elcome to your May ELLE - The Green Issue. Here at ELLE we like to celebrate things that matter. In December of last year, we had the Feminism Issue. The response and awareness we got from that magazine was mind blowing. This is one of the reasons why we wanted to create the Green Issue. ELLE lives by the belief that we should all live lightly on Earth, and that we should all do our best to make the planet we live on, more green. In this issue, we want to bring awareness to ways that we can all be eco-friendly. One of the most effective things an individual can do to lower their carbon footprint is to avoid all animal products. We know that not everyone agrees to living a vegan or vegetarian lifestyle, and we are not going to try and force anyone to live that lifestyle either. Katy Hemming x

Wash your clothes in cold water. A massive 85 percent of the energy used to machine wash clothes goes to heating the water.

After battling a chronic illness, Ella started to maintain a healthy lifestyle and wanted to embrace ‘the incredible foods that your body loves’. Ella created the highly popular blog ‘Deliciously Ella’, to share the healthy and organic recipies that she creates.

It was in 2011 when Ella Woodward was diagnosed with the rare illness Postural Tachycardia Syndrome (POTS). POTS effects and breaks down the nervous system. It controls what happens in the body, such as how your heart works, your immune and digestive system. This dramatically affected Ella’s life and left her with substantial stomach pains, meaning she would eat anything that made her feel better – which would tend to be lots of ice cream. After taking medication after medication and spending her days in bed, Ella discovered the book Crazy Sexy Diet by Kris Carr. Kris Carr was diagnosed with an inoperable cancer and found that nothing was helping to cure the illness. It was only when she started eating a clean, pure diet that she discovered she could heal herself. With the thought of curing an illness, this book inspired Ella and made her completely change her lifestyle. By slowly cutting out meat, dairy and gluten, Ella began to change her diet.
#ELLEINTERVIEW Although the food choices improved, Ella found she was not quite the chef and couldn’t actually fix up a decent meal. Consuming meals such as brown white pasta, porridge and gluten-free bread wasn’t proving satisfying, and this is what led Ella to play around and create different meals. This is where Deliciously Ella was born. Having a blog meant that Ella could write down and keep on track of the new meals she tried and created. It also meant she kept motivated. Using the blog as a form of diary, she kept on track of meals and inspired her to create more. With the intention of only herself using and viewing the blog, when it gained 70k followers in just a few months, Ella knew she was creating something big. Uninterested in the fame, Ella simply wanted to have the blog to “inspire people to adopt her way of life and hope it can help others, like it helped her”. With the fame of her blog growing, Ella decided to launch an app to make the recipes easier and accessible for “Whizzing up a people to reach. Ella wanted to create the book to share even more recipes with even more people. Ella has even begun training as a nutritionist, to make sure she has the utmost knowledge on all her food and recipes. Ella shares what she eats like in the day: “I start the day with a green smoothie and follow that with salad bowls, hearty soups, kale chips and homemade hummus”. “Whizzing up a smoothie in the morning is incredible too as it always starts you off on the right track for a positive day, while giving you an abundance of goodness and energy.” It isn’t just healthy eating and a balanced diet that keeps Ella in shape, physically and mentally. She also engages in daily yoga and Pilates exercises. Ella’s success continues and continues, with over 400K followers on Instagram and nearly 500K followers on her blog, it’s clear to see a healthy lifestyle is clearly growing over the nation.

#adayinthelife Sweet potato brownies, tofu fajtas and mushroom roast dinner’s Helen discusses her life as a vegetarian.
I
t’s a sunny spring day and Helen walks into this beautiful garden, wearing biker style leather boots. Leather boots? Do vegetarians wear leather? The thought sprung to mind. Helen tells me how it’s vegans that tend to avoid leather, vegetarians aren’t as strict on their lifestyle. Five years ago Helen became a vegetarian. Although extremely fond of animals, this was not the reason for her lifestyle choice. After continuously becoming ill after eating meat, Helen decided it was time to cut this nutriment from her life. WHAT WAS IT LIKE ADJUSTING TO A VEGETARIAN LIFE? It wasn’t actually as bad as I thought it’d be. I have been cooking for years so I have had quite a few delicious vegetarian recipees up my sleeve. The only problem I did have, was that I substituted meat with carbs a lot. So I would be eating a lot of pasta, rice and potatoes, which left me very bloated all the time. DID YOU SEE THE BENEFITS OF YOUR NEW VEGETARIAN DIET QUICKLY? Yes, except from the bloating which I first experienced, I never had stomach cramps or pains which meat used to give me. I have also lost weight from eating differently. This wasn’t one of my intentions of this new diet, but I am not complaining about that. WHAT IS A TYPICAL DAY OF EATING LIKE FOR YOU? For breakfast, I’ll either have butter on toast or

yoghurt and granola. I’ll have those with a cup of tea. For lunch I’ll have a salad or some sort of rice dish. For snacks, I really like those ryvita breads and I’ll have them with avocado or butter. For dinner I eat so many different things it’s hard to pin point a particular meal out. I would say that sweet potato chilli is my favourite meal. I also love mushroom roast dinners. It’s basically a normal roast dinner but I’ll make mushrooms stuffed with something, as a replacement for meat. DO YOU MISS OUT ON NUTRIENTS, SUCH AS PROTEIN, FROM CUTTING MEAT PRODUCTS OUT? No not at all. I eat a lot of foods such as quinoa, nuts, chickpeas and tofu which are all great protein sources. I also still consume milk and eggs. I know some vegetarians and vegans are a lot more strict than me. Every vegetarian is different and has chose this lifestyle for different reasons. ARE THERE ANY FOOD GROUPS YOU AVOID? Not particuarly. I try to cut down on carbs, but I don’t avoid them at all. Just like you need fruit and vegetables everyday, you need carbs too.
#ELLEINTERVIEW WHICH INGREDIENTS WOULD YOU SAY A VEGETARIAN SHOULDN’T LIVE WITHOUT? Coconut oil, sweet potatoes, quinoa and tofu. I cook everything in coconut oil, it’s so healthy and also makes everything taste amazing.

YOU STATED THAT YOU EAT SO MANY DIFFERENT MEALS. WHAT ARE YOUR FAVOURITES TO MAKE? Oh the decisions! Tofu fajitas are lovely. I don’t just cook for myself, I cook for my family too (who are not vegetarians). So if I am making them meat fajitas, I’ll create myself some veggie versions. Like I said, I am a vegetarian due to health reasons and not because of ethical reasons. Therefore making meals with meat for other people is fine for me. Asparagus risotto is also a big favourite of mine, it’s so filling and tastes great too. It sounds weird, but sweet potato brownies are also a big favourite of mine and they are just divine. SUPERFOODS ARE BIG IN THE WORLD OF VEGETARIANS AND VEGANS. WHAT ARE YOUR TOP 5? Advocados, quinoa, blueberries, pomegranates and cashew nuts. I add pomegranates to everything; salads, smoothies, porridge etc. ARE THERE ANY FOOD BLOGGERS OR CHEFS THAT YOU WOULD RECOMMEND? I love Jamie Oliver and Delia Smith, they both have great vegetarian recipies. Sprouted Kitchen is a vegan food blog which I get so many recipies from. The Veg Space is also another blog I would highly recommend. FINALLY, ARE THERE ANY TIPS OR ADVICE TO WOULD GIVE TO PEOPLE WHO ARE THINKING ABOUT A VEGETARIAN LIFESTYLE? Just do it the way that’s easier for you. Small changes at a time makes it easier to adapt to a new lifestyle, that’s what I learnt.
