Less than eight weeks since its official opening on August 12, 2023, Press & Co. has captured the hearts of locals and tourists alike as they’ve stopped in (repeatedly) to experience the Eastern Shore’s new health-focused café.
Press & Co. is open six days a week serving an organic-based menu of cold pressed juices, smoothies, coffee, breakfast, lunch, cocktails and more. The restaurant’s mission is to impact the community by creating a gathering place
“I had a calling to create something impactful that everyone in our community could enjoy and be proud of. As a small town, we don’t have all the same kind of amenities and health alternatives as bigger cities, so being able to bring this to life is so fulfilling. I could not have made it happen without the help of my amazing team, and especially my Operating Parnter, Alex Pikul. As fun as it is to welcome new faces every day, it is even more rewarding to see the same faces there over and over. A hangout that locals felt was ‘their spot’ was always an integral piece of the vision,” said Kimberly Cox, owner.
“It has been humbling to hear so much postive feedback about the energy and kindness of our staff, quality of our food, and an atmostphere they describe as feeling like they’ve been transported to South Florida or LA.”
Kimberly Cox, owner of Press & Co., got inspired to create a café concept after embarking on her own personal health journey. Years ago, she realized she had not been feeling like herself, and she visited with numerous healthcare providers who determined she was medically “just fine.” Unsatisfied, she elected to take matters into her own hands. She educated herself on all things health and wellness through books, podcasts, conferences and befriending knowledgeable people. As a result of her efforts, she has not only cured what ailed her though nutrition, but has also impacted countless others by educating and inspiring them.
When Kimberly travels with her family, her favorite thing to do is to seek out fantastic healthy places to eat since there aren’t currenty many options in our hometown. These experiences planted the desire in her heart to cultivate a place like this in her own community.

After the absolute scorcher of a summer we had, I cannot wait for fall weather. I know I am not alone in this either. Just this morning I walked outside and there was a tiny hint of possible coolness. I was absolutely giddy! Even my dogs seemed to have a little extra pep in their step. There is so much I love about this season, like the milder weather, long sleeved t-shirts, boots, buying pumpkins in all different shapes, colors and sizes and how the sun starts to cast a more golden hue in the early mornings and late afternoons.
Autumn also brings with it a lot of activity. On top of the already exciting fall sports we have fall festivals, fairs, pumpkin patches, trunk-or-treats and so many other events for families to enjoy together. So much so that we have dedicated an entire section of this month’s issue to sharing these events with you! The Fall Festival Guide is a perfect place to start planning your family outings. Don’t stop there though. Make sure you also flip over to the Family Calendar for even more local events.
Maybe you are like me and love to host events. If throwing an awesome Halloween party is on your docket then you will definitely want to check out Cherie Gough’s feature in this issue, FaBOOlous Fun for Everyone: Halloween Gatherings that Impress. The great news about her ideas is not only will they work for small or large gatherings, but for most ages too! If your group loves to dress up in costumes, even better!
One of the tough parts of Halloween is what to do with all those treats! It is certainly reasonable (and probably smart) to set a limit on the allowed candy consumption. Make sure to express it as a “health” issue, not a “weight” issue. Kids are smart and very intuitive so if you are making it a weight conversation, they will pick up on it. However, having a healthy diet is more than appearance. It is about the way you feel, perform in school, etc. As Lita Chatham discusses in her feature Cultivating a Positive Body Image for Healthy, Confident Kids, we need to refocus the conversation that media is having with our kids when it comes to body image.
Once you decide an appropriate amount of candy (including the amount us parents sneak out after they go to sleep) you will probably still have candy left over. Did you know there are places you can donate your unwrapped candy? A quick Google search will lead you in the right direction. Some Ronald McDonald houses will accept donations, there is a Halloween Candy Buy Back program some dentists participate in, also a program called Treats for Troops, and you can check with local food pantries and retirement/nursing homes. This makes trick-or-treating even more special when you can do something fun with the goodies after!

