D All of us at the MRFA hope that you and your organizations stay safe and strong during what has so far been a difficult year,
uring times of economic uncertainty, the CEO’s burden of command becomes heavier than ever. As always, we are asked to make the tough decisions and meet the needs of employees, customers, and stakeholders – only now we are doing it with fewer resources, in a climate of fear, and under higher expectations. I welcomed the challenge. This special issue of LocalFare came together fast as we asked our industry and its leaders to offer their insights on operating through this crisis. I hope these perspectives give you strategies to use in your own life and business, as well as reassuring you that you are not alone. The role of the MRFA has never been more apparent. It helps to be reminded that there are others out there faced insurmountable pressures and obstacles during COVID-19 and came out the other side with a stronger passion to succeed. I offer some of my own thoughts on keeping our industry steady through the storm. Every CEO will face problems during his or her tenure. I led the MRFA as CEO through 18 months of turbulence where we saw industry changing protocols
and a permanent shift to a ‘new normal.’ Things were incredibly tough in all the various waves, testing my competence and leadership ability. But through the various challenges, we took the opportunity presented even through this crisis to reexamine our mission, vision, and values as an organization and to refocus on the fundamentals of all our members – both associate and restaurants. All of us at the MRFA hope that you and your organizations stay safe and strong during what has so far been a difficult year, and that you find opportunities hidden in the midst of chaos. This is our first issue of LocalFare since 2019, and I’d like to thank all of our subscribers, contributors, sponsors, and advertisers, as well as everyone who’s supported the MRFA during this tough time as we needed your support now more than ever. Canad Inns Puts the Fun Back in Hospitality
S
ince starting as Pembina Highway’s Norlander Hotel, Canad Inns has become Manitoba’s largest hospitality provider, one of Canada’s Best Managed Companies and Manitoba’s Top Employers. However, despite expanding in many exciting ways, they have never lost their focus on the province that they love to serve. “We’re a regional company, headquartered in Manitoba, which I think is a very unique part of our identity,” said Lea Ledohowski, President of Canad Inns. “It’s a big focus for us, to maintain that Manitoban identity.” Canad Inns’ love for Manitoba has continued over the years. For 17 years, the company hosted a large family-friendly Canada Day celebration at Assiniboine Park, though the annual event was concluded in 2017 – prior to the pandemic – to make way for the new Assiniboine Park Conservatory. Canad Inns was also a huge sponsor of the Canadian Museum of Human Rights, an important landmark for Manitoba, a world-class museum, and the largest human rights centre in the world. Additionally, every year the company holds the Canad Inns Winter Wonderland in partnership with Red River Exhibition Park. This display boasts over 1 million lights and 26 different themed areas to see in a 2.5 km drive. The company also supports smaller groups in the community. “We’re Manitoban, by Manitobans, for Manitobans,” stated Ledohowski. “We pride ourselves on being a familyfriendly organization and that we try to engage in any number of meaningful initiatives in our communities.” Canad Inns operates about 35 restaurants, lounges, and pubs – both

within the company’s hotel facilities as well as freestanding buildings and outlets. Prior to the pandemic, the company had nearly 3,500 people on staff. Ledohowski hopes to get back to that number as the company recovers. “COVID-19 has been really hard for everyone, and I think that it’s reasonable to say that it’s been really hard on the hospitality sector,” she said. “There are days when it just hasn’t been fun to be in hospitality recently, especially with the additional difficulties associated with all of the health orders and restrictions, and having to be a sort of a gatekeeper for community on the public health and safety side. That’s been a real priority for us. Now, day-by-day, we are rebuilding our business, as is everyone in our sector.
We are really trying to focus on is ways we can engage our employees, ways we can have fun. I think we are doing a good job.” Canad Inns has worked to improve employee happiness by instituting employee contests; giving discounted or free concert tickets and event tickets; and hosting small group events and team outings. “I know everyone is still struggling under this pandemic and I think that we will be for a while, but it’s nice to see a little bit of a return to normal, smiles on peoples’ faces,” added Ledohowski. “The pent-up demand from the community and staff, and just wanting to get out there and reconnect, is really nice to see. Even though they’re behind masks, you can certainly read behind the eyes when the smile is there – and that’s nice.”

LetsOrder.Delivery puts local restaurants and communities on the map

These communal spots, made to enjoy and share a good meal, play a big role in why your neighbourhood feels like home – with the warm smell of spice in the air, welcoming smile from the staff, and open invitation to dine at any time. When the COVID-19 pandemic settled into our daily lives, it also crept into the deepest corners of our neighbourhoods. As our world (as we knew it) shut down all around us, the importance of embracing and supporting community – and holding onto the comforts of home – came into focus. Introducing LetsOrder.Delivery: the online take-out/ delivery platform that supports your neighbourhood. This geographically based platform lists all the participating restaurants in your area, so you can order the food you love and support the community you’re a part of. The program – now owned and operated by the MRFA – has since been rated as “the second most beneficial ‘local supporting local’ business initiative that was done in 2020” by the Winnipeg Free Press. “There’s definitely some clout behind the creation of [LetsOrder.Delivery] and the platform is supported by restaurants because of the simple fact that it doesn’t cost them anything,” says Shaun. “They’re utilizing a platform that is already in place. So, by using LetsOrder.Delivery to order a meal, you are supporting local but you’re also supporting [the restaurant industry’s] viability because you’re saving them a significant amount of money in fees that they would normally pay to a third-party delivery service.” LetsOrder.Delivery has over 100 restaurants listed, including members of the MRFA. And if you’re a restaurant member, there is no charge to register and be a part of the platform. Once the restaurant is listed, the owner has full control over their menu listings and how they choose to operate their take-out/delivery service. he Gates on Roblin is the destination for creating events and making memories. Located on 6945 Roblin Boulevard in Headingley, MB, this historic estate – tucked away amongst the trees on their seven acres of land – offers a unique and comprehensive range of full-service options that are designed to make all your dreams come true. Fred Pugh, a researcher for the T. Eaton Company, was gifted Green Gates (originally called Woodlands) by Timothy Eaton in 1913. Over the years, the estate has housed some notable families from both Headingly and Winnipeg. Then, in the mid-90s, WOW! Hospitality transformed the space into an estate-restaurant. For two and a half decades, the restaurant has changed hands several times and for the last 15 years, has been known as The Gates on Roblin – locally owned and operated. Overcoming — THE PANDEMIC —
The COVID-19 pandemic has changed our way of life as we know it. In an instant, our ‘pre-pandemic’ lives were swept up in a wave of fury: industries came to a sudden standstill, businesses were forced to close their doors, and people were told to stay home and weather the storm. As we collectively waited and felt the days blur and blend together, Manitoba’s restaurant industry was facing the storm head on and actively adapting to the newly acquired restrictions and limitations to operations. Stories of resiliency, adaptation and community amongst restauranteurs
On March 16, 2020 – the day before St. Patrick’s Day – restaurants Fionn MacCool’s, Pasquale’s Ristorante Italiano and East India Company Pub & Eatery closed their doors for the first time ever – and without knowing when they’d be reopened. By March 20, 2020, the Province of Manitoba declared a state of emergency; restaurants were limited to having 50 patrons or operating at half capacity (whichever was lower).
D ECISIONS Jay Kilgour, Managing Partner of Fionn MacCool’s, remembers the day he closed his locations like it was yesterday. Being a proud Irish pub, St. Patrick’s Day is one of Fionn’s busiest days of the year, where guests come for a meal, a pint or two, and celebrate the day together; however, the looming promise that the COVID-19 virus would spread was more than enough of a reason for Jay to break off tradition, close Fionn’s doors, and protect staff and patrons from contracting the virus.

“Jay made the decision to turn this negative into a positive and set a plan in motion, based on what other chefs had started to do, that placed him on a definitive path to utilize what he had and help others.” “That morning, Theresa Tam came out and said it was recommended that gatherings be limited to 50 or less indoors. We generally have 400-550 come in through our doors on St. Patrick’s Day. So, we felt it would be irresponsible to open; therefore, decided to close the day before our busiest day of the year,” said Jay. This good deed presented Jay with a problem: his two restaurant locations were fully stocked with a week’s worth of fresh produce, specifically for St. Patrick’s Day. Jay explained that even if Fionn’s converted solely to a take-out model, the restaurants still wouldn’t be able to get through all that fresh produce in time.

