hi!

T

he job of Editor isn’t an easy one. With a monthly magazine the work never stops and as you read this I am already working on the May issue (our Mother’s Day special just for you!). I wouldn’t give it up for quids though.

Everyday I hear from inspirational people who are making their dreams a reality. Whether they are a mumpreneur starting a small business or someome like Taryn Brumfitt, the founder of Body Image Movement (bodyimagemovement.com.au) who has set about helping other women go on the same journey she did from self-loathing to body-loving.

My interactions which each and every one of these people pushes me harder to realise my dreams for Kid Magazine. I want to be the premier fashion and lifestyle publication for mums on-the-go and we are getting there. Each month more of you are discovering us and sharing us with your friends and I thank you for that.

I have loved hearing from you all this month with your feedback on the magazine so keep it coming this month! The best letter each month wins a prize and this month we have a box set of Tracy Anderson DVD’s to giveaway.

How do think the retail industry has changed in the last decade?

Where do you see the Gouniq brand in five years time??

Finally, any final words about the Gouniq brand?

We aim to be the premiere place to launch and promote a retail business away from a retailer’s standalone store.

Gouniq is the first brand /department in the network. We will be launching other departments in the near future, so stay tuned.

WorKOut I’m too busy for exercise with Kaz Muddell

“I’m too busy to exercise!!!”

Haven’t we all uttered those words before! Honestly.

In our week we have 10,080 minutes.

The recommended daily exercise is 30 minutes per day so that is 210 minutes per week, that’s 2% of our week. Do you think you could find time to exercise for 2% of your week?

I think you could!

The fact is we are not too busy to walk to the café to buy a latte, chat by the water cooler at work about all the latest gossip, watch our favourite TV show or go shopping for all those essential items we absolutely cannot live without, like a new handbag!

We just simply would rather make an excuse and do something else that is less effort. And that’s a fact.

So how do you fit exercise into your day? Here are some ways that I find effective.

1. Only exercise for 30 minutes.

This amount of time seems to be somehow manageable and if you work out intensely enough you will burn as many calories as in an hour session that has lots of breaks.

2. Exercise the moment you get out of bed. Set your clothes and shoes out ready to go and just go before your head even starts to process the day! Go to a class, for a run, or a long walk. Just do it!

3. Commit to going to a class or training with someone or have them contact you to encourage you if you don’t exercise. I often tell my coaches and clients I am coming to class so that way I am committed to doing it even if I feel I am too busy. Plan a session with someone and tell them you absolutely cannot get out of it.

We just simply would rather make an excuse and do something else that is less effort. That’s a fact 4. Plan a shopping trip and walk to the shops. I do this sometimes when I have to buy a few groceries as I find that carrying a few bags gives me an extra resistance workout on the way home.

5. Walk or exercise at lunch time. Yes it’s an interruption in your day but you are more likely to do your training during the day than when you are tired and have just hit the couch at home.

6. Do some exercise whilst you are watching television if you need to.

There are plenty of workouts that can be done with your bodyweight that can be completed in your lounge

room. I’m not a TV fan myself but I am sure that this would be effective for those who are.

7. Wash your own car, mow your lawn, do a vigorous bout of cleaning or gardening. Often we outsource these activities when they are good sources of physical activity.

So there are a few tips that you might find handy. Hope they help!

Body love after baby “I put far too much pressure on myself to get a flat stomach again and look great in my prebaby clothes. I would force myself to go walking every afternoon while my baby slept in the pram, pushing myself to exercise now matter how tired was and how much my body just needed to heal.

In the end, I got really sick and was forced to stop”, shares Amy Taylor-Kabbaz, founder of Seek, Act, Love (seekactlove.com).

Given the media portrayal of celebrity pregnancies and recovery it is no wonder that many women feel pressure to regain their prebaby figure so quickly. While some effort is being made to shift the way beauty is portrayed generally in the media, we are still presented with unhealthy role models who do no reflect “real” women. Airbrushing has become the norm of our enhanced representations of beauty.

Reality is very different. Without the help of professional hair stylists and make-up artists, lighting that hits the right angles and a designer to tidy up any flaws we look in the mirror everyday to see our own reflection looking back at us. The challenge is in reframing our perception of beauty so the reflection staring back at us is beautiful in our own eyes.

