What the heck is a financial planner anyway? And is yours right for you?

I’m a big believer in what my grandfather and father taught me over the years growing up in Wisconsin: Don’t be a jack of all trades and master of none. It’s fine to be “good” at a lot of things, but to be a “master” or “expert” (commonly known as a professional) at certain things is desirable, especially when it comes to financial planning, retirement planning, and health care planning. These are serious issues, and many times folks don’t get a “do over” if things get screwed up! So let’s have a brief discussion about different types of people who call themselves “financial planners/advisors”. Insurance Agents: Insurance agents are licensed to sell various types of insurance products such as health insurance, life insurance, long term care insurance, annuities, home & car insurance, etc. They get paid commissions to do so, and that’s fine. Being a licensed Life & Health, and Medicare & Long Term Care agent myself, I can tell you there is no way any insurance agent can be a “master” at all of them (in my opinion)! Most agents will focus on a particular part of the insurance market and become as skilled as possible at that segment, and I personally think that’s a good thing. Having a good insurance agent is vital when it comes to retirement & estate planning for your “safe dollars” and “legacy planning”. But there’s a word of caution I must point out: If your insurance agent is not securities licensed, then they are not legally supposed to discuss securities/ investments or move securities into insurance products, even if the insurance product (such as a fixed annuity) might be the best thing for you. Regulators have become increasingly aware of this and have been cracking down on insurance agents giving “investment advice” when they are not properly licensed and registered to do so. So, be careful of what advice you get from your “insurance licensed only” advisor.

mutual funds, or any other security their brokerage firm offers. Like insurance agents, typically they get paid a commission to do so, and again that’s fine. We’re all entitled to get paid for providing a service. But does that make your stock broker a financial planner? Let’s just say, not always. Are they registered to give and charge for investment advice? Again, not always. In my opinion, stock brokers fall into the “accumulation phase” of your life. Their job is to grow your portfolio, and that requires more risk. That’s fine when you’re younger and have time on your side to deal with the ups and downs of the market, but maybe not so much when you’re older – in my opinion anyway. Registered Investment Advisors: RIAs are registered to give investment advice and charge a fee for their services. Many RIAs are “fee-only” advisors, but many are both insurance licensed and securities licensed (we are dual-licensed at JDS Wealth Management). RIAs have a fiduciary standard that they must adhere to, which means that the client’s interests must be put first. A lot of other types of advisors are only held to a suitability standard, which simply means that the things they recommend must be “suitable” for you and not necessarily the best thing for you. In my opinion, dual-licensed independent RIAs offer the best non-biased advice when it comes to virtually any kind of planning. At our firm, we are dual licensed, so we get paid in various ways depending on whether we’re using insurance products or securities products. So, you get the best of both worlds, so to speak. So, ask questions and know who you’re dealing with when it comes to your finances. Until next month, James D. Stillman

As we finished work on this issue, it was finally starting to feel like fall. A rainy fall, but the beloved season nonetheless. It wasn’t absurd to drink hot coffee and break out the boots. Once the weather turns from summer to fall, suddenly the holidays (and lots of home entertaining) are right around the corner. That’s the inspiration behind this issue. Whether your entire extended family comes to your house for the season, or you’re

hosting—or attending—your first “Friendsgiving,” coordinating an event is no small task. November is the perfect month to explore all the facets of home entertaining. hough it’s not quite December, some of us are in the holiday spirit a bit early. These Roasted Italian Tomato Puffs are a ridiculously easy and an impressive bite-size appetizer. They pack in a lot of flavor and look so pretty with the red tomato balanced on top. Added bonus—they’re also vegetarian, an option all of your guests can snack on.

Roasted Italian Tomato Puffs Ingredients: Cherry tomatoes, washed, left whole (You will need one tomato per appetizer). Drizzle of olive oil Frozen puff pastry sheets (not cups), thawed according to package directions Tapenade or pesto (homemade or store bought) Shredded or small cubes of European cheese: Mozzarella, Fontina, Taleggio, even Brie

Preparation:

1. Pre-heat oven to 400 degrees. Prick each tomato with the tip of a sharp paring knife twice. Toss the tomatoes in olive oil. Roast for about 10 minutes, until just limp and losing some juice. Set aside. Keep the oven on.