Jay made the decision to turn this negative into a positive and set a plan in motion, based on what other chefs had started to do, that placed him on a definitive path to utilize what he had and help others. “There was a group of chefs who were collecting food from restaurants that made the decision to close, and using the ingredients to make meals for shelters. That’s what originally gave me the idea,” said Jay. “A concerned Winnipegger with the means to help (who remained anonymous throughout this entire project) approached and asked us if we could make meals for the sites that 1JustCity supports. With the pandemic, a lot of the volunteers and staff were uncomfortable working in such an unknown time, so they lost their capacity to make food. Meanwhile, I had a lot of staff that were willing to make food, but I didn’t have the hours for them. So, throughout the first lockdown, we made quite a few meals for 1JustCity – all paid for by an anonymous donation.” As restrictions started to ease and the first lockdown was lifted, Fionn MacCool’s was able to reintroduce patio dining in May, followed by indoor dining in June. As Jay and his staff adapted to the new rules, complied with the everchanging health and safety orders, and served patrons their favourite dishes, they volunteered their time and prepared meals for 1JustCity. Then in the Fall, a second wave of COVID-19 hit and a new lockdown was put into place.
FIONN’S FOOD FUND At that point, Jay had another decision to make: return to the original donor for another donation or independently build on what he had started. Jay chose the latter and launched the Fionn’s Food Fund. “I sent out an email on Sunday, November 1, that stated what we were going to do and the plan behind it, then on Monday, November 2, we started the Fionn’s Food Fund. In the first two weeks, we raised $115,000 and in one year, we raised over $303,000. We’ve turned that money into 38,650 meals for 1JustCity sites, the Main Street Project, and many other programs in need,” said Jay. Fionn’s dishes were all prepared with fresh ingredients, covered all cost margins and were executed in a very responsible

manner to ensure that “every dollar was stretched to provide work for the staff and feed as many mouths as possible.” The launch of Fionn’s Food Fund also created an opportunity for Fionn’s to work with different levels of government and feed homeless individuals, who were isolated because of the pandemic. This level of involvement created traction for the Fund, which in turn attracted more donors to Fionn’s and 1JustCity. Throughout this experience, Jay saw how attentive and proactive 1JustCity was – working with volunteers, tending to sites and delivering food for each meal of the day – and how food scarcity is a growing problem in Winnipeg. “One of the reasons I personally loved working with 1JustCity was that they were very quick to spend their money on places that needed as much as they did. I was always very impressed with that,” said Jay. “This [Fund] provided food for people who really need it. Food scarcity in Winnipeg has increased as the pandemic has gone on and it continues to get worse and worse.” Looking back, Jay feels that the pandemic brought a lot of important things into perspective and provided a great opportunity to do the right thing during a very difficult time.
SUPPORTING ONE ANOTHER Joe Loschiavo, Owner of Pasquale’s Ristorante Italiano, was shocked to learn the news that he’d have to close his restaurant: a family-run business that has been serving the community for over 40 years. “Pasquale’s has been around since 1977 – we’ve been in business for 40 years and never seen a closure like this,” said Joe. “It really kicked in when we realized that we were officially shutting down. I could see the fear in the staff’s eyes – and mine, too.
I’ve had long-term staff working for me for over 20 years. I prepared my staff – I went to the bank and gave them some cash relief, told them to be safe and file for unemployment right away, and take whatever they needed from the freezer.” Joe’s open invitation for staff to take what they needed included Pasquale’s ‘Take & Bake’ menu: classic Italian dishes – including Lasagna el Forno, Baked Spaghetti, Eggplant Parmesan, and Gourmet Pizza – that you heat up and enjoy at home. These Take & Bake items suddenly symbolized more than traditional fare: they became a serving of comfort, support and nourishment during an unstable time. For Joe, the hardest day was when he closed Pasquale’s doors and left the building. “I looked out onto Marion Street and it was completely empty,” said Joe. “I’ve never not seen traffic here – Marion is a very busy street – and I looked around and saw emptiness. That’s when it all clicked in – I knew we were all in for something big, something different – then I locked my door and went home to my family.”
PART OF THE FAMILY Throughout the lockdown, Joe stayed in regular contact with his staff to make sure they were doing okay. By the end of the first month, he started receiving phone calls and messages from his customers, saying, “We need you back!”

“It’s something we take for granted but we’ve been feeding our customers for a long time. When you’re closed for a month, you find out they need you and your product to support them and their families.” As he prepared to reopen his doors, and adjust his restaurant to operate under a pick-up and delivery model, Joe felt excited, nervous, and completely grateful for his loyal staff and customers. “I let my staff know that we were going to come back and do pick-up and delivery right now and see how things would play out,” said Joe. “Only thing is that there’s no money in pick-up or delivery, so I would’ve totally understood if they didn’t want to come back. That’s when I knew I had the greatest staff in the world: they all said, “We’re here for you, let us know when you want us back.” We announced that we were coming back for delivery, pick-up and Take & Bake and we never looked back.”
When Pasquale’s reopened, the demand for take-out, delivery and Take & Bake was at a record high. Joe and his staff worked hard to keep up – answering phones, placing delivery orders, prepping Take & Bake dishes – and felt a wave of emotion every time they reconnected with their customers. “When we came back, we had customers walk in with tears in their eyes and ask us, “Are you okay? Are you going anywhere?” and I’d say to them, “Don’t worry – we’re fine, we’ve been around for a long time and we’re not going anywhere,” said Joe. “It’s something we take for granted but we’ve been feeding our customers for a long time. When you’re closed for a month, you find out they need you and your product to support them and their families.”

G IVING BACK In 2020, Joe partnered with the Manitoba Restaurant & Foodservices Association (MRFA) and The Dream Factory to create the Dine Manitoba Restaurant Guide – a coupon book that showcases local restaurants and their promotions (worth over $2,000 in value) to support the restaurant industry during the pandemic. “I came up with the Dine Manitoba book idea after hearing that The Dream Factory lost all its funding for the year,” said Joe. “I worked with the MRFA, restaurant members and non-members to create this book. We promoted their restaurants for free – giving them extra exposure – and created the opportunity to generate some funds for The Dream Factory and MRFA.” In the end, the Dine Manitoba Restaurant Guide raised over $40,000 and Joe personally delivered two cheques of $20,800 – one to The Dream Factory and the other to the Manitoba Restaurant & Foodservices Association. This year, Joe has partnered with three other restaurants – Silver Heights Restaurant, Brazen Hall Kitchen & Brewery, and East India Company Pub & Eatery – to raise money for Mental Health Awareness. From November 15 to December 25, 2021, 20% of gift card purchases from all four restaurants will be donated to mental health awareness and programs with the Victoria General Hospital Foundation and the Behavioural Health Foundation in Manitoba. “Mental health is a big thing now,” said Joe. “Last Christmas, we did something similar – where we donated 20% of the proceeds from our gift card purchases to mental health awareness – and this year, we’re working with our restaurant partners to make a larger impact and support others.” Looking back, Joe feels that this experience has been an amazing ride and is grateful for his family – at home, in the restaurant, and throughout the industry.
PLANNING AHEAD As Sachit Mehra and his family watched the COVID wave come in from Canada’s east coast – consuming Québec and Ontario – they collectively decided to close East India Company Pub & Eatery, their family-run establishment with locations in Winnipeg, MB, and Ottawa, ON, before the two provinces made any official announcements. This proactive decision gave the Mehra family ample time to ensure their staff and clients were safe and an opportunity to plan for their next steps – today and into the future. “We kept all our staff – we didn’t lay off a single person – because we knew that when the restart came, whether that was three, six or 18 months later, that we would need that skillset and expertise to be able to start again. That was a good decision that allowed us to hit the ground running this past August when in-dining started again,” said Sachit. This decision also came with cost. With the temporary closure of the restaurants and no sales generating income, the Mehra family depended on support from the Federal government as well as their own personal reserves in order to financially sustain their staff and restaurant locations during the course of the pandemic.

The biggest piece was adapting to the ‘new normal.’ When restaurants in Manitoba were allowed to reopen, Sachit and his staff had to adapt aggressively in order to cater to the new rules and regulations. “We went from being a buffet-style restaurant to being a quick serve take-out and delivery model, essentially overnight,” said Sachit. “When you think about it, it’s two very different things. I’ve always described it to people as the difference between a marathon runner and a sprinter. Yes, you’re both runners – two very different styles with two very different goals. It was the same thing – a buffet restaurant kitchen looks very different than a quick service kitchen – and we had to adapt our kitchen again, overnight, and make this happen… all while still making sure it worked within our ideals with everything being high quality, tasty, hot, homemade.”
HONOURING TRADITION & EMBRACING COMMUNITY Despite the obstructive journey of the COVID-19 pandemic and its deadly grip on the service industry, East India Company stayed on solid ground and true to its traditional roots. In the kitchen, the Mehra family makes their own cheese, sets their own yoghurt, grinds all their spices, and processes 400-600 pounds of fresh tomatoes a week to make sauce for all their bases. On the floor, the Mehra family is on-site to make sure the food is good, the quality is there, and clients are welcomed. The Mehra family is also very involved with the community. Before the pandemic, East India Company would host its annual Masala Mixer, which has raised over a quarter of a million dollars for various charities – including the Alzheimer’s Society of Manitoba, Victoria General Hospital Foundation and Marymound – in Manitoba. So, when Joe Loschiavo (Pasquale’s Ristorante Italiano) invited Sachit to partner in this year’s Mental Health Awareness campaign, he was all in. “I’m a Board member at the Victoria General Hospital Foundation and we do a lot of work in the mental health area.

