Welcome to our cookery school... At The Food Hub we’re passionate about real food - fresh, seasonal and, most importantly, delicious. Our cookery school is set in the beautiful Suffolk countryside at Kenton Hall Estate. Whether you are an amateur cook or a food enthusiast let our courses inspire you. Working with local chefs including Peter Harrison, we offer an excellent range of courses including hands on cookery, field to fork experiences and demonstrations. The relaxed and friendly atmosphere can turn the most nervous beginner into a confident ‘foodie’. Bread Workshops at The Food Hub… Sue Hudson of Bread Workshops teaches the craft of artisan bread making. A passionate bread baker, Sue knows that the best way to learn is the ‘hands on’ approach, using quality locally sourced ingredients wherever possible, ensuring that her new bakers will dispel the myth that making bread is difficult. Peter Harrison at The Food Hub… Peter Harrison joins us with a wealth of experience and a talent that will inspire you. He has worked with the likes of Alistair Little, The Leaping Hare in Suffolk and ran his own restaurant for five years. Peter’s inspiration comes from the countryside and his ethos of using seasonal, local ingredients makes him a perfect fit for The Food Hub. Guest chefs at The Food Hub…. Join us throughout the year for special courses, demonstrations and workshops hosted by guest chefs who will teach you to cook recipes from their restaurants or specialist subject. Guest chefs to The Food Hub include Padmaja Kochera an Indian chef and food writer, Mike Keen of The Brewery Tap in Ipswich, Vernon Blackmore and many more. Master the art of baking real bread... Introduction to bread Discover bread making that fits into a busy life. This introductory workshop will teach you everything you need to know to get started or to improve your bread making skills. You will learn all about yeasted white, wholemeal and enriched doughs that become the basis for a range of different breads. Sue will guide you through every step, from discussing ingredients, equipment, to mixing and kneading the dough, proving, shaping, scoring, basting and baking. Bread Workshop | £65 Baking Club Our evening baking clubs run for two hours from 6.30pm-8.30pm and include a combination of cooking demonstrations and hands-on bread making. Join us for a fun filled evening of bread making! Baking club evenings include French baking, Crispbreads, flatbreads and Focaccia and Nordic baking. Baking Club | £40 Christmas breads The Christmas bread workshop is your last chance to create some delicious bread for your Christmas table, we will make enriched bread such as chocolate brioche, panetone, stollen, walnut rye and chestnut cob. A seasonal guide... Seasonal dinner parties – Spring, Summer, Autumn, Winter Join Chef Peter Harrison on one of our seasonal cookery courses. We will help you create a dinner party with restaurant style dishes, a focus on seasonal ingredients, presentation and taste. You will learn handy tips such as timing so you can host as well as cook. This is the perfect course for those looking for inspiration or a confidence boost ahead of your next evening entertaining. Full Day | £120 Produce to plate Sourcing local and seasonal ingredients is part of our ethos; with our very own kitchen garden, butchery and longhorn beef produced on the estate. We love to share our ideas so this is the perfect course for any culinary or gardening enthusiast. Start the day with a trailer ride on the farm then enjoy a tour of the kitchen garden with our growing hero Paddy. After collecting ingredients, you will prepare a number of simple and delicious dishes that focus on vegetables and reflect our natural approach to cooking. Full Day | £120 Vegetarian Cookery Join us to create a delicious assortment of truly tasty vegetarian dishes using the best seasonal vegetables sourced from our kitchen garden. We are lucky enough to have a wonderful kitchen vegetable garden and grow a huge variety of fruit and vegetables. You will have a guided tour of the garden as part of the course and ‘pick your own’ vegetables to cook with. Our chef Peter will help you discover new ways to turn vegetables into complete meals and leave with expert knowledge to feed your family and to impress your friends. Full Day | £120


Be inspired by fresh ingredients... Game Cookery Learn how to prepare and cook a range of feathered game as well as venison and rabbit on our game cookery course. We will teach you all the preparation and kitchen skills you need to get the most out of wild meat. We have designed the course to take full advantage of in season, locally sourced game. You will learn how to skin, joint, pluck and draw a variety of game birds and rabbit, before using the meat in our school kitchen to create a range of tasty dishes. Full Day | £120 Italian Enjoy a day with chef Peter Harrison on a wonderful Italian cookery course. Create a fantastic Italian feast, using well tried and tested recipes. The focus of the course will guide you through the basics of making wonderful pasta. You will not only master the art of pasta but also Italian classics including risotto, breads, authentic sauces and magnificent main dishes. Full Day | £120 Fish & Shellfish Fish and shellfish are often a favourite of many, although the preparation and flavour combinations are sometimes tricky to master. With this cookery course you will learn how to fillet and prepare fish and create sauces and flavours to accompany. We aim to help you leave confident so that you know how to select and cook wonderful fish such as sea bass, crab, mussels and squid. Full Day | £120


Master a skill in the kitchen... Cookery for beginner’s Our cooking for beginner’s course aims to take you from enthusiastic novice to a competent cook. By the end of the course you will have confidence in the kitchen and be ready to share your new skills with family and friends. Half Day | £75 The Chalet Cookery Course This course has been designed specifically for those wishing to spend a ski season in the snow. We will teach you the art of being the perfect chalet host. You will learn a range of cooking skills allowing you to create delicious dishes as well as covering all aspects of hosting, budgeting, shopping, menu planning and chalet cleaning. Intensive week course | £495 Off to university This course is informative, fun and hands-on and is designed for school leavers or undergraduates who are about to move away from home and cook for the first time. Designed to boost confidence and give young people the basic tools to feed themselves we will help them develop their skills and knowledge of cooking. We hope to inspire and enthuse students to cook delicious, nutritious and affordable meals. Two day course | £195


