O
n Friday, October 29, 2010 at the Multiuse Center located on the main plaza, twenty local volunteer organizations joined together, under the auspices of Anita Cox, Coordinadora de Análsis y Política Social, for an evening of knowledge and responsibility. From giving baths to invalids, to gazing at the glory of our Vieques stars, they represent a diversity of groups who work to promote, protect, serve and improve our community. Sponsored by the Association of Puerto Rico Banks, the workshop instructed us on how to better maintain our organizations and help them grow in a responsible manner. Several common thoughts were voiced by the leaders and members of each organization during the informal social hour. Each one has a vision to make our community stronger, healthier and more self-sufficient by the services they freely provide to their neighbors. Their passion, sincerity and great spirits were inspiring, though in these hard times the difficulties they face are a real challenge. Almost unanimously, they expressed the need for volunteers, equipment donations, grant writers, publicity and a feeling of solidarity from the community that they serve. The most humble offering of time, money, talent or other resources is received with heartfelt appreciation. A few of the groups have gained public recognition far beyond Vieques and Puerto Rico. Nilda Medina, the Director and driving force behind Incubadora Bieke and co-founder of the Committee for The Rescue and Development of Vieques (with Roberto Rabin) was featured as one of “1000 Women For the Nobel Prize” and Glamour Magazine devoted an article to her ongoing efforts on our island’s behalf. (http://www. glamour.com/magazine/2007/07/global-diary-vieques). Along with his responsibilities as Director/Curator of Fort Mirasol, Roberto Rabin has garnered worldwide recognition for his efforts on behalf of the Peace and Social Justice movement on our island over the past decades. Women of the Alianza de Mujeres Viequense have brought health care clinics, doctors, “Race For The Cure” and numerous other benefits to Vieques, as have the Salud Comunitaria and COREFI who provide assistance to indigent, elderly, handicapped and residents in need of home care services. Nuestra Escuela and Reach for Success provide educational opportunities, training, support and financial aid to our
young people who aspire to further their schooling or learn trades. The “Comunidad Verde Vieques” and “Cooperativa Tierra Mía” address alternative energy, sustainable agriculture, self-sufficiency, horticulture and responsible stewardship of our lands. Museo de la Memoria Histórica de Vieques, Cooperativa el Hombre de Puerto Ferro and Observatorio de Vieques strive to preserve and educate the public about our rich cultural, archaeological and environmental heritage and resources. Working toward improving our economic, business climate and infrastructure, Incubadora Bieke, Radio Vieques Comunitaria FM, Choferes Carros Publicos, Vieques Chamber of Commerce and CODEVI all seek to bring us improved services and communications, and to foster the development of local businesses. Iglesia Testigos de Jehova, Monte Santo, nurtures our spirits and helps to represent our First Amendment rights, along with other good works. Club Ecuestre Paso Fino Vieques and Club de Judo offer both, children and adults, much-needed recreation and camaraderie, as well as developing skills, responsibility and excellence in their disciplines. Vincent Tozzi, Producer of Vieques Baila, said at the close of this inspiring evening: “I am so pleased to see so many organizations and individuals who care about the island of Vieques and its people.” Vieques Baila has organized a Valentine’s evening Benefit dance for five years and distributed the proceeds to many worthy causes including the Incubadora Microempresas Bieke, Vieques Children’s Municipality Band, S.N.A.P. (Spaying & Neutering Program), CENIM (Special Needs Children,) CEDEPRECO (Child Care Center), Vieques Humane Society, Vieques Fishermen’s Cooperative and more. Each one of these organizations is worthy of their own article detailing their objectives, accomplishments, and the stories of the visionary and dedicated people that keep their dream alive. This list of groups who work toward the greater good of our island is certainly incomplete, but the workshop at Multiplex brought together many of our brightest stars. And for the rest of us who may be inspired to contribute a small fraction of the time, energy, money or skills that these good people have so willingly brought to their community, the opportunities are just a phone call away.