I’m also Vice Chair of the Behavioural Health Foundation of Manitoba and St. Norbert, which is long-term addictions recovery for people. As Past Chair of the Winnipeg Downtown Biz, I’ve also seen the impact of mental health and addictions on our streets. They’re not separate things, they interplay together, and they’re mind-blowingly destructive to the person and their families. So, being able to address them in a meaningful way is important,” said Sachit. When the COVID crisis in India started, the Mehra family proactively responded with a pledge to donate a portion of all take-out orders towards the purchase of medical equipment. “We went to social media and our community base and said, “We need you to help us.” In 11 days, we raised $53,000,” said Sachit. “At the end of the day, we had to do something. This is a country with 1.6 billion people and to do nothing was just not an option.” The Mehra family’s next community outreach program is the Kamal and Sudha Mehra Experimentation of Innovation Fund through the Winnipeg Foundation: a yearly bursary opportunity for students, enrolled in culinary colleges across the country, that have demonstrated innovation and experimentation with cooking. “We will award one student every year with $2,000-2,500 bursary,” said Sachit. “We’ve been working on this program for the past five years and are finally able to put the finishing touches on it.” Looking ahead to the future, Sachit feels that when the COVID-19 pandemic comes to a close, we – as countries, communities, provinces, cities, and people – will need to have a long debrief about what happened, what we did and how could we have done it better. He personally looks forward to contributing to that conversation.

Le Burger Week is a celebration of a classic dish – the hamburger – that is stacked high with ideas, filled with flavours, and sandwiched between two freshly baked buns. This year’s Le Burger Week took place from September 1-14, 2021 – a first-ever two-week edition, compared to the traditional one-week – and restaurants introduced their innovative burger creations to ‘foodies’ and burger-lovers across Canada. Over 700 restaurants across the nation – and over 100 in Winnipeg – participated in this year’s Le Burger Week, including Tommy’s Pizzeria, Brazen Hall Kitchen & Brewery, and Shawarma Khan. Tommy’s Pizzeria – an award-winning pizza restaurant in Winnipeg – won first place for Judge’s Choice, second place for ‘Top 5 in Manitoba,’ and third place for ‘Top 5 in Canada’ with its debut burger, Smokin’ Jack. The grocery list for the Smokin’ Jack included Tommy’s signature half-pound patty, lemongarlic aioli, smoked gouda, Jack Daniels bacon jam, cilantro cabbage coleslaw, homemade potato sticks, and spicy pickled onions, served on a freshly baked and stamped brioche bun. Thomas Schneider (a.k.a. Tommy), Owner of Tommy’s Pizzeria, says that everything that went into the burger was made in-house. Tommy and his team would be baking fresh buns at 7 a.m., then stamping each one by hand while preparing the other ingredients for their signature burger. “There’s a lot of things that go into the burger. We make everything in-house – the buns, everything. All our meat came from Food Fare and other ingredients were supplied by our partners DeLucas and Gordan Food Services. We formed all the patties and were very hands on, down to the stamp on the bun,” says Tommy. “It was our first Burger Week, so we didn’t know what to expect. It was a lot of work but differently worth it.”

Brazen Hall Kitchen & Brewery’s burger, The Classy Viking, also won this year’s Le Burger Week, placing fourth in the ‘Top 5 in Canada’ and third for ‘Top 5 in Manitoba.’ This Classy burger consisted of a pure brisket patty, sauteed white wine portobello mushrooms, crispy tobacco onions, arugula, homemade cheddar jalapeno sauce and Brazen bacon blueberry jam, topped with truffle aioli and mustard chow chow. This was Brazen Hall’s fourth year participating in Le Burger Week – each year’s contender was designed to speak to a different culture and flavour palette and bring global to local. Kristjan Kristjansson, Owner of Brazen Hall, says that Le Burger Week is a fun way to celebrate Manitoba’s different communities and experiment with flavours. “There are five elements to a hamburger, and I followed it pretty steadily,” says Kirstjan. “[The Classy Viking] is all about flavour: it’s soft, kind of luxury, silky, elegant; it goes between creamy and has an acid element; then it’s got a decadence of truffle, portobello mushroom, and jalapeno for flavour, which all give it an earthy note. This is a fusion burger, where the flavours worked well together.” Shawarma Khan, known for its menu of traditional Middle Eastern-style dishes and healthy to-go options, served up The KHANsation for this year’s Le Burger Week: a beef and lamb patty (or falafel, as a vegetarian/vegan option) served with mature cheddar cheese, signature garlic sauce with a curry twist, caramelized onions, Middle Eastern slaw, pickled turnips, and hummus on a potato scallion bun. Obby Khan, Founder and CEO of Shawarma Khan, loves participating in Le Burger Week and offering a dish that’s typically not on the menu but still represents the Shawarma Khan restaurant and signature flavour. “[Le Burger Week] is always a fun event and it’s a speciality for us to offer our customers, who love shawarma, the chance to try a burger,” says Obby. “I believe that Burger The Classy Viking Week should be a representative of what your business is. We don’t throw quail eggs in there, we don’t throw doughnuts in there… we make it so that if a customer comes in and tried The KHANsation, they’ll think, “Wow, this is amazing!” and that’s representative of our menu. Same thing with our loyal customers, who come for shawarma – they get to try something a little big different that’s still within that wheelhouse of Shawarma Khan and that’s there the inspiration of our burgers come from every year.” Obby explains that all parts of The KHANsation are made in-house and that the burger was designed and priced out to be accessible to everyone. “We make everything in-house – all the patties are made in-house, we use beef, lamb and the falafel are mixed into the patty, with a load of Middle Eastern of spices. There are 15 ingredients that go into our burger patty alone; we take the most pride in it because it’s not just a beef burger. Then we offer a vegetarian/vegan option, by creating The KHANsation with an all-falafel The KHANsation patty,” says Obby. “To top it all off, we throw in a side of pita chips because everybody loves pita chips – all for only $14. We try to make it really accessible for everyone, not like a $30 Burger.” At the end of the day, Obby feels that it’s not about the voting – it’s about loving the food – saying, “If a customer comes in and loves our burger, that’s a win for me.”

Shaved Brussels Sprout Salad with a Poached Egg Ingredients: 2 cups (500 mL) raw Brussels sprouts, finely shredded 2 cups (500 mL) raw kale, thinly sliced ½ medium red onion, thinly sliced 4-6 slices prosciutto ham 1 Tbsp (15 mL) canola oil 4 eggs sliced almonds, garnish 1/3 cup (80 mL) Parmesan cheese, shaved Vinaigrette: ½ cup (125 mL) extra virgin olive oil 3 Tbsp (45 mL) lemon juice 3 Tbsp (45 mL) balsamic vinegar 2 tsp (10 mL) honey or granulated sugar 1 Tbsp (15 mL) Dijon mustard 1 clove garlic, minced Salt and pepper, to taste Directions: 1. Heat oil in a large pan over medium-high heat and cook prosciutto until crispy. Tear prosciutto into bite-sized pieces. 2. Whisk together the vinaigrette ingredients, set aside. 3. Bring a saucepan filled with 2 inches (5 cm) of water to a boil with white vinegar. Reduce heat to a simmer. 4. Crack eggs into small individual bowls. 5. Using a large spoon, create a swirl in the saucepan and drop 1 egg at a time in the center of the swirling water. 6. Poach for 2-3 minutes or until desired doneness is achieved. 7. Remove poached eggs with a slotted spoon. Continue poaching remaining eggs. 8. Combine the greens and onions in the large salad bowl, toss together with vinaigrette. 9. Top with prosciutto ham, poached eggs, sliced almonds and Parmesan cheese. Makes 4 servings

When you walk into East India Company, located at 349 York Avenue in Winnipeg, you feel like you’ve stepped into Delhi or Mumbai India. The sweet aroma of spice in the air, traditional artwork placed throughout the restaurant, and warm welcome from the Mehra family makes you feel at home and on vacation at the same time. Sachit proudly gives credit to his parents, Kamal and Sudha, for weaving their traditional roots into the fabric of East India Company. “All the artwork in here is original. Our pieces were imported from India in the late 80s, early 90s and are anywhere from 450-500 years old,” says Sachit. Amongst the artwork and vibrant décor are six jars that are placed in the centre of the restaurant’s archway. Each jar is filled with one of East India Company’s signature spices, including the raw ingredients that make the Mehra family’s Garam Masala. 30