An excellent tool to help parents with “overly emotional” children is the book, Beyond Behaviors: Using Brain Science and Compassion to Understand and Solve Children’s Behavioral Challenges by Mona Delahooke, PhD. This article summarizes some of her main points and will hopefully help parents respond to children’s “bad behavior” in a more emotionally healthy manner.
The first thing parents must understand is that behaviors can be divided into two main categories: Top-Down and BottomUp Behaviors. Top-Down Behaviors require intentionality, thinking, and continuous effort. Bottom-Up Behaviors are reflexive, selfprotective, automatic responses that do not involve conscious thought. Bottom-Up behaviors occur when a child does not feel safe.
One of the worst mistakes a parent can make is to assume that a Bottom-Up Behavior
(response to feeling unsafe) is a Top-Down Behavior (intentional “bad” behavior). Delahooke uses three colors to help parents understand if a behavior is Bottom-Up or Top-Down: Green, Red, and Blue. Parents can learn to use body language to assess the pathway the child was in when the behavior occurred.
In the green (ventral vagal) pathway, we can successfully communicate, play, and learn. In the green pathway people feel safe, connected, calm, and social. People in the green pathway display a relaxed but interested body posture, look directly at people, smile frequently, and respond appropriately to changes in the environment.
In the red (sympathetic) pathway of the automatic nervous system (fight or flight), an individual feels threatened. People in the red pathway typically display a loud tone of voice, eyes that quickly look around the room, tense muscles, aggression, and clenched teeth. They are often attempting to take over a physical space by moving objects and people.
In the blue (dorsal vagal) pathway, the person feels extreme danger. People in the blue pathway display deceleration of heart and breathing rate, slow movements, eyes that look at things more than people, little curiosity, and a decrease in expressive language. In this pathway, people are attempting to conserve energy to survive.
The most important thing to learn and remember from this article is that all people, especially children, are logical, intentional, and teachable ONLY in the Green Pathway. Parents, please do not attempt to teach your child something when YOU or YOUR CHILD are not in the green pathway. When we are not in the green pathway, our likelihood of a successful and productive parenting interaction diminishes drastically.
When we see our children behave in a manner that we dislike, we must become curious instead of judgmental. Start by asking:
1. What body language is the child displaying?
2. Is this a Top-Down or Bottom-Up Behavior?
3. If this is a Bottom-Up Behavior, how can I help my child feel safe? What can I do to help them feel safe in this situation in the future? What can I do to prevent this response in the future?
4. If this is a Top-Down Behavior, how can I help my child practice a more appropriate response? How can I help my child learn from this experience?

USS ALABAMA Battleship Memorial Park will be hosting a Blackbird Expo October 13-15 in the Medal of Honor Aircraft Pavilion. This rare event will include some of the last former pilots and mechanics of these spy planes. They will hold discussion panels and break-out sessions discussing A-12 and SR-71 Blackbirds. These veterans will tell stories, hold demonstrations, give 360° tours of the cockpit (open for this event only) and more. The event is included with general admission. The 35th Annual Jubilee Festival hosted by the Eastern Shore Chamber of Commerce and the City of Daphne is set for October 21 and 22, 2023 from 10am – 5pm each day in Lott Park, Olde Town Daphne.

