WHEN MORE THAN $300,000 WORTH OF HAND-MADE JEWELLERY WAS STOLEN FROM THE BACK OF A CAR IN GERMANY, RESULTING IN THE SALE AND CLOSURE OF HIS BUSINESS IN EUROPE AND NOOSA, ARTIST ECKART SCHILLINGS DECIDED IT WAS TIME TO REASSESS HIS LIFE. HE HAS NOW CREATED A THRIVING JEWELLERY SCHOOL AND IS ABOUT TO EMBARK ON HIS SECOND SUNSHINE COAST JEWELLERY AND ART EXPO.
T
here is something about diamonds and gold that make me go giddy. It might be a female thing, but my voice takes on this shrill high-pitched sound and I start unconsciously slurring ‘awwws’ and ‘ohhhs’ at the sight of such glittering beauties. I can even feel my cheeks flush pink as I listen to myself shriek as Sunshine Coast jewellery designer, Eckart Schillings, shows me a few of his creations at the end of our interview. It’s embarrassing; I mean, what must he be thinking of me? Professional, I think not ... I read through my notes of my interview with Eckart, finding the place between the scribbles when I first laid eyes on his beautiful work. It was in that moment I found myself blurting out a banquet of compliments. I had written a note in bold – ‘SMILE’ – referring to the look of pure content and gratitude on the face of a man who is undoubtedly one of the most genuinely nice and absurdly modest people I have ever met. Eckart, a German-migrant-come-proud-Australian-citizen, is as passionate as they come when talking about the jewellery trade. In fact, he is so in love with his craft and the millions of ways to create beauty through jewellery, that he started the Sunshine Coast’s first Jewellery and Art Expo in October last year. A group of innovative jewellery makers, painters and photographers joined Eckart for the inaugural event at the Peregian Beach Community House, which attracted hundreds of people during the two days. The expo had been a dream of Eckart’s for many years, and now he finds himself planning a second run at it. “I had two painters, one photographer, one flower artist and four jewellery artists. People supported the idea, and we had some very positive feedback. The first one was extremely difficult to organise, and getting people to 12

commit was a big challenge. I overspent, but it was worth it,’ he says, in a thick German accent. “This year we are showcasing about 50 per cent more exhibitors, and expect about 750 visitors over the two days (22 and 23 March). People who enjoy the finer things in life, fine jewellery and art in general will be in heaven.” Jewellery has always been a passion of Eckart’s. Even from a young age growing up in Dusseldorf in Northern Germany, he admits to being drawn to fine jewellery, diamonds and gemstones. His career, however, didn’t start until an adventurous trip to South Australia, where Eckart, who at the time could not speak a word of English, landed himself a job working alongside master goldsmith, Richard Ivey. “I came to Australia for adventure. It is pretty much the furthest away from Germany you can get, the climate is different and I just wanted to do something completely new. When I arrived I immediately fell in love with the country and was so eager to start my trade here,” Eckart says enthusiastically. “At the time, I didn’t speak much English, but I was so lucky to meet Richard. He was a great teacher and taught me English at the same time. I have found the best way to learn a language is to immerse yourself in the culture, and reading newspapers also helped me a lot.” At the end of his apprenticeship, Eckart returned to his homeland to start a jewellery design and manufacturing business, Sparks Jewellers. A few years in, and he had 10 staff onboard and business was booming, but Eckart yearned to return to Australia and started making plans to run his business from Noosa, exporting jewellery to Germany. In 1994, the dream came true for Eckart. His collections were selling faster than he could manufacture them and he found himself living in “one of the most beautiful places in the world”. But then again, there are always surprises in business. You have to reinvent yourself all the time and come up with new ideas. So, I basically went back to my roots, scaled everything down and started making jewellery again, which is what I love to do.” These days, with his roots firmly planted in Coolum Beach and a jewellery school operating out of the Peregian Beach Community House, Eckart says he has never felt more at home and more content. “I actually don’t have a German citizenship anymore, it lapsed when I became an Australian citizen a few years ago and Germans don’t automatically get dual citizenship. I didn’t care though. I have been here for more than 30 years and this is my home now.” The Sunshine Coast Jewellery and Art Expo will be held at the Peregian Beach Community House on 22 and 23 March.

t’s funny how luxury takes on a whole new meaning when you have children. Gone are the days when luxury was a sleep-in on a Sunday morning, followed by a leisurely lunch, followed by an afternoon nap (in fact, was that a luxury, or was that just normal?)! As a mother of three young school-aged children, my weekends are now spent ferrying children from soccer games to ballet lessons to friend’s birthday parties and catching up on housework and five loads of washing! But the truth is, I wouldn’t have it any other way. I count myself lucky to have the luxury of having these precious children in my life, and the luxury of raising them in a beautiful part of the world surrounded by a supportive network of family and friends. Sounds like a cliché I know, but chatting with the other lovely ladies over lunch, it seems I am not alone when it comes to such thoughts on the matter.

Co-hosting our lunch was the lovely Sandra Wills owner/director of Wealthways, and joining us was photographer Tanya ChestertonSmith and Tania Turner, owner of Shine Beauty. profile: Ladies, what does luxury mean to you? sandra: I think luxury is financial independence. Getting to that stage of your life where you are going to work because you choose to, not because you have to, is a luxury. Time is also a luxury. I would love a 60-foot luxury yacht, but even if I had one, I wouldn’t have the time to sail it across the Pacific! I am lucky to have the luxury to do what I love. I think everyone should be striving for that. tanya: Family holidays are a luxury for us. My husband and I both have our own businesses, so it’s not easy to just take time off. Scheduling a week or two off work from both our businesses can be tricky. Travel is a luxury to me. I would love to be in Italy for my 40th birthday. I travelled to Italy as a back-packer many years
ago, but I would love to visit it again in style and not have to live on bread and butter! tania: I feel so lucky every day to have the luxury of doing what I love too. I go home each night and tell my husband just how lucky we are. I guess given my business, people would probably expect me to say a facial or a massage is a luxury, and for many it is. For me though, luxury is a state of mind. It’s that time when I am walking along the beach on a beautiful Sunday afternoon and it’s been a great week at work, the kids and the dog are running ahead and I am holding hands with my husband. I get goose bumps just thinking about it. When everything lines up like that, and everyone is happy, I take a deep breath and take it all in. This is a great stage of my life. On the other hand, I do admit, I love the luxury of a five star hotel, with a king size bed and those big soft pillows! Not that I get to do that very often.

Speaking of young talent, I was pleasantly surprised during my recent visit to Aura Restaurant at the Caloundra RSL, a training ground for the next generation of talented chefs and fine dining hospitality staff on the Sunshine Coast. NexGen Training Restaurant is a platform for school based trainees to serve up their newly acquired skills and knowledge to diners each Wednesday and Thursday at lunch time under the tutelage of an experienced chef. Offering full table service in casually elegant surrounds, Aura Restaurant is one of the Coast’s best dining secrets and was the perfect setting for our Ladies at Lunch luxury issue. Tucked away in a secluded area of the club, boasting beautiful chandelier lighting, Aura offers the same delicious menu but also showcases it’s own specials in a casual elegant setting.
profile: Has your idea of what luxury is changed with age? sandra: Time to do nothing is a luxury to me now. I think it is very important. Mind you, I seem to have less time now than I did when my boys were young. I don’t know how that has happened, but somehow I have just filled my time with more things! I used to pack the boys’ lunches in the morning and have breakfast and get them off to school before work, I don’t know how I did that now! I also really value sleep. It is not something I take for granted. tanya: I actually don’t think so. I am still the same person I have always been. I like the simple things. If someone offered me a $200 face cream or something else, I would choose something else. Don’t get me wrong, I love shoes and handbags like most girls, but I would take time with my family over that any day. tania: I worked so hard in the early days, I still do, but things are getting easier now. The children are growing up and I am really enjoying being in our Caloundra store in a more hands-on position. profile: What is the biggest luxury of living on the Sunshine Coast? tania: It would have to be the beaches. Anytime I am stressed, I put my feet in the water or go for a swim. I love the community spirit of the Sunshine