“Our Garam Masala recipe has been in our family for 75 years,” says Sachit. “My grandma was the guardian of that recipe, who passed it on to my mom before she passed away. My mom is the only one who knows it now.” The Garam Masala jar contains the last batch that Sachit’s grandmother made before she passed away. To honour her and celebrate every occasion that the Mehra family ‘breaks new ground’ with a new restaurant or business venture, a family member takes a handful of the Garam Masala and brings it to the location for good luck. “The mother pot is here at our flagship restaurant in Winnipeg. We’re super proud of that,” says Sachit. INDIAN FOOD & CULTURE Sachit explains that North America’s introduction to Indian food and culture came from The Beatles, who popularized India in the 1960s and 70s, and British Return to Table of Contents
CHANA MASALA Chana Masala (a.k.a. chickpea curry) is a popular dish that is made with simple, fresh ingredients and filled with warmth and flavour. Served over rice or with naan, each bite is velvety to the tongue and contains a dance of flavour on your palette. Sachit explains how to make a traditional Chana Masala: Ingredients • Chickpeas (canned or soaked in water the day before) • Fresh ginger root and garlic (50/50) • Garam Masala • Hungarian Paprika • Shredded Potato • Crushed whole red chili • Tomato puree • Salt, to taste • 100% Canola oil “Start by preheating your pan and coat it in Canola oil,” says Sachit. “Once your pan is heated, add the ginger and garlic.” Once the garlic and ginger combination coats the pan, add Garam
Masala and a touch of Paprika. Sachit stresses that Paprika, while it’s beautiful in colour and serves well as a decorative spice for any dish, is not a flavouring agent. “Paprika is beautiful but you have to be very careful with it. If you overuse it, your food tastes like mud,” says Sachit. Then you add a pinch of salt, a whole red chilli (crushed), and your tomato purée. At East India Company, the Mehra family uses all fresh ingredients. When it comes to tomatoes, they process 400-600 pounds of fresh tomatoes a week to make sauce for all their bases. “In the restaurant, we do not use canned anything. Everything in the restaurant is made right from scratch – the spices and everything. The tomato base is no different. It’s tomatoes that we bring in, we crush them, we puree them, we sieve them, and that produces the sauce. And if you look at the texture of the sauce, it is super velvety. This is the base for Chana Masala, Navratan Korma, and the Butter Chicken sauce.” Once the puree is added, the spices open up and bring the base sauce to life. Then, you can add hardboiled, shredded potato – a Mehra family secret – which melts and gives the dish a rich, velvety base. “When you think something is velvety to the tongue, it’s shredded potato that gives the dish that added flavour, consistency and texture,” says Sachit. Once the base is made, you add your chickpeas – along with a splash of the water they were soaking in – and you watch the signature brown sauce develop before your

Colonialism, which introduced a new world of food and culture into the West. “India is very regionalized – especially when it comes to traditional Indian foods. In the South, Indian dishes focus on seafood, lentils, rice and grains and in the North, the focus is more on spices and sauces,” says Sachit. “In North America and Western culture, you have dishes like curries, Tandoori Chicken, Biryani, Chana Masala, Navratan Korma – all of which are North Indian dishes.”

From there, you can add more chili pepper, tomato puree, and let the sauce ‘mature’ – meaning when you no longer see bubbles around the perimeter of the sauce (you’ve pulled a majority of the water out and that’s where you want to be). From there, turn down the heat, place a lid on top and let your Chana Masala simmer for an hour or two before serving. “The longer chickpeas stew, the better they taste. You want to make them as soft as possible,” says Sachit.

Tommy’s Pizzeria, located on 842 Corydon Avenue in Winnipeg, serves up pizza that can’t compare to other restaurants because Tommy, the award-winning pizza master, has designed his menu that way. His line-up of specialty New Yorkand Detroit-style pizzas are made with high quality ingredients that Tommy himself has chosen. From the flours used for the dough to the cheeses and tomatoes used for the base to the fresh assortment of toppings, every pizza is made methodically and with purpose.
TOMMY’S STORY Ever since he was a young boy, Tommy loved making pizzas. When he was 15, Tommy worked at Doughboys Pizza and by the time he was 19, he invested in his first Poppa John’s franchise. After successfully running three franchises for several years, Tommy decided to begin his own journey as a restauranteur. His first step – and in Tommy’s words, ‘the best decision he ever made’ – was when he enrolled in Tony Gemignani’s School of Pizza, based in San Francisco, CA, and learned how to make Neapolitan- and American-style pizzas. hosting the world’s largest virtual pizza party. “Making pizza has taken me all over the world and I’ve had the chance to meet so many amazing people that share the same passion,” says Tommy.
TOMMY’S PIZZERIA
“I learned from [Tony] and that was huge,” says Tommy. “I originally went to learn the Italian Neapolitan style because that’s what I thought I wanted to do. Then I realized the American style – New York-, Detroit-, Chicago-style – was my forte and what most people like; so, I went with that.” Tommy’s formal training in pizza brought him to join and be a part of the World Pizza Champions team. Alongside his team, Tommy has competed in championships all over the world won the title of ‘Best Pizza Maker in Canada’ at the Pizza World Championships in Parma, Italy. Tommy is also two-time Guinness Book of World Records holder – one for making the world’s largest calzone and the other for

SPICY HONEY Tommy’s awardwinning pizza, The Tommy’s Special (Spicy Honey), consists of a spicy honey base, galbani and burrata cheese, arugula, prosciutto, and lemon zest. Tommy explains how to make the Spicy Honey pizza:
Ingredients • Fresh dough that’s rested and ready for a New York-style pizza (i.e. large, hand-tossed thin crust bottom with a thick border crust that’s nice and crisp). • Honey • Chilis • Cayenne pepper • Galbani cheese (or mozzarella, as an alternative) • Burrata cheese • Arugula • Prosciutto • One lemon “Start by working the dough from the inside out, throw it up in the air, catch it… thin it out,” says Tommy. Tommy explains that there’s quite the science behind making dough. The type of flour you use, the temperature of the water (and your kitchen) all play a role in how to the dough forms. When Tommy makes his dough, he looks for the right consistency and texture to make sure it’s right.
“If [the dough] is too over proofed, it’ll be too big and poufy with big bubbles and you won’t be able to use it. Other times, it’s too flat. If it’s a bad batch, the flour doesn’t get broken down properly and the batch is garbage,” says Tommy. “It takes 30 minutes to properly ball the dough, too, so a lot can happen in 30 minutes if you have to stop and do something. That can all affect it.” Once the dough is rolled out and ready, Tommy drizzles his signature spiced honey sauce on the base of the pizza. The honey comes from a local farmer and is spiced with chillies and cayenne pepper. Next step is cheese. Tommy uses galbani cheese, an Italian cheese that is very fresh, light and creamy. Once the cheese is sprinkled on the pizza, it’s ready for the oven. “I put the pizza directly onto the stone and it helps the dough rise,” says Tommy. “After 8-10 minutes, I twist it half-way through and look for it to get brown on top and cooked evenly on all sides.” Once fully cooked, the pizza is ready for the next important step: toppings. Tommy says that it’s important to put the toppings on after the pizza’s cooked (for this particular pizza, any way). At his ‘toppings’ station, Tommy dresses up the pizza with fresh prosciutto, burrata cheese, and arugula, then takes a fresh lemon and puts a pinch of freshly grated lemon zest on top. Serving up a
Lifetime of Memories Silver Heights Restaurant a local institution for Winnipeggers By Megan Funnell
My dad, George, loves ‘The Heights’ – a.k.a. Silver Heights Restaurant – the local institution in St. James, Winnipeg, MB, that has been serving generations of customers for over 65 years. I have many childhood memories of my dad, saying, “Let’s go to The Heights!” whenever there was a special occasion to celebrate or he had a craving for his favourite dish, veal parmesan. We’d all get dressed up, pile up in the family van, and drive through the neighbourhood until we saw the classic illuminated signage shining its warm, welcoming light on us. I swear, my dad knew every person that either worked or dined there – from the moment he’d enter the restaurant, he’d be connecting with every person in the room, talking, laughing, and saying hello. And no matter what the ‘special’ was, my dad always ordered his favourite dish. Fast forward to 2021, my dad has been diagnosed with cancer. His diagnosis has changed many things – physically, mentally, and emotionally – but one thing remains untouched and unscathed: his infinite love for The Heights and their veal parmesan. When I originally met with Tony Siwicki, Co-owner of Silver Heights Restaurant, back in 2020, I learned many stories of how Tony and his team worked together to overcome the impacts of COVID-19 and support their customers and the communities they’re Return to Table of Contents

all connected to. Tony’s genuine drive and compassion for helping others really resonated with me… so, when it came to reconnecting for our interview in 2021, I approached him with a small ‘ask’: that when we connect for the interview, my dad accompany me for lunch so he can enjoy his favourite dish. Not only did Tony say ‘of course,’ but he set the stage: we would prepare my dad’s favourite dish together. The next day, my dad and I arrived at The Heights and he had no idea what was about to happen. We sat down, ordered a drink and Tony joined us at our table.
Before my dad could comprehend what was happening, he was wearing a traditional chef’s hat and coat and stepping into the kitchen. Tony introduced us to his staff, then showed my dad step-by-step how to make veal parmesan. My dad and I were in absolute awe – learning about how Tony and his team use all homemade ingredients and work together like well-oiled machine to create each and every signature dish – and throughout the process, my dad reminisced about the many memories he had at The Heights. I heard stories I had L ocalfa re 33
never heard before – and suddenly, my childhood memories had a new layer of context tacked onto them. The veal parmesan that Tony and my dad prepared was exactly the way he remembered it to be – breaded and seasoned with house spices, dressed with Spanish sauce – a recipe that goes back to Tony’s grandfather’s days, running Silver Heights – and served with freshly steamed vegetables and crispy French fries. Tony laughed and shared that their Spanish sauce recipe originated from former cook, Mae Pearson, who made sure that they always did the sauce and ribs properly. Meanwhile, Tony himself tested out hundreds – maybe even thousands – of French fries until he found the right one. Tony’s pride for serving a topquality menu, made with all in-house ingredients, is supported by his childhood roots – growing up and working at the restaurant. When Tony was eight years old, he was in the kitchen peeling carrots and potatoes. By the time he was 12, Tony was hosting on Friday and Saturday nights – the role that his daughter Mikenna has at The Heights today. Tony’s son, Dex, also helps out with dishes and kitchen prep – which makes them the fourth generation of family working at the restaurant – and wife, Sue, works the bar. “I was teaching the cooks at age 12 – showing them how to make the sauces and gravy, where to put everything, how to build a clubhouse the proper way – everything that was taught to me; I passed it down,” said Tony. “By 14, I was here.” Tony explained that all the staff work together and support one another, regardless of the ‘role’ they’re in. “We’re all here to help one another,” said Tony. The Heights community was strengthened and supported in a new way, when COVID-19 arrived in Canada. Tony remembers the day, March 17, 2020, like it was yesterday:

