Serves: 4 | Prep time: 20 mins | Cook time: 15 mins Ingredients
• 300g sweet potato • 2 spring onions, chopped • 4 sprigs coriander, roughly chopped • ½ red chilli, deseeded and chopped • 425g can tuna in spring water, drained • 1 egg, lightly whisked • ½ lime juice • Wholemeal flour, for dusting • Olive oil Method 1. PEEL the sweet potato and chop into even size chunks. Place in a medium saucepan and fill with enough water to cover. Bring to the boil then reduce heat and simmer until sweet potato is soft and cooked through. 2. MASH the sweet potato then transfer to a large bowl. Allow to cool slightly. 3. ADD spring onions, chilli, coriander, egg and lime juice and mix until combined well. 4. DIVIDE mixture into 8-10 small cakes, then dust the outsides with flour. 5. HEAT a frying pan on medium to high heat and add a drizzle of oil once hot. 6. FRY the cakes in batches, cooking each side for 3-4 minutes, or until crisp and golden. New Choir Sings Out For Mental Health
Upbeat Arts Absolutely Everybody Brisbane Choir
Creative arts organisation Upbeat Arts will expand its operations to north Brisbane (Wavell Heights) this month, launching a new choir aimed at providing connection to those with mental health challenges.
With funding from Queensland Health, Upbeat Arts’ successful creative arts programs provide a unique form of ‘social prescribing’ for any adults who are disadvantaged as a result of their mental health challenges. Social prescribing is the referral of patients to non-medical activities. Upbeat Arts has been a leader in this area since it began its operations with its first choir in South Brisbane in 2014. Queensland Mental Health Commissioner Ivan Frkovic said he was delighted to officially launch the new North Brisbane Absolutely Everybody Choir. ‘Upbeat Arts programs foster a safe, uplifting and fun
environment and provide an opportunity for social inclusion, connection and building confidence,’ Ivan said. COVID-19 had exacerbated the loneliness of those with mental health conditions, increasing the appeal and importance of the new north Brisbane choir. The original choir, the Absolutely Everybody Brisbane Choir, has helped around 400 people to transform or improve their lives since its establishment eight years ago. The teaching staff are qualified professionals who use their education and mental health skills to achieve measurable results for choir members. Previous experience is not needed to join the choir and there are no auditions. Every weekend in June, local artisans will open their studios and venues for visitors to view and purchase unique, handmade, stunning works of art and crafts. The Trails meander through the beautiful country areas of Samford Valley, Dayboro, Mountain View and places in between, only twenty-five kilometres from Brisbane. After last year’s first Samford Edible Garden Trail was a sold out success, the organising committee knew that this year would have to be bigger and better than ever!
After all, last year’s trail had a last minute surprise arrival on the day, with Costa Georgiadis from ABC’s Gardening Australia flying up from Sydney that morning to light up the faces of young and old by sharing his contagious passion of gardening with visitors, locals and to his own audience nationally with live feeds all day. It’s no wonder then, the garden trail has had more locals step forward to offer even MORE diverse food gardens to open to the public this year. If you weren’t familiar with The Samford Edible Garden Trail, it all started out in 2020, where a group of local mums created the concept of locals opening to the public their amazing backyard edible gardens and how to grow food and share this knowledge with the community. So, with lockdowns putting things on hold, they started filming and sharing online instead, and the concept caught on not only locally, but also nationally and internationally. So much so that in 2021 the first live trail was held. Fast forward to May 2022, the group are still filming and posting their virtual tours online, AND are getting ready to open the doors to now 13 inspiring diverse edible gardens and small scale farms for the inaugural Open Day Weekend that will span over 2 days on May 14 and 15 this year. But there is MORE to the Trail than just the 13 diverse gardens on show. For people wanting to take some of the gardens home with them, Milen farm, a local urban community farm, will be hosting a farmer’s market, and open up an area to picnic among the produce with pre-paid hampers, rugs, a busker, and kids activities. There will also be an art exhibition featuring local artists in the community HUB at Samford and local cafes, and restaurants will be getting on board too and connecting with local farmers to offer a special menu item created from local produce. Whats more, the famous Samford Patisserie will be enticing ticket holders to sample their goods by offering ticket holders a complimentary coffee. Don‘t forget too to grab a tour of the gardens, and watch live demonstrations from garden hosts with surprise guests on the days! Family Fun At Hills Carnivale
Hills Carnivale is back for another bumper year of live music, kids’ activities and workshops, rides, markets and food stalls at George Willmore Park, Ferny Hills on Saturday 28th May. The family-friendly event wraps up the month-long celebrations held as part of Hills Festival, drawing big crowds to the Moreton Bay Region’s Hills District. Hills Carnivale is free to attend and will run from noon through to 7pm, consisting of a host of activities for little kids through to the big kids (and adults!). Moreton Bay Region Industry & Tourism (MBRIT) CEO Shane Newcombe says the action-packed lineup is set to attract local families and visitors to the area. ‘There is a reason why the Hills District is such a sought after place to live,’ says Shane. ‘We are always so excited each year for Hills Carnivale and the support the event receives from the local community.’ ‘From stacks of live music, low-cost rides and to kids shows and market stalls – the whole family will find something to enjoy.’ Hills Carnivale will finish with the annual fireworks display from 7pm, guaranteed to light up the night sky and dazzle patrons. Everton Park Kindy - Celebrating 60 years!