Coast, and of course, the weather. We are very lucky to have some land at Shelly Beach which we are looking forward to building on in the future. The people of the Sunny Coast are really beautiful. There is a very tight-knit community. sandra: I think it is a fabulous place to raise young children. The beaches are a big drawcard. There are several places you can go on the Sunshine Coast too- there is so much diversity, from the Hinterland to the beaches and everything in between. We live on the beach too and we really take advantage of it. We surf, we run, we have drinks at sunset – it’s beautiful. profile: What is one luxury you simply couldn’t live without? sandra: My masseuse! tanya: I don’t really live a luxurious life, but I would say I couldn’t live without the beach. tania: I think it’s the beach too! It was such a joy to spend time with these beautiful ladies over lunch. The general consensus was how lucky we were to have the luxury of such a wonderful lifestyle on the Sunshine Coast, with healthy families and rewarding careers as well. It doesn’t get much better than that!
We started our meals with a beautifullypresented trio of half shell scallops with crispy prosciutto and basil foam. It tasted as good as it looked. It was a tough decision for mains, with both the coconut crumbed chicken tenders with jasmine rice, Asian greens and a tropical curry sauce or the seared pearl perch on warm spinach and potato gnocchi salad with a light tomato and lemon vinaigrette vying for my attention. I wasn’t disappointed with my seafood choice. The perch was melt-in-your-mouth delicious and cooked to perfection. It was a popular choice among the ladies and got rave reviews. We left just enough room for dessert – a refreshing mixed berry and white chocolate semi-freddo. Washed down with a perfect flat white, it was the perfect ending to our meals. Service was attentive, yet not intrusive and the attention to detail was second to none. I could not fault the food, ambience or service from start to finish. lthough we’d never met, it was easy to identify Simone Barter in a crowded Peregian café. The woman seated in the corner was immaculate, her crisp white collared top blending beautifully with well-cut trousers that sat obediently just above a pair of ballet flats. Upstairs, a crop of blonde hair contrasted cleverly with sharp dark-rimmed glasses. A soft caramel tote flopped effortlessly ringside. Yes this stylish Sunshine Coaster was indeed Simone Barter, stylistturned-blogger from stylelifehome.com.au. Prior to our meeting, I’d admired the blog – a collection of images and ideas to inspire readers to spruce up their interiors. That’s it in a nutshell. But spend a little time on Simone’s blog and you’ll discover so much more. There’s real heart in what she curates online. “Last year I posted a series of ten tips for a lovely life. A local lady in Noosa told me reading that blog made her really stop and think about her life,” Simone says. “She had a young family and realised she wanted to create a future as her own person as well as a mother. So it was nice to know that something so small made a difference to someone’s life.” That reader is not alone. Style Life Home regularly captures an audience greater than 1,000 readers a day. Add to that plenty of Pinterest and Instagram fans as well as around 5,000 Facebook followers, and you know you’re onto something that actually kinda matters. When she started blogging in 2011, Simone could never have predicted she’d become such a hit on social media. “I just wanted to put everything I loved on a blog. It was my own personal diary online. I never thought people would actually look at it,” she laughs. Simone is certainly accomplished when it comes to accessorising. She’s seamlessly matched her sense of style with genuine humility. 18

The culmination of her creative experience actually spans two decades. She started out in women’s fashion, working as a visual merchandiser. Later she became a buyer with her own high-end fashion and furnishings store in northern New South Wales; a venture she shared with husband Shannon. Today the family’s grown to include twin daughters, eight-year-old girls Lakota and Indigo. “When we found out we were pregnant we thought there was just one baby. Then when we had our first ultrasound, we discovered they were twins and Shannon fainted,” she laughs. As a stylist, you’d be forgiven for thinking Simone may have been tempted to dress her twins in cute matching outfits. “I’ve always wanted them to be individuals and to have their own style and thoughts. I just think of them as two individual people who happened to be born at the same time.” It sounds like the foundations of a respectful mother-daughter relationship, something very important to Simone. Growing up, Simone was lucky to enjoy a similar bond with her own mother. Today, she proudly describes her mum as her best friend. “My father passed away when I was quite young and I think that is why my mother and I are very close.” During Simone’s childhood, her mother worked as a seamstress on collections that formed part of Maggie Tabberer’s Maggie T label. “Mum was very stylish and conservative. She taught me the rules of keeping it simple and having a classic wardrobe that never dates. That approach also went into our homewares environment as well. We could just change a couple of things and it would feel brand new.” Those were her first lessons in styling and perhaps the building blocks that were destined to develop into a successful career. Today, Simone is a sought-after stylist. Her schedule is filled with profilemag.com.au
You don’t have to have extravagant things to create a beautiful home” everything from styling homes and offices, through to events and photo shoots for magazines. She also relishes roles that involve decluttering. “It’s about taking things away that don’t need to be displayed. Sometimes we have things that are totally amazing but everything else is distracting from them. Once you start decluttering, then your life becomes lighter.” Simone also likes to leave a little room for life’s luxuries. In her own home, Simone’s most luxurious item is a cherished chocolate brown Chesterfield chair from an auction her husband gifted her. From time to time, you’ll see some fairly grand designs posted on Style Life Home. “We all like to dream and envisage ourselves spending thousands and thousands of dollars on show-stopping pieces,” she laughs. “Style is so personal, but I really think we can all have style in our homes even without buying new pieces. You don’t have to have extravagant things to create a beautiful home. Furniture can be recycled and re-loved and that’s a luxury too, especially when it’s a piece that has sentimental value.” Essentially, Style Life Home helps readers to see the possibilities that lie within their existing four walls (and wallets). “You can create something from what you’ve already got, you just have to visualise it.” As women, Simone believes we need to prioritise some personal parts of our domains. “I want to give women the confidence to create their own room, or even just a corner that they love. Being a mother myself, I enjoy having my own space and I like to encourage my readers to have their own space too and to make that area beautiful, even if they’ve got a whole house full of children!”

LET’S FACE IT, WE ALL KNOW HOW TO INDULGE IN LIFE. WHETHER IT BE VIA EXTRAVAGANT HOLIDAYS, MOONLIT DINNERS OR DIAMOND RINGS, LIFE WOULD BE PRETTY BORING WITHOUT LUXURIOUS SPENDS. BUT WHAT DOES LUXURY REALLY MEAN? AND DOES IT DEFINE US?
A
ccording to my trusty dictionary, luxury is something that is an indulgence rather than a necessity; a sumptuous or expensive treat; an item suggestive of abundance and comfort. This, of course, is backed up by the elaborate pictures of super yachts, Phantom Rolls Royces, private jets and Louis Vuitton accessories, that appear after typing the word ‘luxury’ into Google Images. To some, luxury is an hour-long relaxation massage, a weekend away from the kids (don’t deny it!) or a romantic dinner for two. For others, luxury means dollars and grand displays of wealth. Did you know that for the price of a new car, you could fly to Antarctica on a private jet and camp alongside emperor penguins? Or, you could snowmobile through Norway searching for polar bears, or stay in a centuries-old monastery in Spain. Sounds pretty great, right? But how many of us would buy that new car? Perhaps it is a necessity, after all? The most luxurious experience I have had (to date) is sailing across the bottom of Tasmania on my uncle’s 45-foot yacht – which meant seven days of no mobile or internet, just a fishing rod, good company, a guitar and breathtaking scenery. From Port Esperance near Hobart, we sailed along the Coast down to South Cape Bay and across to New Harbour. We saw dolphins and whales, untouched rainforest and cliffs so high it was impossible to see the top.
To me, the pure bliss of being on the ocean, away from any stress, is a life of luxury … Ok, enough daydreaming. To get the answers as to what luxury really is, I decided to ask the fellow Profile crew about what they defined as luxury. From the five women I asked, the answers included sipping Champagne on board a private jet on the way to Paris, lying poolside in a five-star resort while a hunky man delivers cocktails on a gold platter, drifting on board a super yacht and sipping expensive wine and indulging in cheese and strawberries while sashaying around in a brand-new pair of Manolo Blahniks (straight from the set of Sex and The City that last one). It all sounds very clichéd, but I bet if you asked anyone what luxury was to them, their answers will be similar to my colleagues, which makes sense when you consider that according to the Australian Bureau of Statistics, Australians spend about $900 million a year on luxury goods, with 85 per cent admitting they would struggle to give up their luxuries – even if this is just getting their nails done. I now believe three factors define luxury: desirability, limited accessibility, and a sense of indulgence. Luxury is beauty, comfort, cost, and quality, but those are not necessarily its defining factors. I guess when you think about it, potatoes were once considered a luxury item!

THERE COMES A POINT IN EVERYBODY’S LIFE WHEN THEY QUESTION WHAT IS RIGHT AND WHAT IS WRONG. FOR SARAH CLARKE, IT WAS HER BODY DOING THE TALKING. WITH A YOUNG FAMILY TO RAISE, HER HEALTH NOT AT IT’S PEAK AND A SCRIPT WRITTEN FOR AN ANTI-DEPRESSANT, SARAH DECIDED TO FIND THE ANSWERS HERSELF.
E
very day, we are faced with an abundance of food and nutrition information and choices. Whether it’s maintaining a healthy diet while eating at your favourite restaurant, navigating the shelves at your local grocery store, or fuelling up for a five kilometre run, making smart food and nutrition choices is a necessary part of daily life, but it’s not always easy. Nobody knows this better than Sarah Clarke – owner of Natural Earth Products at Woombye. The mother of three has spent the past 15 years learning about her body and the way it responds to certain foods through reading books, attending forums and trawling online blogs. She is a strong believer in living off the land, living organically and eating foods that are whole and as close to natural as possible, which comes across in every aspect of her thriving business and in her passionate personality too. But like every change in life, there is usually a spark behind the flame and a burning desire to discover and learn. For Sarah, this began six weeks after the birth of her third child in 2003, at age 28 when she fell sick from an internal infection from a birth complication. “I knew something wasn’t right, I didn’t feel good and my body was really suffering because I was breastfeeding and caring for a new baby and had two other young children to care for,” Sarah explains. “A piece of my placenta