I remember coming to work at 9 a.m. and my brother, JC, was already there. It had already hit the news that COVID is here – my parents were flying home from Maui, and they didn’t know – and that’s the day they shut the airports down. For us, we’ve never shut down for anything – it was just not a part of our scene. We’re open no matter what – I don’t care if there’s flooding or a fire, we’re open. So, my mom and dad are coming in and at 9 a.m., I phoned my brother and said, “We’re not opening. Everything’s cancelled; we’re closing the doors.” I came in, we looked at each other and said, “Now what?” The Silver Heights team went from 40 to zero to 18 staff, who came together to clean, work on a new take-out program, and organize the restaurant’s POS system. Tony, his brother and restaurant Co-owner, JC, their family and staff also got together to prepare and deliver 400 food orders to the Grace Hospital, during the COVID-19 pandemic. Tony explained that the staff’s strength and willingness to work and the customers’ support to the Silver Heights family was overwhelming and wonderful. “We had a customer come in and say, “I just want to sit here and have one beer… here’s $1,000.” Then, Wade Miller bought gift cards for all his staff, their spouses, and select season ticket holders. This is two out of hundreds of examples of how kind people are. They are the reason why we come to work,” said Tony. Tony is also grateful to the restaurant vendors that he’s known and has been working with for years as well as the Manitoba Restaurant & Foodservices Association (MRFA) for all the support during this difficult time. “We’re all helping each other out. Our vendors, the MRFA and its members are here for us and we are here for them – that’s what it’s all about.” The Silver Heights Restaurant has been open and serving Winnipeggers for 65 years. Four generations of family, friends and communities have been created here and it shows every time a customer comes in to say hello, sit at their favourite spot or, in my dad’s case, order their favourite dish.

Brazen Hall Kitchen & Brewery leads the way in burgers, beer and more

razen Hall Kitchen & Brewery, the home of great food and beer, is known for being bold and pushing the envelope. Every dish that Head Chef Jose Noboa Sanchez and his team creates in the kitchen awakens the senses – with its colourful presentation, rich aroma, and compliment of flavours; meanwhile, the subtle nod of tradition throughout the restaurant – honouring culture, flavour, family, and the restaurant’s roots from The Round Table – truly defines what it means to be confident, bold, and brazen. The Round Table, a family-run Winnipeg institution, was originally owned by father Thrainn Kristjansson, then son Kristjan Kristjansson. The grocery list for this classy burger, alone, speaks to how Kristjan and Jose have masterfully crafted Brazen Hall’s menu – with all ingredients either made in-house or cherry-picked from their top suppliers. With reference to The Classy Viking, Kristjan explains that working with the best ingredients is what makes the burger so beautiful. “The bread has to be the best bread – nice and fresh – then for the hamburger, we always buy high quality beef from a local supplier, To-Le-Do Food Services – Lee and Chad Young are great friends – and then we press it ourselves. We create all of our sauces in-house and get high quality ingredients from our vendors,” said Kristjan. “It’s a great product – everything about it is real.” Brazen Hall’s menu changes with each season and under the inspiration of different communities and flavour profiles. Kristjan’s vision for bringing ‘global to local’ is brought forward with his life experiences, growing up in Iceland, travelling and learning from chefs through other parts of the world. Same with Jose, who grew up in Ecuador and mastered his craft by travelling and learning from chefs in Spain. The two of them – with their experiences in the kitchen combined with their love of culture, flavour and food – places Brazen Hall on the map for ‘foodies’ from all cultural backgrounds in Winnipeg and across Canada. “That’s what Brazen Hall has always done: we try to bring global flavour back home,” said Kristjan. “We take these flavours, we respect our communities, and we like to push the envelope – we may even freak them out a little bit. When we introduce new ingredients, it sparks questions and introduces a new language for people… and that’s part of the fun.”

Kristjan explained that he feels great pride when people from other parts of the world come to Brazen Hall and share how the food ‘reminds them of home.’ One story Kristjan shared was when an individual from Texas visited Brazen Hall for a meal: We were doing a St. Louis-style Southern Smoked Rib and there’s a guy here from Texas, saying that’s as good as the best place in his town. We smoke outside in our smoker; we use coal and wood – as if you were in the South. And our Cajun seasonings are recipes I learned from a chef in New Orleans in the 1980s. So, when we blacken stuff, it’s the real deal – it’s all authentic and true. Brazen Hall’s quality ingredients, used in the kitchen and brewery, come either from local vendors or the ‘mother country’ themselves. Their list of vendors includes To-Le-Do Food Services – a proud partner of the Kristjansson family for over 40 years – KUB Bakery, Sysco Food Services, and La Grotta/Piazza Denardi. Kristjan greatly values his relationships with these vendors as well as other restaurants in the city. Brazen Hall is also very

Flavours of Folklorama From the Comforts of Home A world of food, flavour, culture, music, and dancing in the comfort of your own home: Folklorama withstood the impacts of the COVID-19 pandemic and brought the magic of Winnipeg’s largest multicultural festival to its online audience, all over the world. Folklorama’s One Multi-Cultural Fusion event, sponsored by Manitoba Liquor Marts, took place from August 6-8, 2021, with livestreamed performances, cultural-themed drink pairings, a virtual ethnocultural marketplace and partnerships with local restaurants to bring the flavours of the festival to viewers.

Teresa Cotroneo, Executive Director, says that Folklorama’s mission, celebrating diversity and promoting cultural understanding, brought forward this year’s event theme, Cultural Fusion. With the help of Manitoba Liquor Marts, Folklorama introduced three different cocktails that were inspired by the cultural theme celebrated on each day. “This event is all about bringing together the different cultures – cultural fusion – so that’s what we ran with,” says Cotroneo. “Through our partnership with Manitoba Liquor Marts, we were able to have three different cocktails created by them: one paired for each night.
First night was the Asian-African theme, second was the Americas, and third was Europe. So, there was a cocktail for each night and people could find the recipes online and recreate them at home.” Folklorama’s partnership with Farmery Estate Brewery included the Estate Select Pack that consisted of a series of limited-edition beers for the summer festival. Chris Warwaruk, Co-owner Farmery Estate Brewery, says that the Farmery team was proud to be the official craft beer sponsor for Folklorama and be a part of the signature event. “Growing up, we went to Folklorama pavilions with our family and got to experience a wide variety of cultures with their dance, food, and history. Folklorama helps weave our cultural tapestry in Manitoba and Canada overall,” says Chris. “To help support Folklorama this year, we offered for sale our Farmery Folklorama Fusion beer pack; and with every sale, a portion was donated back to Folklorama. We’re proud that Folklorama is going strong in Manitoba and we look forward to seeing it continue long into the future!” The Folklorama Fusion-inspired Pack was sold at Manitoba Liquor Marts and the proceeds from each sale went towards Folklorama’s Cultural Preservation Fund. “The Cultural Preservation Fund is a granting program that we have, where cultural communities can apply for funding to carry out different youth programs that maintain preservation and celebration of culture for generations to come,” says Cotroneo.

Cotroneo explains that over the years, people recognize what the Folklorama festival means to them and how it nurtures and supports our communities; therefore, the Cultural Preservation Fund is a valuable extension to the festival’s impactful footprint in Manitoba. The 2021 Folklorama festival also introduced new ways to work with their partners as well as cultural communities. “We were also able to work with about 50% of the communities that usually participate in the festival. We also had to be very diligent with the group size and different requirements as far as group sizes and bringing people together. So, we definitely had a lot of engagement. The last time we looked at our views, we had over 25,000 over the three days, all over the world. Very exciting for us to break that International border and have people join us.” Folklorama’s partnerships with local restaurants bridged the connection with festival goers and their love of cultural cuisine! For the week of August 1-8, Folklorama’s Ethno-Cultural Food Week was hosted in partnership with 18 local restaurants, including The Greek Market, De Luca’s, and Charisma of India. Cotroneo explains that this partnership created a new opportunity for people to connect with Folklorama by combining their love of the festival with food while supporting the restaurantr-500.pdf industry. 1 2021-11-18 11:02
“Ethno-Cultural Food Week was awesome because food is the number one reason people attend and it’s a big part of any given social event,” says Cotroneo. “We know how much the industry has struggled over the past two years, so it was a great opportunity to partner with local restaurants and it’s something we’d like to continue to do going forward.” Folklorama 2022 is scheduled for AM July 31 to August 13.