With a goal of creating better patient and family experiences, USA Health Children’s & Women’s Hospital is seeking new members to expand its Family Advisory Council.
The group, which meets monthly, was established in recent years to more fully understand the needs of patients, families and caregivers who spend time at the region’s only hospital for children and women, as well as to streamline communication between parents and hospital leadership, among other goals. Rachel Stanley, a nurse in the neonatal intensive care unit and the parent of a child with long-term healthcare needs, serves on the council and says, “We are looking for families who have children or a child with complex health issues who either frequently visit our hospital or see multiple disciplines within the health system.” Advisory councils such as the one at Children’s & Women’s Hospital promote effective and respectful partnerships among patients, families, and clinical staff members, while increasing understanding and cooperation among those groups.
Those interested in joining the council can contact Kim Wagner, who coordinates the Mapp Child & Family Life Program at the hospital, by emailing kwagner@health.southalabama.edu. The application process includes an interview and background check, Wagner said. Family members are asked why they want to be part of the teamm and how they can contribute.
The 14th Annual Prodisee Pantry Turkey Trot runs through Old Towne Daphne this Saturday, October 28th with both a certified 5K Race and a 1-mile Fun Run/Walk. This year’s Family Friendly Festival is sure to be fun, complete with seasonal games, live music, and of course treats for the kids!
The 5K Race starts at 8 a.m. on Main Street at City Hall. It follows a fast course as it winds through Old Towne Daphne. The Fun Run/Walk begins at 9 a.m. Walkers are encouraged to participate in the Fun Run. We can’t forget about our teams! Prizes will be awarded for largest team, most funds raised, team spirit, most cans collected, cutest booth and more. So grab some friends, start training, and join in the fun. Proceeds from the Turkey Trot benefit Prodisee Pantry, Baldwin County’s largest nonprofit emergency food pantry. Turkey Trot participants really are a TURKEY…for a family in need! This event allows us to provide food insecure families all the fixings for a traditional “Norman Rockwell” type feast. This community ministry brings hope by feeding physical, emotional hunger! Volunteers provided fresh local produce, meats, eggs, bread, canned staple foods and warm smiles to 9,731 families last year. That equates to 23,000 individuals who had healthy food to eat.
The Turkey Trot provides funding for Prodisee Pantry’s Thanksgiving project. Last November, 1,300 families were blessed with nine tons of turkey and over 18 tons of special holiday foods in addition to the weekly emergency food allocation. Each registration equals a turkey! Fairhope Educational Enrichment Foundation (FEEF) hosts, Jubilee- Party at the Pavilion to again raise funds for Fairhope Schools. For over 27 years, FEEF has promoted innovative and creative learning for all Fairhope public school students. With the help of the community, FEEF has invested millions of dollars to promote STEAM (Science, Technology, Engineering, Art, and Math) in your schools. Spanish Fort High School student, Caroline Pierce, was named Baldwin County’s Distinguished Young Woman for 2024. Pierce is the daughter of Trey and Jada Pierce of Spanish Fort.
In addition to the title, Caroline Pierce won a $2,500 cash tuition scholarship, $300 gift certificate to Anthony’s Bridal, $100 gift certificate to M&F Casuals and a $100 gift certificate to Rachel Lindell Photography. She was also the preliminary winner for the interview portion, earning additional scholarships funds.
Rounding out the top five included Maddi Heath, Spanish Fort High, first runner-up; Anna Bowler Conyers, Fairhope High, second runner-up; Phoebe Cisneros, St. Michael’s Catholic High School, third runner-up; and Sophie Walters, Spanish Fort High, fourth runner-up.
Participants from across Baldwin County showcased their scholastic achievements, talent, fitness, interview skills and presence and composure, earning thousands of dollars in scholarships along the way.
The judging evaluations are based on five categories: scholastics, interview, talent, fitness and selfexpression. Winners of the preliminary talent awards included Maddi Heath and Faithlynn Swanson. Emily Byrd and Maddi Heath picked up the wins in the fitness category, each earning cash tuition scholarships. In the self-expression category each participant provides an answer to a question posed prior to the opening of the program. The preliminary winners in this category included Ava Davidson and Zoie Pratt. In addition to the preliminary competitions held on stage the night of the program, participants also take part in interviews and scholastic categories. Caroline Pierce was named interview winner and Anna Bowler Conyers won the scholastic preliminary award. Other awards presented included: Zoie Pratt, the Has Been Scholarship; Olivia Creel, Coastal Alabama Community College; and Zoie Pratt, Be Your Best Self. The CACC scholarship and Be Your Best Self awards were based on essays written by the participants. Anna Bowler Conyers also received the Bob & Sue Stanley Spirit of DYW Award. This special award is voted on by the fellow participants and is named in memory of two members of the Baldwin County DYW family. In addition to a cash tuition scholarship, the winner received a gift bag donated by the Downtown Girls of Bay Minette.
Program participants included Ava Davidson, Maddi Heath, Caroline Pierce, Emily Taylor and Sophie Walters, Spanish Fort High; Kennedy Hoskins, Heidi Tucker and Annalese Moore, Foley High; Anna Bowler Conyers and Melissa Fowler, Fairhope High; Emily Byrd and Allyson Bankester, Baldwin County High; Zoie Pratt, Daphne High; Faith Craig, Orange Beach High; Phoebe Cisneros and Olivia Creel, St. Michael’s Catholic High School; and Faithlynn Swanson, The Socratic Experience. Each participant received a $100 gift certificate to Anthony’s Bridal.
The University of Mobile presented multiple scholarships to participants during the program. The Presidential Merit Scholarship, valued at $56,000 over four years, was presented to Phoebe Cisneros, Anna Bowler Conyers, Faith Craig, Melissa Fowler, Maddi Heath, Caroline Pierce, Zoie Pratt, Faithlynn Swanson and Sophie Walters.
The Founder’s Merit Scholarship, valued at $48,000 over four years, was presented to Emily Byrd, Olivia Creel, Ava Davidson, Kennedy Hoskins, Annaleese Moore, Emily Taylor, and Heidi Tucker. The Belief in Community Scholarship, valued at $32,000 over four years, was presented to Allyson Bankester.

The Stapleton Bluegrass Festival is only a few weeks and has built a solid reputation as the premier Bluegrass event on the northern Gulf Coast as well as a can’t-miss festival for those who enjoy live music, great food, and family-friendly activities.

Did you know that approximately 4/100 children under the age of 18 have severe food allergies? And unfortunately, over the past 25 years, this number has continued to increase! So what now? In this day and age there is so much information and misinformation out there that it can get confusing. So today, I will simplify some of this data, what it really means for your child, and what to look for.
So yes, the number of severe food allergies is increasing. Now, I’m not talking about the one time your child ate something and threw up, so now you never give it to them again. Or when your child had strawberries, and the skin around their lips turned red for twenty minutes. And I’m not talking about parents who make food choices for their child based on preference, not an actual diagnosed allergy.
How do you know if your child has an allergy? Common symptoms include the onset of a raised red rash called hives, immedi-
ate vomiting and/or diarrhea, mouth or lip swelling, chronic eczema and/ or cough and wheezing. The hard part is it could be one or all of these. In addition, it could be caused by something other than a food allergy.
So what do you do? First, take a deep breath. Get out your phone and take a picture or video. Then, call your child’s doctor immediately for a plan. Typically, this involves giving an oral antihistamine followed by heading to their office or the ER based on the severity of symptoms. I like a picture or video because often, by the time you have given your child medication and arrived at my office, the symptoms have resolved, and it’s near impossible to diagnose the problem accurately. Sometimes, the symptoms are severe and require other medications like steroids, epinephrine, and even an overnight stay in the hospital.
How do you proceed as a parent? How can you prevent this from happening? Well, it’s tricky. In the past, the AAP developed guidelines that essentially recommended
holding off on highly allergenic foods like peanuts, eggs, and shellfish until two to three years of life. Now, new data suggests that introducing these foods earlier might reduce the chance of lifelong allergy! But, it’s complicated based on the presence of eczema and family history of food allergies, and there are different guidelines based on these findings. Ultimately, your best plan is to work with your child’s doctor to discuss these topics and develop a game plan. It can be overwhelming because social media and Google give you twenty different answers, making it hard to tell what you can trust. I recommend talking with a trained medical professional, not the blogger online who tells you all you are doing wrong! As parents, we must make many choices for our children- so bounce it off the doctor and not the internet.