had been left behind and had become infected. When they went to clean it out, the surgeon went straight through the wall of my uterus and I lost a lot of blood. It was frightening for me because I was meant to be in there for 15 minutes and I came out four hours later. It was the first thing I had to deal with in terms of my health - I had never even broken a bone before.” The worst was not yet over for Sarah when, after having to cope with continuing to feed and nourish her baby breast milk that had been laden with antibiotics and still struggling to find the energy her body craved, she decided to revisit the doctor and get to the source of the problem. To her shock, he prescribed an antidepressant. “I couldn’t believe it. He literally just said, ‘It’s alright darling, lots of mothers are like you’, and whipped out his script pad,” she says. “I was shocked. I had never had to deal with depression and anxiety before in my life, but then I had never felt that unwell in my life either, so it was all new to me. It didn’t sit well with me though and I read the leaflet back to front several times. I wanted to feel better than I did, I had no energy or zest so I took one tablet. Straight away I knew it wasn’t right. The reaction I had in my body – there was no way in hell I was going to put another one in.” Determined to find the answer and knowing there was an unresolved imbalance in her daily health routine, Sarah took herself to a naturopath profilemag.com.au
who not only set Sarah on a path to better health, but unlocked a yearning to discover more about the power of food to the body. “I haven’t looked back since. She helped me to feed my depleted body, first at a cellular level homeopathically and then with a nutrient-dense diet with supplements that included real food. I discovered I was very much in need of things like magnesium, calcium and selenium, things I have learned also contribute to depression when lacking and are found in abundance in whole foods like fruits, vegetables, nuts and seeds.” “They say knowledge is power and it’s true, because the more you know what is good and what is bad, the better the choice you’re going to make. I am always wanting to know more and always researching – I don’t think I will ever stop.” Helping Sarah play out her organic dreams is her extended family of 21, who all live on the Sunshine Coast and own and operate a 90-acre farm at Woombye, where they grow their own fresh organic produce. “The farm is built just to feed the family, it basically allows us to feed ourselves organically with fresh produce and that is in season,” Sarah says.

All our meat comes off the farm as well, so we are always eating beautiful grass-fed beef, and we know what the cattle have been fed and treated with.” Back in her store at Woombye, listening to Sarah talk about her products, a range of blended organic nut and seed supplements and natural protein powders and spices with medicinal benefits, it’s not hard to see how in three years she has developed such a successful business. Knowledge certainly is power, and when it comes to Sarah Clark, it means not accepting the status quo, having the courage to ask questions and the power to be the healthiest version of yourself, which pushes her forward each day, while helping others do the same. march 2014

T
hey say the eyes are the mirror of the soul … and there is a mischievous sparkle in Tristan Kurz’s piercing blue eyes that reveal a lot about his larrikin nature, belying the more serious side of the third generation Coastline BMW owner/operator. As Tristan greets me at Coastline BMW, Currimundi, for our scheduled interview, he jokes that he meant to don his Austin Powers-style false teeth for a gag! It was to set the tone of our informal chat which was peppered with lots of laughs, as I went on to discover the insatiable love of travel, adventure and history that simmers below the surface of Tristan’s light and warm persona. The eldest of five children, Tristan became part owner of Coastline BMW in 2008. A business that has been built from the ground up, it was Tristan’s grandfather – Karl Kurz, a German immigrant who arrived in Australia in 1951 – who started the ball rolling. “My grandfather was part of such an incredible generation. We talk about how tough the GFC was, but it was nothing compared to what they had to endure. The ingenuity of that generation was amazing.” The six-foot two, blonde-haired, blue-eyed German established a business on the Coast selling cars for Toyota with a spare showroom for BMW motors in 1985. His son, Robert (Tristan’s dad), then took over the reigns in 1996, and Tristan followed the family tradition, heading up the multi-award winning business in 2008. But let’s go back to where it all began for this likeable larrikin. Raised in a traditional family setting, Tristan has very fond memories of his idyllic childhood. The family travelled extensively with his father’s work and he spent
time living in both London and France. This was to be the catalyst for many an intrepid overseas jaunt in the years that followed. “It really planted the seed of my love for travel and for experiencing different cultures,” says Tristan. And with that, he recounts some of his best adventures, including a trip to a tiny island in the Solomons. “We used to live at Moffat Beach, and I discovered our neighbour was a relative of a very important chief of a tribe, with their own island in the South Pacific. I was intrigued and thought, ‘I have some free time, some money in the bank, I’m going to go’! “It was an incredible experience. I arrived in Honiara and had to fly to this tiny island in a little twin prop with a couple of goats in the back! I am terrified of flying at the best of times. It was so third world, and brought home what we take for granted in the Western world. I remember the chief taking me to his home where his wife had prepared a meal of flying fish, which we ate with our hands. They were so isolated and removed from the Western world they were not aware of major world events such as September 11 or the Titanic, it really blew me away.” Tristan eye’s light up as he goes on to recall many more exciting travel adventures he has had over the years, many of which were the result of spur-of-the-moment plans. “About nine years ago, a group of us (after a fair few cans of Bundaberg Rum) decided we would get up the next morning and climb to the top of the red rock. We called it the Desert Odyssey. We flew to Adelaide, hired a car,

drove there, climbed it, and came back, all within five days,” says Tristan. Many more annual odysseys followed with the same bunch of fearless travellers, including the Apple Odyssey to Tasmania, and the Northern Odyssey through the Northern Territory. “Life is too short not to have fun,” winks Tristan. You have to enjoy every minute.” It is not surprising it was during one of his many adventures that Tristan met the love of his life and now wife, Coralie. “A friend and I decided we wanted to be the first Aussies to climb Mt Kosciuszko in thongs, stubbies and singlets,” he laughs. “So there we were among the other serious climbers equipped with proper hiking gear. We arrived with one bottle of water between us, made it to the top and decided to drive to Sydney for a celebratory drink.” It was at this Sydney bar he first laid eyes on Coralie. “It might sound ridiculous, but I always wanted to marry a French girl, says Tristan. “We went our separate ways for a few months when Coralie left Australia, but when she returned in August 2009, we were married three months later!” That’s one way to improve your French! In fact, these days Tristan and his wife only converse in her native tongue. “When we met, we spoke English to each other, but very soon we started only talking in French, and we now only speak in French to each other. It was never deliberate, but when we speak in English, it’s like we are talking to another person. Having said that, we are speaking more English these days because of our daughter Lucie who can speak both languages just as well. Sometimes she even combines them and uses phrases such as ‘encore cheese’, which means more cheese!”

I may have only had an hour to get to know Tristan, but it was long enough to realise that this was one chap who had trouble sitting still. A self-confessed prankster, he tells me his mates often dread getting his phone calls as they never quite know what to expect. “It is true, I can’t sit still – it’s actually a bad thing. It might sound like a cliché, but the only thing that allows me to really switch off is classical music. We always play classical music at home on Sundays and do everything at a slower pace. “One day my wife left me at home with no food, and I got bored, so wrote a song about a Mr Denglish.” ‘Who is Mr Denglish?’, you may ask. “I used to live in Germany, and the yuppies loved to incorporate English into their language (it’s called Denglish). It sounds ridiculous! We always were making jokes about people using Denglish – so I wrote this song about a yuppie called Mr Denglish, and had this great idea to put it on YouTube and make millions. I sold three copies to my mum, Coralie and myself,” Tristan laughs. Is there anything this man can’t do! Back to business, I ask Tristan how he became the only sibling to follow in his father’s footsteps in the prestige car industry. “I had no intention of becoming involved in the business at all,” he explains. “Dad was running two branches of the business at the time, and asked me if I would come and help him. I was living in Europe and wasn’t sure what I wanted to do next, so I moved home to help my family. That was in 2005, and in 2008 I bought into the business. “To be honest dad never came to us and said, ‘This is such a phenomenal career, you guys need to be involved’. He never pushed us to join the industry. The thought wasn’t even entertained.

I have a sister who is a civil engineer and another who is a teacher. One of my brothers is in shipping, and the other is a criminal defence lawyer.” Tristan’s pride when he speaks of his close-knit family is apparent throughout our interview. It is obvious his father has had a big influence on his life. “Dad has a phenomenal ability to see the big picture, and is prepared to lose a few battles to win the war. When I was coming up through the ranks, I made some mistakes and although he knew I was making them, he let me make them. I speak to dad at least once a day for advice. You can’t get advice like that out of a textbook, as clichéd as it sounds. It is a great back-up. My best mate lost his dad when he was eight, and I often think of him when I get off the phone from dad.” Tristan goes on to explain how his dad set the tone for the culture that Coastline BMW is renowned for. “Dad really instilled the culture here. It’s critical for us. We had a situation at the start of the GFC – the accountants advised us we needed to cut six staff. It was very difficult, as we had people who had been with us for more than 16 years. Dad came up with an idea of asking everyone if they would rather lose six staff or take a five per cent pay cut (including owners). march 2014
It was a unanimous vote and we didn’t lose one staff member through the business slowing down. At uni, you learn about culture, but you don’t really grasp its importance until it is your business and it is real people that you are dealing with.” When it comes to his mother, Tristan is equally as proud. “Mum always said to me, the most important job in the world is being a mother. She had five children in 10 years. She was always there for us. My mother is such a giving person. Hand on heart, if it wasn’t for the way mum looked after us, we would not be as positive as we are today.” Aside from his love of travel, Tristan also has a passion for twentieth century history and has collected many old books from his beloved maternal grandfather. “My grandfather was a journalist for The Age, and he instilled in us a love of books, particularly history, and we are slowly inheriting a lot of his books. I am not an avid reader, but I do love books. Old antique books. I got my brother a very old version of The Great Gatsby from the States, so he was rapt about that.” In fact, Tristan tells me, all going to plan, he would one day like to fulfill his dream of becoming a history teacher. “I love what I do, but if things play out well, my dream is to stop working at the age of 40 and go back to university and become a high school teacher. Having said that, there is a mortgage to pay first!” But right now, life is good for this father of one, as he and Coralie await the birth of their second child next year. They are very happy. “It’s been fortuitous for both dad and I with the business. We live a nice life, I live in the best place in the world with a five-minute journey to work, and I have a beautiful family. It’s not history teaching, but life is good.”