Farmery Focuses on Manitoba Christmas
T
We’re connected to the crops we grow, and we do collaborations with local farmers or with other producers. We’re proud to make something that
here’s nothing like a Manitoba Christmas. It’s a holiday season full of attending local markets and tobogganing or sneaking mandarin oranges from the fridge and eating entirely too many. And of course, the smell of Grandma’s saskatoon pie and ginger snap cookies wafting through the house. Located in the picturesque town of Neepawa, MB, Farmery Estate Brewery, a brewery and a farm where they grow barley and hops for their beer as well as brew, knows the warmth and fun of Manitoba Christmases all too well. That’s why this unique Manitoba brewery has released two packs for the holidays: the Farmery Advent Beer Calendar Pack and Fa La La Lager Pack. The unique thing about these beer packs are the sheer number of new beers that Farmery launched within the last two months. “We wanted to make something unique and light [for the holidays],” says Chris Warwaruk, co-owner of Farmery Estate Brewery. A component of these new beers is how connected they are to the Manitoban local holiday experience. Chris adds, “We’re connected to the crops we grow, and we do collaborations with local farmers or with other producers. We’re proud to make something that is homegrown.” Farmery is all about collaborating with other local producers and organizations. A perfect example is the Foraged Berry Lager: created between Farmery and Carley Basler from Rocket Greens, a hydroponic food production project operating in Churchill, MB.

Carley collaborated with Farmery by handpicking wild berries, such as crowberries and cranberries, from the tundra around Churchill that were used to create the Foraged Berry Lager. Time was tight to harvest the berries as they are only ripe within a roughly two-week window. Carley and volunteers had to harvest the berries with the help of dogs and guns to protect themselves from polar bears. As soon as the berries were sorted and cleaned, the crowberries and cranberries were on a chartered flight from Churchill to Winnipeg, then transported down the Trans-Canada Highway – three hours west to Neepawa – and Farmery Brewery immediately prepped them for brewing. Within the month, the Farmery team labelled the cans with a picture of Carly foraging berries with her dog. “It educates people about how people live up there and if they want to go forging, what’s there to forge,” said Chris. “It also highlights what Farmery is about, too. We grow our own barley and hops – that’s in the beer, too – but we don’t have to just stick to that, we can add other Manitoba influence within our flavours.” Foraged Berry Lager is included in both the Fa La La Lager and Farmery Advent Calendar, but there are so many other Manitoban flavours to explore, including the Premium Lager, Wind Chill Lager, and Mandarin Orange Lagered Ale. “When you crack Mandarin Lager Ale can, it smells like when you’re growing up, and you open the box of mandarin oranges and you peel that first orange

peel away,” said Chris, “It has that mandarin orange taste… sweet, with subtle influence of citrus notes in there.” The Advent Calendar Beer Pack features 24 different Farmery beers, created with nostalgic Manitoba Christmases in mind.

Mavis McRae, Director of the Prairie Research Kitchen, says that the College staff, researchers, instructors, and students connect over their shared passion for food and dedication to learn, grow and support others. When it comes to a research project, the Research Kitchen team connects with the business, determines what the project encompasses, and works with the College
instructors and students to bring the project to life. “We’re a dedicated centre that’s very connected to industry and industry projects,” says Mavis. “Companies come to us with a variety of means – they’re looking for help in either developing a new product, changing their process to be more efficient, or working with new equipment that they have acquired

or want to acquire. Our team of food science, culinary and baking experts talks with the client, figures out the needs, and introduces them to options and possibilities.” From there, the Prairie Research Kitchen team develops a project outline, then maps out where and how students can participate in the project.
One success story was when the team worked with local breweries Torque Brewery and Farmery Estate Brewery and explored innovative ways to use spent grains, a by-product of the brewing process. Mavis explains that the Prairie Research Kitchen worked with Torque and Farmery to figure out how to work with spent grain to create a new product,

Miso, a traditional fermented bean or grain paste that has been around for over 1,000 years. Miso is widely used to flavour soups and broths in many Asian countries like China, Japan and Korea. To complete applied research, such as the spent grains project, the Research Kitchen sets up trials and guides culinary arts students how to work through the research process. “Where you’re trialing something new, it’s important to change only one variable,” says Mavis. “You observe what’s happened, then troubleshoot and go back to the team with suggestions on what could be done better, what went right, and figure out what the next research treatment might be.” From there, the staff, students and team get to research, review and seek client feedback on the results. “We show the company what we’ve come up with, they give us their feedback, and we either nail it or go back to the drawing board and try again,” says Mavis. Once the project is completed, the company owns the commercial rights to the research and walks away with either a new process or product to take to market. The nature of research provides countless opportunities for students and businesses alike to grow, learn and evolve. The more research that companies choose to pursue, the more options and possibilities that come for themselves and other businesses; meanwhile, the more students get involved, the more they see the different career paths and options that come when earning a diploma in Red River College’s culinary arts programs. It’s truly a win-win. I know that an incredible amount of time, effort, and care went into the Restaurant Guide project, and today I wanted to share exactly what that effort has meant for our Dream Kids. As you can imagine, COVID-19 has impacted The Dream Factory in a number of ways, and we have worked hard to shift many of our Dreams to at-home experiences that can be delivered safely here in our community. Born at 30 weeks, Dream Kid Malachi was born with a congenital diaphragmatic hernia. This means that he was born without a lot of diaphragm, causing his stomach and intestines to push into his lungs and affecting the development of his heart and lungs. Malachi’s early life was full of surgeries, including one to repair his diaphragm and an open heart surgery at just 4 months old to repair some of the damage. He spent close to a year on oxygen. After everything he’s been through, one of the things that is most important to Malachi’s family is for him to have a space that is just his — a safe haven. Never in his wildest dreams did he think his bedroom would be transformed into "The Bat Cave!" the absolute perfect space created entirely with Malachi in mind. His reaction to seeing it the first time speaks for itself! ⠀
Dream Kid Kayne is a happy, fun-loving kid–with Chronic Granulomatous Disease, a rare genetic disorder. “He started showing the signs at about one year old,” Kayne’s mom says. And for the next two years, he was in and out of the hospital. Because of his illness, Kayne was never able to play outside at the park like the other kids. So, his dream was to have a backyard playset with a tunnel slide - he even drew us a picture! And that’s what he got—thanks in part to you and your incredible generosity. Kayne’s mom agrees. With a big smile on her face, she says, “Kayne told me, ‘This is so fun! I love you, mommy. You’re the best!’” Your support helped make Kayne's dream come true, and it would not have been possible without you!

CHILD BATTLING CANCER FULFILS DREAM OF MEETING SIDNEY CROSBY, GIVES HIM BEADED MEDALLION Article by Lenard Monkman, CBC News An 11-year-old Winnipeg boy battling cancer recently fulfilled his dream of meeting his hero, NHL player Sidney Crosby, and gave the superstar a beaded medallion to match his own. "Just to see my son's hockey idol wearing a medallion that matches my son's medallion that I beaded, it's something to be very proud of," said Rachel Green, Dian Green's mother. Earlier in April, Green and her son, who are Anishinaabe from Iskatewizaagegan #39 Independent First Nation in northwestern Ontario, met the Pittsburgh Penguins player virtually thanks to The Dream Factory, a program that grants wishes of Manitoba children with life-threatening illnesses. "He's always been a fan of Sidney Crosby since he was a baby," said Rachel Green, who added her son is an avid hockey fan who loves to skate. At age two, Dian was diagnosed with rhabdomyosarcoma, a rare type of cancer, and was treated with chemotherapy and radiation. At six, he was diagnosed with acute lymphoblastic leukemia. His younger brother was a match for a bone marrow transplant which was successful. This past November, he was diagnosed with osteosarcoma, a type of bone cancer, and has been in treatment since then. "Through Dream Factory, we were told that Dian could have a wish and his wish was always to meet Sidney Crosby," she said. Dian, whose middle name is Sidney, had asked his mom to bead him a Penguins logo medallion prior to knowing about the meeting with Crosby. ...Continued on next page

Then on April 14, the Pittsburgh Penguins player took Dian through an on-ice, half hour tour via an online video conference similar to FaceTime. "We kept the news from him until the morning of the interview," his mom said. "We told Dian that it was about to happen and we just wanted to keep it a big surprise. And he was just so amazed, like he couldn't believe that it was going to happen. He was so nervous, so shy." During the meeting, Dian wore his medallion proudly and Crosby asked him about it. After the meeting was over, Dian asked his mom if they could make the three-time Stanley Cup Winner a similar medallion and send it to him as soon as it was completed. Shannon Patterson, the dream co-ordinator at The Dream Factory, said setting up the meeting, sending the medallion and sharing Crosby's response with the family has been a highlight of her work experience. "We just absolutely love [Dian] to pieces," said Patterson. "We are so happy that we were able to put this together for him and his mom because they have been absolutely through so, so much that they just deserve everything," said Patterson, who met the family five years ago. Rachel Green said it's an experience she and her son will remember, especially "because my son wanted medallions made and that just makes it even more meaningful and sentimental."

