 20 pecan halves Preheat oven to 300 degrees. Arrange pretzels in single layer on parchment lined cookie sheet. Place one Rolo candy on each pretzel. Bake 4 minutes. Raw Apple Cake or Bars Cake or bars depends on size of pan. Cream until light and fluffy: 1 C. butter 2 C. Sugar Add: 4 eggs, one at a time, beat after each Sift, add last: 3 C. flour 2 tsp. cinnamon 2 tsp. soda 1/2 tsp. baking powder 1/2 tsp. salt 1 C. coffee (I used 1 C. sour cream or buttermilk) 2 tsp. vanilla (I used more) Add dry ingredients. Add 4 C. finely chopped apples (I shredded mine). I used a greased jelly roll pan.

Bake at 350 degrees for approximately 45 minutes.

Caramel Frosting Melt: 1/2 C. butter Add: 1 C. packed brown sugar Bring to low boil for 1-2 minutes. Add: 1/4 C. milk, cream or evaporated milk Bring back to a full boil for 1 minute. Remove from heat. Cool a little. Add approx. 4 C. powdered sugar and 1 tsp. vanilla. So good, I double it!

Salted Nut Rolls 1 can Eagle brand condensed milk 1 (12 oz.) peanut butter chips 2 Tbsp. butter 1 (16 oz.) dry roaded peanuts 1 (10 1/2 oz.) miniature marshmallows Melt butter, milk and chips. Remove from heat. Stir in marshmallows (don’t want marshmallows melted). Grease 9x13 pan with butter. Put in 1/2 nuts on bottom evenly. Pour on mixture. Put on remaining nuts evenly on top. Topping: 1/4 C. butter 1 T. sugar 1/4 C. sunflower seeds, roasted 1/2 C. sliced almonds 1/4 C. pine nuts (opt.) 1 - 3 oz. pkg. dry ramen noodles, broken up Melt butter in large skillet.
