Olá! My name is Catarina and I’m from Porto, Portugal. My background is in International Relations, so being a volunteer for a NGO is a useful way of gaining experience and developing valuable skills! I left my 5 cats and dog in order to embrace this project for 11 months and now my dog does not recognize me over our skype calls but I’m sure It will be worth it. In my project I’m assisting in the day care center for the kids with autism.

What is your favourite dish? Lea Agathe

Hard to decide, but probably ‘Käsespätzle’, which is a typical Austrian dish. Still, I can always go with good pasta, a nice salad or the salty pancakes my dad always does.

Since I was a kid it has always been pasta. My dad used to call me a “pastavorous”. Alicja

My favorite dish is pumpkin soup.

It is so hard to say but right now that I am missing a lot of portuguese things, I have to say that is “Alheira com ovo estrelado”. Go check it out! Matilde I love all type of food but i prefer “Tagliatelle al ragu”, “Pasta alla carbonara” and “Tortellini in brodo”.

Catarina I have two: Seafood rice, which (fortunately) I can still eat in Greece; and my favourite portuguese dish: Francesinha!!

Patrycja I don’t have a favorite, because I really like a lot of dishes and is very difficult for me to choose. I really like intense flavors and highly spiced dishes. Roque Fresh salmon with lemon juice on top and spargos cooked with garlic as side dish. Uxía

Lea Just the imagination of eating mussels is freaking me out. Mariana I am not a big fan of anything that is animals’ bowels or some exterior parts like ears, tongues, feet, etc.

Snails and frogs legs, I don’t think I ever want to taste.

Matilde It is very hard answer to this question. I think it is the tongue of a cow. Patrycja I hate tartare and herring. I’m sure too I’ll never eat two of the traditional Polish dishes – Flaczki (tripe) and Czernina (blood soup).

Alicja I really don’t like seafood. Catarina A portuguese dish called “Cabidela rice”, made with chicken and its blood! Disgusting.

Roque Any kind of fast food from restaurants such as McDonald’s. Uxía Herring paste. I tried three times - in different periods of my life- and I promised myself it is enough.

How food became a pleasure by the art of cooking

H

ow food became a pleasure by the art of cooking, while it has for many living beings only a function of survival.

the fact that this scene is a little too gendered and probably not so representative of reality #boysdontcry #singleandnotsorry, but because in some way, it is carrying a true message. Food is comfort.

Food is life. As cars need gas or fuels, every living being needs food to survive and get all the different nutrients needed according different biology. Plant needs mainly remain in sunlight and water, heat and earth. Some animals classification are about diet: carnivorous, omnivorous, herbivorous… And, us humans, we get to this perfect opposite: Life is food. Eat to survive was the first step of a really long evolution of our food culture, which is still very different according to the part of the world, and still in process. We made food an art, a pleasure, an industry.

Nothing can save your day as the thought of the good meal you will eat once at home.

I run a little statistic study, among my 6 female flat mates, asking if they knew this cliché, if it happened to them already, and finally, if this behavior was specific to the break up situation, or could fit with any kind of upsetting context. The answers are all pretty much the same: Yes of course it happened to me. It is not about ice cream, or break up, it is about finding comfort into our favorite food. For some of us, pastry is better than alcohol, others swear to their favorite meal, or junk food. Nothing can save your day as the thought of the good meal you will eat once at home.

Pleasure & Comfort

I

t is funny to notice how food - or its image - can generate a very positive feeling in our minds. It also works on the opposite: If the food in question is the one we would never eat for anything in the world, it creates disguise. I will not talk about eating disorders, as it is a specific subject, but mostly I will try to describe common food behaviors most of us share. This is a very famous movie scene, repeated so many times in history of cinema that it has become a cliché: the post break-up/ice cream scene. Not to mention

Cooking art

T

his pleasure we feel when we enjoy our food is so big that it has become a discipline: gastronomy. Every country has their traditional dishes and influences that leads to all this richness of the culinary arts. There is the stars system of notation. There are all the restaurants with a four-meal menu, even a bunch of rules about how to behave and which fork to use for this specific fish exist. Pieces of art for plates, “the rarer it is, the better”- ingredients, competitions, and of course, TV shows that makes you hungry late at night after dinner, watching all these precious meals. What do you eat then? Junk food, any processed products as cookies, potatoes chips, chocolate bars… And they are serving quite none of the nutrients you need.

