WHY GREASE INTERCEPTORS ARE REQUIRED units are preferable, as there are obvious odour and contamination issues when inside in a food preparation area. Chicken fat and used oil should be segregated at source and not allowed into the drainage system. However, don’t forget that food macerator’s block grease traps too, so if you have one, make sure it bypasses the interceptor.

Advantages of using the Kent Range of Interceptors

The Problem Grease, oil and fat are present in modern foods preparation areas in restaurants, hotels, hospitals, canteens, schools and public houses etc., which results in the collection of the discarded bi-product within the drainage system.

The Kent grease interceptor has been designed with the customer in mind. In our range of interceptors we have four main types. Our standard single sealed unit (GIK Range) with a checker plate lid is available in painted mild steel or in stainless steel. It’s designed to be fitted outdoors. This unit has an easy to remove cover, which is locked in place with four locking bolts and a specially designed sampling point on the outlet so that the water leaving the unit can be tested at any time.

When warm, grease and oils flow freely, but after cooling down it can block pipes and chambers causing untold problems further down the line. Environmental pressure prompted the introduction of health conscious legislation aimed at minimising pollution of waterways. The consequence of this legislation has been stricter hygiene standards and the demand for grease management equipment.

The Solution Kent Stainless have over the last number of years developed one of the most technically advanced products available. It works by separating grease, oil and fat from the drainage water.

Our double sealed recessed unit (GIKR Range) with a recessed manhole lid for floors with a concrete, tile or vinyl finish is available in painted mild steel or in stainless steel. This unit has an easy to remove cover, it is secured in place by its own weight or it can be lockable if required and a specially designed sampling point on the outlet so that the water leaving the unit can be tested at any time.

The Legal Requirements The introduction of health conscious legislation and environmental pressures has resulted in grease traps now becoming an integral component of the drainage system in food preparation outlets. All trade outlets are required to have a discharge licence under the local government (Water Pollution) Acts 1977 and 1990. These are issued by the Local Authority and have strict limits on fats, oils and grease (known as FOGS). When FOGS are mixed in warm water, they are kept in liquid form. As the water travels downstream, it cools and the grease solidifies.

Our double sealed floor mounted unit (GIKF Range) is designed to sit on the floor and is only available in stainless steel. This unit has an easy to remove cover, it is secured in place with a number of countersunk bolts and a specially designed sampling point on the outlet so that the water leaving the unit can be tested at any time. The outside of this unit is polished/bead blasted stainless steel as required.

The grease trap separates FOGS by reducing the velocity of incoming liquid through the interceptor into the drainage system. The separated grease floats to the surface ready for attack by a Biological treatment.

Kent’s have standard size units but if required we can design a unit to meet the need of the client, whether it be to suit deep invert pipes, or irregular size for placement.

Grease traps are high maintenance items; ignore them at your peril. The separated grease will constantly build up and this must be addressed. A biological approach is a recognised treatment but will not by itself keep the interceptor working efficiently. It also needs to be inspected and cleaned regularly. Food debris and anything else that makes its way down the sink will quickly slip into the trap too, pushing out water required to cool the FOGS. Therefore a regular cleaning schedule is the preferable maintenance guarantee of trouble free drains

Kent Grease Interceptors are designed and manufactured in accordance with IS EN 1825 Part 1 & 2. All welds on Kent Grease Interceptors are Dye Pen Tested during fabrication to ensure units are fully watertight.