C&K Everton Park Kindergarten is so very excited to be celebrating our 60th Birthday this year!
To kick off celebrations C&K Everton Park Kindergarten is holding an Open Day/ 60th Birthday celebration on Saturday 4th of June from 9am to 12noon. There will be free entertainment and face painting! Over the past 60 years many children have passed through our beautiful kindy and we have now had generations of families attend. Over the years many families have contributed to building our beautiful kindergarten since it opened its doors in 1962 on 28 Fallon Street, Everton Park. The Kindergarten Association was formed at a public meeting at St Jude’s Hall in 1957 and after much collaboration and fundraising, a lease was signed with the Brisbane City Council for the land, and a loan of 3,457 pounds started the building project. We are very grateful to the dedicated, determined families who started this journey that has provided 60 years of early childhood memories for so many locals. The community at C&K Everton Park Kindy have turned a plain building with limited trees (see picture on the right) into a beautiful rainforest for our children with playground structures, sandpits, vegetable patches and natural gardens that attract many of our native wildlife! We have also developed a huge store of toys, books and resources for the children over the last 60 years. At Everton Park kindy, children get to experience the beauty of nature and they can be seen climbing our treehouse, observing wildlife, watering the gardens, reading, playing dress-up, building, creating and so much more.

We are lucky at C&K Everton Park Kindy to have a wonderful staff with a passion for education. Once our educators start with us, they often stay on for many, many years. Our Group 2 Teacher/ Co-Director Mrs Lindy Diacaris has taught at C&K Everton Park for over 35 years. Teachers are qualified early childhood educators with years of experience. Our class structure allows ample quality time with the children, due to the higher-than-average staff to child ratio. Sustainability is embedded in our thinking and planning at MPC.
Many sustainable decisions are not clear-cut, as often it is a choice between options that may not fully support our sustainable goals. For example, we love our trees and we love grass. However, we also love flat play spaces for children to build their games. Three’s no clear-cut easy sustainable way to solve this dilemma and we know that we may have to compromise. Every day children are engaged with sustainability, whether it’s sorting rubbish, noticing the native bees or careful consideration of water use. We consider that children are both current and future global citizens. World issues such as climate change and conflicts are huge issues for children to comprehend however contributing to the Foodbank to support families affected by the floods and being kind to each other are positive practical ways for children to begin to understand more global sustainable issues. Given the fact that there is a great deal of heartache in our current times because of many issues that have occurred and are occurring, I sincerely hope that we all had a happy and safe Easter with our friends and families.
As to an update on the flood crisis, our club has come through with flying colours. If you have a look Bocce Club members happy to be back in action at our club today you would not think that about four weeks ago it was devastated by flood waters. We are waiting for our vinyl floor covering to be installed in our clubhouse on the mezzanine floor, and down the track a full paint job of the complex. It’s amazing what human kindness does in these types of events. About 20 members over the last 4 weeks took part in restoring the club to its former condition. Tradies offered their services free of charge and Bunnings Stafford and Keperra helped us with donations. Thank you all very much! The bocce courts were operational about 2 weeks ago and the club had its first event since the floods. On the 20 April we had a Precision Bowl competition. I have spoken about this game in previous articles. I call it a competition because that way it gives players a competitive advantage in the game. However, putting that aside it’s a fun game enjoyed by all. It’s probably our most popular competition where it attracts the most number of players. We have 24 players in teams of 3. So, we commence with a light dinner at 5.30pm and then play from about 6.30 to 9pm. I have attached a couple of photos, one group photo with the winners and the other showcasing the game. People with previously vibrant social lives and calendars full of activity outside the home found themselves embracing baking as a way to cope with pandemic lockdowns. It wasn’t only homemade bread that had a resurgence. Homemade living made a comeback. Skills that were essential to life before the internet are making a return. Prior to the availability of fast fashion, if you needed socks for winter, someone had to knit them. A new scarf was the result of time spent with the loom or crochet hook. Holes in clothes were patched or darned, long before visible mending became trendy.