Noche de las Estrellas de Vieques

l pasado viernes, 29 de octubre de 2010, se reunieron en el Centro de Usos Múltiples de Vieques, veinte organizaciones locales de voluntarios, bajo el auspicio de Anita Cox, Coordinadora de Análisis y Política Social, para compartir una tarde de conocimiento y responsabilidad. Desde bañar a los inválidos, hasta observar la grandeza de las estrellas de Vieques, ellos representan una gran diversidad de grupos que trabajan para promover, proteger, servir y mejorar a nuestra comunidad. Auspiciado por la Asociación de Bancos de PR, este taller nos enseñó a como administrar mejor nuestras organizaciones y ayudarlas a crecer de manera responsable. Varios pensamientos comunes fueron expresados por líderes y miembros de cada organización durante la hora de confraternización. Cada uno tiene una visión para hacer que nuestra comunidad sea más fuerte, más saludable y más autosuficiente, a través de los servicios que ofrecen gratuitamente a los ciudadanos. Su pasión, sinceridad y gran espíritu fueron inspiradores, aunque en estos tiempos difíciles, las dificultades que confrontan son un verdadero reto. Casi unánimemente, expresaron la necesidad de voluntarios, donaciones de equipo, escritores de propuestas, publicidad y un sentimiento de solidaridad hacia la comunidad a la que pertenecen. Apreciamos cualquier donativo de tiempo, dinero, talento o cualquier otro recurso. Algunos miembros del grupo han recibido reconocimiento público fuera de Vieques y Puerto Rico. La Alianza de Mujeres de Vieques trajo clínicas de salud, doctores, “Carrera para una Cura” y otros beneficios a Vieques; Salud Comunitaria y COREFI proveyeron ayuda a los indigentes, envejecientes, incapacitados y a los residentes que necesitaban servicios de cuidado en el hogar. Nuestra Escuela y Alcanzando el Éxito ofrecieron oportunidades educativas, adiestramiento, apoyo y ayuda financiera a nuestros jóvenes que
aspiran a continuar estudios o aprender un oficio. La Comunidad Verde Vieques y la Cooperativa Tierra Mía hablaron de las alternativas de energía , agricultura sustentable, autosuficiencia, horticultura y manejo responsable de nuestros terrenos. El Museo de la Memoria Histórica de Vieques, la Cooperativa el Hombre de Puerto Ferro y el Observatorio de Vieques se esfuerzan por mantener y educar al público acerca de nuestra cultura, patrimonio arqueológico y ambiental y los recursos. Trabajando para mejorar nuestra economía, el clima de negocios y la infraestructura, la Incubadora Bieke, Radio Vieques Comunitaria FM, Choferes de Carros Públicos, Asociación de Comerciantes de Vieques y CODEVI buscan mejorar los servicios y las comunicaciones y de patrocinar el desarrollo de los negocios locales. La Iglesia Testigos de Jehová de Monte Santo nutre nuestro espíritu y ayuda para representar la primera enmienda a nuestros derechos, junto con otras buenas obras. El Club Ecuestre de Paso Fino de Vieques y el Club de Judo ofrecen tanto a niños como a adultos, la recreación necesaria y camaradería, así como destrezas de desarrollo, responsabilidad y excelencia en sus disciplinas. Cada una de estas organizaciones es digna de tener su propio artículo, detallando sus objetivos, logros, y las historias de las personas visionarias y dedicadas que mantienen vivo su sueño. Este listado de grupos que trabajan en beneficio de nuestra isla esta incompleto, pero el taller efectuado en el Centro de Usos Múltiples reunió a muchas de nuestras más brillantes estrellas. Y para el resto de nosotros que podemos ser inspirados a contribuir con una pequeña fracción del tiempo, energía, dinero o habilidades que voluntariamente han traído estas personas a nuestra comunidad, las oportunidades están a solo una llamada.

