Low-Fat Dairy +Fruits & Vegetables
Berry Breakfast Parfaits Prep Time: 5 Min. Total Time: 5 Min. Serves: 4 (3/4 cup per serving)
= Healthy & Delicious
E
veryone in the nutrition field is familiar with the sobering statistics about American’s consumption of fruits and vegetables. The average American consumes less than 2 cups of fruits and vegetables each day, and just 1% of adults and 2% of kids meet both the fruit and vegetable recommendations each day.*
Ingredients
2 cups Daisy Brand Low Fat Cottage Cheese 1/2 cup low fat granola, no fruit or nuts 2 cups mixed berries such as sliced strawberries, blueberries, and raspberries 4 teaspoons chopped almonds
Directions
Registered dietitians are on the front lines of this battle, working each and every day to encourage increased fruit and vegetable consumption among patients and clients. Not only are fruits and vegetables a rich source of vitamins, minerals, phytochemicals, and fiber, but they are a major part of any healthy weight loss regimen and diets rich in fruits and vegetables have been shown to reduce the risk of many chronic conditions. Counseling patients and clients to grab fruits and vegetables as a healthful snack between meals can be an effective way to increase consumption, and help Americans realize the myriad benefits of fruits and vegetables. It’s quick, easy and delicious. One way to enhance this recommendation even further is to encourage patients and clients to consume low-fat dairy together with fruits and vegetables as a great way to provide a more nutritionally complete, balanced meal or snack solution. Adding low-fat dairy, such as cottage cheese, can offer patients and clients many advantages over consuming fruits and vegetables alone: High in Protein: Low-fat dairy, particularly cottage cheese, is a protein-rich food. Increased protein consumption can promote satiety, reducing hunger and increasing fullness.** This is a great benefit for patients and clients who are controlling their diet for weight loss, type 2 diabetes, or other conditions.
Nutrition
In four serving dishes layer 1/4 cup of cottage cheese, 1/8th of the granola, and 1/4 cup of the mixed berries. Repeat the layers in each dish. Top each parfait with 1 teaspoon of almonds.

White Bean Dip Prep Time: 15 Min. Total Time: 15 Min. Serves: 8 (1/2 cup per serving)
Low in Calories: A ½ cup serving of low-fat cottage cheese is less than 100 calories, allowing patients and clients to keep on track with calories while still enjoying a satisfying meal or snack featuring fruit or vegetables. Delicious Pairings: Low-fat dairy pairs beautifully with fruits and vegetables, and is a great way to encourage patients and clients to discover new and exciting seasonal options. During summer, recommending cottage cheese with blueberries, raspberries, blackberries, summer squash, or sweet peppers can help open the eyes of your patients and clients to the full rainbow of fruits and vegetables. Lower-Cost Protein: Low-fat dairy provides patients and clients with a protein source that is typically lower in cost per serving than 2–3 ounces of cooked meat, poultry or fish. In tough economic times, low-fat dairy can help them meet their daily nutritional requirements. Convenient: Cottage cheese is ready-to-eat, just scoop and serve. With many delicious and simple preparations and pairings available, it fits into busy lifestyles. Plus, it’s cool and creamy—perfect for the hot summer months.
Ingredients
1 1/2 cups Great Northern beans, rinsed & drained 3/4 cup Daisy Brand Low Fat Cottage Cheese 2 teaspoons chopped fresh rosemary 1 teaspoon grated lemon zest 1 tablespoon lemon juice 1 garlic clove, chopped 1/4 teaspoon black pepper 1/3 cup finely chopped red bell pepper 4 cups assorted fresh vegetables