Authentic Indian... Padmaja Kochera at The Food Hub… Paddy spent her childhood eating authentic Indian food. Her cooking style is simple, authentic and flavoursome. She has an experimental style, which incorporates trying new techniques and methods to provide her own twist on traditional Indian recipes. Full Day | £120 Introduction to Simple Indian Cooking So many people love an Indian curry but don’t know how to cook it or recreate that authentic Indian flavour at home. Our introductory Indian course will introduce you to Indian spices and give you hands on experience, so you can learn how to cook simple, yet delicious Indian dishes in the comfort of your own kitchen! Full Day | £120 Authentic Curry On this one-day cookery experience chef Padmaja Kochera teaches you how to prepare and cook authentic Indian curry. The curry dishes featured are from Padmaja’s childhood; they are the dishes she grew up eating and now loves to cook for her own family. Padmaja will teach you how to balance spice blends and temper to perfection to give a greater depth of flavour. You will learn to make and cook curry pastes as well as how to cook rice properly. Full Day | £120 Intermediate Indian Cooking This course is not for those new to the kitchen as it explores the vast world of Indian spices. Padmaja will guide you through traditional Indian spices and how to blend together different spices with different meats. With a focus on curries, this class will teach you how to make those Indian classics that you’ve always loved, the authentic way. Full Day | £120


Learn to grill, roast, bake and smoke on your barbecue... The Food Hub Cookery School has partnered with Weber® Grill Academy to offer barbecue courses. Our barbecue courses are packed with useful hints and tips while creating a delicious meal on various barbecues, using Weber® accessories. Our Weber® trained chefs teach all-round cooking skills to help you get the most out of your barbecue. Lighting both gas and charcoal, how to control the temperature of the barbecue, getting the most out of using the heat and space on the grill and discovering the different cooking methods to enjoy a variety of dishes cooked on the barbecue. In-depth tuition in a friendly, relaxed atmosphere will inspire confidence and enthusiasm so that anyone can easily expand their barbecue repertoire. Weber® Essential Course Suitable for all levels of experience, master Weber’s renowned “lid-on” barbecue techniques for grilling, roasting, smoking and baking; using a combination of charcoal and gas barbecues. Your day will start with a meet and greet, where your chefs will run through all the exciting ingredients and sumptuous food you will be preparing. After each stage of hands on food prep, you will go outside and get to grips with all the fun of cooking on a barbecue. As each course is ready, while the next one is cooking you get chance to sit down with your fellow barbecuers with glass of wine and enjoy the fruits, or foods, of your labour. BBQ Continued... American Barbecue On this course you’ll create authentic American barbecue dishes as well as learning low ‘n’ slow cooking techniques on the Weber® Smokey Mountain Cooker™. This interactive course is the perfect way to master American barbecue cuisine and create deliciously authentic dishes from scratch at home: from spicy chicken wings to a side of signature slaw, and even something for those with a sweet tooth. Among the array of different meats that we cook throughout the day, you’ll be asked to prepare and cook a rack of ribs and also receive a demonstration from the chef on how to prepare and smoke a beef brisket low ‘n’ slow on the Weber® Smokey Mountain Cooker™. Weber American Barbecue Course | £129 Seafood Essentials You’ll learn a variety of different skills, such as how to grill, bake and smoke on the barbecue as well as essential fish preparation skills and recipe inspiration. During this course you and your classmates will prepare a variety of different dishes under the guidance of an expert chef. Using a combination of charcoal and gas barbecues, you’ll be taught skills from lighting techniques to controlling temperature and knowing when your food is perfectly cooked. In addition to being shown how to use Weber’s “lid-n” cooking techniques, the chef will demonstrate smoking mussels with garlic, cream and white wine, as well as teaching you how to fillet a whole fish to create mouth-watering fish tacos. Private & Corporate courses at The Food Hub... Food, cooking and eating is a fantastic way to bring people together whether it’s family, friends or work colleagues. Our glorious surroundings, enthusiastic team and fantastic facilities offer a great place for private parties and corporate away days. We offer a range of carefully planned corporate cookery events, including corporate celebrations, corporate entertainment, team building and Christmas cookery events. From using cooking as a fun team building exercise to boost team motivation to dividing your team into groups and having cooking competitions, our courses can be designed to meet your needs. Your visit to The Food Hub... At Kenton Hall Estate we have a passion for food and farming. Our approach to all courses at The Food Hub is the same – we want visitors to have a wonderful experience, personal service and very special memories. On arrival you will be welcomed with tea or coffee and a tasty treat before a short tour of our kitchen garden and an introduction to your chef. Full day courses include practical and demonstration cookery sessions with a delicious lunch and afternoon refreshments. We also offer unique Glamping accommodation on the estate. Both The Yurt and Shepherd’s Hut are designed and furnished to a high standard ensuring luxury and comfort. We have a small farm shop where we sell meat we have produced on the farm and seasonal vegetables from our kitchen garden. • We produce and butcher our own meat on the farm. • Our meat is 100% traceable, from field to fork. • We ensure the highest quality of welfare standards. • We believe our meat is the best possible quality. Our farm shop is located within The Food Hub and is open every Friday from 9.00am until 5pm and Saturday 9am until 12pm.