They are made by mixing flavored syrup or fruit juice with sugar, water, or evaporated milk, poured into disposable cups and frozen. If you want one space too many here to feel like a kid again sample one of these traditional Puerto Rican cups and discover the fun. Squeezing the frozen cup from bottom up tends to be a bit messy... and trying to bite the icy sweet out of the cup almost always ends in disaster. So how you choose to eat it is up to you...but you have to find them first... Almost every barrio has one, a house with a freezer stacked full of limbers in a wide variety of flavors--for the going rate of 50 cents to $1 each. The house that sells limbers is a very popular one on the block and usually offers a wide variety of flavors ranging from Parcha (passion fruit) to Peanut Butter. According to Chef Michael Glatz of “Coconut’s” restaurant in Isabelle Segunda, “History has the “limber” created in Bayamon, 1930. A colmado owner that fancied himself as a gourmet was also fascinated at inventions coming out of the US mainland. He ordered the first refrigerator-freezer combo to Puerto Rico and having never seen ice-cubes he wondered what the metal tray was inside the freezer. He filled it with sweetened coconut milk and the limber was born,.... icy cold and refreshing! Oh, and the name... he was also fascinated with Charles Lindbergh’s stop in Puerto Rico... he named the frozen treat after him, and using the local tongue, Lindbergh became “Limber.” Un límber es una delicia congelada, confeccionada en un vaso plástico y vendida en los barrios a los niños que van camino a su casa luego de la escuela o a los adultos golosos. Se confeccionan mezclando los sabores de los jugos de frutas con azúcar, agua, o leche evaporada y se vierten en vasos desechables, para luego congelarlos. Si desea sentirse nuevamente como un niño, pruebe uno de estos tradicionales límbers y descubra la diversión. Cuando apretamos el límber de abajo hacia arriba, hacemos un poco de reguero y el tratar de darle un mordisco fuera del vaso, casi siempre termina en desastre. Así que, la forma en la que decida comerlo, queda a su discreción...lo primero que debe hacer es encontrarlos...Al menos, podemos encontrar en cada barrio una casa con un congelador repleto de límbers de una gran variedad de sabores— los precios van desde 50 centavos hasta $1 cada uno. Casi siempre, la casa que vende los límbers en el barrio es bien conocida y ofrecen una gran variedad de sabores, que van desde Parcha hasta Mantequilla de Maní. De acuerdo al Chef Michael Glatz del Restaurante “Coconuts” en Isabel Segunda, la historia hace creer que el Límber nació en Bayamón en el 1930. El dueño de un colmado, el cual se consideraba un gastrónomo, estaba fascinado con los inventos que provenían del continente estadounidense. El ordenó la primera nevera/congelador en Puerto Rico y sin haber visto nunca los cubos de hielo, se preguntó para qué era la bandeja de metal que estaba dentro del congelador. La llenó con leche de coco endulzada y así nació el límber... helado y refrescante. Oh, y su nombre... él estaba fascinado con la visita a Puerto Rico de Charles Lindbergh... y nombró esta golosina helada luego de su visita, y usando la lengua local, Lindbergh se convirtió en “Límber”.

Piraguas
• Not to be confused with Limbers, the “Piraguas” are pyramids of shaved ice with a fruit flavored syrup poured on top -similar to the American snow cone. The piragua vendors are known as the “Piragueros” and sell their product from a colorful wooden pushcart, shaving the ice from a block held inside and are said to date back to the 1920’s. Author Miguel Meléndez, Puerto Rican born and raised in New York says: “a piragua pushcart vendor is a very special person. He represents an important part of our culture. Those shaved-ice cones filled with Caribbean tropical syrups, not only ease the body during the hot summers, their sweet goodness reminds us of who we are and where we come from–without words.” Piraguas have returned to Vieques with Juan Martínez Robles and Mayra Ramos Félix. Their colorful cart can be seen in Isabel II and is called Coquí Piraguas. No deben confundirse con los límbers; las Piraguas son pirámides de hielo raspado a las que se les vierte por encima un sirope de frutas – parecidas a los conos de nieve americanos. A los vendedores de piraguas se les conoce como Piragüeros, los cuales venden su producto desde una colorida carretilla de madera, donde raspan el hielo de un bloque, lo cual se remonta a la época del 1920. These will be very useful during the next few weeks when she will be supervising activities at RFS. The Blue Crab is still the temporary home of RFS, and is open Tues-Friday for students 12-18. The focus this year is on the prevention of drugs, alcohol abuse and teen pregnancy. A fund raising dance is being planned by the students for all students on Dec 3rd at the Blue Crab. A “thank you dinner” in December is also being planned by the students for the W Hotel, who has generously supported its activities and goals.

AWESOME Bat Educational Activity IMPRESIONANTE Actividad Educativa sobre los Murciélagos Over 40 people attended the bat educational activity titled, Let’s Bike for Bats. Thanks to Black Beard Sports, US Fish and Wildlife Service (FWS) added the biking activity which started from the Ceiba Tree to Club Tumby (a former munitions storage bunker). Once we arrived at Club Tumby, FWS volunteer biologist Francheska Canino talked about the different types of bats found in Vieques. She presented various bats to the attentive crowd. Our special guests were the Roof Bats (Molossus molossus) and the Jamaican Fruit Bats. The audience was thrilled. Finally, the public went out for a creepy night walk and helped us in our bat mist netting activity.
Sobre más de 40 personas participaron de esta actividad educativa, Pedaleando por los Murciélagos. Gracias a la ayuda de Black Beard Sports, el Servicio de Pesca y Vida Silvestre (FWS), pudo añadir la actividad de pasear en bicicleta. La bicicletada comenzó en el árbol de Ceiba y culminó en el Club Tumby (antiguo almacenamiento de municiones).

