The most important ingredient in cooking is salt. No questions asked. Salt matters. A whole lot. Our chef, Louis AriĂĄ, once declared salt “the only product t h a t c h a n g es c u i s i n e . â€? T h i s i s because, as he and all seasoned c o o k s k n o w, s o d i u m c h l o r i d e not only adds saltiness, which human beings innately adore (because we need it to live), but it also skews the overall f l av o r i n a p o s i t i v e m a n n e r. I t makes food sing by suppressing a ny b i t t e r n e s s , e n h a n c i n g t h e s w e e t a n d s av o r y, a n d t u r n i n g up the volume of the aromas.
