Freda Kelly's Tea Biscuits Fenelon Falls, Ontario Every year, Maryboro Lodge celebrates their community heritage by offering a formal Afternoon Tea. With talented pianists that join on the first piano in the Village of Fenelon, a 1868 Chickerning Square Grand, this event is perhaps one of the longest running social traditions in Fenelon Falls. Maryboro Lodge was built in 1837 making it one of the oldest buildings in Kawartha Lakes. It was first built as a country estate for James Wallis, an entrepreneur, business man and lay minister (before a minister arrived in Fenelon Falls), who arrived in Canada, from County Cork, Ireland in 1834.

Recipe Maryboro Lodge Collection In a small bowl, mix: 1/2 tsp. baking soda in 1 cup buttermilk (or sour milk)- set aside In a separate bowl, combine: 2 cups all- purpose flour 1/4 cup sugar (optional) 2 heaping tsp. baking powder 1/2 tsp. salt 1/4 cup shortening (blending with a pastry blender) Mix liquid with dry ingredients until just combined and roll out. Cut into biscuits. Cook for 10 minutes in 450 degree oven.

Nana's Fudge

Fenelon Falls, Ontario

Ingredients: 2 cups granulated sugar 1/4 cup margarine 16 marshmallows (Large) 1 small tin of evaporated milk 1/4 tsp salt 6 oz Chipits (chocolate or butterscotch) 1/2 tsp vanilla 1/2 cup chopped nuts

This is my Nana, Barbara Hooey's, recipe for fudge and we make it every year at Christmas time.

Combine first 5 ingredients in heavy pot. Heat till bubbling completely, continue to cook for 5 minutes. Remove from heat, stir in Chipits until melted, then add vanilla and nuts. Pour into greased pan. Cool.

Although we all lived in the Greater Toronto Area we had a family cottage in Fenelon Falls for as long as I can remember. Some of my best memories with my Nana and Grampa are time spent at the cottage.

The Lady Hughes Chapter, I.O.D.E. Coronation Cook Book

The Lady Hughes Chapter of the Imperial Order of the Daughters of the Empire (I.O.D.E.), Lindsay, was named for Lady Mary Hughes. Formed in June 1943, members of the Lindsay chapter, while working under the chapter moto, ‘We work well, who work willingly,’ celebrated their tenth anniversary by compiling a list of their favourite recipes. Lady Mary Hughes was born Mary Emily ‘Nellie’ Burk to farmer and Liberal MP for Durham West Harvey William Burk and Roby Williams in Durham County in 1852. After marrying Sir Samuel Hughes in 1875, Lady Mary devoted her life to her three children, Mary Caroline ‘Roby’, Aileen ‘Tweet’ and General Garnet Burk Hughes. She also dedicated much of her time to teaching, community engagement and fundraising for causes that were close to her heart.

Ingredients: 3 cups finally shredded green cabbage 2 cups finally shredded purple cabbage 1 cup finally shredded carrot For the dressing, in a medium mixing bowl combine: 1/2 cup mayonnaise 1 tablespoon white vinegar 1/2 tablespoon cider 1/2 teaspoon celery seeds Salt and pepper to taste Refrigerate.