Food industry

T

he agriculture went from individual practice to industrialization, the people lost knowledge. The hunter gatherer period is very far away; we consume food that comes from another country and our local food is also exported into another country. City people are living from food that comes from all over the world and we are used to get any food we want in any season. Getting food out of a store is very abstract for many people, they are not aware of the number of transformations their food went through, and the repercussion on their health.

Food advertisements are manipulating us, and creating unnatural desires and telling lies about what’s healthy for the benefits of dairy products industry for example. We spent a lot of time and resources producing food for the animals that will next serve the industry of meat (not mentioning conditions).

Then what?

Everywhere, initiatives of city vegetable gardens appear, permaculture is gaining visibility and popularity. So many people of our generation want to go back to nature, creating their own food in a respectful and sustainable way. Consuming local products presents the zero waste advantage, it is more economic and lead towards a more sustainable way of life. This nature impulse is on my opinion the results of the end of growth at all prices. It means that people want to earn and learn back knowledge about food and learning to feel what their body’s needs.


Eating Disorders: What they are and how to recognize them

F

ood has always been - besides waterthe most important thing we need in order to survive. For all living beings, eating is therefore a natural action, but not always and for everyone it is so easy. Many people have difficulties to eat even a single piece of bread or to calibrate their hunger.

The first is characterized by the pathological rejection of food or the terror of fattening and the constant search for thinness. The main symptoms are an excessive search for weight loss through diet, fasting and constant and excessive physical activity.

The main disorders are: Anorexia, Bulimia and Obesity.

In this case it is very important to consult a hospital environment capable of treating this disease.

The term “Eating Disorders” refers to all those pathologies characterized by an alteration of eating habits and by an excessive concern for weight and body shapes. The main disorders are: Anorexia, Bulimia and Obesity.

The same applies to bulimia, which is very similar to anorexia but the symptoms are different.

If the treatment does not take place, in both cases the disease leads to death either by suicide or caused by cardiac arrest.

In this case, in fact, there is no fear of fattening and a compulsive rejection of food, but a constant use of laxatives, diuretics and self-induced vomiting. The same thing happens with obesity, even though it’s another type of disease. Cures for this type of disease seem more simple and practical: It is important to do many physical activity and follow a strict diet.

The treatment is always the same, it is important to contact a psychiatric hospital.

Interview Today we are talking to Katerina Pesonis, who is the main person responsible for the dog shelter in Messini, close to Kalamata. The shelter has over 800 dogs in it and is the largest Greek rescue relying solely on donations and the work of volunteers!

Interviewer: How and when did the entire adventure with the dog shelter start? Katerina: Well, I have always loved dogs and they have been a big part of my life. It was mainly due to my dad who loved dogs and I grew up in a home full of dogs. And the adventure itself started without asking me… I had just returned from the States to my hometown (which is Kalamata). I picked up the phone one day and asked to join the local animal welfare group as a volunteer. In the first meeting I was all ready to roll when their phone rang and it turned out a dog in the center of the town had been beaten up. He was frightened in a bad shape so everyone started thinking about what they could do about it. I simply said “Let’s go save him!” His name is Fritz and he is still with me! But after 7 years he never fully stands up as he is always afraid of being hit. Even after such a long time the fear is still imbedded deep inside the dogs. I guess many of them never heal from the internal emotional wounds. So, one leads to another, and another…

Interviewer: And what do you think is the most challenging part of the job you’re doing? Katerina: Well, challenge is an everyday issue... I think working everyday all year round is challenging. Also, I actually find working with people more challenging in all this, than working with the dogs themselves. Interviewer: So, in all this, what is the silver lining and the best part of being a dog rescuer? Katerina: The best part is in the afternoons! When all the chaos with feeding all the dogs is over and they can play together. To see them safe and playing is really rewarding. To see how grateful they are for so little – yes, it’s a good, good feeling. Also, to see young volunteers like you blossom every day despite the difficulties – it’s very good, too.

Interviewer: So, is there anything you would change in your life of a dog rescuer? Katerina: Change... for me it the best one would be finding homes for all our dogs, empty this place. A very welcomed change would be for there to be no more stray dogs on the streets of Greece…

Interviewer: That’s amazing to hear! Do you feel like you’re making a difference? Like your work is worth all this sacrifice? Katerina: I don’t know if I am making a difference, but what I know this is my passion and I am privileged to be able to follow my passion. Very few people get this chance in their lives so I find myself a lucky one. I also don’t feel I am sacrificing my life at all... I am living my life doing what I want.

