When it comes to memories of my family dinners, braised meats were a staple at this time of year. My mother used boneless chuck in place of short ribs for a cheaper option that feels the same These short ribs can be served with any side; my personal favorites are grits, brussels sprouts, and roasted red peppers. Ingredients

2 lb Boneless Short Rib cut into 7-8 oz pieces
1 Carrot (rough chop)
1 Onion (rough chop)
3 Stalks Celery (rough chop)
1 Tbsp Tomato Paste
1 Sprig Rosemary & Thyme
2 Cup Red Wine
4 C Water or Stock 1 C Demi Glace ½ C Butter
Season short ribs with salt & pepper place into a 425degree oven for 15-20 minutes or until roasted well with nice color
Meanwhile sauté carrots, onions, celery until slightly brown. Add tomato paste and brown briefly
Add red wine and herbs, reduce liquid by half
Add the water or stock and bring to a boil
Place short ribs in a deep pan with plenty of space between them and cover with the liquid until at least 75% of short ribs are covered, then wrap pan with parchment and foil
Place into a 275-degree oven for 2-3 hours or when a cake tester is inserted there is zero resistance
Let cool in the liquid
When serving, reduce demi and butter into a nice thick glaze Drop short ribs in and baste

Fall has arrived but the warmer temperatures and dry conditions are providing firm and fast playing conditions. The fall color is still amazing and the trees are dropping their leaves at an accelerated rate. The greens team is working hard to keep the course leaf free so you can make your putts and find your balls
Construction has wrapped up on the course and the golf course and irrigation contractors have moved on to their next projects. We have lots of new sod around #1 green, #8 green #12 tee and #12 green that the greens team is watering to ensure it knits properly during this unusually dry stretch of weather we are experiencing The new irrigation on holes #1, #8, #9 and #12 is working great and we now have the ability to irrigate areas of the course that have never been watered before.
The Greens team will be working to improve the quality of our rough around the course this fall and winter Please be sure to obey the roped off areas and signs to ensure the seed has time to germinate through the fall and winter months. As temperatures continue to fall, if you have an early tee time, please check with the golf shop to be sure there isn’t any frost before heading onto the practice green Walking and riding on frost covered turf can cause unsightly damage that may also kill the plants.
Thank you to everyone who completed the 2024 member survey We received 220 responses which gives the Management Team important feedback on how we are doing and what you would like to see improved. The survey is a great tool that we use to develop action plans to enhance your experience at Holly Hills. This year we improved in all areas, and I am most proud of our 29 point jump when asked if you would recommend Holly Hills to a friend We still have work to do and I will report back once we have finalized and begin to implement our action plans to improve your experience.

The past couple of months have been exciting and very busy for our golf course and grounds department Our team has done a nice job with all our daily golf course preparations, fall seeding, leaf cleanup, and tournament preparations. The month of October has given us our first frost delays of the fall season, and we endured a stretch of 12 consecutive days of rain leading up to the Member/Member tournament This long stretch of rainy days led into an even longer stretch of sunny days with very low humidity. During this recent 4week dry spell, we have had to rely on irrigation much more than we normally do at this time of year In addition, there have been contractors working on our course improvement projects since the day after Labor Day.
Our golf course improvement projects began on September 3 The first areas that were completed were the new bunkers around #12 green and the new teeing areas on #12. Then, work began to reconstruct the left side bunker at #1 green and remove the right side bunker The approach on #1 also got a facelift and was re-grassed with a higher quality Kentucky bluegrass sod. The final area of construction was the re-shaping of the right side bunker at #8 green, which is now complete as of October 18 Irrigation installation has also taken place during the same time period The new irrigation pipe and sprinklers on holes #12, 1, 8, and 9 are now completed as of October 25, and will make a major difference in improving the quality of turf in these areas
Now that all of this work is completed and the sod begins to take root, there will be a lot of work to get these areas matured to a high-level playing surface This involves watering, rolling, fertilizing and of course mowing We will fast track some of these cultural practices to get everything in top condition as quickly as possible As the contractors depart, there will be a small amount of repair work to be done This work will include seeding and/or sodding the haul roads used for large equipment. We hope to have all of these areas looking good by the end of December
We greatly appreciate everyone’s patience during this renovation process. I believe that these improvements will make a great impact on the golf course in terms of playability and aesthetics, giving the membership an even more exciting golf experience for years to come!