The Body Image Movement (bodyimagemovement.com.au) founder, Taryn Brumfitt nearly resulted to plastic surgery after her three children to “fix” the effects of pregnancy on her body. It wasn’t until she had an epiphany while playing with her daughter that she started to accept her body as being her own. “I

looked at her and I realised that I didn’t ever want her growing up to think that if something isn’t perfect about her body, she needs to get it altered. How could I ever encourage her to embrace and love who she is, and love her body if her own Mummy is a big, fat, walking contradiction?”, she says of that moment with her daughter.

Julie Russell launched her business Bon Appeteat (bonappeteat.com) shortly after giving birth to her son. She felt pressure to look her best while she built the business and represented her brand.

“This was much more difficult than I had fathomed, and the weeks and even few months following Evan’s delivery left me feeling drab and lack-luster to say the least. I was unprepared for the hard road ahead post-birth”, she says.

Taylor-Kabbaz encourages women to accept that things have changed, “This is a time in your life when you still need to honour and respect your body with love and care – it has just done the most miraculous thing it will ever do! Love it.

Accept it. Be kind to it”.

being is relying on you to nurture, protect and love them and placing unrealistic expectations on yourself and your body may compromise your ability to be a healthy mummy. Russell took a positive approach to her health and fitness, “I began scheduling a workout time in my weekly planner just like you would have any other appointment, even if it was just for a ten minute ab toning video on my living room floor! I’ve made this

Mish Wright from Mishfit (mishfit.com.au) knows the damage that can be done to your body postbaby. Suffering from post-natal depression, Mish found comfort in exercise and on the days she didn’t exercise would feel the dark cloud creeping back in. She enjoyed it so

much that she decided to leave her career in education to become a fitness instructor. It wasn’t until Mish was teaching a group fitness class while wearing an incontinence pad that it dawned on her that something needed to change.

After speaking with her GP she was referred to a women’s health physio who told her she was on the verge of prolapse if she didn’t change something.

This moment then set Mish on her new career path as she set out to learn as much about the pelvic floor muscles as she could. “No fitness instructor ever mentioned to me that I needed to contract my pelvic floor while squatting or jumping or that if I was leaking it wasn’t appropriate for me to be exercising at all”, she says. A review of the materials provided her to while completing her fitness qualification confirmed that fitness professionals are not educated on this

core muscle. Mish established mishfit and now helps women place a healthy focus on their body post-baby and on pelvic floor activation through exercise.

Jenny Dugard from Body Beyond Baby (bodybeyondbaby.com.au) also recommends women educate themselves on their pelvic floor, “My biggest recommendation for any postnatal mum is to find out what is going on on the inside and then rebuild from the inside out”. Jenny recommends mums ask the following questions if they are looking for a trainer who will understand their specific postnatal needs: 1. Do they check you for abdominal separation?

If they do, can they tell you what it means and what you should/shouldn’t do accordingly?

2. Do they give you sit-ups? (Dugard recommends against mums doing sit ups as they can be damaging for those with abdominal separation, can put pressure on a weak pelvic floor and may contribute towards back ache) 3. Do they teach you about activating your inner unit?

4. Do they ask you about your pelvic floor? If not, make sure you only do what is comfortable in ANY exercise – if you leak, have a dragging feeling or heaviness it is a sign to stop For women wanting to know more about the pelvic floor muscles and incontinence, Mish recommends Pelvic Floor First (pelvicfloorfirst. org.au) and the Continence Foundation of Australia (continence.org.au). She knows it is a huge issue that people don’t like to talk about but warns that if you don’t fix the issue you have a greater chance of having a prolapse.

Other than the physical side of post-natal fitness and health is the mental side and being happy with what you see in the mirror. Taking time out for yourself is an important step in doing this.