A
freshly brewed coffee in hand, beach bag thrown over my shoulder, flip flops comfortably on foot and a casual summer dress – the perfect attire for a day in one of the most loved Sunshine Coast towns, Caloundra. As I step out of my car parked along The Esplanade, the town hums to life with the buzz of lunchtime and the whistle of coffee machines. People descend from the beach, sandy feet and all, to the cafes for a bite to eat, indulging in the fresh salty sea air and relaxing ambiance infused throughout Caloundra and its vibrant people. Thinking of how to start my day, I am overwhelmed with choices of where to go and what to see. I couldn’t possibly fit everything into one day, but heck, I am going to try! Fascinated with the tourist appeal of Bulcock Street, I decide that this is my first port of call. Starting at one end, I am immediately struck by the array of cafes and coffee shops, each offering a delicious and unique menu, with international options from sushi to vegetarian and organic juice blends and mouth-watering cakes. Caloundra’s coffee scene has become so popular that people are driving big miles to get in on the new brews.
DISCOVER HOW EASY IT IS TO GET HOOKED ON THIS PLACE. IT IS THE IDEAL DESTINATION TO REFRESH, REJUVENATE AND INDULGE. There are fashion boutiques, surf stores, homewares, the Big Screen Cinemas and more, all found along Bulcock Street. One store in particular catches my attention, at number 34. Heart and Home is a haven for those who love collectables and homewares. Owner Tom O’Sullivan is a keen collector of miniature cars and has lovingly put his own private (and rare) collection on display, which is drawing crowds from all around the Coast and further afield. Bulcock Street is so versatile, it ticks all the boxes. But, this is only the start of my adventure at Caloundra – there are six beaches yet to explore, plenty of entertainment venues, fabulous tours, roller-skating and even skydiving to indulge in. As I want to take in as much salt air as possible, I travel to Pumicestone Passage, the start of a breath-taking coastal pathway, which stretches along some of the

most scenic shorelines in Queensland. The path is a continuous coastal link from Golden Beach in the south, around Caloundra Headland and then Moffat Headland, before heading north following the long, sandy beaches of Kawana to Point Cartwright. It is the perfect way to waste a day, exploring the coves and rocks along the shoreline. I finish off my day by watching the most magnificent sunset from Bulcock Beach. As the sun dips behind the Glass House Mountains, I see families at the picnic tables enjoying fresh cooked fish and chips by the water’s edge. You are seriously spoilt for restaurants, cafes and takeaways in this neck of the woods. As the night draws in, I realise I have discovered how easy it is to get hooked on this place. It is the ideal destination to relax, refresh and rejuvenate.

elping to promote Caloundra as the Sunshine Coast destination of choice is Caloundra Chamber of Commerce and Industry executive director Leanne Layfield, who says Caloundra is fast becoming the destination to visit on the Coast. “It’s the relaxing and natural appeal. It’s beautiful and it’s also unpretentious. It’s perfect for families. It’s perfect for couples. All generations enjoy Caloundra and people return time and time again,” Leanne says. “From a local’s point of view Caloundra has everything you need. The depth and variety of what’s on offer is second to none. It’s also a very caring and considerate community and the pride in winning Australia’s Tidiest Town in 2012 is still very apparent.” As well as Caloundra’s population being on the rise, so is the local economy. As Leanne explains, the health, education and service sectors are stronger than ever. ost people get their advice about money from a bank - eg. what sort of account to open, what sort of loan to have. A bit of a laugh really, with most of the profits the banks make coming from their smallest account holders. It’s like asking the mouse where to keep the cheese! I wish I had been taught earlier that banks will tell you how to do your banking to increase their profits, not yours. Always ask someone who has money for the best way of handling it. You will earn a fortune throughout your lifetime, but you won’t be able to keep it. We have so many choices these days about how we spend our money. We are constantly bombarded with enticing advertising to tempt us to spend more than we are earning. The old saying ‘look after the pennies and the pounds look after themselves’ still rings true. The key to prevent us from digging a deeper and deeper financial hole is to learn how to get money working for
us instead of against us. Things like ‘interest free’ periods are a joke! The interest is actually prepaid by the retailer and added to the cost of the goods you have purchased. The same goes for renting or leasing small items like laptops and the like. When you work out what you have actually paid for the item, saving the money for it first would save you a fortune. The most amazing thing I have discovered about money is, the more organized you are with it, the more you have! It is strange but true! Most people that I meet who aren’t in too much trouble with consumer debt* often proudly announce they have never had or don’t use a credit card, or had one and now they have paid it off have cut it up and will never use it again. While I am not advocating maintaining a credit card debt and paying high interest I am advocating the benefits of using credit cards wisely. By using a credit card, and paying it out on the due date, you will pay no interest. At worst, there will be an annual fee. However, the benefits can be amazing.

If you have time, it is the best way to build a retirement nest egg. Property has historically proven to deliver capital gain. Choosing the right area at the right time, with the right supply and demand ratio and demographics, can magnify your results. This forms an important part of property research.

She liked clothing to be figure hugging, sexy and adorned with sequins. “Nothing too risqué, but enough to draw some attention,” she admits. With nothing on the market that suited her style, she decided to make her own designs, and quickly became a whizz on the sewing machine. Little did she know, however, that this childhood talent would later become her ticket around the world, working alongside celebrities and big-name magazines, all vying for a small piece of Vanessa’s talent. I say small, not because Vanessa’s business was petite, but because her designs in swimwear were small – small and beautiful, Brazilian-cut, glamorous. The ideal bikini, known to everyone simply as Veve. If you haven’t heard of Veve before now, then perhaps you will remember the controversial photograph of Olympic gold medallist Stephanie Rice who took a picture of herself in the mirror wearing a Tomb Raider bikini. Or maybe you will recall when Hugh Hefner’s famed young wife Crystal Harris tweeted pictures of herself in a sparkly gold bikini? That’s right, both were Veve Swimwear designs. So how did this love story with bikinis, sequins and gorgeous female models begin? Vanessa says it started with a whirlwind adventure around the world. “I began sewing at the age of 13 and always made my own clothes and swimwear. I had a passion for sewing and a real burning desire to travel, so at 18 I took my backpack, my sewing machine and left,” Vanessa remembers. “I travelled around the world for about six years on and off, I came to Australia first and then Asia and worked in Japan and Europe. I literally just sewed my way around the world. I told my travelling buddy that the sewing machine would make us money because she had to help me lug it everywhere! We made bikinis and sold them at markets and also made costumes for cabaret shows.” The Sunshine Coast was one of Vanessa’s first stops in her trip from New Zealand, and as Vanessa admits, from the moment she stepped foot on the Coast’s sandy shores, she was hooked. It would later become her home and where she would meet her husband, Josh Bryce. “The last trip I went on before starting Veve was to Brazil, and it was really where I got my inspiration from. I knew I wanted to start a label, but I had no idea what I wanted to do,” she says. “All I kept thinking was evening dresses, or club wear, but I didn’t really profilemag.com.au

want to do that. Then I thought, of course, swimwear! I have always made my own Brazilian-cut swimwear and I used to make the Brazilian cut for all my friends. I also knew I could combine both the glamour appeal with the bikini designs.” As soon as the decision was made, everything fell into place for Vanessa. She was offered a workspace above a fabric store at Kawana, which was jam-packed with sewing machines, and equipment to use. “I started designing straight away, but I needed a project to work towards. There was the Australian Swimsuit Model of the Year competition on that same year, and I thought I should try and get on board as a sponsor. I hadn’t even made one bikini at that stage, but I thought, ‘Why not?’” Vanessa made 14 bikinis for the competition, which were such a huge hit she was automatically flooded with sales. She was next contacted by Cleo magazine and then Cosmopolitan magazine, both wanting Veve bikinis for their summer shoots. It was also in that first year that Vanessa was named as a finalist in the Australian Fashion Awards – a now distant memory among her many accolades. Her designs were selling out in 12 retail stores around Australia and online sales were going through the roof. She was spending every night behind her sewing machine, pricking her fingers trying to keep up with the demand from customers. “Each year after that, Veve kept on growing and here we are today. The first few years we were only selling to women in Australia, with a few sales overseas, but probably only five per cent. Now, we are up to 40 per cent international sales and we have a distributor in the US.” This take off in America happened when Vanessa’s designs were picked up by influential Playboy bunny, Hugh Hefner’s wife, Crystal, in 2011. “Friends were invited to attend the Playboy Halloween Party at the mansion and they asked if I would design their costumes, which I did. At the party they were flooded with comments and Crystal’s management even asked about them. My friends told me to get in touch with them,” Vanessa explains. “At the time Crystal had left Hugh Hefner a week before their wedding, and she was due to come to Australia. I thought rather than send her some swimwear and it getting lost among everything else she receives, I wondered if she wanted to co-design a collection with me, which she did!” Business stepped up again that same year when Olympic gold medallist Stephanie Rice controversially tweeted a picture of herself in the Tomb Raider bikini, which had been given to her as a gift from Veve Swimwear and Ellie Gonsalves, designer of Veve’s Incredible Swim collection. “This story went crazy and was all over social media around the world, even Entertainment Tonight picked it up. I had phone calls in the middle of the night with questions asking me if I thought it was too racy and sexy for an Olympic swimmer to be wearing. My response was, ‘She march 2014
looks amazing, and she has a killer body.’ I didn’t see there was much wrong with it at all.” Behind the high of her striving business, Vanessa is also a stay-at-home mum of two, an eight-year-old Rio and five-year-old TJ. She candidly admits juggling a business and motherhood is difficult at times. “When I first had my babies, I worked the day I was in labour, when I was in hospital, and as soon as I came out,” she says. “When we lived in a two storey house I would run upstairs, breastfeed and then run back down to the business. I had people calling with a crying baby on my lap, while I was trying to be professional – half the time I would be running around the house!” Now with 12 collections on the go and more in the pipeline, Vanessa is busier than ever, flying back and forth around the world to fashion shows, promoting her growing bikini brand in the process. “In the beginning, I got into it because I love designing, but now I am doing it because I love business, which is a side to it I never thought I would enjoy,” she says. “The best part of my job is that I see the way Veve makes women feel about themselves. I remember the first time some girls tried them on and they started squealing. They were jumping up and down they were so excited. It felt so good.” Those good feelings have continued with Vanessa on her ride to success. She even admits that five years ago when she sat down next to her sewing machine to write down her dreams, it never sounded as good as it is now. “I picked up that piece of paper the other day and read it. I went through and ticked off every single goal. I really am living my dream.” profilemagazine