Taylor Wood, a newlywed from the Eastern Shore, has earned the privilege of being our Eastern Shore Parents Teacher of the Month.
“I am truly so honored to receive this recognition,” Taylor said. “It is my goal to make an impact on my students and I never expect a reward or award in return. However, knowing that my students’ parents enjoy having me as their child’s teacher makes me so proud and excited.”
Taylor is currently in her 5th year of teaching after graduating from Troy University with her Bachelor’s degree in 2019. She is currently pursuing her Master’s through the University of West Alabama while she works full time at Stonebridge Elementary in Spanish Fort as a first grade teacher.
“My mom is also a first-grade teacher and I always loved listening to her stories, going to her classroom, and hearing of the difference she made in the lives of her students,” shared Taylor. “I changed my major to education during the first two weeks of college and I never looked back. I have always loved working with children and looked forward to the opportunity to impact them in the best way possible.”
One of the ways Taylor focuses on impacting her student positively is by creating a healthy and supportive classroom culture. She shared that she puts a heavy emphasis on building relationships
with her students so that they trust her when she encourages and guides them into finishing class work. She strives to relate the work they are doing to real life scenarios so they know the “why” behind completing the tasks at hand.
“The most rewarding part of being a teacher is the opportunity to make relationships with students and showing them their worth and value,” Taylor said. “I think this is one of the most important parts of being a teacher because we have a tremendous amount of time with our students for nine months of the year. Teachers get to decide what type of impact and changes we make on a child’s life during that time.”
Taylor’s teaching career is just taking off and we know many children’s lives will be impacted in a great way during her time in our community. However, her heart for encouraging others doesn’t stop with her students. She goes on to encourage new teachers, just getting started.
“My advice would be to make your own path as a teacher,” said Taylor. “Never stop learning and enjoy the process of teaching.”
Taylor and husband, Hunter Wood, just recently tied the knot in July. They are both local to the Eastern Shore and love being in this community. They enjoy working out, being outdoors, traveling and walking their dog, Murphy.

St. Michael is excited to announce senior Trey Bauldin as a National Merit Semi Finalist. Trey is one of more than 16,000 Semifinalists in the 2024 National Merit Scholarship Program. Over 1.3 million juniors in about 21,000 high schools entered the 2024 National Merit Scholarship Program by taking the 2022 Preliminary SAT/National Merit Scholarship Qualifying Test, which served as an initial screen of program entrants. The nationwide pool of Semifinalists, representing less than one percent of U.S. high school seniors, includes the highest-scoring entrants in each state. About 95 percent of the Semifinalists are expected to attain Finalist standing, and about half of the Finalists will win a National Merit Scholarship, earning the Merit Scholar title. All of these academically talented semifinalists will have the opportunity to continue in the competition for more than 7000 National Merit Scholarships worth nearly $28 million that will be offered next spring. We are proud of Trey, and wish him the best of luck!

Students at Bay Minette Elementary School were treated to a special visit from Police Chief Al Tolbert and K9 Officer Jax. The duo visited numerous classrooms and students and faculty enjoyed the interactions with Jax. Chief Tolbert said it was a great day spent with students and teachers. Jax joined the Bay Minette Police Department in 2019. The black lab is trained in narcotics detection and tracking. The department was able to acquire Jax thanks to generous donations from local businesses and individuals. Chief Tolbert said they plan to visit other local elementary schools and nursing homes in the coming weeks.

