An Introduction to Carroll Food Services Ltd Carroll Food Services – Company History The Carroll name is synonymous with excellence in the Irish Contract Food Service Industry over forty years. John D. Carroll Catering Limited provided services to over fifty locations. With such well-known clients as the National Gallery of Ireland, House of Parliament, Leinster House, Anderson Ireland, First Active, P.M.P.A., Warner Lambert, Texaco Ireland, Symantec, The Royal Hospital, Loctite Ltd., Reckitt & Coleman. The company served well in excess of 8,000 meals per day prior to the sale of the business to P&O Groups Sutcliffe Catering Services in 1992. Having served as Sales and Operations Director of Sutcliffe’s in Ireland and grown the business to 100 locations, Kenneth Carroll launched Carroll Food Services Limited in 1994 to continue the family tradition of service in this highly specialised sector of the catering industry.

Carroll Food Services has become one of the largest independent contract Catering companies in Ireland and can bring a unique personalised service to Business Solutions. The company’s revenue and profits have grown substantially during the last five years, whilst providing services and equipment to an expanding customer base. This has been achieved through organic growth and the acquisitions of Corporate Cafés and Premier Dining Ltd which added 6 locations to our portfolio of clients. Senior Management Team Profile Chairman – John D. Carroll “At the forefront of Contract Catering since 1957” Chairman – John D. Carroll started his career in hotel management prior to joining the Rank Organisation and subsequently the Bateman Catering Organisation as Managing Director – Ireland and Wales. Following a highly successful career John formed his own company that subsequently became one of Ireland’s most respected Contract Catering and Consultancy Company. John D. Carroll Catering Limited provided services to over fifty locations. With such well-known clients as Anderson Ireland, P.M.P.A., Warner Lambert, Texaco Ireland, Symantec, The Royal Hospital, Loctite Ltd., Reckitt & Coleman, the company served well in excess of 8,000 meals per day prior to the sale of the business to a large Multi National Company in 1992. Pre 1992 John was a founder Director of Inter-Continental Cargo Ltd., Founder Chairman of the Mulcahy Group, and was Chairman of Kindlon Insurance Ltd. until his retirement in 1997. Today John D. Carroll provides Consultancy Services to many blue chip companies, is Chairman of the National Hygiene Partnership, and as Chairman of Carroll Food Services plays a major role in the development of the company. Managing Director - Kenneth Carroll “A Safe pair of Hands” Managing Director - Kenneth Carroll was educated at Trinity College Dublin and the Dublin College of Catering. Professional qualifications include a Masters of Arts degree, honours Bachelor of Science degree in Management, Higher Diploma in Hotel and Catering Management and associate membership of the Institute of Management Accountants. Kenneth has held several important managerial positions in his career and has worked in all areas of the Catering Industry. In his role as Managing Director of Carroll Food Services he has directed the growth of the Company into one of the largest independent contract Catering companies in Ireland. David Lancaster – Operations Manager ”Be-Spoke Catering Services” David has over 30 years experience in the Hospitality industry. David has been involved with the Carroll family businesses for many years in various roles, the most recent of which involved supplying our clients with their occasional food and beverage service requirements ranging from product launches and the opening of clients premises to the entertainment of visiting dignitaries. Because of his extensive experience in Restaurant and Bar operations, David is responsible to Managing Director Kenneth Carroll for the day to day management support essential in ensuring the smooth running of your services.

Robert Newton – Operations Manager – Channel Islands “Specialist local knowledge” Robert is a native of Jersey and is widely experienced with many years experience in various aspects of food preparation and service at all levels on the island of Jersey and in the UK. Having joined Carroll’s to manage Highlands College in 2004, Robert was promoted to the role of Operations Manager of our Channel Island division and is now responsible for the management of our client operations in Jersey and the further development of our business in the Channel Islands. He has overseen the development of a new staff agency division supplying both permanent and temporary relief staff to a broad range of clients in healthcare, hotels, and restaurants and has been instrumental in the acquisition of Jersey Post’s Head Office as a new client for a turnkey operational contract.

Kevina Cardiff – Dietitian & Nutritional Advisor “Nutrition and Dietary Specialist ” Kevina Cardiff was awarded her Ph.D. in Biochemistry from Imperial College London in 1998. She worked for many years in Biomedical Research both in London and Dublin prior to qualifying (with Distinction) as a Dietitian/Clinical Nutritionist at The University of Ulster. Prior to her current role, Kevina worked in clinics at St. James’s Hospital, Dublin and a number of residential care facilities.
