RECIPES FROM Around The World

One of the most exciting parts of taking a trip is the chance to try the local flavors. Food allows us to connect with a culture and explore with more of our senses. Making international dishes at home is a great way to relive travel memories and find inspiration for your next trip.

We’ve rounded up three recipes from around the world to add a little international flair to your kitchen adventures.

Croque Monsieur

Simple, yet mouth-watering, the croque monsieur is a straightforward dish that makes for a decadent lunch or dinner. Sticking true to the French affinity for cheese, butter, and bread this open-faced sandwich is easy to make at home. Makes 8 open-faced sandwiches or 4 double-deckers (pictured).

INGREDIENTS 2 Tbsp butter 3 Tbsp all-purpose flour 2 c milk 1 tsp salt 1/2 tsp black pepper 1/2 tsp garlic powder 12 oz Gruyere, grated (5 cups) 1/2 c freshly grated Parmesan 8 slices of bread 8 oz ham, sliced but not paper thin

INSTRUCTIONS 1. Preheat the oven to 400º F.

2. In a saucepan, melt the butter. Add the flour and stir. 3. Slowly pour the milk into the butter and flour mixture and cook, whisking constantly, until the sauce is thickened. Once it is thickened, add salt, pepper, garlic powder, 1/2 cup grated Gruyere, and the Parmesan. Remove from heat and set aside.

4. Toast the bread on baking sheets in the oven. Remember to flip the bread to toast on both sides. 5. Once toasted, top each slice of bread with a slice of ham and cheese sauce. Sprinkle the remaining cheese (4 1/2 cups Gruyere) on top. 6. Bake sandwiches for 5 minutes or until cheese has melted.

Sipping this cool, tropical drink will transport your mind to your favorite beach destination. The bright colors and refreshing taste make this beverage a perfect complement to your summer relaxation. Makes one serving. INGREDIENTS 1 1/4 oz light rum 1 1/4 oz dark rum 2 oz pineapple juice 1 oz orange juice 1/4 oz fresh lime juice 1/4 oz grenadine*

INSTRUCTIONS 1. Combine all ingredients into a shaker. 2. Add ice and give it a 10-30 second shake. 3. Strain and pour into glass of your choice. 4. Garnish with a cherry or a slice of pineapple. *Note: The grenadine can be omitted if you don’t have it on hand, though it is key to giving this drink it’s typical red/orange color. Hawaiian Haupia

This traditional Hawaiian treat is popular in cakes, puddings, and pies, but the original Haupia is a dessert all on its own. Traditionally served in small, Jello-like squares, it’s a unique and authentic dish that is worth a try, whether it’s in your own kitchen or in the land of Aloha. Makes 16 2” square servings. INGREDIENTS 1 can full fat coconut milk (about 14 oz) 5 Tbsp cornstarch (4 for less firm texture) 5 Tbsp granulated sugar 3/4 c water INSTRUCTIONS 1. Place coconut milk in a small saucepan over medium heat. Note: It must be full fat coconut milk to properly set. 2. In a separate bowl, combine sugar and cornstarch, and add the water. Whisk until completely combined. 3. When the coconut milk just starts to simmer, add the sugar/cornstarch mix, and whisk. Keep whisking until the mixture thickens (about 10 minutes). 4. Pour into an 8x8 pan and allow to cool on the counter before refrigerating. Refrigerate at least 2 hours. 5. Cut into 2-inch pieces and serve.