Presentó varios murciélagos al atento público. Nuestros invitados especiales fueron los Murciélagos de Techo (Molossus molossus) y los Murciélagos Frutero Jamaiquinos. La audiencia estaba muy entusiasmada. Finalmente, llevamos al público a una caminata nocturna para capturar y liberar los murciélagos.
Did you Know? Did you know that Vieques has insect, nectar, fruit and fish-eating bats? Vieques, for being such a small island, has approximately 9 species of bats of the 13 found in Puerto Rico. Bats can be found on every part of the island, from lagoons and trees to abandoned munitions storage bunkers. Their value to the ecosystem is tremendous. Some of our bats zap bugs and disperse seeds. Although you can’t convince all folks, many people are beginning to understand the stunning diversity of bats with which we share our island and to appreciate the great benefits we receive from them. How can I help save bats? Do not disturb bats where they live. Leave them alone! If there’s a bat in your house, they will usually leave on their own if a window or door to the outside is opened. Blessings come to us everyday, and sometimes they are delivered by boat! Members of the U. S. Coast Guard based in San Juan, led by BMC Nathan Williams, took to the ocean and brought complete turkey dinners to Vieques. Along with members of the Navy League Vieques Council, the 15 men and women that brought the great food to some of our Viequense families delivered the meals. A tradition has definitely been born, but most importantly another reason to give thanks to our God has been added to our bountiful list of blessings. Giving from the heart is contagious; pass it on! A diario recibimos bendiciones inesperadas. ¡Algunas veces éstas nos llegan en bote! Unos quince miembros de la Guardia Costanera del Sector de San Juan, dirigidos por BMC Nathan Williams, vinieron en bote y trajeron a nuestra isla, una comida completa de Acción de racias. Junto con algunos miembros del “Navy League” Concilio de Vieques, este grupo de hombres y mujeres llevaron esta excelente comida a varias familias viequenses. Definitivamente, ha nacido una tradición. na familia, asunto de toda la noche
Fue mi mejor amiga Donna, nacida en Puerto Rico, quien pasaba su luna de miel en Vieques, y la cual hacia 9 años que era vegetariana, quien dijo: “Estoy de regreso a mis raíces – no puedo venir a esta isla y no comer carne.” Fue también ella quien, cuando se acercaba a un kiosko, bajaba la ventana, sacaba su cabeza lo más lejos que podía, respiraba profundo y cuando estábamos pasando decía: “ahhhhh... huelan eso”, ya fueran bacalaítos, pinchos, o un puesto de “hot dogs”. Pero, en última instancia, era el sabroso lechón asado, quien la hizo volver a sus hábitos de comer carne. Si usted ha pasado durante la víspera de Navidad por el viejo cementerio en el Bo. Cañón, donde se encuentra la Lechonera Don Tito, usted entenderá el porqué. Es durante esta noche donde se asan a la varita, alrededor de 30 cerdos en esta Lechonera y pasar por la Calle Patricio “Tito” Maldonado, llamada así por el mismo Don Tito, es como flotar en una nube humeante y sabrosa. Solo siga a su nariz. Asado lentamente sobre las brasas, crujidos que caen en el fuego y un condimento especial...pero no es solo en las navidades cuando se asan cerdos. It was my good friend Donna, born in Puerto Rico and honeymooned in Vieques, and also a strict vegetarian of 9 years, who said, “I’m back to my roots– I can’t be on this island and not eat meat.” It was also her that when approaching a kiosk would roll down her window, stick her head out as far as she could and take deep breaths as we were passing saying “ahhhhh.... just smell that”, whether it was “bacalaítos”, “pinchos’, or even a hot dog stand. But, ultimately, it was the savory, slow-roasted “lechon” that turned her back into her carnivorous meat-eating self. And if you’ve ever driven past the old cemetery, into Bo. El Cañon past Don Tito’s Lechonera on Christmas Eve, you’ll understand why. It is that night that up to 30 pigs are slow roasted overnight