n a world where finding the perfect bikini is every woman’s worst nightmare, Sunshine Beach-based sisters Alice Jones and Elli Grimshaw are threading their own swimwear style with new designer label eady + o. The sisters, who are eight years apart in age, started the bikini business after a failed hunt for the ‘perfect’ swimwear sparked a hidden passion for design, which was originally influenced by their grandmothers, Edith and Oelwein, who they lovingly named their brand after. Kate Clifford recently caught up with the dynamic duo, whose designs are quickly taking over Australia’s sandy shores. profile: What do you love most about your job? alice: The whole design process and the freedom to be creative. I also love seeing Australian girls wearing our bikinis. elli: I love having a creative outlet to express my design ideas and concepts - from sketching to styling a model. elissa White always wanted to be a doctor. From the age of four, she had her family’s bathroom set up to replicate a hospital wing, with teddy bears covered in bandages and red cordial disguised as medicine for her dolls. Her dreams came true when she qualified in the late ‘80s and practiced for six years at the Royal Brisbane Hospital, in addition to working in Sydney. During that time, Melissa fell sick and needed a colonoscopy, but was shocked to discover that at the time there were no female gastroenterologists in Queensland. She made her mind up there and then that she was going to fill that void, qualifying in the field and opening her own practice at Buderim in 1994. Now in her twentieth year of business, Dr Melissa White is still the Sunshine Coast’s only female gastroenterologist. A lover of tennis, singing and weekends away with her partner Kevin, this mother of two is continuing to live her childhood dream well in to her 40s. profile: What is your personal philosophy when it comes to health and wellbeing? melissa: Love those you love well. Don’t be afraid to leave a miserable situation no matter what it costs. Be brave and don’t be afraid to end a situation. I see too many patients that hang on, and I see how the mind affects the body – the mind/gut connection is very strong.

profile: Do you consider yourself a fit and healthy person? melissa: I am healthy and reasonably fit. Being a single mum who works full time, I do find it difficult to get out during the week, but I walk the dog every day, go for bike rides with the kids on weekends and occasionally indulge in a swim!
profile: What health tips do you swear by? melissa: Laugh a lot, love your children and tell your loved ones you love them every day. Also being in a healthy relationship is proven to be good for you and your body.
profile: What sports do you participate in? melissa: I play tennis with my girlfriends once a week, which I love. We do talk a lot, but it is probably the most intense exercise I get to do regularly.
profile: Do you have a hobby? melissa: Singing. I am in a modern worship group, and I sing at church every week. I have been singing for seven years now and I just love the freedom of it, it is empowering.
profile: What’s your favourite ‘good’ food? melissa: Definitely Atlantic salmon. I cannot go past it on the menu! profile: What’s your favourite ‘indulgence’ food? melissa: Goat cheese and aioli. I am a sucker for both. profile: Do you do organic? melissa: Not really, I prefer fresh, healthy food. I don’t think it makes a difference to your health if you choose to eat organic produce, as long as it is fresh. profile: Have you ever tried activities like yoga and pilates? melissa: Never, but I love massage. I think regular massage is great for your health as it relaxes your body and mind, as well as being wonderful for stress release. I have been having massages for the past 15 years and I find it works excellently for improving my health and wellbeing. march 2014
profile: What motto do you live your life by? melissa: It is never too late to find true love. I have been fortunate enough to fall in love again in my late 40s and it has changed my life and my health. profile: Have you suffered from any major health issues in your life? melissa: Six weeks after the delivery of my first child, doctors found a spot on my liver, which was terrifying. I saw a liver surgeon and we decided to watch and wait. Almost 14 years later and everything is fine still, but at the time it was confronting and made me think about life, how we should be and how we should live. It was like a light switch. What would your dream job be? melissa: I am doing my dream job, but if I had to choose something else I would be a legal prosecutor, but maybe I watch too much Law and Order! profilemagazine

IN HER TWENTIES AND THIRTIES, VANESE MCNEILL CARVED OUT A CAREER AS A PRODUCER AND MET THE LOVE OF HER LIFE. THE DAY AFTER SHE RETURNED HOME TO AUSTRALIA, VANESE BROKE HER NECK AND SPENT TWO YEARS RECOVERING. HERE SHE TELLS TONIA ZEMEK ABOUT THE GRACE THAT GOT HER THROUGH.

anese McNeill surprises me. When I request a change to our interview time, she is only too happy to oblige – no questions asked. Can we do it via Skype? Not a problem. Sometimes as a feature writer, you find yourself without much wriggle room in the diary. So it’s a pleasure to meet someone as accommodating as Vanese. Perhaps it’s because she knows first-hand what it takes to bring a production together. For more than 15 years, Vanese has produced television commercials and documentaries in both New York and Los Angeles. Along the way, she has even established her own advertising agency on Madison Avenue. Carrie Bradshaw, eat your heart out. Vanese has lived the dream, with her specialty laying in the creation of direct response commercials. “Direct response is a genre where you have to compel people to action in sixty seconds,” explains Vanese. Easy, non? Ahem. It sounds like a tall order, but Vanese found she had an innate ability in the field, working with a huge range of products, as well as the celebrities who endorsed them. “It consisted of extremely intense periods of productivity, followed by a physical collapse due to exhaustion,” she laughs. “Then I would get up and do it all again. To this day, there hasn’t been a production that I haven’t learnt from. “Learning comes in the process of a crisis, there’s always something that goes wrong when you have a big shoot and you have to learn to juggle. It was a very intense, very creative, very fun and very aspirational time. People got really excited at every stage of the production process.” Vanese formed firm friendships with her crews, and in this way met her husband, Chance Gardner, an art director and animator who’d worked on projects for some of Hollywood’s big hitters. She was introduced by a set designer.

“The moment I saw him, I thought ‘he is the one’, and we really haven’t parted company since that day.” When I ask her to expand on those initial feelings of assurance, Vanese reveals it was the wisdom of her late father that gave her such clarity. “A lot of people think that relationships are all about romance and the white dress, the wedding and the happily ever after. My father gave me a very good foundation in that respect – he taught me that relationships are about growing, and that there is nobody who is going to be a better mirror for yourself than the person who is your closest mate.” Vanese references her father several times throughout our chat. He became blind at 21, but refused to walk with a cane or guide dog. “His brilliant mind made up for his lack of sight. He was a student of metaphysics – not at all in a hippy kind of way, but he had a very studied alternate mind/science approach to things. The reason I think that we were so close was that he would talk to me about the mysteries of the universe. “As a young child I really wanted to understand what god and heaven were, and all of those kinds of things. He took so much time to really explain deep levels of metaphysics that were fascinating to me.” Vanese also speaks of an unbreakable bond with her mother, who sadly passed away when Vanese was 16. She describes her mother with immeasurable affection. “She was a vibrant brilliant bright light of a woman.” Tragically, it was cancer that robbed Vanese of the mother she so deeply loved and admired. As a grieving teenager, she could never have predicted that as a grown woman, her own body would also face grave challenges. In 2008, Vanese and her husband Chance decided to relocate to Vanese’s hometown in Melbourne. Tragically on their first day back, the pair were involved in a car accident.

BEHIND THE SCENES
“Upon impact, something said to me DON’T MOVE. I remember it as clear as day, and I believe it was my angel or something.” Wherever the celestial advice came from, it was spot on. Vanese left the scene in an ambulance. She had broken her neck. “I was in this incredibly joyful mood. Somehow, whether it was shock or whether it was a heart chakra opening, something made this whole journey incredibly blissful and I felt so much gratitude for being alive. “When the accident happened, I had just finished a documentary called The Great Work. It was about the metaphysics of creating your reality. I’d interviewed Bruce Lipton – the author of a book called The Biology of Belief. The idea is that belief is binary. You can’t kind of believe. You either believe or you don’t believe. So I just really worked on believing I was going to be ok. “People mess up when they panic. When they panic, they make stupid decisions and they don’t trust in their own navigational ability to get through the situation. So if you can believe that everything is going to be ok, then you’ll get through the thing (whatever it is) in a much more calm and graceful way.” Due to the angle at which her neck had broken, Vanese’s prognosis was uncertain, but there was a possibility she would never walk again. After four months in hospital, Vanese was discharged in a wheelchair. She had to wear a head and neck brace, known as a ‘halo’, while Chance tended to her every need. “He was amazing. He made me five star meals, and this from a guy who had previously never cooked. He really doted on me. I just fell in love with him all over again.” They were a formidable team, and after two years, Vanese was back walking and working. To celebrate, they took a long road trip, and that’s when they discovered the Sunshine Coast.