The Ty Foundation made a very special delivery to Baldwin County High in celebration of a very special day: Ty’s birthday. The foundation honored his legacy by supporting a place that was very special to Ty, the BCHS Tiger Den. Since his passing, teachers have shared with his family Ty’s love for this special place on campus. When he would get out of class early, Ty would often be found in the Tigers Den or playing basketball with the students during P.E. Taking part in the presentation included BCHS teacher Jeremy Sewell, Sherrie Parker, Hunter Smith, Kam Drinkard, Lilly Joiner, and Daphne Stamps. Birthdays were always a special day for Ty because he received all the attention at his Nanny and Pawpaw’s and he also got the cookie-cake he wanted, according to his mom Daphne Stamps. “So, in Ty’s honor we proclaim today to be a SPECIAL day at The Ty Foundation. This morning, we honored our
favorite blue-eyed baby boy by shining his light and spreading his love in our community,” Stamps said. “There is no doubt that Ty is guiding us as we shine his light. We can only imagine he is smiling down and beaming with pride.”
The Ty Foundation was established in memory of Ty Drinkard who was tragically killed in an automobile accident on Father’s Day 2020. Bayside Academy senior Georgia McInnis has been named a WKRG Scholar Athlete of the Week. The segment will air on WKRG News 5 this afternoon at 4:00 p.m. Georgia has a 4.11 GPA and is a member of both the National Honor Society and the Math Team. As a junior, she took both AP Calculus BC and Advanced Physics. She is a co-founder of the baking club, is a member of the Key Club and the Student/ Faculty Advisory Committee, and participates in the pickleball club. Georgia plays on both the varsity volleyball team and varsity tennis team at Bayside. As a member of the varsity volleyball team, she helped bring home Bayside’s 21st consecutive state championship with the winning kill. She is the daughter of Christina and Tim McInnis.
Mrs. Brown’s Pre-K at J. Larry Newton School enjoyed a morning nature walk. The students used their sense of sight, hearing, touch, and smell. The student’s recorded their findings by drawing pictures and made the connection that chicken is a source of food, which can be tasted.

Walking rainbow teamwork science with Renaissance School! The rainbow paper towel experiment teaches basic scientific concepts. When the paper towels are rolled up and placed between two jars, they exemplify capillary action, which is how liquid can move up something, rather than follow the usual pull of gravity and pull down.
FF is for firefighter! Stonebridge Elementary students exercised their fine motor and letter recognition skills by putting out letter fires! Pre-K is so much fun at Stonebridge Elementary!
The lunch staff of Baldwin County High School received a 100% health rating! These ladies go above and beyond to maintain the highest standards possible in food safety and facility sanitation all while providing amazing service to students in Baldwin County!!
Recently, the Perdido Cross Country team participated in its first meet at Graham Creek Nature Preserve. Perdido had five male runners in the top 20 in all Baldwin County schools. The team finished second in all divisions coming in behind Spanish Fort Middle. Gavin Brandt was Perdido’s top finisher in 3rd place overall out of 140 runners. The team is coached by Craig Canaan.

Mrs. Samry’s students at Daphne East Elementary worked in small teams to create a pyramid of cups. The challenge was they couldn’t touch the cups with their hands. They could only touch the strings attached to the elastic. It was such a fun, team-building activity! The students are learning to work as collaborative team members.
Marching band season and football season are back! The Fairhope Pirates and the Spanish Fort Toros opened the season at Spanish Fort High School. Congratulations to both the bands for wonderful performances. Both bands are led by female band directors. The first week of the Spanish Fort Middle School Focus Group was a huge success! These students have the most amazing insight and information relating to what middle schoolers experience on a daily basis. These students provide such accurate info and truly share the truth! The goal is to help them make connections and provide them with the safest environment where learning is at the forefront. Thank you Spanish Fort Education Enrichment Foundation for providing the lunch and drinks!
“I think, as moms, ‘what’s for dinner’ is a truly underrated stress. It makes me think of that saying ‘who knew the hardest part about being a mom would be figuring out what to cook for dinner, every day, for the rest of your life,’” shared Stephanie Hanway. “I tend to joke about it, but it really can feel like a full time job!”
Stephanie and her husband Tyler have been married for 10 years, celebrating their wedding anniversary this month! The couple and their boys, Lincoln (7) and Nash (4), love living in Old Town Daphne and spending time together outside.
“We have a love for all things water, including swimming, fishing and getting out on our 1970 Stauter Built boat,” Stephanie said. “Our boys are their happiest when on the bay armed with sticks, rocks and a fishing net in their hands!”
The Hanway boys not only love being on the water, but also in it! Over the summer both Lincoln and Nash participated in the Lake Forrest Swim Team. They enjoyed it so much that they are now part of the City of Mobile’s Swim Association so they can swim year round.
Stephanie loves being a wife and a mother, and also a small business owner. She owns not one, but two small businesses here in the area.
“I pretty much love everything about being a small business owner,” exclaimed Stephanie. “I’ve always been an ideas person and I like seeing an idea come to life! Southern Heirloom Portraits and Oh Hey Mama are both my babies that I have grown from nothing...but an idea.”
Stephanie has been a photographer for over 10 years, and while she has done photo shoots for a little bit of everything, heirloom portraits are her favorite and now her sole
focus. She and her photography partner, Lindsay Killen, plan pop-up heirloom portrait events all over the country!
“Oh Hey Mama was started in 2020 with another simple idea — hair care for postpartum moms,” Stephanie shared. “From there, it grew to a whole scalp care line made for hormonal and aging hair types. It’s been fun to watch products that I have made get in the hands (and hair) of people all across the country!”
Despite juggling multiple titles, Stephanie loves when her family sits down together for dinner and likes to keep it simple and family style! They also like to eat outside on their back deck during this time of year, when the weather is finally cooling down.
“Whatever meal we make, keeping it deconstructed helps us all enjoy the same meal while still allowing the kids to control what goes on their plate,” shared Stephanie. “These nachos are a great example of this, but we pretty much keep that concept with all our meals, keeping the customization option available.”
Ingredients:
• Tortilla chips
• Shredded cheese (your choice)
• Pulled pork or ground beef (cooked)
• Guacamole
• Sour cream (the squeeze kind is super convenient)
• Pinto beans
• Tomatoes (diced)
Optional toppings: jalapeños, olives, pineapple chunks or whatever you have on hand!
Instructions:
1. Preheat your oven to 350°F (175°C).
2. Arrange a layer of tortilla chips on an oven-safe platter or baking sheet.
3. Generously sprinkle shredded cheese over the chips.
4. Add your choice of protein (pulled pork or ground beef) evenly on top of the cheese.
5. Bake in the oven until the cheese is melted and bubbling — typically 10-15 minutes.
6. Remove from the oven and add dollops of guacamole, squeeze sour cream, spoon pinto beans and scatter diced tomatoes on top.
8. Serve family-style, allowing everyone to create their own loaded nachos! Enjoy!