at the Lechonera and driving on Calle Patricio Tito Maldonado, named after Don Tito himself, is like wafting on a cloud of smoky, savory goodness. Just follow your nose! Slow roasting over a spit, cracklings dripping into the fire, and special seasoning...but it’s not just the holidays that the pigs are roasted. Every Friday night the barbeques are fired, and the warm, sizzling red glow continues all night long to fill Saturdays orders from the community. Don Tito’s Lechonera has been in business in Vieques for 25 years. Although Don Tito is no longer with us, his son Papo Maldonado has continued the family Lechonera business. If you place your order by Thursday afternoon, Papo and his crew will stay up all Friday night, turning and seasoning the spit so that Saturday morning you could be picking up a piping hot package of lechón to enjoy at the beach! Up to 13 pigs can be roasted at the same time in the many “ovens” which are large rectangular cinderblock boxes covered with tin. After roasting, the pigs are chopped, weighed, packaged for pick up or, if you are lucky to live close by, delivered on bike by one of Papo’s sons June, 16 or Tingue 13. As Vieques is quickly becoming a wedding hotspot for tourists, lechón is the ever popular wedding entrée and whole pigs are delivered to the beach, by Papo’s nephew Cheo, one of Don Tito’s grandsons, for the reception. Papo remembers working for his father, as his sons now work with him. It was different back then. For one, the pigs were raised and slaughtered right there on the property. Don Tito raised the pigs and fed them with the scraps that he collected from the school cafeterias that he paid one cent a pound for. Before converting the ovens to gas only seven years ago, the pigs were roasted over homemade charcoal that he and his boys made by chopping bayaonda wood and burning it under layers of grass and dirt for days.

Como Vieques se ha convertido en un destino preferido para la celebración de las bodas de los turistas, el lechón es el plato principal más popular en éstas; los lechones enteros son entregados para las recepciones en la playa por Cheo, sobrino de Papo, y uno de los nietos de Don Tito. Papo recuerda cuando trabajo para su padre, al igual que lo está haciendo su hijo. Antes era muy diferente. Los cerdos eran criados y sacrificados en la misma propiedad. Don Tito criaba a los cerdos y los alimentaba con las sobras que recogía de los comedores escolares, por las cuales pagaba un centavo por libra. Antes de convertir los hornos a gas, hace solo siete años, los lechones eran asados sobre carbón hecho en casa, el cual era fabricado por él y sus hijos que cortaban la madera de bayaonda y la quemaban bajo capas de hierba y tierra por varios días.

ieques holidays are all about delicious, traditional dishes, the coming together of friends and family, and...coquito. No holiday festivity would be complete without this delicious, creamy concoction. It is Puerto Rico’s version of eggnog but is made with coconut milk and coconut cream. And, of course, rum! There are many variations of the popular drink and one coquito recipe may not be like the next. In fact, El Museo del Barrio in East Harlem, NY has an Annual Coquito Tasting competition. For the second year in a row, fifty three year old Zoraida Graciani, a Puerto Rico born woman has won the annual Coquito drink test in New York City. She has been using a recipe passed down by her mother, although she has tweaked the recipe over the years. She is not divulging any of her secrets but you will enjoy this authentic, “Abuela’s recipe” just as much! Make it yourself or look for coquito sold in decorative glass bottles. Salud!

2 cups of coconut milk (1 dry and big coconut or 2 medium ones grated and 1 ½ cup of hot water

1 ½ cup of white rum 1 cup of condensed milk 2 cans of evaporated milk ¼ teaspoon of ground cinnamon 1 teaspoon of vanilla extract Preparation Grate the coconut, add 1 ½ cup of hot water, and squeeze to obtain 1 cup of milk. Pour the milk in the electric blender, add sugar and ground cinnamon. Beat on high speed for 1 minute. Add the rum and beat for 2 more minutes on high speed. In doing so, coconut cream remains homogenous and not solidified in the fridge. You do not need to take it out of the refrigerator in advance at the serving time. You just need to shake the bottle. Pour in a bottle and keep in the refrigerator. If you prefer it with more rum, add 2 cups instead of 1 ½. If you use coconut milk from a can, use less sugar.

Ninguna festividad navideña está completa sin esta deliciosa y cremosa bebida. Es la versión en Puerto Rico del ponche de huevo, pero se le añade leche y crema de coco. Y, por supuesto, ron. Hay muchas variedades de esta famosa bebida y una receta de coquito, puede ser que no sea igual a la otra. 1 1/2 taza de ron blanco 1 taza de leche condensada 2 lata de leche evaporada 1/4 cucharadita de canela en polvo 1 cd. de extracto de vainilla Preparación Ralle el coco, añádale 1 1/2 taza de agua caliente y exprima en un majador de prensa hasta obtener 1 taza de leche. Eche la leche en la licuadora eléctrica, añada el azúcar y la canela en polvo. Bata a velocidad alta por 1 minuto. Agregue el ron y bata por 2 minutos más a velocidad alta. Al hacerlo así, la crema de coco se mantiene homogénea y no se solidifica en la nevera. No hay que sacarlo de la nevera con anticipación al momento de servirlo. Sólo debe mover la botella. Embotelle y guarde en la nevera. Si le gusta más fuerte en ron, échele 2 tazas en lugar de 1 1/2. Si usa leche de coco enlatada, use menos azúcar.