Cibo Waterfront Café Serves Urban Eats with a View

The Art of French Cuisine with Preservation Hall
T
he aptly-named Preservation Hall is the keeper of all things sacred in fine cuisine. Opening the independently owned-restaurant and wine bar with his wife Melanie in June 2020 has allowed Tristan Foucault to preserve the French culinary traditions he brought to Winnipeg during his rise as one of the city’s most talented chefs. During his many years at the helm of Peasant Cookery, he introduced Winnipeg to the wonders of house-made charcuterie, his renowned skills for curing meats evolving as the restaurant transitioned from Oui Bistro. His passion for preserves extends to everything from pickled vegetables to confit wild mushrooms, elevated to the sublime in entrées such as Mushroom Bourguignon, one of Preservation Hall’s most popular offerings. The menu is replete with modern takes on French classics, perfectly-prepared using meticulous time-honoured techniques. There’s no cutting corners in Foucault’s kitchen. Even when he was cooking Asian at Hu’s on First, the stocks were all house-made à la Française. Foucault attended Dubrulle Culinary School in Vancouver before cutting his teeth at Vancouver’s famous Le Crocodile. He then perfected his prowess at Thomas Keller’s Bouchon and French Laundry after winning two ‘Chef of the City’ scholarships in his Winnipeg hometown. Along with a mastery of classic technique, he developed a fervour for the integrity of food, evident in dishes such as Arctic Char Amandine. Like the pickerel on the menu, the char is sourced from pristine Northern Manitoba waters for its unparalleled quality and taste. The pork throughout the menu is from local herb-fed pigs. Foucault is devotee of nose-to-tail, using every part of the animal. And alongside sweetbreads and charcuterie – featuring his signature sausages, pâtés and rillettes – a plantbased board offers a rotating selection of seasonal pickled, blanched, and raw vegetables, house-made vegan ‘cashew’ cheese and vegan dips. Pulled barbecue-seasoned jackfruit joins smoked brisket and buttermilk fried chicken as a nod to New Orleans, home to French cuisine’s Cajun cousin and the beloved Preservation Hall jazz club. Playful artwork continues the theme in one of the dining rooms, a flexible space ideal for private events. The elegant but unpretentious setting includes a patio adjacent to the eatery’s onsite herb garden, where the bar’s professional mixologists source their mint juleps. Living up to all parts of its name, Preservation Hall Eatery + Wine Bar is one of three Winnipeg recipients of the 2021 Wine Spectator awards. The establishment was also named best new chef-driven restaurant by Ciao Magazine in 2020.

PINERIDGE HOLLOW with the guidance of Regehr. Regehr is also the owner of Oak Knoll Farm and relies on the expert advice of head gardener Becky Groenheide when identifying which seeds and varieties to plant for the year to come. So, when it comes to Pineridge Hollow planning for the year, Regehr and her chef and the kitchen team plan the gardens in early winter and plan the menus for the upcoming year based on those choices so that every product is used. Oak Knoll Farm is a regenerative farm, which falls under the philosophy to leave the Earth better than we found it. Regehr explains that Pineridge Hollow recycles all the produce that came from the farm by bringing the scraps right back for the animals and soil. “Our cycle is that we’re constantly giving back to the soil,” says Regehr. “Every year, your crop gets better and becomes easier to maintain. We have the soil, the proper climate and the ability to produce some pretty amazing things for Pineridge Hollow and its connected community of customers, vendors, staff and their families.” During the COVID-19 pandemic, Pineridge Hollow had to adapt its business model to work within the government restrictions and changes of seasons. Regehr and her team developed a Grocery Program, where Pineridge Hollow partnered with local vendors to make fresh ingredients and local grocery items available to customers. Regehr explains that the grocery program was designed to support local communities and bring the ‘comforts of home’ to the dinner table. Pineridge Hollow also created a picnic program, where customers could order all their favourite dishes and have a picnic-style meal on the property. “The picnic idea was a great concept, developed by the creative kitchen team which allowed customers to enjoy a delicious meal and enjoy the beautiful scenery of Pineridge Hollow,” says Regehr.

Whether it was taking care of the animals, helping pick vegetables, or planting new produce for the season, the staff had the opportunity to see Pineridge Hollow’s farm-to-table philosophy come to life. “It was amazing for [the staff’s] understanding of the whole process of farm-to-table,” says Jan. “Culinary does not teach any of this. Seeing the lightbulb go off when learning this process and how they value food, as far as food waste goes, gives them a new level of understanding that there’s a lot of work that goes into this. It’s very multi-layered.” Now that the restaurant has returned to operating at full capacity, Regehr has her sights set on the future. Introducing The Village at Pineridge Hollow, consisting of artisan goods, shops, farmer’s market, bakery, grocery store, wellness centre and more. The Village will be a natural expansion on the Pineridge Hollow acreage and create a space for collaboration and community. Peak of the Market Celebrates Manitoba Growers and Beyond
eak of the Market CEO Pamela Kolochuk is putting focus back on the roots of the nearly 80-year-old not-for profit: growers. “Manitoba vegetable growers are very forward-thinking,” she says. “They use technology to cultivate vegetables sustainably.” Throughout the province, more than 20 commercial vegetable farms and 300 market gardeners grow over 110 different types of vegetables, from asparagus to zucchini. This local produce meets the highest quality and safety standards. With one of North America’s most technologically-advanced storage programs, Manitoba growers are year-round suppliers of vegetables to the food industry in Manitoba and beyond.
For instance, every Mary Brown’s restaurant across Canada uses fresh southern Manitoba potatoes. The venerable tuber has also been the star of Potato Week, returning February 4–14, 2022. Four years ago, Peak of the Market started promoting the potato’s healthy and versatile qualities. In 2019, 85 individual restaurants participated, with offerings across breakfast, lunch, and dinner. Some even designed entire menus around the potato, from appetizer to main course to dessert. Kolochuk still remembers Chaeban’s delicious potato ice cream at Chaeban and Across the Board’s potato donut holes. Diners vote online for their favourite creation. “Potato Week helps promote
restaurants both large and small,” says Kolochuk. The 2022 event will encompass Valentine’s Day, giving restaurants the opportunity to prepare a special celebratory dish. Participation is free and restaurants receive a complimentary 100 lbs of potatoes – red, white, yellow, russet, creamers, fingerlings, or assorted. “Growers want to give back,” says Kolochuk, who knows some of them firsthand from her formative years on a dairy farm in St. Claude. In fact, joining Peak of the Market as the Chief Financial Officer in 2017 was a true homecoming. Now the CEO, Kolochuk is proud to say, “Growers are at the heart of everything we do.”

Drifter's: Your Lake Country Destination

n wing night, sometimes the line-ups at Drifter’s are out the door. With more than 50 sauces and choices of mild, medium, hot, saucy and dry, bone-in or boneless, there’s an option for everyone! “We serve very high-quality wings,” says Kiley Horvath who took over Drifter’s Restaurant and Lounge with his wife Leah in June 2021. “People come here from all over the area.” For more than 25 years, Drifter’s has been a veritable Lac du Bonnet institution. “It’s a very important destination for the community and cottage country,” says Horvath. “It’s definitely a hub.” Conveniently located just off Highway 11 at the north end of town, Drifter’s has become a popular spot for seasonal residents on the way to the cabin, visitors enjoying a day of activity around Lac du Bonnet, and locals wanting a change of pace. Fully licensed, the spacious dining room, bar, and cocktail lounge are perfect for a night out to enjoy a hearty home-cooked meal in a relaxing setting. Guests know they can always count on a generous portion of delicious food to satisfy their cravings. “We make our own pizza dough and sauce as well as all our desserts from scratch,” says Horvath. “Every day there’s homemade soup and delicious specials.” The extensive menu includes all the favourites, from burgers, perogies, and fish and fries to shrimp dinner, fried chicken and a full rack of back ribs – all at affordable prices. There is also a full breakfast menu, available all day. If there’s still room after the omelettes and eggs benedict, sharing a homemade Texas cinnamon bun is a must! Drifter’s also offers take-out, perfect for a night in or a picnic on the lake. Serving breakfast, lunch, and dinner, the restaurant kitchen is open from 6 a.m. to 9 p.m. while the lounge is open until 10. The bar is renowned for its mighty Caesars, fully decked out in pickled vegetables, celery, and slices of lemon and lime. “There’s no doubt some people come here just for our Caesars,” says Horvath. “Plus, it’s a great place to hang out with friends.” He and Leah look forward to welcoming Jets fans on game nights, with specials from Drifter’s ample appetizer menu – including, of course, wings!

