SUMMER CORN AND TOMATO PASTA Makes: 4 servings Prep: 15 mins Cook: 20 mins
Salt 1 pound bow-tie pasta 2 tablespoons extra-virgin olive oil 2 garlic cloves, smashed 1 pint cherry tomatoes 3 ears fresh corn, kernels cut off 2 tablespoons unsalted butter 1/4 cup fresh basil leaves, torn into pieces
Bring a large pot of salted water to a boil and cook the pasta until al dente; drain. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the garlic and tomatoes and cook, stirring occasionally, until the tomatoes are softened, about 5 minutes. Stir in the corn, raise the heat slightly and cook until the corn is heated through and golden, about 5 minutes. Season to taste with salt. Add the vegetables, butter and basil to the pasta and toss.
Changes Coming to Traffic Circle Area The northwest corner of Pacific Coast Highway and Ximeno Avenue will get a makeover, as the Long Beach Planning Commission has unanimously given approval. Four buildings will be demolished at that quadrant to make room for a new Carl’s Jr. and RiteAid. The restaurant and drug store will have drivethru windows for picking up fast food and medications, respectively. 2 of the 4 buildings at the location have been out of use including an abandoned bank which closed years ago, south of the unaffected Smart & Final. A Spanish Missionstyle structure – originally a winery – has stood vacant and will be removed as well. A sign in a window suggests an employment office was housed there, which merged with another company and relocated to a different city in 2006. And the Enterprise RentACar will be torn down once the tenant’s lease is up. The Carl’s Jr. continues to sell hamburgers but it will be destroyed to the ground and revamped. The project will revitalize the intersection.
Changes Coming to Traffic Circle Area Tom Carpenter, with project developer Frontier Real Estate Investments, said demolition would not start immediately. He said the process is a phased one that requires going through the city for permits. In addition, Carpenter said Enterprise is still operating with a lease through the end of this year. He said when the lease is up; construction will begin in January 2017. “Once they’re out and we have all our permits, we’ll start construction on Carl’s,” he said. The Carl’s Jr. should take about four months to complete. “Then we’ll start construction on the Rite-Aid,” he said. It will take about a year to complete both buildings, he said. The estimated completion is for January 2018. The businesses at PCH and Outer Traffic Circle will not be touched, which include walkie-talkie shop Vision Communications, dentistry, chiropractic and other offices.
“We’re really pleased with the redevelopment,” said Fourth District Councilman Daryl Supernaw. “It will be a great improvement.” The up-and-coming Rite-Aid will replace the old one in the Vons shopping center. The new Rite-Aid will compete with the fairly new Traffic Circle CVS, which moved from the Ralphs center a few years ago to the more visible spot.