PASTELES DE YUCA >>>
Pasteles are an essential part of the Puerto Rican culinary tradition; one which certainly evokes the Christmas spirit here. Be that while celebrating with family & friends during the holidays or during any special occasion. I recall as a child when my grandmother, together with my mother & aunts, would share in the (undoubtedly) hard labor & long process of preparing the delicious pasteles that were to be enjoyed from Christmas Eve through the rest of the holiday season. The scents of the farm & musky wet soil from the root vegetables, from either the yucca or taro and pumpkin and green bananas, would engulf the kitchen. They would gather around the dining table & using the fine side of a metal grater box would grate the ingredients by hand, with quick dexterity but precision, as to avoid the addition of grated knuckles in that wonderful dough. The delicious aroma of the pork stew, smoked ham & spices, fresh herbs from the yard (oregano, culantro, cilantro & Spanish sweet peppers) all blended together to form the fresh sofrito which would give life to the aromatic & simply perfect stew. Just thinking about it makes my mouth water… Pasteles (the mixed root vegetable type called “pastel de masa” and the yucca ‘cassava’ type pastel) are still prepared in many Puertorrican homes. Many others, though, choose to purchase them already assembled and ready to cook; perhaps having to do with lack of time to prepare or lack of know-how… Here I offer a recipe for “pasteles de yuca’. They are a somewhat less time consuming to make and are extremely delicious. (If you desire more information on the nutritional value of the yucca ‘cassava’, you can refer to my article in a past issue of the Vieques Events (July/2009). I hope you enjoy this recipe. Happy holidays & delicious eats! PASTELES DE YUCA & PORK STEW (12 units of pasteles)
> > > FOR THE DOUGH:
3 lbs. fresh cassava root (peeled, grated & squeezed to eliminate some of its starch) 1 1/2 tsp. sea salt 1 cup coconut milk (better if it is fresh) unsweetened 1 1/2 cups of meat broth from the stew prepared with achiote (explained in procedure)

> > > FOR THE PORK MEAT:
2 lbs. Boston butt (cleaned of any sinew & fat, cut into 1” cubes) 2 tsp. sea salt 1/2 tsp freshly ground pepper (optional) 3 tsp. apple cider vinegar 1 oz. bacon or pork fat back (finely chopped) 2 oz. smoked ham (diced into small squares)
2 tsp. mini-capers 4 tsp. pepper stuffed Spanish olives (with a bit of its brine for the stew) cut in half or in fine slices 1/2 cup water
> > > TO WRAP THE PASTELS:
1/4 cup dark seedless raisins 1 7oz can roasted pimentos (cut in fine strips of julienned) 12 banana or plantain leaves (approx 10 x 10). (Note: prior to cutting the leaves to size, the leaves must be passed over an open flame or stove top to wilt them and make them pliable.) 12 parchment papers for pasteles (check at our local market) 12 thirty-inch lengths kitchen twine
medium and cook covered for 30 minutes or until the meat becomes tender. Set aside and measure out 1 1/2 cups of the meat’s broth. In a separate small pan, add 4 tablespoons of annatto seeds, bring to a full boil and remove immediately from the heat while stirring off the heat. You should get a nice bright color. Filter through a fine colander or cheese cloth and reserve this liquid to be added to the yucca ‘cassava’ masa. Peel & grate the yucca using the fine side of a grating box. Squeeze excess starch liquid from the yucca (this will prevent the pastel from becoming too glutenous). Add the reserved “annatto”, meat broth, coconut milk & the salt.
> > > FOR COOKING THE PASTELES:
Stir to combine all the ingredients evenly and smooth.
> > > PROCEDURE:
Center a banana leaf over a parchment paper. Spoon about 3/4 cups of masa in the center of the banana leaf, spreading into a rectangle. Add two tablespoon full of meat right in the center of the masa, spreading horizontally so you find meat in every bite.