The value in handmade living is underestimated, said Roz Fenson, CEO of The Nest Community. ‘Making something yourself is not only satisfying, it’s good for your health. Time spent on craft is often meditative and many studies have shown crafts such as knitting boost your wellbeing,’ Ms Fenson said. ‘Learning a new skill or sharing your expertise with others is also a valuable way of building community and creating social connection, which is important as our lives get so busy.” It was common for previous generations to pass on essential crafting techniques, but with industrialisation and modern manufacturing, many of these crafts were relegated to hobbies. ‘We have women of all ages in our learn to sew or crochet basics workshops who remember watching their grandmothers but who never learnt the skills themselves and love to feel that connection to their family history,’ Ms Fenson said. ‘Teaching a workshop is also an immensely validating experience for women who have built up their own skills over years. Sharing your skills and knowledge with people who appreciate your expertise is incredibly rewarding for both parties. ‘We are always interested in hearing from women with crafting expertise who would be interested in running a workshop for our community as well.’ The Nest Community offers entry level craft workshops for sewing, crochet, knitting and embroidery. There are also more advanced or project-based workshops for people who want to stretch their skills further or make better use of household materials. ‘One of our most popular workshops is making rag rugs out of old t-shirts or linens. In only a few hours, participants learn the skills they need to reuse old clothing or bedsheets that are past their prime and repurpose them into rugs, cushions, placemats or other household items,’ Ms Fenson said. The difficulty in finding appropriate accessible housing is an ongoing issue for many ageing Australians, those who live with disability and those who care for them.
A recent scoping study by the Australian Human Rights Commission found that given the increasing prevalence of disability, an estimated 60 per cent of homes will, at some point, be occupied by a person with disability or injury. The study, published earlier this year, found that because so few homes are designed to meet the needs of people with disability or older Australians, there are numerous problems with existing housing options. These include poor access, unsuitable internal layouts and a lack of other qualities such as good light and connections to outdoor views. To help get around the issue without breaking the bank, increasing numbers of families are looking at building bespoke ancillary dwellings on their properties. What is an ancillary dwelling? Sometimes referred to as mini homes or cabins, but more commonly known granny flats, these buildings are typically a one or two-bedroom self-contained housing unit located on the same block as a larger dwelling. Condensed into a smaller space, they offer all the features of a regular home, including a kitchen, bedroom, living room and bathroom. What are the requirements for building a granny flat? The requirements vary from state to state, but essentially there are several guidelines which you must comply with to determine if a granny flat can be built on your block. Discuss your options with your council, as there are various restrictions and policies to comply with before commencing. It can take
anywhere from 10 days to 12 or more weeks to receive approval, depending on your council. What costs are involved? CoreLogic data shows that building a granny flat on your property can help boost its value by as much as 30 per cent – but just remember, you get what you pay for. Granny flats have been advertised for as little as $10,000 but for that you will get barely more than a shell. Realistically, you should expect to pay anywhere from $40,000 to more than $150,000 – depending on your requirements. What needs to be considered before building your granny flat? When deciding on orientation, be sure to take into account the climate and what direction your backyard faces. By orientating your granny flat appropriately and analysing your heating and cooling requirements, you can ensure you maximise its energy efficiency. What are the core design elements to consider? While individual needs will vary, you will need to make sure your chosen provider is able to meet any requirements you have. This is likely to include a safe continuous and step-free path of travel from the street entrance and/or parking area to the granny flat, plus internal doors and corridors that facilitate unimpeded movement between spaces. At the end of April, I dropped into Terry White Chemmart Arana Hills to get my annual flu shot and was amazed to discover that Hills District pharmacy is the number one pharmacy in Queensland for dispensing COVID19 booster shots.
The Palaszczuk Government has provided tens of millions of dollars for this and future generations of Ferny Grove State High School students through the provision of new specialist classrooms, science labs, kitchens, woodworking, and metal shops as well as a new sports and performing arts hall. However, Education Queensland generally does not fund shade sails or playgrounds directly – so P&Cs are forced to come up with the funds. Late last year Peter Cossar approached me to ask what he could do for our community. The Ferny Grove State School P&C has been looking at installing shade sails for students for the past few years. Peter joined me at the school to let me know the good news that if Labor is elected, Ferny Grove State High School P&C will be provided with $125,000 to install new shade sales as an election commitment.