Agathe: That’s a tough question because sometimes you want to ask but you don’t want to know… but... maybe… I guess I would ask really blur questions so I will get blur answers. Interviewer: And… What would be this blur question? Agathe: Will I die happy? Interviewer: What is your best achievement? Agathe: I was really proud to get my own apartment and be financial independent. I was really proud about it. Interviewer: What was the last time that you cry with a film? Agathe: “Mister Fantastic”. I don’t know if it is a really good film but its shows something new for me. Anyway, I always cry while watching movies. Oh, no, I forget! The last time I cry was with the documentary dog shelter (laughing).

Agathe: I imagine myself living in the countryside with a beautiful garden and a lot of animals, writing and listening to old music. And cooking of course!

Interviewer: What is your most precious material possession that you have? Agathe: My grandmother’s necklace, I think that is very ugly but I remember touching it being a baby when she was holding me in her arms. Interviewer: Do you wake up with one alarm or with a lot? Agathe: Ouch… Until my twenties I only need one alarm but then an ex-boyfriends made me discover this news and since then I never stop it, it will still ring. Interviewer: What is your favourite word? (In French and in English) Agathe: The French one is “poche” (it means pocket). The English one is eggplant. Interviewer: Tell me what you think about your ESC. Agathe: It is a great opportunity to discover Greece and get to know new people while being useful among a cause that I care about.

Andventure of the week

Κορώνη & Φοινικούντα “Koroni & Finikounta”

U

ndoubtedly, my adventure of the week was a trip to Koroni and Finikounta, where we went with an international team of people from a Youth Exchange. Our bus departed from Kalamata at 9:30 a.m. When we arrived to Koroni, we set off towards the castle admiring at the same time the beautiful view over the see and the streets. The castle itself was magical, especially the views of the beautiful beaches and cliffs. We spent most of our time in the castle, so we had many opportunities to get to know each other better. When we finished visiting Koroni, we took a bus to the next place - Finikounta. In this town we had time to relax, swim in the sea and sunbathe. The time passed very quickly and we had to go back to Kalamata, where we arrived in the evening after a really nice day.

Place of the week Άγιοι Απόστολοι “Square of Church of the Holy Apostles”

M

y place of the week is the square around the Church of the Holy Apostles. This place is where I spent my first night in Kalamata. It is located in the old town and there is always a lot of people. During the day it is the ideal place to take a break and have a cold coffee sitting on the church wall, but the evening is my favorite time. In fact, you can eat the best pita in Kalamata for only 2.50 euros and drink some good wine. Every Monday night there are also concerts with traditional Greek music. This is the ideal place to meet up with friends, chat and enjoy a Siga Siga evening.

On 1 November, a Halloween party was held at the Youth Centre. In addition to a lot of music and alchol, the room of fear was set up very well. The guests were many and they were all satisfied. It was a great idea!

From Berlin to Iran, the musician and singer Petra Nachtmanova looks for what connects East and West, always asking the same question: “Will you teach me a song I can take with me?” On her back, Petra carries a mysterious and mythical instrument: the sage.

TRAVELLING Excursion to Epicurius Apollo and Adritsaina

The Kalamata Guitar Festival is organized a Guitar Gala. Between the players were George Chocolis, Theodoris Panagopoulos and Antonis Koufoudakis that played works by L.Brouwer, R.Dyens, I. Albeniz, M.C.Tedesco and T.Panagopoulos. In this night, the Kalamata Guitar Festival, contributing to the emergence of new artists, hosted Panagiotis Georgis, who won the 1st Prize at the 8th Gerasimos Milliereis Guitar Competition, and will present works by J. Dowland, N.Pagannini and others.

