veryone in the nutrition field is familiar with the sobering statistics about American’s consumption of fruits and vegetables. The average American consumes less than 2 cups of fruits and vegetables each day, and just 1% of adults and 2% of kids meet both the fruit and vegetable recommendations each day.*

Ingredients

2 cups Daisy Brand Low Fat Cottage Cheese 1/2 cup low fat granola, no fruit or nuts 2 cups mixed berries such as sliced strawberries, blueberries, and raspberries 4 teaspoons chopped almonds

Counseling patients and clients to grab fruits and vegetables as a healthful snack between meals can be an effective way to increase consumption, and help Americans realize the myriad benefits of fruits and vegetables. It’s quick, easy and delicious. One way to enhance this recommendation even further is to encourage patients and clients to consume low-fat dairy together with fruits and vegetables as a great way to provide a more nutritionally complete, balanced meal or snack solution. Adding low-fat dairy, such as cottage cheese, can offer patients and clients many advantages over consuming fruits and vegetables alone: High in Protein: Low-fat dairy, particularly cottage cheese, is a protein-rich food. Increased protein consumption can promote satiety, reducing hunger and increasing fullness.** This is a great benefit for patients and clients who are controlling their diet for weight loss, type 2 diabetes, or other conditions.

In four serving dishes layer 1/4 cup of cottage cheese, 1/8th of the granola, and 1/4 cup of the mixed berries. Repeat the layers in each dish. Top each parfait with 1 teaspoon of almonds.

Ingredients

1 1/2 cups Great Northern beans, rinsed & drained 3/4 cup Daisy Brand Low Fat Cottage Cheese 2 teaspoons chopped fresh rosemary 1 teaspoon grated lemon zest 1 tablespoon lemon juice 1 garlic clove, chopped 1/4 teaspoon black pepper 1/3 cup finely chopped red bell pepper 4 cups assorted fresh vegetables

Directions

In a food processor, pulse the beans, cottage cheese, rosemary, lemon zest, lemon juice, garlic and black pepper for 10 to 15 times or until nearly smooth. Transfer the dip to a medium bowl. Stir in the red peppers. Serve the dip with vegetables.