“People are really creative here, and they have a great sense of adventure and playfulness,” she says. “We’ve made all these friends who are musicians, artists and photographers. It’s very bohemian; we’ve got a tiny New York going on here, and it’s great!” Together Vanese and Chance relocated and established Sunshine Coast Studios, which functions as both an advertising agency and a fully equipped production studio. They produce everything from music videos to documentaries. Already, their work has gone global. Last year, the studio produced two television commercials, along with a web version, for The Minneapolis Star Tribune newspaper. Now they’re sharing their expertise with budding local filmmakers. Sunshine Coast Studios runs documentary boot camps, where they bring together beginners and experienced operators to create a doco from go to woe in just six weeks. Alongside her profession, Vanese invests time in her personal passions. Both she and Chance are musicians and they enjoy performing. “The accident was a blessing for me because it changed the whole direction of my life. It brought home the focus that life is short and that you have to get as much as you can out of every single day. I was not a muso in LA, the whole musical side of my life has come out of the accident. I’m having more fun and joy doing that. I lose myself in music. “If I had to sum up my life, it has been a rollercoaster ride, but it has been very grace-filled. I don’t mean graceful like I’ve been floating. I mean it has been filled with grace. I have had so many blessings.” And long may they continue.

eeing Laura Eddy’s artwork for the first time, I was astounded that they were created using graphite, charcoal and coloured pencils, and had to look twice to make sure they weren't photographs or digital drawings. The detail of each pencil stroke and smudge of charcoal she devotes to every drawing and sketch portrays accuracy that commands a double glance in appreciation. “I strive towards realism,” explains Laura. “I love detail and I try to get as much in my pieces as possible. However, I usually like to counter that traditional style with something a bit different in each piece. I think my style could be described as realism with edgy elements.” Growing up, Laura was always interested in art, but it was only in March last year that she picked up a pencil to dedicate more time to her ‘hobby’. Since then, she has engaged a strong following on instagram and through her website, which has led to several online sales and commissions for original portraits, including pets.

I think my style could be described as realism with edgy elements.” She has also been commissioned by an American clothing brand which has discovered her art online and is incorporating her images into their designs. Laura is still quite amazed by the influx of interest in her sketches. “The constant struggle I have is managing my time! I started this as a hobby and it has all happened quite fast. It’s a bit of a task to stay on top of drawing, managing my online shop and undertaking my current job! It’s nice to be busy though,” she smiles. Inspired by photography, mood and atmosphere, certain feelings, colours, amazing lyrics and other artists, Laura finds every piece of work she sets her mind to uniquely inspiring. “Usually I work on a few pieces at a time, so finishing one is a bit exciting because I can concentrate on others (and start new ones)!” As a relative newcomer to the art scene, Laura has plans to continue creating and drawing sketches, and aims to exhibit over the next twelve months. When asked of her dreams for her artwork, she is hopeful. “I’ll possibly look into putting my pieces on clothing, or developing a clothing brand as a joint venture”. One thing is for sure. This young, 20-something-year-old woman is an artist to watch with great interest as her popularity continues to soar both nationally and internationally.

profile: How would you describe your design style? michelle: Eclectic and changing all the time. At the moment, I love the current trend of lush Palm Beach glamour, cane and tropical vintage, but I am not set in stone. I love to keep using different styles and looks from industrial French country to classic Hamptons. profile: What makes a home? michelle: A home is a personal reflection of the person who lives there. It should be beautiful and welcoming using design objects from travels or locally sourced products that have value and presence. Good quality furniture, soft furnishings and interior and exterior finishes should be seen as an investment. Don’t scrimp and waste money on mass-produced pieces that don’t last. Value the environment you live in, so that you are inspired to live a creative happy and healthy life. profile: Do you have any rules? michelle: I have a personal formula that I always use that includes a checklist of all the natural elements from wood and organic materials such as rattan, to steel and glass for reflection and texture. This will make a room look dynamic and interesting. And always have great lighting – from ambient lamps in the living areas to good task lighting in your study and kitchen. No one looks good under fluorescent lights! If it’s not practical and can’t be put to good use, get rid of stuff you have accumulated. You will feel free and have more room to think and move when you declutter. profile: What inspires you? michelle: Courageous and positive people, my husband, my schnauzer Missy, my work place The Design Co-op. 70

Always buy quality. profile: What is the most important lesson you have learned about business? michelle: Believe in yourself. profile: What design trends do you think will last? michelle: Wing back chairs, wallpaper, stone products and real indoor plants such as succulents.

Also, go neutral in your lounges etc. and then you can always change cushions and throws when revamping. profile: Any advice for someone starting out? michelle: Invest in a decent neutral rug or sisal and a good quality lounge, dining table and bed. Most other pieces you can get by with at a lower cost.
profile: What is the smartest business decision you ever made? michelle: Following my passion and opening our business Cassidy and White Interiors at The Design Co-op is the smartest business decision I have ever made. Things do seem to fall into place when you follow your heart and take a leap of faith. I’m not sure that there is such a thing as a big mistake – life is a learning curve and you get the opportunity to learn and grow when you make them.

During the warmer months a light and refreshing lunch is a great way to re-energise. This fresh watermelon salad is the perfect recipe to indulge in and a breeze to make. salad ingredients
raspberry dressing
Âź medium seedless watermelon, rind removed and flesh cubed
1 tablespoon red wine vinegar
2 punnets strawberries, halved 250g fresh raspberries (keep five aside for the dressing) a small handful of fresh coriander leaves, roughly torn a small handful of fresh mint leaves, roughly torn 100g of baby rocket leaves
1 teaspoon caster sugar juice of ½ a lime
method
juice of ½ an orange
Place the watermelon, strawberries, raspberries, coriander and mint into a large mixing bowl and combine gently. Place the rocket onto a platter. Evenly spread the fruit mixture over the top. Sprinkle with feta, followed by the pistachio nuts, and drizzle the dressing over just before serving or place on the side.
5 fresh raspberries Combine all the ingredients together in a blender and puree until smooth. Refrigerate any unused dressing and use within two days.

ove over supermarket giants and perfectly shaped fruit, another foodie trend is taking over, and according to industry experts, it is here to stay. Eating and growing organic produce has been around for centuries, but only in the past 10 years has it become popular with mainstream society, with more and more people choosing to steer away from the supermarket produce and restrict their diet to organic. An organic diet means to only eat food that has been produced completely free of chemicals, pesticides, fertilisers and the likes. It is said to be better for your overall health and wellbeing, as well as enhancing the flavour of food. Owner of Empire Organics in Nambour and Caloundra, Lyndon Wittingslow, says the nutritional benefits of eating organic are huge. “I believe it is the chemicals and pesticides farmers use to treat their crops that is causing so many health problems in our society, such as cancer. They are chemicals that our bodies are not built to absorb and they are toxic, even in small doses,” Lyndon says. “Organic produce is free of any sort of chemical and has just been grown in the soil, the way nature intended. The flavours are enhanced because they have not been chemically interrupted and their colours are rich for the same reason.” Lyndon started eating organically about five years ago, after working for a organic supply company in Brisbane. He says since turning to organic produce, his life has changed. “It is great to see so many people embracing organic and supporting the farmers,” he says. “People say it is not sustainable because of the price, but I think it is. We are too arrogant for our own good and let consumerism take control. I come from a small town in Ballarat where we always had a veggie patch and would use horse manure as fertiliser, never sprays or anything. Lyndon hopes to see more of the Sunshine Coast community turn to their local organic farmers, cafes and restaurants to support this evolving healthy eating culture.

hat to drink on a warm, summery day? The choices are endless. The general rule is, the warmer the weather, the colder the drink. Whites, especially fruity Sauvignon Blancs are the obvious choice, but most of us are getting bored with the heavy passionfruit styles we are seeing, and Chardonnay doesn’t suit everyone. Rosé is the most misunderstood of all wines. The word tends to conjure up images of small stout bottles from Portugal, rarely evoking rapturous pleasure. Many think rosé is a sweet-style-only ‘nanas drink’, but this is just a bad hangover from the past. The majority of rosés in Australia are of a dryer style, delivering a true unadulterated representation of a grape’s natural flavours. Rosé is made from red grapes that have a lot less contact with their skins during maceration, becoming more like a white wine. Rosé is to be served chilled. The food matching possibilities are endless – cold dishes, salads, seafood and most of all, BBQs! So if you would like Grenache, Pinot Noir or Cabernet Sauvignon in a lighter more refreshing chilled style, don’t forget the forgotten rosé.

rowing up, my mother would always throw elaborate dinner parties with her friends. She would spend all day in the kitchen, meticulously going over every detail of the evening, including the five courses she would serve. The desert would be setting in the fridge as she effortless sashayed around the kitchen, chopping, grating, baking and mashing everything to perfection. I remember sneaking out to taste each delectable dish, as the group clinked glasses and laughed to each other over the table, which was always decorated to match the theme of the night. Now, as I prepare to throw my own private dinner party, I am panicking about how I will fare in putting together the perfect shin-dig given my house is smaller, my dining table is trimmer and well, my budget is … slightly less! If you find yourself in the same predicament as me, don’t be alarmed. I have learned there are ways around these things. Here are four tips to get you started …
If it is a small space you are working with, don’t be afraid to move a few things around to make room. It’s easiest to keep the guests all together, rather than have some in the lounge room, some outside and some at the table, so try and make your main entertainment area the centre of attention, drawing your guests together.