Organizer: NARTURA Date: November 10th The Cultural Association for Art and Nature “NARTURA” organized on November 10th, 2019, a one-day excursion to the temple of Epicurius Apollo, in Vasses Figaleias and in Andritsaina. The tour guide Stavros Petropoulos guided the participants - in Greek and in English- to the Temple of Epicurius Apollo, which is one of the most important and imposing temples of antiquity, and in Andritsaina, with its unique natural beauties and attractions. Place to Travel Πολυλιμνιο καταρρακτεσ “Polylimnio waterfalls”

T

his is one of the most beautiful places in Kalamata. An unusual pearl hidden I the forest. The play of colors and light is brilliant. Walking along the waterfalls is something beautiful. The road leads through uninhabited areas so it’s difficult to find someone who could show us the route. Next to the waterfalls you have to climb the slippery rocks. But the view of the next waterfalls rewards all hardships. Initially the waterfalls are smaller but at the end there is one larger. You can swim in the water, although it is really freezing, but it seems to me that some do not have a problem with it and just jump into the water. The biggest plus of this place is the small number of tourists. It is an ideal place for people who are looking for peace and quiet The whole nature of Greece, both animals and plants, is completely different to me than the one I know that inspires me. The water itself, it’s transparent and the blue encourage swimming.

ocated in the marine of Kalamata, it’s a typical greek tavern with homemade traditional dishes. The food is very authentic and made with good quality ingredients, mostly from the garden of the owner. Besides that, there are vegetarian, vegan and gluten free options. Daily specials are also recommended by the owner, who is super friendly and energetic showing all the dishes. My personal recommendations are: Fish soup is a must! So tasty. And eggplant salad! The service was fast and the prices are also very reasonable. And last but not least, greek music playing in the background… It’s the ultimate greek experience! What else to say?

Recipes of the week Carbonnnades Flamandes “Traditional French Flemish Beef Stew’’

Medium 2 hr 5 mins 6 servings

Flemish Beef Stew is one of the traditional dish of Northern French Cuisine. Albeit it’s a national dish of Belgium but is also loved by the French. This dish is also known as Carbonnnades Flamandes (literally ‘’ Flemish Stew’’). It can be served with rice or French fries. If serving the Stew for a family supper, don’t worry about the beer in the recipe .

Ingredients:

-2 pounds beef Stew meat (cut into 2 inches cubes) -2 tablespoons flour -1/2 teaspoon salt -1/4 teaspoon ground black pepper -2 tablespoon canola oil -2 tablespoon butter -4 cups yellow onion (slices) -1 clove garlic (crushed and chop) -1 tablespoon brown sugar -2 teaspoon dried parsley -1 Bay leaf -1/4 teaspoon dried thyme -1 bottle dark beer -1/4 cup to 1 cup beef stock -1 table spoon apple cider vinegar

Preparation: -Take a roomy pan, put some oil and butter and heat them. -Then brown the beef in it on all sides in batches. Put the few quantities together because if you put all the beef at once, the temperature will be very low and the meat will boil rather than sear. Carefully watch the beef to make sure it doesn’t burn though. But give it enough time to develop a nice and rich brown color which will greatly enhance the stew’s flavor. -Put all the beef again in the pan and brown them once again. -Add the onions, garlic, brown sugar, bay leaf, and thyme and stir thoroughly. The onion will pick-up a bit the browned bits in the bottom of the pan.

-Raise the temperature under the pan -Stir in the beer -Add enough beef stock to cover the beef in the pan -Bring to Boil, then cover the pan. -Simmer for 1h 30 minutes or until the beef is tender. -Keep check and make sure that beef is simmering and not boiling dry. -The liquid in the pan also should be thickening slightly. -Remove the pan from the heat and stir in the apple cider vinegar. Add some parsley. -Served with rice/French fries / potatoes and salad on the side. Author: Chloé

French Crepes

One of the most popular French food is not as complicated to make as it may sound, for this easy recipe blender does most of the job.

Ingredients: -2 eggs -1 cup flour -3/4 cup milk -1/2 cup water -3 tablespoon melted butter -Extra melted butter for brushing the pan -Pinch of salt for savory crepes (optional) For sweet version (optional) -add 2 tablespoon of sugar -1 teaspoon of vanilla

Preparation: -Melt the butter and let it cool a little; -Add all the ingredients to the blender and blend until smooth; -Now you can put the batter in the fridge for an hour to get more bubbles (this step is optional, you can start making your crepes immediately); -Heat up a pan; -Brush it with the butter; -Using a ladle pour one ladle of batter on a pan and swirl around to cover all bottom of the pan with the crepes batter; -Cook it for about a minute; -Using spatula flip it and cook for a minute on the other side; -Remove from the pan and repeat the process until you finish your batter; -Stack the crepes onto a plate, and serve with your favorite topping