Season pork meat with salt, pepper (if using) & vinegar. To prepare the achiote oil “annatto”: Heat the 1/2 cup of oil with the 2 tablespoons annatto seeds in a small skillet over medium heat just until the seeds sizzle steadily. Don’t overheat the mixture or the seeds will turn black and the oil a nasty green. Once they’re sizzling away, pull the pan from the heat and let stand until the sizzling stops. Strain as much of the oil as you are going to use right away into the pan; store the rest for up to 4 days at room temperature in a jar with a tight fitting lid. Heat the annatto oil in a large pot and sauté the smoked cured ham & bacon until it begins to color a bit. Add the sofrito and cook for about 3 minutes. Proceed to add all the pork meat, water, capers & Spanish olives with a little of its brine. Allow to come to a boil then lower the heat to
Place a strip of roasted pimento & 2 or 3 raisins on top. Follow with a bit of meat broth on top. Seal the pastel by folding over the top parchment paper to meet the bottom parchment paper. Make two folds along the edge to seal in tightly; fold again over the masa, then fold and crease each side inwards. Tie two pasteles together (they seal better this way) with their folded edges facing each other. To cook, bring salted water to a roaring boil in a large pot. Add the pasteles and wait until it boils again. Once it does, lower the heat to medium, cover the pot and cook for 45 minutes. Remove from the water. Serve immediately with a nice salad.
Los pasteles son parte importante de la tradición culinaria puertorriqueña, una que evoca el espíritu navideño y que anima el compartir con familia y amigos, ya sea durante las Navidades u ocasiones especiales. Recuerdo durante mi niñez cuando mi abuela, junto a mi madre y mis tías, compartían el (sin duda alguna) largo y elaborado proceso de preparar los ricos pasteles, que disfrutaríamos en Noche Buena y durante toda la temporada navideña. Los aromas de campo y tierra húmeda, ya fuera el de la yuca, o el de la yautía y la calabaza, junto con los de guineos o plátanos “mafafos” impregnaban la cocina. Todos estos ingredientes se molían a mano con guayo y con talento sin igual; rápido y a la vez con precisión, para no agregarle rallado de nudillos a aquella rica masa. El delicioso olor de la carne de cerdo, el jamón, especias y hierbas del patio (orégano, recao, cilantrillo y ajíes) molidos para el sofrito fresco; el cual daría vida a aquel guiso aromático y perfecto. De pensarlo se me hace la boca agua… Hoy día, en muchos hogares puertorriqueños, se elaboran los pasteles de masa y también los pasteles de yuca. Hay otros quienes optan por comprarlos ya hechos, quizás por la falta de tiempo o por no conocer de su preparación. Aquí les ofrezco la receta para pasteles de yuca. Estos resultan ser más fáciles de preparar y son muy ricos. (Si quieren saber más sobre las cualidades nutritivas de la yuca, pueden referirse al artículo que escribí sobre la yuca en la edición del VE, julio/2009). DE CERDO (12 pasteles) PARA LA MASA: 3 libras de yuca fresca (mondar, rallar y exprimir un poco del exceso de almidón) 1 1/2 cucharadita de sal de mar 1 taza de leche de coco (si es fresca, mejor) 1 1/2 tazas caldo del guiso de carne con achiote
> > > PARA LA CARNE DE CERDO:
2 libras de carne de cerdo (limpio y cortado en trozos de 1”) 2 cucharaditas de sal de mar 1/2 cucharadita de pimienta negra (opcional) 3 cucharaditas de vinagre de manzana 1 onza de tocineta (o tocino) 2 onzas de jamón de cocinar 2 cucharaditas de alcaparritas 4 cucharaditas de aceitunas (use un poco de la salmuera y corte las aceitunas por la mitad en en lascas finas si prefiere) 1/2 taza de agua
>>>PARA ENVOLVER LOS PASTELES: 1/4 taza de pasas sin semillas (o a gusto) 1 latita de pimientos morrones enlatados (cortados en tiritas y un poco de salmuera para la carne guisada si desea) 12 hojas de plátano o guineos (approx. 10 x 10) 12 papeles de envolver pasteles 12 cordones de amarre para pasteles > > > PARA COCINAR:
Retire del fuego y saque 1 1/2 taza caldo del guiso aparte. En una cacerola aparte, hierva el caldo con 4 cucharadas de achiote fresco. Retire del fuego y vaya meneándolo hasta obtener el color deseado; cuele y reserve para añadírselo a la masa de yuca.