Taylor-Kabbaz recommends having a shower and putting mascara on everyday, “Don’t wait until lunchtime to get out of your pjs, it will totally influence the way you feel about your day, and your life. Put the baby in a pram or move the bassinet near the shower door if you have to, but wash, put clean clothes on and splash that mascara on. And while you’re at it, tell yourself what an amazing woman you are while you’re looking in the mirror”, she advises. kidmagazine.com.au 38

The strategy used by Brumfitt to begin changing her view of her body was to make a list. On one side she wrote the things she can change about herself, such as losing the few kilos gained over Christmas. On the other side she wrote the things she needs to accept about herself that are useless investing time in changing such as her height or the stretchmarks on her tummy.

Her message to other women is, “to love and embrace your body and to recognise that what we see in the media and lots of magazines is not actually real and importantly you are not alone”.

Brumfitt lives by the mantra, “my body is not an ornament, it is a vehicle to my dreams” and encourages others to move from self-loathing to body-loving by focussing on acceptance of self.

The process of refocussing is not an easy one but we all need to love our bodies and love ourselves. Sure there are things that we need and want to change but we should do so in a healthy and positive way and stop investing time and energy in the things we cannot change.

If we all stood in front of the mirror everyday and repeated Brumfitt’s other mantra of “My body is beautiful

and worthy of my love”, think of the amazing things we could all achieve.

Travelling with kids Find out how with the experts If the thought of organising a family holiday sends you spiralling into a state of anxiety, you are not alone. Whether it be a short weekend trip away or a long overseas stay, there are more considerations to make when you are travelling with kids. With the school holidays just around the corner we have some great tips to help you make the most of whatever holiday you take together.

Failing to plan is planning to fail holiday. After driving around Australia with her husband and two kids, the family decided to embark on a journey driving around the world. After much organisation they embarked on their year-long adventure and went on to write a book about the experience (Drive Around the World: One Family, One Car, One Year, One Planet, RRP $35).

Sandy advises parents to involve kids in the planning so they know where they are going and why. Older kids will also be able to help with researching activities and places to stay. Sandy also recommends acknowledging the different travel needs of the family and accommodating these needs in the planning.

the holiday planning stage. Every family is different and needs to consider their individual circumstances, budget and what they want to achieve from the holiday. I couldn’t think of anything worse than facing a cold snowy ski trip but have friends who love taking their kids to hit the slopes.

When it comes to choosing a destination, Caz Makepeace, founder of ytravelblog.com says parents need to consider available activities in the area, the cost of the destination so as not to under budget, the age of children for age appropriate activities and even the climate when choosing a destination.

She points out, ‘Two weeks of rain will drive you insane when you travel with kids’.

Cruising is one great option, recommended by Lisa Allan, Manger of Shire Travel, the Travel with Kidz Agency of the Year in 2012. “One of the benefits of a cruise holiday is that the kids get a good night’s sleep whilst you are on the move through the night and then you arrive into the next destination fresh the following day ready to explore”, she said.

On a cruise the kids get to see multiple destinations without the hassle of longs fights or car trips.

Lindy Klim, co-founder of Milk & Co (milkandco.com.au) and wife of Olympian Michael Klim, grew up in Bali and travels there regularly with her children. “I find that so many Asian countries are fantastic for children as there are always loads of activities specifically designed for kids”, she said. Khazam travelled extensively through South-East Asia on her driving adventure and agrees with Klim, “SouthEast Asia – friendly people, beautiful

On the road Getting to the destination can be long and tiresome depending on your method of travel and distance from home. If driving, Khazam advice is to “keep the daily driving time to a minimum and make sure there’s an activity either side of the driving. Stopping at playgrounds when you see them for a quick release of energy is good too.”

If flying, be aware of the fact that kids may not appreciate having to sit still while the seat belt sign is on. Klim recalls an experience with her eldest child, “I was travelling with our daughter Stella who was three at the time. Just as we were landing she decided she urgently needed to go to the bathroom and couldn’t understand why the seat belt sign being on meant she couldn’t get up, even to go to the bathroom. I gently tried to explain it to her but nothing could stop her crying. It was pretty distressing!

Since then, we always make a trip to the bathroom 10-20 minutes before landing.”

Holiday time

Know your destination and the types of activities you would like to do but don’t be too inflexible so that you miss other unplanned opportunities that arise. “Parents often take a lot of things to entertain the kids but part of being on holidays is being able to explore”, says Amott. “Take colouring in books and blocks for down-time at the hotel but explore and do things you wouldn’t normally do if you were at home”.

