RESTAURANT

Waku Ghin is a modern European Japanese restaurant located in Singapore. It is listed at top 100 restaurants of the world. The restaurant is helmed by celebrity chef, Mr. Tetsuya Wakuda who honoured with lifetime achievement award in 2015. ‘Waku Ghin’ is derived from two Japanese words where ‘Waku’ means ‘Arise’ and ‘Ghin’ means ‘Silver’. Waku Ghin features an unique concept, diners will move from room to room while enjoying a ten -course degustation menu that showcases a blend of exquisite European and Japanese culinary dishes. The restaurant serves limited guest with 25 seats available each session while there is only two session vailable per day.

Bangsar is an affluent residential suburb on the outskirts of Kuala Lumpur, lying about 4 kilo meters south-west of the city center. Bangsar has grown rapidly in recent years, new shops and attravtions are sprouting up in Bangsar. Long-standing outlets have been very successful. It is one of the high income society living area in Malaysia.

THE SLICING MOTION

MATERIALS

The concept is inspired by the cutting technique performed via Japanese knife that used by Tetsuya Wakuda. Tetsuya Wakuda is a Japanese knife enthusiast, he only uses Japanese knife in his restaurant to preserve the original taste of exquisite ingredients. Among cutting techniques, back slicing is used the most often in his food preparation where the ingredient will consist of clean cut edges and best condition of taste and texture. Thus, the interior space will be designed based on the characteristic of back slicing motion such as forceful, layering, and dynamically. Furthermore, it will echo with Tetsuya’s philosophy where the finest culinary are prepared through the simple way of the quality process.

FLOOR PLAN The plan is designed based on the cutting form towards an object, to slice off the space into different zone as to meet the client business operation requirement where room to room dining concept is implemented. Material used are sustainable preferable, concrete are the main material towards the space in which to create a clean and minimalist sense.

The design of this restaurant blended Japanese element with western design approach to create an unique modern sense where to echo with Tetsuya Wakuda, the client culinary’s cooking method. Lighting are used particulary embeded on wall to intensify the room to room dining concept of Waku Ghin. OLED are installed on wall from reception counter to the last station of main dining hall where to guide the diner to walk at the right path.