As parents who want to raise healthy kids, we often put a lot of thought into providing adequate nutrition for growing minds and bodies. We research and prepare healthy meals and snacks. We worry about how much water they’ve had today or how much sugar is in their favorite cereal bar.
What if I told you that a positive body image is one of the greatest tools you can help your child cultivate for a healthy and happy life?
Many of us have spent years or decades at war with our own bodies. Even though research shows dieting does not lead to longterm weight loss, the diet industry still brings in billions of dollars yearly, according to the National Eating Disorders Association (NEDA). But how are they selling diets, plans, and magic potions that they, and we, know don’t actually work?
The marketing plan is pretty simple when you think about it. First, the diet industry bombards us with messages that we aren’t good enough as we are. Then, they promise the perfect solution – which will only cost $49.95! And finally, when the product or diet fails (and most likely it will), we are blamed for our “lack of willpower” and told to buy more or different products or plans.
I know it’s not what you want to hear, but we’ve known that dieting doesn’t work for a long time. Past attempts at weight loss are a significant predictor of obesity. Dieting is a losing battle, and I don’t mean pounds or inches. Further, obsessing over the scale, restricting, and hating our bodies is no way to live, and it’s not the legacy we want to pass on to our children.
Unfortunately, pressuring ourselves to get or stay thin also influences how we view our kids and their bodies. We’re told by the media, and often our healthcare providers, that obesity is detrimental to health. As a result, we may find ourselves restricting what or how much our children eat to try and control their weight. For our children, this creates an atmosphere of stress around food and shame about their bodies, which can lead to lifelong struggles with their weight and body image. This increases their
risk of developing an eating disorder, which are serious, potentially life-threatening conditions that can affect every system in the body, according to NEDA.
So, how can we raise healthy, confident kids who grow into the right body for them? Luckily, there are things we can do to intentionally cultivate body positivity and respect among our children and ourselves, too!
Ellyn Satter, registered dietitian, family therapist, and internationally recognized expert on feeding kids, created the Satter Division of Responsibility (sDOR) to help children become competent eaters. sDOR outlines clear roles for both parents and children at mealtimes. Parents are responsible for what is served, along with when and where the meal or snack will take place. Children are responsible for what and how much they choose to eat out of what is offered. Practicing the sDOR has many benefits, including reducing power struggles at mealtimes, which helps improve the relationship between kids and parents.
We are more open to trying new things when they aren’t being forced on us, and kids are no exception. It may seem counterintuitive at first, but removing stress from mealtimes allows kids to practice listening to their internal cues about what and how much to eat – a skill many of us struggle to tap into because of diet culture.
Trust that your child will grow into the body that is right for them – even if it isn’t your envisioned body. Body shape and size
are primarily genetic, so chances are high that their body will be similar to yours. Therefore, negative comments we make about our bodies can feel personal to our kids as they notice these similarities. Even well-intended body commentary can be harmful; compliments may feel like comparison, while unsolicited advice feels like judgment. Instead, focus on praising and encouraging the things kids can control, like working hard to learn a new skill or befriending a new kid at school. Most importantly, never put your child on a diet. According to NEDA, 62% of teen girls and 29% of teen boys are trying to lose weight, and 14 and 15-year-olds who reported participating in even moderate dieting were five times more

Identify times when you are participating in negative self-talk, either in your head or out loud, and make a conscious effort to stop. Constantly viewing ourselves through a lens of self-criticism fuels the cycle of shame that keeps us running back to dieting. Can you imagine what would happen to the diet industry’s sales if we all woke up one morning and decided to like ourselves?
It’s essential to prioritize our health, but we can take care of our bodies and set goals for ourselves in ways that don’t involve the scale. Let’s eat fruits and vegetables that we like because we know they provide vitamins and minerals that are good for us. Let’s show our kids that it’s possible to move your body in ways you enjoy as a way to care for your body rather than as punishment for enjoying food.