Allan’s advise is to plan your day so that both the parents and kids get the most out of the holiday, “It is best to spend the morning sightseeing and shopping when children are fresh and excited and then plan to spend some time at the beach or around the hotel pool doing something that the children will love in the afternoon”.

Many hotels also have kids clubs and it is worth looking into this during your planning stage. Allan recommends kids clubs to not only give the parents a break and some time to themselves but also a chance for the kids to make new friends and participate in fun kid-friendly activities.

Back to reality The hardest part of the holiday is coming home and this can be especially hard for kids if they are to head back to school the next day.

Amott advises keeping some kind of loose schedule while on holiday to help with the transition back to the everyday routine. She also suggests returning home a day or so before the kids go back to school and parents go back to work to give the kids time to adjust back to being at home.

My advice, once you are home start planning the next holiday to keep the kids momentum in adventuring and to give the whole family something to look forward to. Not every holiday has to be a grand event so treat simple weekends away with just as much excitement so the kids will stay

What’s all the fuss Ask any mum if she has ever had to deal with a fussy eater and there is a good chance she will tell you that at one time or another she has. She has sat frustrated and perplexed as the meal her child once loved is now met with a facial expression that screams “YUK”. Fussy eaters can make mealtimes, packing lunchboxes and shopping the stuff of nightmares, but it doesn’t have to be that way. .

According to kids’ nutritionist, food coach and founder of watermelonkids.com.au, Cherie Lyden, research suggests that for kids aged 2-18 40 per cent of their daily intake is made up of salt, fat and sugar often coming from processed and takeaway foods. This in itself is a problem but then add the extra complexity of having a fussy eater and avoiding these processed foods can become even more challenging.

The good news from Lyden is that kids will most often grow out of fussy eating if parents are patient, positive and persistent with dealing with the issue. She also advises that unless they are avoiding a whole food group, such as vegetables, they won’t be missing the nutrition they require. When you do have a fussy eater there are a few strategies you can use to get you and your little one through it.

Green trees and fluffy clouds bMake food fun. Whether you give vegetables funny names such as green trees for broccoli, fluffy clouds for cauliflower or make shapes and faces for interest it will help engage the kids with what is on their plate.

Kids in the kitchen With the plethora of cooking shows on TV these days kids are more exposed to the fun of cooking and may be more interested in getting involved in the kitchen. Turner jokes, “You never know, they could be the next Junior Masterchef.”

Get the kids to help you choose things such as the recipe for dinner, the vegetables you will cook and even ask for their advice on presentation. Lyden says that the earlier you involve kids the better, so even take them shopping with you to help buy the ingredients.

Professional caterer, cake maker and Mum, Barb La Ganza (barbettesfeast.com. au), also suggests giving the kids three or four options to choose from rather than a blanket “what do you feel like?”.

The choice empowers them and they are more inclined to eat.

Age will of course determine how much they can get involved. When my niece and nephew come for dinner they always want to help me prepare the meal. I always make a big deal out of this and give them “special tasks” which they can easily do. My three-year-old niece takes on the role of chief salad dressing mixer while my six-year-old nephew is able to help with tossing the salad or pouring sauces. They are so proud of their respective contributions that they inevitably eat what they have prepared, even if they won’t eat other items on their plate.

Try, try and try again While it can be frustrating to see the kids reject the same food over and over again Turner advises persistence to continuing exposing them to new foods, even if they won’t eat them, “eventually they will try some, especially if they see you enjoying them”, she said.

Lyden advises parents to try a different way of cooking a food that the fussy eater doesn’t want to try before completing crossing it off the list.

“Often kids won’t like the texture of the food, some kids prefer raw vegetables because they like the crunch’. Often kids will not enjoy the texture of meat so try mincing or slow cooking beef as the different cooking method changed the texture of the meat.

It is also vital to stay positive to encourage the kids to keep trying different foods, flavours and textures.

Kids need variety in their diet to ensure they get the different vitamins and nutrients they require.

If green food is off the menu this week, try again next week or introduce the food in a different way.