2. Unroll the pastry. Use a 2-inch-round cookie cutter to cut out as many hors d’oeuvres as you want.

3. Spoon the tapenade into a small plastic sandwich bag, and squeeze it into one corner of the bag. Cut off the tip of the corner, leave the top unsealed—this will work as a pastry bag. Squeeze a bit of tapenade into the center of each pastry dough round, then top with a bit of cheese. At this point, these can be frozen, ready to pop into the oven on a moments notice—otherwise, carry on with the recipe.

4. Place the pastry rounds onto a baking tray and bake until just golden and bubbly, roughly 15 minutes. Top with a roasted cherry tomato and serve hot.

Welcoming family and friends into your home for a great meal can be stressful. Around the holiday season it can be even more taxing. However, a well-laid plan and working clean, neat, and organized is calming. It’s all about the set up. Whether you are thinking of taking on this monumental

task yourself or plan to incorporate some help, you will need a solid plan. Once you have decided on the style of meal, then you can start menu planning.

Menu Design Designing a menu for your dinner party is sometimest the hardest part. Often, coming up with a food theme or the structure the meal should take requires as much thought and effort as the meal itself. There are three ways of getting your guests their food—and all are acceptable in any situation or circumstance. However family style is the most engaging and personable.

Perfect Timing After choosing the style concept and menu, now it is time to get organized. Much like a restaurant, a dinner party needs to be thought out and planned, from shopping to serving.

• Assemble salad without croutons and dressing. Cover and refrigerate. • Make cobbler filling, place in skillet.

Prep • Read each recipe completely and make shopping list. • Check on hand pantry items such as spices for freshness. • Shop at least two “full” days before dinner party. This will allow for plenty of prep time and staging of prep dishes.

Two days before • Shop and prep supporting ingredients. • Boil and peel eggs for deviled eggs. • Cube cornbread, rinse and drain black-eyed peas. • Grate cheese, cook pasta, and toast bread crumbs for mac and cheese. • Cut chicken into frying pieces.

Day before • Halve eggs, remove yolks, make deviled filling. • Make cornbread croutons, fry black-eyed peas, make dressing. • Wash and spin-dry collards and mustard greens, and store in plastic zip bags.

3 hours till Dinner Party • Drain chicken and leave at room temperature for 30 minutes. • Make sauce for mac and cheese, place in a casserole dish.

Morning of Dinner Party • Squeeze deviled filling into egg halves. Then plate, cover, and refrigerate.

• Set out mac and cheese. • Remove chicken from oven, place on serving platter, and set out. • Serve guests. • Set out cobbler with whipped cream or ice cream.


Buttermilk Fried Chicken 1 each, 3-pound fry chicken 2 cups of buttermilk 1 to 2 tablespoons of Tabasco hot sauce 2 tablespoons of kosher salt 4 teaspoons of black pepper 4 cups of self-rising flour Lard or canola oil Directions 1. Cut chicken into eight pieces: wings, legs, thighs, and breast. Place chicken in a large zip bag.

2. Combine buttermilk and hot sauce in a mixing bowl and add to the bag with chicken.

3. Marinate overnight, but not more than 24 hours. 4. Set chicken out at room temperature 30 minutes before starting. 5. Season flour with salt and pepper. 6. Drain chicken from buttermilk, dredge chicken in flour (save the flour), and place on a sheet tray.

7. Allow breaded chicken to sit at room temperature for 30 minutes.

8. Heat 2 to 3 inches of lard or oil in a large iron skillet or Dutch oven to 350 degrees slowly over medium heat.

9. When lard/oil reaches 350 degrees, dredge the legs and thighs in flour a second time and gently place in skillet.

10. Slightly raise heat if needed (to maintain temperature) and allow chicken to cook for about two minutes.

11. Using long-handled metal tongs, carefully turn each piece and allow to cook for two minutes before flipping again.

12. Continue to flip pieces every couple of minutes or so until an instantread thermometer reaches 160 degrees and the chicken is golden brown.

13. Remove and place on a paper-towel-lined sheet tray and repeat process with chicken breasts and wings.

14. Chicken can be held on sheet tray in warm oven (175 degrees) with oven door open slightly. Tip: To keep chicken warm and crispy, heat oven to 250 degrees and then turn off the heat and close the door. When done frying all the chicken, place the sheet try in the oven. Use a wooden spoon to place in the handle between the oven door to prevent steam from building up. This will keep the chicken warm and crispy.

Chipotle Deviled Eggs 10 large eggs ½ cup of mayonnaise 2 to 3 teaspoons of apple cider vinegar 1 teaspoon of chipotle pepper packed in adobo, halved, deseed, and chopped fine 1 green onion sliced thin Kosher salt and black pepper to taste Smoked paprika or cayenne pepper to garnish Directions 1. Place eggs in a pot, cover with water, and bring to a boil.