Candles on the table, fairy lights dangling from the ceiling – there are so many different ways to create the perfect ambience for your dinner party. As a tip, try some tea-light candles in some old jars. The different heights and shapes will set the scene in a show of lights.
There is no need to panic here, that’s why we have butchers after all! Start off with a cheese platter, fruit and crispy breads to keep your guests entertained (this can also double as an entrée). For main go for a couple of salads and something yummy from your local butcher which you can just bung in the oven/on the BBQ. For dessert, go simple with forest berries and ice cream.

M
y namesake is a character in the film Doctor Zhivago. I’ve not seen the movie, preferring to keep some mystique over my moniker. When I meet Noosa Waters business coach Macushla Montell, I’m keen to find out the origins of her unusual name. She explains that Macushla is a Gaelic word that roughly translates to mean ‘my darling’. Her name hints at a rather romantic and whimsical start to life and, as it turns out, her childhood was indeed idyllic. The eldest of four children, Macushla was raised on acreage in the central coast of New South Wales. “We had our own permaculture garden and we ate healthy whole foods,” Macushla says. “We had free-range chooks and Mum used to spin her own wool. There was lots of creativity in our home. My childhood was full of fun and laughter.” There was a serious side too. Macushla’s parents were entrepreneurs with multiple business interests, ranging from dog kennels to rearing goat herds. They even owned a martial arts school. Meanwhile, Macushla was a keen young dancer and her mother whipped up all her costumes and leotards. Macushla’s mum in fact proved to be more than a proficient seamstress and eventually ended up supplying dance studios far and wide. The family business grew and grew, with multiple factories and staff stretching across the country. At 16, Macushla moved to Sydney to start her own dance school. It seems a massive undertaking for one so young but she recalls feeling fearless. “I can remember having only $30 a week for groceries at one stage, but I was so passionate about dance and choreography that I was just on a mission.” Her drive and determination were a powerful combination. The dance school flourished and it was a trajectory that was set to continue. When she married her teenage sweetheart, a builder, the pair

turned their attention to property development. “We took unusable blocks of land and old houses that no one wanted and made them usable,” she says. To help maintain a steady stream of cash flow, a few days a week the couple worked as flight attendants. “They called us the Flying Montells,” Macushla laughs. “Because my sister-in-law, my brother-inlaw, my husband and myself, all worked in the airlines.” She was flying high. “I was a millionaire by the time I was 27, but over time the property market in New South Wales crashed,” Macushla says. Although she was in the process of restructuring her portfolio, fate had other plans. The crash hit hard and the experience taught her some invaluable business lessons. Afterwards, Macushla moved to the Sunshine Coast and took up studying Gestalt Therapy. “It’s a holistic form of counselling and support to create positive change in life and flexibility in behaviour.” Macushla is no stranger to flexibility, as her impressive résumé attests. In addition to being a business woman, she also coordinated large community projects. She admits a highlight was working with indigenous community leaders for The 5 Lands Coastal Walk, a Government project based on the Central Coast, which saw her coordinate a closing ceremony performance to an audience of 2,500. Away from the spotlight, Macushla faced her own personal challenges that demanded the commitment and perseverance she devoted to her professional life. In late 2012 she parted ways with her husband and now lives alone with her two daughters and son. When I ask her how she coped with the breakdown of her relationship, she shares with me
the meaningful mantra that saved her: “My success is not negotiable”. This belief saw her through the eye of the storm. Now she’s back on top and helping others to reach their full potential. Macushla is the founder of a coaching business called MindSherpa. “I coach people to live the lives that they desire and I support them through the challenges of life and their journey to success.” She says she feels enormous satisfaction watching her clients succeed, be they CEOs striving to find meaning, or individuals wanting to improve their relationships. Macushla positively glows when she talks of helping others recognise their own capabilities. “We all have gifts that we bring and we don’t have to do it alone. We’re all threads in the fabric of life and each thread is unique and when we come together, we form the most beautiful piece of cloth. That’s how I view life.” Her philosophy also includes giving back to the community. Despite a full diary, she somehow manages to find time to be part of a business mentoring panel at the Sunshine Coast University’s Innovation Centre. In Mackay, Rockhampton and Cairns, Macushla can also be heard on the radio discussing the dynamics of relationships and gender difference within the workplace. Before our interview comes to a close, I ask Macushla to share one final handy hint for achieving success. “Never give up and don’t let other people’s limitations hold you back. Other people project their own limitations on to you and you can buy into that or you can be innovative and decide there’s got to be another way. “There is a solution to every problem. If you can’t find the answer, ask someone who is where you want to be. Surround yourself with successful people and have enough humility to ask questions.”

Q&A MY ACCOUNTANT WANTS ME TO STOP TRADING IN MY OWN NAME AND START USING A TRUST. WHY? When choosing this as the best structure for your business, there are usually a number of issues at play. Firstly, a trust structure (with a company as a trustee) provides fabulous asset protection. In most cases, this structure will prevent anyone who sues your business coming after any assets that are in your own name (e.g. your house). It also stops anyone who is suing you personally from getting your business. This offers great peace of mind, and in itself is an
excellent reason to look at how your business is structured. Secondly, the tax benefits that this structure provides may well be worth something. Depending on your personal circumstances (e.g. whether you are married, how much your spouse earns, whether you have children), there may be an opportunity for tax savings. This is because a trust can usually ‘choose’ who gets the profit from the business each year. Spreading income across family members can mean going down a tax bracket. As always, this is a very simplified answer and you would need to get specialist advice based on your particular circumstances.
There are also the initial advisory and establishment fees, as well as ongoing ASIC, tax and accounting charges to consider. In most cases, however, it turns out to be a small price to pay for peace of mind.

Q&A IS YOUR HOME YOUR RETIREMENT STRATEGY? Every year the Australian Government publishes comprehensive superannuation data in the Australian Prudential Regulation Authority’s Annual Superannuation Bulletin. As at 30 June 2011, there was approximately 1.3 trillion dollars’ (ie. $1,300 billion) worth of assets sitting in our superannuation funds across the country. Regardless of the type of fund you have (industry, retail, public sector or self-managed), your superannuation money is invested across four main asset classes – cash, fixed interest, property and shares. If you don’t have choice or if you haven’t given your superannuation fundspecific investment instructions, your monies will be invested on your behalf into a default

investment strategy (eg. a ‘balanced’ pool). It is noteworthy that 53 per cent of the default pool of Australia’s national retirement savings is invested into shares; 24 per cent into cash and fixed interest; 13 per cent into ‘other’ and 10 per cent into property. What does this mean? It means that the bulk of this nation’s retirement savings are invested in shares by default. It means that contrary to popular misconception, shares are a very legitimate asset class. It means that predominantly the sharemarket is used for long-term investing; not short-term speculation or gambling. Property is an extremely legitimate and important asset class, but don’t confuse home-ownership with long-term investing. Home ownership is an important cornerstone of financial independence. However, the key to long-term financial security is passive income
(eg. dividends from shares). The more money you have wisely invested outside of your home, the more income you will have and therefore the more financial security and freedom – such as choosing when to stop work, travel options, health care options, philanthropy and aged care choices. Would you rather retire with a one million dollar home plus $500,000 worth of super generating $25,000 per annum income; or a $500,000 home plus one million dollars’ worth of super generating $50,000 per annum income? As a general rule, aim to have at least two to three times more money invested outside of the family home; rather than tied-up in the family home.

