Richard wrote an A plus essay titled, “My Favorite Day.” He describes his favorite day, “moving day, when we say goodbye to the valley and turn our faces toward the hills. We always get an early start. Our chickens, dog and cat are loaded in the pickup with our trunks and covered with canvas. Behind the pickup, in a trailer is the family milk cow and my Hereford heifer. The passenger car is also loaded very heavily with books, dishes, and food. Now is the last moment to glance around to see if everything is in. Then we are off in a cloud of dust. The first leg of our journey is through fields and desert lowlands, but after Florence Junction is reached, there are hills and mountains to climb for nearly two hundred miles. In due time we reach Globe. We all feel conspicuous while going through the city limits when the rooster crows, cat meows, dog barks, and the cow moos. We tough it out and go on towards Show Low. The half way mark between Globe and Show Low is Salt River Canyon where the highway winds across the masterful gorge. After going down about a mile we reach a turnoff where we park the cars. Here we take our lunch and walk to a lookout point overlooking the whole canyon. Our fried chicken tastes very good as we feast our eyes on the wonderful engineering of the road belowBeforeus.reaching Show Low we have long since left the cactus behind and come into the region of tall pines and cool breezes. All of us, as well as our furry and feathered passengers, are glad to be out of the heat. But many miles lie between us and our destination. The road is slower because it is unpaved but it does not seem tedious for there is so much to see. At last, around a bend in the road, we see the small town of Heber with its rambling untidy streets and struggling

My Favorite Day
“About the most beautiful spot I know is the winding foot path that leads down our creek. Imagine a thick bed of clover so green and cool you can hardly resist stopping to touch its freshness. Mountain cottonwoods border the creek and clumps of willows surround you. The little path strays in and out of the trees, sometimes close to the babbling creek and at other times losing itself in the high clover. An old gnarled log at the side of the path invites you to sit upon it while you watch the humming birds dart through the air and the red headed woodpecker busy at his tapping. Finally, the little path crosses over the creek on mossy stepping-stones. Here, if you are quiet, you may see a wild turkey and her brood happily hunting insects and seeds. Over it all, arches a bright blue sky with fleecy white clouds in the distance above the pine-forested hills.”
Five generations of the Gibson family have made this journey and we all feel the same about our mountain home. It is a gift from God, a place to be treasured and respected. Dad described it spectacularly in a second essay titled, “My Favorite Spot”.

The clergy has had a great working relationship with the Fire and Sheriff’s Departments for years, but there was a problem. Unfortunately, uncoordinated communication regarding food, shelter, clothing resulted in duplication of effort and unnecessary funds spent. As well as putting some church staff in potentially dangerous situations. Many of Heber-Overgaard’s good Samaritans stepped up on a regular basis to non-emergency situations.

By Rosalie Mueller In 2021, our Fire Chief Dee McCluskey appealed to our community for help in two areas.
2. Non-Emergency Response for Car Fuel, Car Repair, Food, Clothing, Short Term Housing and Utilities.
Chief McCluskey had a vision. His vision was likened to a wheel with a hub, whose mission it was to link local nonprofits, businesses and individuals into a cohesive community team, one ‘wheel spoke’ at a time. HOCRN (the hub) would be the initial contact in a person’s situation. HOCRN working directly with the Fire and Sheriff’s Departments would respond to all emergency and non-emergency situations in Heber-Overgaard. HOCRN would then refer said person(s) to the best resource(s) available using their long and diverse list of local HOCRN members.
The HOCRN telephone line would be manned 24/7 by a HOCRN staff member responsible for alerting the appropriate local HOCRN resources (members). In March 2022, this vision became a reality, when HOCRN, Heber Overgaard Community Resource Network became a 501(c)3. Even before HOCRN became an actual entity, it worked with the Fire Department to streamline two long time community projects. For years, many churches, nonprofits, businesses and individuals had separately prepared Thanksgiving and Christmas meals to be served at their locations or for home delivery. These good Samaritans bought clothing and gifts that they delivered to many local families struggling in the current economy and shut-ins in our community.

