A MARDI GRAS FAVORITE

2024 was a fantastic year at Holly Hills, and I am looking forward to a spectacular 2025 My team and I are working hard to continue to exceed your expectations and to provide you with a world-class level of culinary services

I invite you to join us at the club to savor the unmatched flavors of Holly Hills’ culinary excellence

1 Stick Butter

1 Cup Stone Ground Grits (not instant)

½ Cup Cheddar Cheese

¼ Cup Pecorino

Salt & Cayenne to Taste

Shrimp

Trinity (Onion, Green Pepper, & Celery) (sauteed & cooled)

Garlic Cooked Bacon

Pulse grits in a food processor briefly to break up the hull

Meanwhile bring the liquids and butter to a boil, after boiling whisk in the grits and lower heat to low

Stirring occasionally with a spatula or wooden spoon, cook for an hour or so

Once the grits are done, add salt and both cheeses

To serve Shrimp & Grits: Sear shrimp on one side, flip and add garlic bacon and trinity and cook briefly. Deglaze with water or wine and add butter Cook shrimp fully and serve on top of a bed of grits serve with some of the pan sauce

Thank you for all your support over the past few weeks; Megan, Katie, and I are hanging in there and taking one day at a time It was wonderful seeing so many Holly Hills members at Amy’s Celebration of Life and the cards, phone calls and people stopping by to check on us have been amazing. Amy is the reason I joined the team at Holly Hills We drove to the club on a cold winter day in February to check things out before my official interview When we drove up the entrance and saw the grand clubhouse on the hill, she knew it would be the perfect place for me. I parked overlooking the driving range and knew there was lots of work to be done Amy reached over and took my hand and said “Baby, this is all you, you can turn this place around and make it great” At that point, I knew Holly Hills was going to be my next home away from home She loved hearing about all the projects and visiting the club to see the progress. Amy listened to all the stories I came home with over the years and would listen to them for hours She was my soulmate and through her deep love for me, made me a better father, husband, leader and human being

We're thrilled to continue our strong momentum and are looking forward to several exciting projects in 2025 We are finalizing plans for upgrading the Rear Patio, FSK Room and Golf Shop Other projects under consideration include improvements to the pool house, kitchen refrigeration, electrical and mechanical upgrades, new equipment for the Lounge bar, and cart path repairs on the course. Plans for additional irrigation and golf course improvements are also being evaluated

December and January were very busy months at the Club, and hopefully you and your family had an opportunity to join us to enjoy some of the great events. We hosted numerous events including Gingerbread House Decorating, Wine Tasting, Holiday Sip & Shop, Prime Rib Night, Candlelight Dinner, Ugly Christmas Sweater Party, Sunday Football Specials, Sports Jersey Bingo Night,

Congratulations to the Golf Course Maintenance Team for winning the gingerbread decorating competition! The Food & Beverage Team, Golf Shop Team, Golf Course Maintenance Team, and Kitchen Team each decorated a house for display during the Ugly Sweater Party and Santa Brunch. Members had the chance to vote for their favorite house during these events The Golf Course Maintenance Team will be celebrating their victory with a pizza party at New York J&P Pizza

This is the perfect time to refer a friend to join the Club. We have a great referral program called the Champions of Growth. Referral awards include guest passes, an invitation to the year-end grand celebration and the opportunity to win six months free dues in the year-end raffle As you see new faces around the Club, please be sure to welcome them to the Holly Hills Family. Our newly updated guide features a fresh selection of breakfast, lunch, and dinner options designed to elevate any event We've added a variety of convenient handhelds such as Cheeseburger Sliders, Turkey Bacon and Ranch Wrap, and Steak and Cheese that would be perfect for a corporate meeting, alongside an assortment of snacks such as a Popcorn Station, Smoothie Sips or Mediterranean Moments With more vegetarian options than ever before, the menu now includes dishes like Fettuccine Alfredo and Eggplant Rollatini, ensuring every guest is catered to. For special occasions like bridal and baby showers, we've curated a selection of elegant, light fare perfect for these celebratory events, including an assortment of tea sandwiches, a soup and a salad station This versatile guide combines convenience, flavor, and thoughtful variety, making it the perfect choice for any gathering.

The FSK Room on the upper level is an ideal location to hold corporate meetings This versatile space can accommodate a variety of meeting styles and group sizes, and features modern amenities such as high-speed Wi-Fi, a projector, and a screen. Our dedicated team can also assist with event planning, catering, and audiovisual needs to ensure a seamless and productive meeting experience

Preparing for Spring: Golf Course Winter Projects

Winter is officially here, and the Golf Course and Grounds department has transitioned from our last rounds of mowing and leaf cleanup to working on projects around freezing temperatures and frozen ground The first week of December brought one of the coldest stretches of weather we have ever seen for that time of year With the cold weather keeping the golf course very quiet, our team has spent less time on prepping for golfers and more time on end of year activities such as cleaning and organizing the maintenance facility, cleaning and prepping our equipment for winter repairs and preventative maintenance, getting some last minute seed and sod out on the golf course, and starting some other various projects that will take us through the winter months

While we have many items on our winter to-do list, we depend on mother nature to give us some decent conditions to get our outside work done For example, if we plan on doing a drainage project or any bunker maintenance and the ground is frozen, we often change gears and instead will work on items that won’t be held up by frozen conditions such as grinding tree stumps and trimming trees When we do have that random nice Saturday or Sunday in January, you will notice some areas that are a “work in progress.” We ask that golfers please avoid driving carts through these areas to prevent any damage to the grass and/or the golf carts

Before the end of 2024, we were able to plant nine Japanese Cedar trees between the driving range and #9 green These are high quality trees that add to the aesthetics in that area, while also providing some screening between the driving range and #9 We were also able to plant sod along some of the cart path edges that were recently repaired on #3 and #7, along with patching up some small blemishes in fairways The fairway areas that were sodded were either low spots that would always hold water, or around sprinkler heads that were recently raised/levelled over the past few weeks

In all, we put down over 10,000 square feet of sod throughout the golf course. December has been a great time of year to work on sod projects, since we don’t have to worry about keeping it watered as much, and it’s usually rooted in by late February or March. This is also a good time for the golf course to get a rest from carts and divots and for us to get things done that we otherwise wouldn’t be able to accomplish during the busy growing season While we work towards continuously improving the property, our main objective is to have all of the “in progress” items completed before the busy spring season comes