La Ganza says providing an alternative is the key, “my daughter doesn’t like tomato, my son doesn’t like lettuce so I make a salad with both and they can choose what to eat but ultimately they have salad.” She also suggests finding healthy recipes for the kids favourite take-away food so you can make it at home without all the added salt and fats.

New school rules Gone are the days of forcing kids to eat everything on their plate before they are allowed to leave the table. Lyden says that this teaches kids a negative association with food. Rather, we should be providing smaller amounts of food on the plate rather than overcrowding and encouraging them to ask for more if they are still hungry.

Turner agrees, “if the child chooses not to eat the food, then remove it after a set time, 20-30 minutes, and allow the child to leave the table.

they want because they refuse your food – assume they are not hungry and tell them so. “ Turner leaves us with two thoughts to remember when faced with a fussy eater.

Firstly, healthy children do not starve themselves and secondly, parents are in charge of the type of foods offered.

It may be tough while you are going through it but your persistence of presenting new foods will pay off when you have kids who have a healthy enjoyment of food.

If you play your cards right you may have even some extra helping hands in the kitchen.

The dinner table and a regular routine is vital in encouraging positive food habits in children.

Turner shares four tips for parents to help them prevent dinner time from becoming a battleground: 1. Set a meal time – decide on what works for your family and agree on a set time, then stick to it. Also stop snacking 2 hours before dinner and set a time limit of 20-30 minutes for each meal 2.. Establish a routine – make sure you establish a sit-down mealtime routine including setting and clearing the table, and allocate tasks so your child can feel engaged. Remove all distractions – turn of the TV and radio and do not allow books, toys and games at the table 3.. Connect with conversation - include your children in conversations and talk about the things that interest them. Ask each family to talk about their day or use the time to share family stories of things that happened in the past 4. Establish the rules – agree as a family what the ‘rules of behaviour’ should be and write them down if necessary. This will hold everyone accountable, and your child will enjoy being involved in the process. Be consistent in enforcing the mealtime ‘rules of behaviour’ and remember that ALL adults eating with the child at mealtimes need to enforce (and obey) the rules.

Mustard & Thyme Chicken Breast Serves 2 2 boneless, skinless chicken breast halves 1⁄4 cup raw honey 1⁄4 bunch fresh lemon thyme 2 tablespoons GF wholegrain mustard Preheat the oven to 180°C. Line a baking tray with baking paper. Butterfly or flatten the chicken breasts. Spread with honey and mustard. Place the thyme sprigs in the middle of the breast allowing some of the leaves to hang over one end. Roll up and secure with kitchen twine or toothpicks. Place on the baking tray, season with sea salt and pepper, and bake for 20 minutes, basting halfway through.

POP FIZZ’S RECIPE FOR

CHOCOLATE! CUPCAKES!

As you know, Pop Fizz is always coming up with new recipes for potions... but this Easter he’s trying something different, and came up with this recipe for a Skylands delicacy:

chocolate cupcakes!

To try them yourself, ask an adult to help you follow the below instructions.

IMPORTANT: Don’t try it on your own (You know what sometimes happens with Pop Fizz’s potion recipes!)

Ingredients (makes 12): 125g salted butter, softened 1 cup plain flour 3/4 cup sugar 1/4 cup cocoa powder 1.5 tsp double-acting baking powder 2 eggs 1/2 cup milk 1 tsp vanilla extract 150g dark chocolate, melted Icing: 100g butter, softened 2 cups soft icing mixture, sifted 1/3 cup cocoa, sifted 2 tbsp milk

Method: 1. In a bowl, sift together plain flour, cocoa powder & baking powder.

2. In a separate bowl, whisk together butter, sugar & vanilla extract for about 10-12 mins until pale and creamy. Add in eggs one at a time and beat until well combined.

3. Add in milk and flour mixture alternately in 3 additions, mixing well in between each addition.

4. Fold in melted chocolate thoroughly.

5. Fill cake mixture in cupcake liners until about 2/3 full. Bake in a preheated oven of 160C for 20 mins or until a wooden skewer inserted into the middle of the cake comes out clean. Leave to cool on wire rack.