Q. My husband and I are having arguments about money where our children are concerned. They are both 16, and I think they should have part-time jobs and be learning the value of work. He feels they’re only young once and wants them to enjoy being teenagers. He also gives them money anytime they ask. I want our kids to have fun, too, but this is beginning to cause tension in our relationship. I’d love your advice.
A. I understand your concern. I’m sure your husband has a good heart, but by doing this he’s acting like a friend instead of a parent. In the process, he’s allowing them to be nothing but takers and consumers. He’s setting them both up for lifetimes of helplessness and ridiculous expectations without realizing it.
But yes, kids should absolutely learn to work, make money and manage it wisely from an early age. My wife and I gave nice gifts to our kids from time to time, but they also worked and made money for themselves. And the nicer gifts we gave them were for special occasions. Even then we didn’t go crazy with things.
Still, the biggest problem you and your husband are experiencing is a communication breakdown. Your husband should stop being so impulsive, and grow a backbone where the kids are concerned. You’ve recognized this—and you’re right about it—so it’s up to you to take the first step in finding a solution.
Try sitting down with him, just the two of you, and sincerely explaining your feelings. Let him know you love him and how generous he is. But let him know, too, you’re worried this is having a negative impact on your children and why. Talk it out, openly and honestly, and try to agree on some changes together. There’s a middle ground here, but it’s going to take some time and effort from both of you to reach it. Most of all, it means you two will have to communicate with each other like mature, caring adults, and pull together for the sake of your kids. It might be difficult at first, but it’ll be worth it in the long run. For you and them.

A trunk-or-treat transforms an empty parking lot into a Halloween celebration filled with decorated vehicles and a fun opportunity to trick-or-treat at a safe venue (often a school or church community).
Here’s how to do it: Reserve a parking lot in advance. Cconsider asking a local church or school. Secure participants who are willing to decorate car trunks or truck beds in a festive theme (popular kids’ films, movies or games). Ask participants to bring candy to distribute to kids.
• Some participants may add a free carnival game to their trunk (or parking space) for kids to enjoy.
• Advertise. Social media is a great way to get the word out!
Extra Credit: Lots of decorated trunks, free food, live music, photo booth and inflatables, carnival games, haunted library, cakewalk and food trucks.
Homemade slime is all the rage. If you’ve had kids over to play, chances are you’ve tried your hand at making the ooeygooey stuff. A “weird science” play date where kids make gross concoctions is sure to impress. Our family used a gross science kit to make “veins”, “snot” and “earwax.” Most items needed are included in a kit, so there’s no need to drive all over town. It was easy and the kids were awed and delightfully disgusted. Gross science kits can be
found at local toy stores, big box stores or online. End this play date with “dirt” pudding cups topped with crushed chocolate cookies and gummy worms.
After friends invited us to a pumpkin carving party, my kids were hooked on trying new wild and wacky jack-o-lantern designs each year. Provide an alternative to carving for young children. Paint, stickers and glitter help little ones get into the spirit and allow parents to relax and enjoy the party.
Gather Tools: Ask each family to bring their own pumpkins. Have a few pumpkin carving kits on hand for guests to use. They include tools and patterns to help get everyone started. Download additional patterns online for extra inspiration. Dry erase markers allow for mistakes as guests trace or freehand jack-o-lantern faces. Sharpie markers also work (but don’t wipe off). Cover tables with butcher paper or plastic. Provide garbage cans and extra trash bags. If you plan to roast pumpkin seeds, place large bowls on each table where guests can put seeds.
Carve & Display: Tricks of the Trade
Be sure to have adults help and supervise kids with all sharp tools. Cut around the stem at a slight angle to make a “hat” for the jack-o-lantern that won’t fall in. Add an extra hole at the top to act as a “chimney” for the candle inside or use a battery-powered candle for safety. To preserve a jacko-lantern, rub the inside and cut edges with
petroleum jelly. Wrap in a plastic bag and store in the fridge until ready to use.

