Wings Over the Illawarra takes off

The theme for this year’s Wings over the Illawarra Air Show is the Centenary of Military Aviation. As such, it has attracted an impressive range of old and new military aircraft, including A-18 Hornets, a Spitfire and Hudson from Temora, a P51 Mustang, a P40 Kittyhawk, a T-6 Texan, a Sabre and more. As I was reading this list out to Steve, he kept saying ‘Yes! Yes! Yes!’, so I don’t think we’ll be seeing him at the Café that day. The day will feature a wide range of activities and displays, including an air show of aerobatic, historic, modern and military aircraft along with defence force exhibits, freestyle motocross

displays, classic cars and bikes, amusement rides, merchandise and food stalls. Wings over the Illawarra is the only major air show in NSW and has reached a stage in its growth that means it is being promoted heavily in Sydney. It could be wise to pre-purchase your tickets online and travel by train as this event is set to attract over 20,000 spectators. Chasing the big fish Bad weather forced the postponement of the Blowhole Big Fish Tournament to the end of May.

The 2011 Census figures for Kiama show that over 20 per cent of us identify our ancestors as coming from Scotland and Ireland (and with another 30% nominating Australia, the numbers are probably higher!). So Berry’s Celtic Festival might be worth a visit if you want to celebrate your heritage. Commencing with a pipes parade through Berry, the Festival then centres on the Showground. There will be more pipes, string ensembles, dancing and singing performances of Scottish, Irish, Welsh, Galician and Australian heritage origins, and demonstrations of physical prowess by the wonderfully named Tartan Warriors. Other activities include the annual raffle of a magnificent Celtic quilt made by the Nowra Quilters, a Cornish pasty competition, wandering minstrels and clan stalls. The Big Fish offers over $25,000 in prizes and attracts up to 50 boats each year. Tuna and marlin are the main targets. Their families must really like eating fish... Details: Watch out for the action around the Harbour on the last weekend in May.

Hear the orchestral stars of tomorrow Bluescope Steel Youth Orchestra, the flagship orchestra of the Wollongong Conservatorium of Music, is playing a concert organised by Gerringong Music Club. It will be a great opportunity to hear a lively orchestral sound in an intimate setting, and meet the individual instruments of the orchestra. Recipe of the month A number of you have complained about the lack of recipes in recent editions (there has just been so much else to fit in!), so I’m giving you a beauty. It is one we have been making to sell at the Farmers’ Market, using seasonal fruit bought there. A cake with substance!

Upside-down Cake Line base of 22cm tin with baking paper, spray or grease sides, and sprinkle 1/4 cup brown sugar evenly over base. Arrange cut fruit decoratively on top of the sugar as this will be the top of the cake. Any fruit will do! Beat 150g butter, 1 cup caster sugar and 1 tspn vanilla on high for 4 to 5 minutes til pale and creamy. Add 3 eggs, one at a time, beating after each addition. Using a large spoon, mix in 1/2 cup almond meal and 1 1/2 cups SR flour. Do not overmix. Spoon over fruit and smooth surface. Bake at 180C for 50 minutes or until cooked. Run knife around the edge of the tin to ensure it doesn’t stick on the way out. Peel off paper, admire your pattern, and dig in!