To allow for water to start cooling, grease traps should be installed a minimum of 4 meters from the source. Outdoor

HOW IT WORKS How It Works The certified bacteria enters the Grease interceptor automatically through the access points provided. The amount of certified bacteria required for a unit depends on the size of the unit and the frequency and amount of liquids entering the interceptor over a period. Once inside the interceptor the certified bacteria, which is very good at dealing with large amounts of fat/oil and grease, starts to digest the grease leaving only water and carbon dioxide, which are easily disposed of naturally. Automatic Dosing Units When selecting the position of the Interceptor it should also be noted that the dosing unit requires the fitting of a 1/2" plastic feed pipe to be connected to the doing port on the interceptor. This pipe will then be returned to the inside of a building and stopped 380mm above floor level. The area selected must be able to store a container 483mm x 305mm x 305mm on the floor. The wall will also have to hold a dosing unit 254mm x 204mm x 102mm screwed to the wall. The dosing unit requires a 3 pin, 13A socket, or to be hardwired.

Kent Grease interceptors are primarily designed for bacterial dosage in order to digest grease. However, as Kent Grease Interceptors are sized and designed in accordance with IS EN 1825 Part 1 & 2, Kent units can also be used as Passive Type – i.e. not dosed but used for storage of grease, which is then emptied as part of a the normal maintenance schedule. In this event, units normally increase in depth by 450mm. See note on reference tables relating to this.

Avoid putting harsh bleaches and disinfectants into the unit, as these will kill the certified bacteria.

RECOMMENDATIONS Recommendations for the Selection and Installation of the Kent Range of Grease Interceptors.

• Select the appropriate grease interceptor size using the appropriate table provided for the type you have chosen.

• Select the appropriate cover type.

• In cases where the drainage water carries sediment or solids it should be passed through a solids trap before entering the interceptor.

1. Single sealed covers are for installations sunk in the ground outside in a well-ventilated area where the Non-Slip cover will be seen.

• Sewerage systems, waste disposal units, macerators and vegetable preparation areas must not be fed into the interceptor.

2. Double sealed covers are for installations sunk in the ground inside or outside where the NonSlip cover will be seen.

• Grease interceptors must be installed on a level base. A minimum of a 100mm concrete base is recommended for units K9025 to K9075. A minimum of a 150mm concrete base is recommended for larger units as well as a concrete surround.

3. Double sealed recessed covers are for installations sunk in the ground inside or outside where the recessed covers are fully filled with concrete or have a vinyl, tiled, or paved finish.

• Units must be installed in the direction of flow of water.

4. Flat top covers are for installations above ground inside. This unit is all polished finish stainless steel, the whole unit is visible and has Double Sealed covers to prevent smells emitting.

• Grease interceptors should be installed no closer that 4 meters and no farther away then 10 meters from the source of grease, longer than this may result in grease solidifying in the pipe work. A smooth bore pipe is recommended for this application. • There should be no installations over the interceptor. • The Interceptor must be vented to the outside of the building, piping from the 1”-2” BSP socket on the outlet end of the unit. • Allowance should be made for fitting of biological product feed pipes that are located in the centre of the unit on either side.

SOLIDS INTERCEPTOR The solids interceptor is positioned on the main drainage line just before the grease interceptor. It’s function is to collect any small solids that have been discharged through sinks, dishwashers, gullies or drainage channels, and stop them from entering the grease interceptor, thereby allowing only liquid into the grease interceptor in order to allow it to function properly. The solids interceptor has a sealed easy to remove cover, to allow removal of the solids collection basket for emptying on a regular basis. It is important that collection basket is emptied on a regular basis, to ensure free flowing of unit.

Typical Sizing Calculation Kent Grease Interceptors are widely used in The UK & Ireland. A typical example of a completed Grease Interceptor sizing calculation is shown here. For this example we have taken a restaurant open midday to midnight with approximately 150 lunchtime covers, 150 early bird dinners and 200 late sittings. Interceptor sizing should take into account the number of meals per day or the equipment discharging into the system. Here we have 6 sinks, a tilting roasting tin and a combi-oven. Clients can copy the survey template from our brochure and scan or fax them to Kent Stainless, where we can verify any calculations the client makes in sizing their Grease Interceptor. Kent Stainless can advise on any extra or unusual discharges and will design a customized Grease Interceptor to suit.