Again, there was a problem. Due to uncoordinated communication between these good Samaritans, help was duplicated and there was habitual abuse by some recipients of services.
In the fall of 2021, the fire department invited everyone to register their organization’s holiday recipient’s names, so the names could be entered into a central data base at the Fire Station. Each organization was still responsible for their organizations recipient’s names. This action alone revealed duplication of names. By addressing this issue, we reduced redundancy and wasted funds and served 70 families and shut ins. This Fall, HOCRN is again fighting duplication of effort by asking everyone who offers Car Fuel, Car Repair, Food, Clothing, Short Term Housing and Utilities to register as a HOCRN member. Together we can share the load and streamline the process. Come to our next HOCRN meeting at the H-O Fire Station held the 2nd Tuesday of each month @ 2pm.

Directions Sift the flour, baking powder and salt into a bowl. Rub in the cooking fat until mixture resembles fine bread crumbs. Gradually add enough water to form a dough. Wrap the dough in plastic wrap and let it sit 1 Workinghour.with half the dough at a time, roll it out into a square, keeping it as even and thin as possible. Cut into 3 inch squares. When both pieces of the dough have been rolled and cut, set the squares aside. Heat the oil for deep frying to 375 degrees, add a few pastry squares at a time until golden brown, turning once. Serve with your desired honey or cinnamon sugar happiness.
These golden pillows of puff pastry are wonderful with honey or plain with the soup. | Makes about thirty Ingredients 2 cups all purpose flour 1 tsp baking powder 1 tsp salt 2 tbs lard or margarine 3/4 cup warm water oil for frying honey for drizzling, cinnamon sugar for sprinkling, creme fraiche or whipped cream.

Not Quite Ready We know that September normally marks the beginning of caramel apples, cranberries, pumpkin spice and everything nice, but we aren’t ready to let summer go yet. So we went for Mexican food! Did you know the September is also Mexico’s Independence Day? September 16 actually, it marks the day Mexicans became independent from Spain in 1810.
Tlalpeno-Style Soup
This simple chicken soup originates in Tlalpan, a suburb of Mexico City. Serves 6 Ingredients 6 1/4 cups chicken broth
1/2 dried chipotle chile, seeded 2 skinless, boneless chicken breasts or thighs 1 medium onion , chopped 1 tbs of garlic minced 1 medium avocado 4 scallion, finely sliced 14oz can of chickpeas, drained salt and pepper to taste 3/4 cup grated cheddar cheese 1 lime quartered Directions Pour stock into a large pot and add the dried chile, onion and garlic, bring to a boil. Add the chicken breast, then lower the heat and simmer for 10 minutes or until the chicken is cooked. Remove chicken and let it cool a bit and shredUsingit.an emulsifier, or transferring to a blender, blend stock until smooth and return stock to pot. Cut the avocado into 3/4in pieces. Return to low heat, add the avocado, scallions and chickpeas. Add salt and pepper to taste, add a squeeze of lime and shredded cheese and serve! This soup is so simple and versatile. The above is the basic recipe but we found a few variations that include adding potatoes, carrots, zucchini, cilantro, radishes and even rice.
These fried burritos are a common sight on the street stalls and in cafes along the Mexican border with Texas but are not so common further south, but are yummy!

Chicken and ChimichangasTomatillo

It may not actually be Mexican but really, how many or can you make. Plus it just looked refreshing. Mix well, let chill and enjoy!
Palomas
8x8 - 10 in flour tortillas oil for frying salt and pepper to taste Directions Put chicken breasts in a large saucepan, add water just to cover and the dried chile. Bring to a boil then lower to a simmer for 10 minutes or until chicken is done, take out chicken and let it cool to shred. Take chile out and finely chop. Heat oil in a frying pan. Saute the onions until translucent, then add the garlic and spices and cook for 3 more minutes. Add the tomatillos and pinto beans. Cook over medium heat for 5 minutes, stirring constantly to break up the tomatillos and some of the beans. Simmer for 5 minutes and then add the chicken chile, salt and pepper to taste. Soften the tortillas to make more pliable by either wrapping in aluminum and setting over boiling water or wrap in a paper towel of microwave for 1 minute. Spoon 1/8 of the filling of the center of the tortilla, fold in both sides, then fold the bottom of the tortilla up and the top down to form a neat parcel. Secure with a toothpick.
Serves 4 Ingredients