Parents have been inundated with these types of articles lately, and I’ll be the first to admit I have some habits that fall into the “naughty” category. Packing my kids’ lunches? Check. Cleaning up after them? Check. Making sure their homework is done? Check, check, check.
My daughters are in second grade and kindergarten, and I’m looking forward to helping them become more self-sufficient in the coming year, simply by doing less for them.
1. Telling them a bedtime story.
My kids love books, but the stories they seem to enjoy the most are the ones that come straight from the perpetually exhausted brains of their parents. Over the years, our bedtime stories have ranged from the heartfelt to the hilarious, from fairy tales created on the fly to discussions about space and nature. My husband and I have shared recollections of grandparents and great-grandparents, and the different world in which they grew up. All of these stories have played a vital role in sparking my kids’ curiosity about the world around them, and I’ve often even learned something new in the process. I imagine that someday our nightly stories will evolve into after dinner conversations over coffee, tea or ice cream, but the importance of the ritual will remain the same.
2. Noticing and praising when they’ve acted with compassion or kindness.
I’m not talking about ego boosting here; what I mean is simply noticing and recognizing when my kids do the right thing. Last week, when little sister dropped her snack on the ground and the threat of a meltdown was looming, big sister, unprompted, offered up her own granola bar as a replacement. “Hey, that was a really nice thing to do,” I told big sister, and I extended the kudos by mentioning it to their dad later that day. Believe me, there are plenty of days when sharing and being kind seem to be the last thing on my kids’ minds, so I’m all for highlighting these moments when they happen.
3. Offering them different foods, even if they’ve tried it already and swear they hate it.
My kids are fairly picky eaters, which I find frustrating. It’s not as though I’m serv-
ing them free-range quinoa with sautéed brussel sprouts and tofu; in recent history, they’ve given a ruthless thumbs-down to cheese pizza, homemade mini chicken pot pies, and chocolate chip pumpkin muffins (I mean, who turns down anything involving chocolate?!). Still, I’ll continue to encourage my kids to try lots of different foods, including items they’ve previously rejected, because I’m banking on the fact that one day their tastebuds will have an “aha!” moment. I refuse to believe their palates can’t expand to appreciate cuisine beyond apples, plain spaghetti and Goldfish crackers.
4. Giving them a safe space to vent over school, friendships or other issues, no matter how minor.
Yes, kids need to develop a thicker skin and learn how to handle disappointment and all that jazz. But that does not mean I can’t offer a non-judgmental ear when they come to me feeling sad or frustrated because so-and-so at school was mean or didn’t like their hairstyle that day. Being there to listen doesn’t necessarily mean solving the problem for my daughters, but my hope is that it will foster trust and openness that will extend into the pre-teen and teenage years.
5. Letting them see me being silly, even if it means embarrassing them sometimes!
Humor was a key element of my childhood. While we didn’t always say “I love you,” my family often showed affection via goofy behavior and jokes. When I played trumpet in the school band, I was always incredibly nervous about missing the high notes during my solos. In response, my dad promised that if I ever botched a note during a concert, he’d stand up and blow his nose loudly; that way, everyone in the audience would focus on him instead of my mistake. Naturally, I protested: “Noooo Dad that’s so embarrassing!!!” But I still had to smile, because I knew deep down this was my dad’s way of saying, “Don’t worry, I’ve got your back.”
Whatever my kids are facing in life, I want them to know I’ll be there for them, even when they are able to tie their own shoes, make their own lunches, and one day (someday!) even do their own laundry.

I read something this week that I would like to share with you. There are nine minutes that have the greatest impact on a child’s day. They are first three minutes right after they wake up, the first three minutes when they get home from school, and the three minutes right before bed. This information hit home for me, making so much sense.
The first three minutes after a child wakes up are crucial because it’s how we set the day. What we allow into our headspace first thing in the morning truly sets our mood. We may not even realize how much we are affected.
For instance, if your child starts their day immediately with a device, they begin with blue light. They will probably spend most of their day looking at their phone or computers at school, which causes eye strain. Starting the day with blue light stresses your child’s eyes and brain. Secondly, and most importantly, what they watch first sets the tone. Watching something that is upsetting, hurtful, or frustrating can lead to your child feeling these emotions before they begin their day.
Conversely, a positive effect can be if they use their device to watch something uplifting or encouraging. For example, suppose they are meditating, reading, exercising, or listening to uplifting podcasts. In that case, these are beautiful ways to use their devices to start the day positively.
The first three minutes they get home from school are challenging as they try
and jumping into school work or chores. The last three minutes before bed are also critical because this is when your child tries to unwind from the entire day. Using a device to do this is counter-productive. Referencing back to the blue light emissions, blue light from phones triggers the brain to think it is daytime. And it will keep your child awake.
Many of our youth today struggle with insomnia for this very reason. Before bed is a crucial time to help the brain settle. Our brains need rest in order to heal and recover for the next day. If your child is on their device all night, they are sacrificing sleep and not giving their brain ample time to recover. Ideally, the device should be put away at least 30 minutes before bed. Establish a good, positive routine for the three minutes before they go to sleep.
If you have noticed your child experiencing more anxiety lately and less sleep, look at these nine minutes of their day and see if there is room for improvement. You may be surprised how much little changes in those nine minutes can make such a massive difference in the overall mood for the day!
