The Fall is my favorite time of year; I love the cooler weather not only on the golf course but also for when I’m eating with my family and friends Almost every time I go out to eat, I get an appetizer to share and start off with a soup I enjoy the depth of flavors that can be achieved by the simple process of making a
soup For years, when I asked cooks to come in for an interview, I asked them to make me a soup You can tell a lot about a cook just by how well they can complete this humble task To the right is a soup that is made mostly of a byproduct of an expensive product The flavor comes from the process of making the lobster stock out of the shells of the tail The recipe can be made as is, or adjusted for your own preferences and flavor profile I hope you will enjoy making this Lobster Bisque as much as I enjoyed creating it.

Method:
Sauté onion, celery & carrot with 2 oz butter until starting to brown.
Add tomato paste and cook slightly
Add rice, lobster stock, and cream and cook for 30 min to 1 hour on medium low heat.
Meanwhile prepare the garnish by small dicing lobster and mixing the rest of the ingredients together to make a lobster salad
After soup is cooked puree in a blender until smooth Add salt and pepper to taste

It’s hard to believe how fast this summer flew by; it feels like we were just kicking it off with the Memorial Day Hilltop Celebration We had plenty of heat this summer and Dan and his team did a fantastic job providing some of the best playing conditions in the area for our members and guests. The pool has been very busy this season and the new check-in station worked well. I received good feedback on the expanded menu and the timeliness of food being delivered from our main kitchen
We added new events to the calendar this summer including a Pool Crab Fest, Poolside Bingo, Cook Outs on the rear patio, Father’s Day Cook Out, Sundae Funday and Yoga Hopefully you were able to enjoy some of the fun events, and we have plenty more scheduled for this fall The golf calendar was filled with great events including Couples Golf, Operation 36, PGA Junior League, Tuesday Night Men’s League, B-Team, Little Tykes Golf Camp and the Junior Club Championship
Congratulations to our Holly Hills Hurricanes Swim Team on winning their division with an undefeated season. I would like to thank all the parents and volunteers who made the season a great success We hosted two home meets this year and getting the pool ready requires a lot of hard work All the tables and chairs need to be moved, the diving boards are removed to make room for the diving blocks to be installed Lane lines are installed, tents set up, audio system and scoring tables set and making sure the coolers are filled with drinks and snacks for the swimmers and guests A special thanks to Ashley Roberts and Melanie Moreland for making sure we had all the details necessary for a smooth season The swim team ended their season with a great banquet and award ceremony
Our racquet facility has been getting great reviews this summer We hosted Pickleball Socials on Thursday nights in June and July, and in August offered clinics and our Inaugural Mixed Doubles Pickleball Tournament I extend a special thanks to Marc Turner for all his help with coordinating these events.
We are excited to be starting the next round of irrigation and golf course improvements next week New irrigation will be installed on #1 fairway and green, #8 fairway and green, #9 fairway and tee, #12 tee, fairway and green and #2 tee Golf course improvements will include new bunkers on #1 green and #12 receives new tees, new greenside
irrigation installation isn’t as disruptive, and we will also be giving daily updates on where work is scheduled We are developing a list of additional capital projects for 2025; keep your eyes open for details
We recently completed several cart path repairs throughout the course, and the greens team will be cleaning up, backfilling and seeding along the edges next week Please try to keep your golf carts on the paths in the newly repaired areas so the seed can germinate and fill in nicely
Thank you to everyone who completed the member survey last year; we received 341 responses. Your feedback lets the Management Team know how we are doing and what you would like to see improved The survey is a great tool that we use to develop action plans to enhance your experience at Holly Hills You will be receiving the survey via email in the next couple of weeks, please take the time to complete it.
We have great events on the calendar this fall including Half-Priced Burger Nights on Tuesday’s, Butcher Block Night, Live Music Nights, Country Line Dancing, Drive-in Movie Night, Sunday Football Specials, Brats n’ Beer, Steak Night, Wine Dinner, Family Fall Night and a Fisherman’s Feast

Wow, what a summer this has been! I want to thank all of the members for welcoming me into Holly Hills this season; I have encountered many kind and friendly members and guests in my first six months, and it has been a pleasure taking care of this property It is great to be a part of this community and to be able to assist with all the improvements that are taking place.
In recapping the last couple of months, our department has faced many challenges, but I believe that our team has worked hard to achieve great results. The weather is always the biggest challenge for us during the summer, and this summer was extreme, with weeks of severe heat and extended drought With a recent “drought busting” rain event that dropped 5.5” of rain over a 2-day period in mid-August, we currently have a full pond on #17 that should provide us with plenty of water to irrigate the golf course from now until the end of the growing season
As we move into September, we begin plans for fall seeding and aeration The cultural practices projects that we do in the fall are very important in setting up a successful spring and summer 2025 Greens aeration is currently scheduled for the week of October 28 after all of the golf events are finished for the season Our goal with greens aeration this year is to relieve compaction and introduce air and sand into the root zone Adding sand will help dilute the organic matter, which will help keep the greens firm.
In addition to greens aeration, we are also planning to aerate tees and fairways this fall The total area of our fairways in 27 acres, compared to 4 acres of greens. The timing on our fairway aeration will depend on weather conditions and contractor availability, but will be taking place during September or October I believe a consistent fairway aeration program will really improve the health of our fairways and should help them handle the summer stresses much better in the years ahead
In addition to fall aeration and seeding, we will also be taking care of some drainage projects, tree trimming and native area mowing. Our irrigation upgrade and course improvements are also scheduled to continue this fall These contractors have already begun staging some equipment, as this work will begin shortly after Labor Day The holes that will be receiving irrigation and other upgrades are #1, #9, and #12. Our grounds crew has been working diligently to ensure that the course remains in top condition throughout the summer. We appreciate your cooperation with maintaining proper course etiquette and following all posted guidelines Please be sure to rake the bunker after taking your shot, entering from the low area and placing the rake along the edge in the middle of the bunker when exiting. Fix and fill all divots and fix your ball mark plus another when

Outside Service
We also ask that after your round you stop in front of the golf shop or the bag drop area to allow our team to service you Our outside service team works very hard during the season ensuring the carts are stocked with tees, scorecards, pencils, towels and full sand bottles and cleaning all areas of the cart before and after use They will clean your clubs before and after the round, get them load/ unloaded and on the bag drop ready for pickup so you can focus on getting the car ready or enjoying the rest of your afternoon at the club, at the Lounge, Grill Room or the practice facilities. As a friendly reminder, after your round, please return all black towels, or leave them in the golf cart. We appreciate your cooperation, and if there is anyway we can better service you, please let us know