Icing: 6. Using an electric mixer, beat the butter until pale and fluffy.

7. Add the icing mixture and cocoa a little at a time until fully incorporated.

8. When this is fully combined add the milk and the chocolate buttercream will become light and fluffy.

9. Add icing to cooled cupcakes and lightly place a Skylanders Giants edible cupcake topper in the centre (included in your Easter gift bag). Lay cupcakes aside to set.

10. ENJOY with the kids!

Tropical Breakfast Risotto Serves 4 1 cup (185g) Arborio rice 1 can (400ml) coconut milk 1â „4 cup organic raisins 1 cup chopped, firm banana In a medium saucepan, combine 2 cups of water with the rice and bring to a boil. Reduce the heat to medium-low and simmer uncovered, stirring frequently for creaminess. When the water has been absorbed, add the coconut milk. Vegetable stir-fry with almonds and quinoa Serves 1 meal 1 tablespoon olive oil 1⁄2 small Spanish onion, thinly sliced 1⁄2 red capsicum (pepper) thinly sliced 125 g (4.5 oz) mixed vegetables, such as beans, broccolini (baby broccoli), bok choy, mushrooms or sugar snap peas 1⁄2 teaspoon of fresh ginger, finely shredded 1⁄2 red chilli, de-seeded and finely sliced or 1 teaspoon of Sweet Chilli Sauce 1 tablespoon of tamari 1 tablespoon lime juice 12 almonds 1⁄2 cup cooked quinoa 1⁄2 teaspoon finely grated lemon zest 1 tablespoon Mustard and Orange Salad Dressing 1 sprig fresh coriander (cilantro), leaves only Heat the oil in a wok or heavy frying pan. Stir-fry the onion and capsicum (pepper) for 1 minute.

Add the mixed vegetables, ginger, chilli, tamari, lime juice and almonds. Stir-fry for 2 minutes.

Place cooked quinoa in a small bowl and add the lemon zest and dressing. Stir to combine. Grease the inside of a small plastic cup and pack the quinoa into the cup, pressing down firmly.

Place the cup upside down onto a plate and gently tap so that the quinoa forms a cup-like stack on the plate.

Arrange the stir-fry next to the quinoa and top with fresh coriander (cilantro).

Chocolate berry tart with ricotta creme Serves 8 slices 11⁄2 cups rolled oats 2 tablespoons spelt flour, white or wholemeal 2 tablespoons Dutch cocoa 1⁄2 cup raw caster sugar 80 g (3 oz) butter, melted 1⁄2 cup rice or beans for blind baking 2 quantities Ricotta Creme 250 g (9 oz) small fresh strawberries, green tops removed, halved 200 g (7 oz) fresh raspberries 200 g (7 oz) fresh blueberries icing (powdered) sugar for dusting Preheat oven to 180°C (350°F). Grease a 34 x 11 cm (13 x 4 in) fluted tin.

Place the oats, flour, cocoa and sugar in a food processor and pulse for 20 seconds. Tip the mixture into a bowl and mix with the melted butter. Press the biscuit mixture into the prepared tin.

Place a piece of baking paper over the base and tip rice or beans over top. This keeps the base flat while baking.

Bake in the oven for 15 minutes. Remove from oven and cool in tin then discard the rice or beans and baking paper.

Remove very carefully from tin. Fill with the ricotta creme and top with the strawberries, raspberries and blueberries. Dust with icing (powdered) sugar and serve immediately.

Cadbury Creme Egg Cupcakes Makes 12 100gm milk chocolate 1 cup water 125gm butter - softened 1 1/4 cups brown sugar 3 eggs 1 1/2 cups self raising flour 1/2 cup plain flour 1/4 cup cocoa 12 Cadbury creme eggs (two packets) Icing: 200gm butter - softened 2 cups icing sugar 3-4 tablespoons baileys Irish cream 1 tsp vanilla essence Pre heat oven to 180°C. Line a 12 hole cupcake tray with paper cases.

Easter is upon us. Whether you celebrate the religious meaning behind it all or are celebrating with some family traditions, we can all agree that Easter is the perfect time to gorge (relatively guilt free) on all things chocolate.