Family-owned Restaurant The Bekios family established Maxime’s Restaurant & Lounge in the summer of 1984. Since then, it has continued to grow and evolve, with several additions and renovations. The food, however, has remained consistent. The family still emphasizes freshly prepared, flavourful, hand-made, traditional recipes and exciting innovative feature specials. Shaved Montreal brisket corned beef is piled on crispy, grilled rye bread with Russian sauce, sauerkraut and mozzarella cheese, and then finished in the oven. Lunch service also offers 22 dishes that are all served with a large bowl of soup to start. The restaurant offers a six-page gluten-free menu, which includes freshly baked gluten-free dessert options. Reservations are always recommended, as the restaurant is usually very busy, but walk-ins are welcome. The restaurant reserves for groups of up to 72 guests. The reservation managers consult with every guest planning a group reservation to provide the ideal menu and table configuration to ensure your event is special for all attending. A Gluten-Free Journey
How Cocobeans Bakeshop and Café rose to the challenge to create their signature baked goods
G
etting diagnosed with Celiac disease means drastically changing your eating habits. It also means avoiding gluten entirely. When Betsy Hiebert, her daughter, and six other family members were diagnosed 13 years ago, she became aware of how limited food choices were when living gluten-free – especially when it came to cakes and cupcakes. Betsy studied gluten-free baking, then started her cakes at farmer’s markets. Then, she added bread to the menu. With her growing success, she realized that her growing business needed a brick-and-mortar store. Pre-pandemic, Cocoabeans Bakeshop and Café had 25 employees. Their menu had also expanded, offering baked goods and food items – notably, onion rings and chicken fingers. Gluten-free deep-fried foods can be difficult to find, as deep fryers are easily contaminated. To address this, Betsy and her talented cooking staff started using a dedicated gluten-free deep fryer. When customers inquired about vegan options, Cocobeans worked to accommodate those needs. Now they have gluten-free items, dairy-free items, egg-free items, and a growing global customer-base. “We get people who plan their trips around our store, because they know they can find safe food to eat,” said Betsy. “We get people, honestly, from around the world.” When COVID-19 hit, Betsy’s focus was keeping the restaurant alive. With the help of her staff, she did this by offering warm-up home meals, like lasagna and chicken pot pie, that were delivered contact-free. It was a huge success. The company also began selling pre-packaged fried food and baking mixes. That’s when she wondered: “How can we get this into stores?” With the help of an accelerator program offered by the Government of Canada, Cocoabeans Bakeshop and Café can now be found throughout Manitoba at places like Safeway, Sobeys, and Red River Co-op. Betsy hopes to now see her logo in stores Canada-wide. James Avenue Pumphouse Food & Drink

The Home of Good Memories with a Touch of History
here’s plenty of buzz around the opening of James Avenue Pumphouse Food & Drink, just as there was 115 years ago when Winnipeg launched its first high-pressure water system at the same location. Floor-to-ceiling windows offer front row seats to this engineering feat, with century-old pumps and gears preserved for posterity. Built in 1906 to help fight the frequent fires of downtown Winnipeg, the St. James Pumping Station drew water from the Red River for distribution to the area’s fire hydrants. The building was declared a municipal heritage site in 1982. Its rebirth is a feat of its own. With its well-appointed seating and sweeping wooden bar top, the refurbished brick structure is punctuated by vintage fire

hose carts, red hydrants, and copper fire extinguishers. At the centre of it all, the preserved machinery is the star attraction. Complementing the historical setting is a menu that draws both on Manitoba culinary traditions – such as pumped-up perogies – and amped-up international comfort food – from Dan Dan noodles and Detroit-style pizza to Korean fried chicken and wine-braised short ribs. With vegan and vegetarian dishes rounding out the selection, Executive Chef Mark Merano ensures there is truly something for everyone. Cocktail creations by General Manager Kaitlin Nikkel capture the imagination, with names such as Rum-D.M.C and Tropic Like it’s Hot. Located on James and Waterfront, the eatery is the latest tour-de-force in
a revival of the Exchange District east of Main Street. This historically vibrant quarter at the heart of the city has recently been repopulated by trendy bars and restaurants, attracting a resurgence of activity and nightlife. Is it Worth it?
A The larger and more diverse our membership base is, the better we can represent the food service industry in our province. Diversity in cuisine is one of the great assets of our restaurant industry here in Manitoba.
few restaurant friends of mine have sat me down to ask this very question. With all these stresses – the costs associated with closing and reopening; the increasing prices on produce, protein, dry goods, takeout containers, gas, etc.; the continuous changing and adding of restrictions; and our overworked staff, who have stayed because of the lack of staff returning – is the restaurant business still worth all the trouble these days? My answer is simple: yes, it is! We don’t do it for the money (obviously). My dad Jim says, “If you want to make a million dollars in this business… start with two million!” We don’t do it for its consistency (in anything): we do it for the love of our customers and making them feel welcome and happy. I look out over my dining room and lounge and see smiles from customers and hear laughter from staff, who have become best friends and part of my family. Yes, uniforms may look the same every day but there are no two days alike in this business. There is no mistaking that for the past two years, our industry has faced an unprecedented crisis – one that we still are experiencing and battling – and I know it is sometimes hard to know what tomorrow will bring. Hospitality, as we knew it, has not only been tested or altered, but also sometimes forgotten. I believe it is important to make note of how our MRFA has responded to these monumental challenges. It has done so with an enormous amount of input and collaboration from all of you: our staff, Board of Directors, and, of course, the members. The Association has been instrumental in providing support to address the devastating economic impact; from helping operators and their employees with developmental programs, securing financial grants, and continuing to advocate for all our businesses that make up our industry – whether we were members or not. The amount of progress this Association has made for our industry is so impressive, just imagine what we could do if every restaurant, lounge, pub, and nightclub as members joined our voice and mission. As we look into the future, my goal is to continue growing the membership base of the MRFA. The larger and more diverse our membership base is, the better we can represent the food service industry in our province. Diversity in cuisine is one of the great assets of our restaurant industry here in Manitoba. As we slowly climb out of this pandemic and have a taste of what we remember as normal, I’m confident that the passion, innovation, and motivation that has driven this industry for so many years will enable us to surface stronger, more unified, and committed to serving our guests and our communities for the future.

2020 and 2021 Year in Review and Accolades The last two years have been, dare we say it again, unprecedented. Your team at the MRFA worked hard on your behalf to accomplish several goals. Check out some of our hard-won accomplishments below:
DINE-IN RESTAURANT RELIEF FUND In partnership with Manitoba Chamber of Commerce, the MRFA lobbied for, created, and administered $9 million in relief funds to over 600 restaurants in Manitoba to help offset the cost of delivery during lockdown phases.
$2,000 TOP-UP TO BRIDGE GRANT FOR RESTAURANTS We successfully advocated for and secured extra relief grant funds for restaurants during the rounds of Bridge Grants which fell around Mother’s Day to help offset the costs associated with closures during this busy day for our industry.
RESTAURANT MARKETING & RECOVERY GRANT The MRFA secured and administered $125,000 to dozens of restaurants to promote stability during recovery, particularly in the areas of marketing and hiring.
ADVOCACY FOR REASONABLE RESTRICTIONS The MRFA consistently voiced concerns and advocated on behalf of the industry as restrictions were implemented by the provincial government, often resulting in more industry-appropriate restrictions, such as when we successfully advocated for the implementation of declarations for household-only restrictions rather than ID proof, which created unnecessary barriers to hospitality.
During the first lockdown, our social media campaign to support restaurants during the

MRFA BLOG We implemented our blog as a resource for members to check for anything they may have missed in our member communications, and during the toughest parts of the pandemic, we even opened this resource to the industry, non-members and members alike. The blog is now a member exclusive benefit again.
#saveMBrestaurants During the first lockdown, our social media campaign to support restaurants during the days their dine-in operations were closed to the public took off and we couldn’t be more grateful to the public and everyone who helped support this movement! #saveMBrestaurants helped restaurants share their offerings, helped the public share their excitement to grab take-out and delivery and support their favourite spots, and helped keep restaurants going during tough times.
DINE MANITOBA GUIDE BOOKS From the mind of Joe Loschiavo, and in partnership with CSN Printing, we worked with more than 45 local restaurants to create a coupon book to encourage guests to dine-out or grab take-out from their favourite spots during a difficult year. The Book raised over $20,000 in donations for The Dream Factory, a local charity that makes dreams come true for kids battling life-threatening illnesses. And we weren’t the only ones supporting charities this year – we saw so many of our members supporting charities and front-line workers even through their own difficulties with the pandemic!
LetsOrder.Delivery The MRFA purchased the website initially created and ran by a group of awesome volunteers in order to continue to operate this great initiative that promotes restaurants offering their own in-house delivery, ensuring more money ends up in the hands of operators.

MRFA Student Awards at RRC The Manitoba Restaurant & Foodservices Association congratulates Yi Ding and Desirae Rambow as the recipients of last year’s Manitoba Restaurant & Foodservice Association Awards.
DESIRAE RAMBOW Desirae is a Hotel and Restaurant Management student who worked at Thermea by Nordik Spa-Nature, a member of the MRFA.
YI DING Yi is a Culinary Arts student who worked at St. Charles Country Club, a previous MRFA member establishment. The Manitoba Restaurant & Foodservices Association offers two awards each year. One to a Culinary Art and one to a Hotel and Restaurant Management student who demonstrate high academic achievement, co-op work performance evaluations, and a preference for work in restaurants. The MRFA is honoured to recognize the hard work of these students and to help them further their education. We wish them well as they continue to pursue their education and careers within the industry.