BELINDA BARETTA
S
he was the Aussie expat reaching new heights of success in the London hairdressing industry, but it took derailing migraines and chronic hay fever for Belinda Baretta to realise her passion and career in hairdressing was seriously harming her health. “I found out it was related to the chemical in the colours,” Belinda shares. So, for the next few years from her London base, she began to source organic ammonia-free hair products. On her return to Australia, Belinda, a hairdresser of 23 years, found a significant lack of salons that were ammonia-free on the Sunshine Coast. In fact, there were none. “I discovered a niche and decided to open my own,” she says. So that is what she did, sourcing all the ammonia-free products she had found in London to stock the shelves of her Cotton Tree salon, Eco Organic Hair and Beauty. After making her first foray into hairdressing at the age of 15, Belinda knew it was something she always wanted to do. It wasn’t long before her career took her to Brisbane, where she refined her skills at the renowned hair salon, Stefan. Today, in Eco Organic Hair and Beauty, there are five hairdressers and three beauty therapists sharing Belinda’s passion for organic products. “And, our beauty products are also free of nasties!” Belinda adds. “Opening my own business is definitely not something I planned on doing,” Belinda shares. “But after travelling, I am happy and content living here. I feel blessed.” Belinda shares her success with support from her husband, Paul, and their two daughters, Evella, 6, and Ilania, 3. In the future, Belinda looks forward to the exciting expansion of her business. “I would really like to open a second store,” she imparts. “It’s on the cards. I am just waiting for the right time and the right place. It’ll happen.” she smiles.

he sparkling jewel in the crown of glittering shop fronts at Mooloolaba Esplanade is a jewellery store with a reputation spanning more than two decades, and is home to Sunshine Coast local and master jeweller, Ben Millroy. Millroy Jewellers is nestled in the busy coastal coffee and shopping mecca Mooloolaba Esplanade, on a site rich with past-era Mooloolaba heritage. Ben and wife Carolyn bought the store in December 1991 on the beachfront strip known then as River Esplanade. Millroy Jeweller’s owner, Ben Millroy, started his career at the age of 15 when he began a jewellery apprenticeship at a jewellery factory. After graduating from his apprenticeship in 1978, Ben joined a family owned and run business, splitting his workload and time between Brisbane and the Gold Coast. In 1991, Ben and a heavily pregnant Carolyn, about to give birth to their first child, moved to the Sunshine Coast after falling in love with the area during the holidays. Ben spent much of his childhood holidaying with his family on the Coast and often reflects on the happy memories of his holidays, before making the decision to raise his new family here. Their plans to relocate came to fruition in December 1991, heralding the start of new beginnings for the Millroy family as they welcomed their daughter Anna the very night they moved. Just a few short weeks after welcoming their daughter, Ben and Carolyn opened Ben Millroy Jewellers. They now thrive on the view of the sparkling Pacific Ocean, just metres from their business doorstep under the Peninsular Beachfront Resort. Today, the Millroys are continuing to shine and sparkle as the premier jewellery destination in town.

wner of House of George, Maroochydore, Michelle Shanks has been in the hairdressing industry for more than 20 years. Starting her career at the tender age of 17, Michelle worked her way up through the ranks to become owner of two successful hair salons on the Sunshine Coast. A family girl at heart, the mother of two took a break from hairdressing to study law and was accepted into the Queensland Police Force. However, her passion for hairdressing saw her return to her beloved staff and clients at House of George. Having recently relocated her salon, including a quaint new cafe, Cup of George, we chat to Michelle about her success and the major milestones in life that have helped shape who she is today. Life changing milestone 1: Discovering my independence At the age of 19, I had just started my hairdressing career as a first year apprentice and was devastated when I was told I would never make it in the industry. I was young and lacked confidence, so I believed what I was told. I woke up one morning and booked my bus ticket from Melbourne to Queensland with $300 in my pocket. I arrived at Cavill Avenue, Surfers Paradise, not knowing a soul, and could only afford to stay in a caravan park at Carra. Feeling deflated about my career and determined to just have fun, I secured employment at the Surfers Paradise RSL Club where I met my best friend who I am still very close to. We found a cool pad in Surfers and moved in together. A couple of months later, I met my husband, Greg, whom I was married to for 17 years. This was a life changing moment as I discovered my first taste of independence. Life changing milestone 2: The birth of our first child Having my daughter Taylor in 1994, who is now my very best friend, was the most wonderful blessing. Being a parent is the hardest yet most rewarding thing one can ever do. With the support of my family, when Taylor was seven months old, I decided to go back to hairdressing. Being a mum, studying full-time and working part-time was hard work. However, I had a goal, and I was a girl on a mission! I had a lot of support, and to this day thank Greg and my family for making my dream possible. Life changing milestone 3: Opening my first salon Greg and I wanted to raise our daughter in a beach town that was not as busy as the Gold Coast. We discovered Coolum Beach and fell in love with it. The next obstacle was to find a job. I was so nervous, but have always stood by the motto ‘Fake it ‘til you make it!’. I handed in my resume at a salon at the Sheraton

Resort in Noosa and got the job. I felt out of my depth at first, however the stylists I worked with were incredible and I thank them to this day. I was only there for about a year when friends started encouraging me to open a salon in Coolum. Looking back I was so naïve, which was probably a good thing as fear may have stopped me taking their advice. I opened Gorgeous and ran it for eight amazing years. I sold Gorgeous after having my baby boy, Calder. I wanted to enjoy motherhood. As much as I tried to be a full-time mum however, I was restless. My dad, George, encouraged me to open another salon and I did. The salon is named in his honour. Life changing milestone 4: Change of direction I was loving the hairdressing industry – we were busy and I had an amazing team, but I needed more. So it was time for a career change. I therefore decided to do my diploma in justice and see where it would take me. It took me all the way into the police service as a police recruit! I think I shocked a few people as I had only told my family. I received a call from the Queensland Police Service on a Friday, and by the Monday I was learning to march at the Queensland Police Academy! I welcomed the change and met the most amazing people. I was pushed beyond my capabilities at times, and I did things I would never have imagined doing. This made me strong, and I am a better person for these experiences and what they taught me. I was very lucky to keep my business while training, thanks to my wonderful team who were like a second family. Anyone in business knows it’s tough, and ultimately I made the decision to come back to my George family. Life changing milestone 5: Relocating to the House of George and opening Cup of George Recently, I gained a new business partner, Ann Maree, and we now have a very powerful team consisting of every person that works at George, with Clay Burns and Deann Evans being a part of the business. Project managing and designing the House of George has been a very rewarding experience and has given me yet another challenge. When we first looked at the House of George, it was going to be just a salon. However, after many ambitious thoughts, Cup Of George was born. Ann Maree and I are so excited about our new journey. We believe in the simple things in life. Our approach is to look after our clients and our team, and everything else will be taken care of. I am blessed to work with my best friends everyday, and do what I love. I am so grateful. I never listened when I was told I could not do something. The lesson I take from this is – if you are determined, you can do anything. Never let fear stand in your way.

he approach of dusk heralds the golden glow of sunset as the sky softens with shades of pale pinks, deep peaches, fiery reds and burnished oranges. The sun, juxtaposed between the horizon and the night sky, hovers in a suspended moment of time before slipping to the west and out of sight. Reflect back on the day that was, pack a camera and stock the picnic basket with an assortment of delicious wine, cheeses and antipasto for a luxurious way to unwind.
WHERE TO CATCH THE SUNSET Point Cartwright The top of Point Cartwright hill is a renowned destination to sit back, relax and watch the sun sets. The walk to the lighthouse marking the top of the point offers a great reward with a breathtaking view of the ocean, Mudjimba Island and the long stretch of coastline either north to Noosa, or south past Caloundra. As the maritime saying goes, ‘Pink sky at night, sailor’s delight,’ and both ocean-goers and those on land will revel in the spectacular imagery of the sunset from this scenic point.
Hinterland Head to the Hinterland and feast on the view on offer from the mountainous location. The setting sun softens the surrounding lush greenery until the top of the range blends with the deep colours of the sky, and the mountains turn into shadowy silhouettes. Try the Glasshouse Mountains for a truly spectacular vista.

Famous as one of the best places to snap the sky as it is painted, with an artist’s palette of dusky colours, Maroochydore River lends itself to spectacular sunsets. The rustic wooden beach huts along Bradman Avenue are a photographer’s delight silhouetted against the setting sun. The myriad of visual imagery continues with swooping pelicans, the picturesque palms and the sandy beach of Chambers Island, while the calm river flowing past Picnic Point offers the illusion of a watery universe as it reflects the fiery atmosphere of light above.
Mount Coolum Reach new heights of sunset viewing on top of Mount Coolum. Time the trek to the top to reach the pinnacle, with enough time to set up a picnic before the sun starts to set. Seven-time ASP Women’s World Champion. What more does one need to say? Layne Beachley is arguably one of Australia’s greatest female surfers of all time. She will appear at this month’s Noosa Festival of Surfing to pay tribute to Noosa’s own beach girl legend, Moy Sweetman, a year after her passing. Profile caught up with Layne recently to gain an insight into her life in and out of the surf.
Most people don’t know that I … love childrens animated films.
I grew up... on Manly Beach from when I was six-weeks-old. My dad is a clubbie at Manly Surf Club and my older brother Jason surfed so I was always stealing his board from the age of three until Dad gave me my own. I would love to be a better... cook as I absolutely love good, healthy and nutritious food. My husband Kirk came second on Celebrity Masterchef so he naturally dominates the kitchen and does the majority of the cooking. I am at my happiest when... I’m surfing with good friends. The ocean is my solace and it’s always fun and social sharing that experience with friends that enjoy it as much as I do. Only a surfer knows the feeling! When I am not working I am... surfing. Even in retirement, I still make the time to surf or at least get into the ocean or immerse myself in nature each and every day. I wish I could... say no more often. I have a fear of rejection so I’m hopeless at saying no to people in the fear that I will let them down. The best meal I have had was... at home, there’s nothing like home cooked food, especially by Kirk! He makes homemade

Most people don’t know that I... love childrens animated films. I find the humour very therapeutic and there are very meaningful messages in them. When I was growing up I wanted to be... a stockbroker but surfing has always been my number one passion. My dad used to send me to school with $2 every day and I always made sure I came home with a dollar to save up for my next desired item. I thought if I was good with my own money I would be able to well manage other people’s money. My greatest achievement is... my surfing legacy. I’m proud of where women’s surfing is today and grateful for the opportunities it has presented me. There were more girls out in the water than boys at my home break recently and I felt an immense sense of pride. The one person I would most like to meet is... Hilary Clinton because I think she’s an extraordinary woman, strong, brave, resilient and determined to make a positive difference. profilemag.com.au