2. Once boiling set a timer for 15 minutes. 3. Remove after time, pour water out, and leave eggs in the pot.

4. Run cold water over the eggs for two minutes.

5. Remove shells, rinse, pat dry, and place in refrigerator for at least 30 minutes.

6. Halve eggs lengthwise, remove yolks, and place in a mixing bowl.

7. Add mayonnaise, vinegar, chipotle, onion, salt, and pepper to yolks.

8. Mix together until smooth. Re-season or add more vinegar to taste.

Collard Salad, Cornbread Croutons, & Fried Black Eyed Peas Salad 1 cup of black-eyed peas, cooked (or canned), drained, and dried Canola oil Chef Troy’s Back Rub to taste 6 cups of collard greens, thick stem removed, halved, cut into strips, and washed Country ham, sliced thin to taste Goat cheese, crumbled to taste Roma tomatoes, deseeded and diced to taste Red onion, sliced thin Croutons 2 cups of cornbread, leftover or store bought, cut into small cubes 3 tablespoons of olive oil ¼ cup of parmesan cheese, grated 2 tablespoons of fresh parsley, chopped Kosher salt and black pepper to taste Dressing 1 cup of sour cream ¼ cup of buttermilk 2 jalapenos roasted, skin, stem, and seeds removed ½ teaspoon of kosher salt and black pepper Juice from half of a lime

9. Place yolk mixture in a plastic bag and squeeze to one corner.

10. Cut off corner to make a half-inch hole. 11. Fill whites with yolk mixture by squeezing the mixture out of bag.

12. Dust with paprika or cayenne, serve or store covered in refrigerator.

Directions 1. Combine all ingredients for dressing and store covered in the refrigerator.

2. Preheat oven to 300 degrees. 3. Place cornbread cubes on a sheet tray and bake until crispy and dried through, about 15 to 20 minutes.

4. Place in a bowl, drizzle with olive oil, and toss to coat.

5. Add parmesan, parsley, seasonings, and toss. 6. Place back on sheet tray. Scrape out any remaining cheese or parsley from bowl onto cornbread.

7. Bake in oven for five minutes, remove, and cool. 8. Heat a few inches of oil in a stock pot to 350 degrees.

9. Add dry black-eyed peas and fry until crisp, two to three minutes.

10. Remove with a slotted spoon and toss with back rub and set aside.

11. Assemble salad on individual plates in this order: collards, ham, goat cheese, tomato, onion, and fried peas.

12. Drizzle on dressing with croutons and serve.

Peach Cobbler with Pecan Crumble Filling 4 cups of fresh peaches, about 10, halved, and seeds removed (canned peaches can be used) ¾ cup of brown sugar, plus extra to dust peaches 1 tablespoon of almond extract 1 tablespoon of all purpose flour Unsalted butter to coat Crumble ¼ cup of all purpose flour ¾ cup of pecans, chopped 1 cup of shortbread cookies, crushed 2 tablespoons of brown sugar ¼ cup of unsalted butter, cold, cut into very small cubes Directions 1. Preheat oven to 425 degrees.

2. To make crumble, combine flour, pecans, shortbread cookies, and brown sugar.

3. Add cubed butter, using fingers combine until it has the texture of very coarse breadcrumbs.

4. Place crumble in refrigerator while preparing filling.

5. Place peach halves directly on grill, cut side down, and grill until slightly charred.

6. Flip peaches, cook until tender, five to seven minutes, remove from heat, and place on a baking sheet.

7. Place brown sugar, flour, and vanilla in a mixing bowl and mix to combine.

8. Cut peaches into bite-size pieces, place in the mixing bowl, and stir to combine.

9. Butter a deep baking dish, iron skillet, or individual dishes, and add peach mixture.

10. Place in the oven and bake for 15 minutes. 11. Remove cobbler and top with crumble. 12. Place back in oven and bake until crumble is golden brown, about five to 10 minutes.