Easter in my family has always been a family affair. There is always an Easter egg hunt for the kids and a big mouth watering lunch.

Every year my Grandparents buy all the grand kids (and great grand kids) a chocolate bunny and every year I eat way too much chocolate; bunnies, eggs, solid eggs and lets not forget hot cross buns.

These to-die-for cupcakes may look like ordinary cupcakes on the outside but they harbour the most sacred of all eggs. The egg that everybody looks forward to all year: The Cadbury Creme egg. It creates a sugary explosion of cream and caramel so rich that you will need to have a glass of refreshing milk on stand by to wash it all down.

If you’re someone who isn’t a big chocolate fan (yes there are actually people who don’t like chocolate....who knew right?) but still want to give these bad boys a try then I suggest using mini Creme eggs and make mini cupcakes.

You will also need to place your Creme eggs in the freezer for approximately an hour before baking. This ensures that they don’t just melt into the cupcake completely.

Add the chocolate and water to a small saucepan. Cook over low heat for 5 minutes, stirring, until chocolate is melted and smooth. Set aside to cool.

In a large bowl, using an electric mixer, beat the butter and sugar until light and creamy. Add the eggs one at a time, beating well after each addition.

Add the flours and cocoa. Mix until just combined. Pour in the chocolate a little at a time until all mixed in to form a smooth batter.

Put a tablespoon of mixture in the bottom of each paper case. Place a Cadbury creme egg in each case.

Cover with another tablespoon of batter.

Place in the oven and cook for 20 mins or until a skewer inserted into the cake comes out clean. Remove from the oven, let sit in the tray for 5 mins before placing onto a wire rack to cool completely.

Meanwhile to make the icing. Using an electric mixer, beat the butter until its pale and creamy. Add the icing sugar a little at a time. Pour in the baileys and vanilla essence. Mix well.

Pipe or spread icing onto cupcakes. Top with half a mini creme egg and grated chocolate if desired. Serve.

Let’s talk fire safety It was a phone call just after 1:30am on a cold September morning that brought the reality of a house fire into my world. I didn’t answer the first call, partly out of a drowsy anger at being woken so early and also just assuming it was a wrong number or prank call. Just as the phone rang mere seconds later I recognised the number and my stomach turned. I answered to hear my Mum telling me that my childhood home had been ravaged by fire.

The ten-minute drive seemed to take an eternity. I knew Mum and Dad were ok but had no idea how much damage had been done to the house. By the time I arrived both our family cats had been found safe albeit shaken by the experience. The cats were sent to the emergency vet for monitoring while Mum and Dad were taken by Ambulance to the Hospital for a check over.

After phone calls to the States to tell my sister the events of the night and an early morning trip to Grandma’s for my parents to shower and change into fresh clothes we made our way back to the house to face the damage. While we couldn’t enter until the house had been inspected, what we could see from the windows was frightening. Melted plastic, a 3 seater coach burnt to ashes and thick black dust covering every nook and cranny of every corner of the house.

Once the cause of the fire had been established (a faulty wiring issue) the clean up began. Every single personal affect was removed from the house over the next

week. Mum and Dad took what they would need for the next few months while the house was repaired and the rest taken away to be cleaned. Much of the kitchen and living room was completely destroyed and went straight into dumpsters, a heartbreaking process for anyone to sift through their destroyed personal belongings.

My parents were lucky. They had a working smoke alarm, which woke Mum up. They were able to get out of the house to call the Fire Brigade and while they lost some items that can never be replaced, such as my sister’s artwork, the house was still standing. They have rebuilt their home and it continues to be a place of much joy for our family gatherings.

Throughout April, the Australian Fire and Emergency Services together with Duracell, are urging all Australians to change their smoke alarm batteries.

Campaign spokesperson, Deputy Chief Officer Steve Warrington said, “Every year I continue to see a devastating number of house fires and unfortunately, not everyone gets out alive. Ensuring you have a working smoke alarm in your home can save lives by providing that critical early warning sign giving you time to evacuate safely.’

More than 12,000 residential fires were attended to by Fire and Emergency Services throughout Australia in 2012 alone. This April make sure your smoke alarm is working to give you the early warning sign you will need should a fire strike.
