Nutritional Value

According to the World Health Organisation – WHO, some ways of avoiding obesity are to: • •

“(…) limit energy intake from total fats and sugars; increase consumption of fruit and vegetables, as well as legumes, whole grains and nuts (…)”.

From the food industry point of view, food providers can also contribute to fight obesity by: • •

“(…) reducing the fat, sugar and salt content of processed foods; ensuring that healthy and nutritious choices are available and affordable to all consumers”.

For these reasons, we thought of the following menu, taking into account the following: •

Trying to reduce the intake of fats and sugars, but also keeping in mind that children need different nutrients to develop in a healthy way, including carbohydrates and vegetables. The menu has been thought as an easy to prepare, serve and produce as well as to eat menu.

Nutritional Value

Note: One serve of fruit is 150 grams (equal to 1 medium-sized apple; 2 smaller pieces (e.g. apricots); 1 cup of canned or chopped fruit; ½ cup (125ml) 99% unsweetened fruit juice; or 1½ tablespoons dried fruit).
 One serve of vegetables is 75 grams (equal to ½ cup cooked vegetables; 1/2 medium potato; 1 cup of salad vegetables; or ½ cup cooked legumes (dried beans, peas or lentils).

Raw vegetables have been included in all options, trying each product to be nutritious, tasty, colourful and fun to eat. Different textures have been included by using raw or cooked vegetables. The product also meets the criteria of having a shelf life of at least 3 days.

The bread is a full grain handmade bread with different types of seeds. “Wholegrain cereals contain the three layers of the grain. Wholegrain cereals contain more fibre, vitamins, minerals and antioxidants than refined cereal foods such as white bread, because many of the important nutrients occur in the outer layer of the grain which is lost during processing. Wholegrain foods are particularly important in vegetarian diets as a source of iron and zinc”.

Recommended Daily Serves of Fruits and Vegetables

Sauces have been replaced with an avocado puree to make it tasty and healthy at the same time. Salt has been replaced with parsley and lime. Tomato is used including its skin as it provides a lot of vitamins. The only fats used are the ones which come from vegetables like avocado and the one in the bread is less than 10g for the whole load of dough. It is a simple choice, but it has been thought to make life easier for the canteen managers when serving and fun and healthy for the children. The menu is affordable, taking into account that children don’t have a high budget when coming to the canteens. The product is to be sold for around 10AUD. The piece is due to high quality ingredients and not using convenience products or products that are industry produced.

From extensive research of our target audience we have recognised the importance of the ease of which the customer can eat the product. Our target audience requires a solution that is quick to buy, pickup and eat - the cob loaf answers this demand. 31

Our culinary student, Maria, has ensured the product is comprised of healthier options including a healthy bread, fresh meat/vegetables and a cream sauce. These elements have been curated to ensure the resulting product is healthy, tasty, satisfying and fast to consume. Our strong brand identity and packaging solution reflect the colourful playful nature of childhood and the health benefits of the product.