13. Remove and let stand to cool. 14. Serve in shallow dishes topped with whipped cream or vanilla ice cream.

I’m sitting on the patio of the newly opened Viva Chicken restaurant in Huntersville interviewing General Manager Justin Blinn, 32, on a beautiful autumn afternoon. Blinn is schooling me in Peruvian street food when two patrons, a mother and daughter, walk up to our table and interrupt us saying, “Excuse us. We overheard you all doing an interview about this place? We just wanted to tell you that this was our first time eating here and it was excellent. We will definitely be back.” I look from the woman to Blinn and he says, “I swear that wasn’t planned!” But it is exactly the type of response to Viva Chicken’s bright, fresh Peruvian flavors that Blinn has been hearing since the restaurant opened in August. “People really love this food. The flavors and many of the ingredients are like nothing they’ve ever

had before,” Blinn says. This is the third location of Viva Chicken to open in two and a half years (the other two being in Ballantyne and Elizabeth in Charlotte), by two men, Randy Garcia and Bruno Macchiavello. Macchiavello is from Peru and was the executive chef at Villa Antonio, which is where he and Garcia met. Garcia grew up in the restaurant business (his family owned Villa Antonio) and his wife is Peruvian. The two men wanted to introduce Peruvian street food to Charlotte, and now Lake Norman. They also wanted to change the way people thought about authentic ethnic food. Their goal was to introduce customers to exceptional ethnic food in a modern atmosphere. The interior of Viva Chicken goes beyond typical fast casual

restaurant concepts. Sleek finishes, a huge floor-to-ceiling chalkboard wall, and ‘house music’ fill the restaurant. Counter service is fast and seating is plentiful (but beware, there is a line out the door some nights and most weekends). The main attraction at Viva Chicken is well, chicken—but not your average poultry. Fresh whole chickens are steeped in an herby, aromatic marinade for 12 to 24 hours, and then slowly roasted in a charcoal rotisserie oven (handmade in Peru) until they yield crispy skin and juicy meat. From there, Viva Chicken offers sandwiches (on freshly baked ciabatta) or wraps (using sundried tomato wraps), entrée salads, and bowls—all of which can feature their signature chicken or remain vegetarian. The Quinoa Stuffed Avocado ($8) (the dish the women at the beginning of the story had) is wildly popular. Two halves of a ripe avocado are stuffed with organic quinoa salad and sweet

red pepper. It’s filling enough as is, but can also be topped with shredded rotisserie chicken for added flavor and dimension. The Viva Chicken Salad ($8.25) is piled with fresh romaine and kale, pulled rotisserie chicken, avocado, feta cheese, onions, tomatoes, and cucumbers with a balsamic dressing. Arroz Chaufa is a bowl filled with rice fried with sweet red peppers, green onions, egg, Peruvian soy sauce, and fresh ginger. At $6.95, it’s a steal. The Inca Wrap features canary beans, rice, avocado, salsa Criolla (lime-marinated onions and tomatoes) swaddled in a sundried tomato wrap and comes with your choice of one side for $7.25. If you want to go the classic route, order a quarter of a rotisserie chicken ($8.75/comes with two sides), a half ($12.75 with two sides), or a whole ($21.95 with three large sides—enough for a family of four). For sides, choose between sweet potato fries, fried plantains, cilantro-infused rice, and Peruvian chicken soup, to

All of these authentic and delicious dishes can be complemented by customers’ choice of signature sauces: Aji Amarillo (made from a mild, yellow Peruvian pepper, and the restaurant’s most popular), Huacatay (made from black Peruvian mint, cilantro, and jalapeños and packs a punch) or Roasted Rocoto (a red Peruvian pepper that is nicknamed the “Gringo Killer” but isn’t as scorching as the nickname suggests). Each one of these sauces is practically slurpable. They are as flavorful as they are new to most. Viva Chicken ups the ante in fast-casual dining, both in delicious flavors and in their sleek interior décor. Dining in offers a cool respite from the busy Birkdale area, while getting a meal to go offers relief for home kitchen cooks. Either way it’s a win. LNM

When you walk into Note + Nest Paperie, the eye-catching gifts and eclectic décor are the first things that jump out. Upon further exploration, this newly expanded store is so much more than your average stationery shop. From the owner’s favorite planners, which come in every color and pattern imaginable, to the new Maika Goods canvas totes, getting lost in the options isn’t difficult. With the store’s rebranding in March, Tracie Stier-Johnson decided to make it her own. By changing the name from Papaya Paper and Gifts to Note + Nest Paperie, she wanted to highlight more of the stationery aspect of her business. To do that, she brought in more products and designers to the custom print shop. After acquiring the store next to hers, Stier-Johnson repurposed the old tennis shop and turned it into an area for her staff to meet with clients. The added retail space allows her to carry even more brands and have the room to display the new gifts, designers, and stationery.
