STECKERLFISCH – STECKERL FISH ‘Steckerlfisch is a Bavarian specialty - usually a whole gilled fish put on a stick and laid over a grill so it roasts nicely and gets the special grill flavor. In this simple, light summer dish, we use grilled ‘Schwarzreiter’ fillet, a lemon mayonnaise without oil called Kimizu, pickled Zedrat lemon peel slices, potatoes and a little kaviar from the Schwarzreiter,’ Christian says.

BAYERISCH CRÈME – BAVARIAN CRÈME ‘We put everything in an ISI bottle and blast it with a lot of air underneath into liquid nitrogen, so it freezes on the outside and becomes crispy but stays creamy and fluffy in the middle,’ Christian says. ‘We combine the Bavarian Crème with white chocolate ganache, fresh marinated rhubarb, rhubarb-vanilla ice cream, rhubarb-strawberry sauce and fresh strawberries.’

Minjie Zhang, born in 1985 in Ninghai, Zhejiang, graduated from the Tianjin Academy of Fine Arts in Digital Media. Working with documentary film techniques to reflect daily life in society, ‘Short Sentence, Making a Living’ was created in April 2006. ‘It is rooted in those city streets where I have been. All the people in the film are small potatoes, whose facial expressions show their hard life,’ Minjie explains. ‘Their skins are lined with age; their eyes show the pressure which life brings. These small potatoes exist in each corner of the world. They are too common to be paid attention to. I made my lens shoot them—those physical workers.’ His conceptual photography investigates the population structure in China through the collage and juxtaposition of documentary images of vulnerable people such as a street vendor, conductor and barber. Their careers are various, but every day they need to repeat the same sentence a hundred times to make a living: how are you, thank you, welcome, Beijing, etc… ‘Each time I came across the street vendor, I was deeply moved,’ he says. Minjie received awards from the National Art Museum of China and the Berlin NBK Museum of Art Image for ‘Short Sentence, Making a Living.’ The Kempinski fellowship gave him the opportunity to expand this project in Frankfurt am Main at Kempinski Hotel Frankfurt Gravenbruch. y