Sofrito is a flavorful and aromatic seasoning base prepared with chopped aromatic fresh herbs & vegetables. It is the heart and soul of traditional puerto rican cuisine. Here is a standard recipe to make your own.
Prepare la masa, pelando y rallando la yuca por el lado fino de un guayo; exprimir para sacar un poco del almidón, ésto evitará que el pastel quede gomoso. Añadir el caldo de la carne con el achiote, leche de coco y la sal, mezclando hasta obtener una masa de color uniforme y suave.
El sofrito es la base del sabor y esencia en la comida criolla puertorriqueña. He aquí una receta de sofrito.
Ponga una hoja de guineo sobre el papel de pastel.
1 small onion or half regular sized
Ponga un cucharón de masa sobre la hoja de guineo, esparciendo en forma rectangular. Ponga 2 cucharadas llenas de carne a lo largo de la masa, una tirita de pimiento morrón y pasas a gusto; luego échele un poco más de caldo de carne por encima. Envuelva el pastel doblando el papel hacia adelante y los lados hacia adentro. Una el próximo pastel con el anterior frente por frente las partes dobladas. Amárrelos, no aprentándolos mucho. Cuando termine con todos los pasteles, ponga a hervir en una olla grande el agua con la sal. Al hervir, acomode los pasteles y deje hervir nuevamente. Baje el fuego y cueza por 45 minutos. Saque del agua y sírvalos calientes, con una rica ensalada o su acompañamiento preferido.

SOFRITO:
1 large tomato 1 cubanelo pepper 3 large garlic cloves 3 sweet Spanish peppers ‘ajíes dulces (they look like the hot cubanelo type but are not hot) 3 large culantro leaves or ‘recao’ 1 small bunch of cilantro 1/2 tsp. local fine leaf oregano 1 hot pepper (optional and if you like a bit of heat in a pastel) To prepare sofrito: Chop or process the tomato, pepper, garlic, onion, sweet Spanish peppers ‘ajies dulces’, culantro or ‘recao’, cilantro & oregano until a fairly smooth but not to liquid consistency. Optional: You can add the hot pepper if you so desire in the sofrito.

SOFRITO:
1 tomate grande 1 pimiento verde de cocinar o pimiento cubanelo 3 dientes de ajos grandes 1 cebolla pequeña o 1/2 regular 3 ajíes dulces
Olla grande para acomodar los pasteles. Agua con sal de mar hasta cubrir. Tapa para cubrir olla mientras cocine los pasteles

> > > PROCEDIMIENTO:
1 ají picante (opcional y a su propio gusto; si prefiere los pasteles con un poco de pique)
Adobe la carne con la sal, pimienta (opcional) y vinagre. Prepare la 1/2 taza aceite con achiote, cuele y deje aparte. Ponga a calentar el aceite con achiote en una olla grande y sofría el jamón de cocinar y la tocineta o tocino hasta que comience a dorar. Agregue el sofrito y cueza por un par de minutos. Añada la carne, el

agua, las alcaparras y aceitunas con su salmuera. Déjelo hervir a fuego alto y luego bájelo a moderado, tape y cocine por 30 minutos o hasta que ablande la carne.

Para hacer el sofrito, moler el tomate grande, pimiento cubanelo, ajos, cebolla, ajíes dulces, recao, cilantrillo y oregano. (Si desea, añada el pimiento picante también)

eople who know the story of the mutiny on the HMS Bounty (and its many Hollywood incarnations) may never have realized that the ship (and its Captain Bligh) were sent expressly by the Government in London to take plants of the breadfruit to the West Indies from its native Polynesia as an inexpensive food for the slaves working the sugarcane plantations. The mutiny occurred in 1787 on Captain Bligh’s first return voyage; 1,015 potted plants where lost – mostly thrown overboard in revolt. It was on his second voyage in 1791 that he successfully transported 2,126 plants to Jamaica, where they flourished and their culture subsequently spread to Central and South America, the Caribbean, India and Indonesia. There are actually two types of breadfruit that you can find growing on Vieques; the common seedless form (Artocarpus altilis in botanical Latin) called breadfruit or panapén in Spanish cultivated for its edible pulp, and a more unusual seeded variety cultivated solely for their delicious 3/4-inch seeds; known as breadnut (A. a. ‘Seminifera;’ the last name translates as “seed-bearing.”)

Easy Baked Breadfruit Preheat oven to 350˚F. Generously butter a peeled, firm-fleshed breadfruit and wrap it in foil, shiny side in. Bake until tender – 45 minutes or more, according to size. Cool slightly, then remove the core. Serve with plenty of butter and salt and pepper to taste.
Roasted Breadnuts Preheat oven to 350˚F. Wash seeds free of any clinging flesh and with a small sharp knife make a small “x” on the flat side of the seed. Spread on a cookie sheet and bake for 20 minutes or so until the brown skin at the “x” begins to curve open. Working in batches while the seeds are hot – you may need oven mitts - peel off the skin – it’s the same technique used for chestnuts. The nuts can be used the same way as chestnuts or Brazil nuts.
