Welcome to the latest ‘South Sands View’ magazine, published at the end of our third Summer season! We set out to create something different – a hotel and restaurant that would reflect some of the values and qualities we believed our Guests would most appreciate. At South Sands, we have the most wonderful beachside location at the mouth of one of the West Country’s most beautiful harbours and we wanted our Guests to be able to enjoy a relaxed hotel and restaurant environment in harmony with this setting. The Beauty of Belle Époque

Champagne Houses have each developed a unique personality, enjoyed by distinct factions. Much loved by guests of South Sands Hotel, Champagne Perrier-Jouët has long held a unique relationship with lovers of the arts, including the likes of Oscar Wilde and Coco Chanel. Perrier-Jouët’s legacy within the arts began with the conception of the iconic Belle Époque bottle, created in 1902 by eminent Art Nouveau artist, Emile Gallé. The artist’s swirling motif of Japanese anemones captures the floral tones and elegance of Champagne Perrier-Jouët Belle Époque along with the Art Nouveau spirit of the Champagne House.
The first Belle Époque vintage – the ‘1964’ – was launched in Paris in 1969 at three venues: Maxim’s, Fauchon and L’Alcazar, bearing the iconic floral anemone motif. The reception at L’Alcazar was a celebration of Duke Ellington’s 70th birthday – a glittering occasion attended by leading figures from politics, the arts and show business. Before the launch, 500 personalities each received an individually-numbered and sealed magnum of Belle Époque 1964, handed over in person by a sommelier from Épernay, together with a letter from the Chairman of Perrier-Jouët. Champagne Perrier-Jouët Cuvée Belle Époque today remains the ultimate expression of Perrier-Jouët’s style: floral, elegant and distinguished. To celebrate the iconic bottle – a symbol of beauty and creativity – Perrier-Jouët recently launched the

Designed by renowned floral Japanese artist Makoto Azuma, Belle Époque Florale Edition pays homage to the Champagne House’s inextricable link to the arts and continues a legacy of creativity. The artist explains: “I wanted to make something extraordinary, taking inspiration from the sensation of champagne inside the mouth, and the delicate movement of the ivy and leaves with a special attention and tribute given to Emile Gallé’s anemones”. For this special edition, Perrier-Jouët’s Hervé Deschamps chose the 2004 vintage as the perfect expression of an exceptional year, and of the distinctive style of Perrier-Jouët – floral, stylish and diamond-cut.

The J-Class
Characterised as “the largest and grandest sailing boat of the fleet”, the J-Class at South Sands is perhaps the most impressive of our Bedrooms, with its opulent design features, such as the decadent eight-foot bed and two roll-top baths which overlook spectacular estuary views and coastal scenery. A private balcony looks directly across the bay and provides a wonderful setting for breakfast or a glass of bubbly. The J-Class is perfect for anniversaries, honeymoons or any other special occasion. The generous space features two large, bespoke armchairs – lovely for sitting with the daily newspapers or simply taking in the views.

As Paul Sperry watched his cocker spaniel, Prince, run across the ice on a winter’s day in Connecticut, he noticed his dog’s amazing ability to maintain traction on the slippery surface. Standards are so high these days: diners expect quality local produce and it’s certainly true that food programmes have taught us what to expect in terms of aesthetically pleasing plates.” Perhaps not surprisingly, Stuart sees the Menu as something which should constantly evolve, embracing the new whilst respecting the old – to inspire and entice Guest and Head Chef alike. “People can become too afraid to experiment and try out new dishes and flavours. Here at South Sands, we don’t sit still; we never grow complacent.” It is this attitude towards food which underscores everything – luxury effortlessly intertwined with simple elegance … and a hint of something new. While diners delve into their mouthwatering fresh fish or sumptuous steak, the captain of the ship works away, perfecting each and every dish and conjuring up ideas for future delights. And he doesn’t just focus on the food itself, but on the whole ‘dining experience’, as seen in his introduction of sharing plates, one of his first major changes to the Menu, including a mixed plate of Charcuterie, Tapenade, Tomato & Mozzarella and Crayfish Cocktail. Similarly, dishes for two to share – Monkfish, Whole Sea Bass or Dover Sole – with the sweet-toothed not forgotten, thanks to the madefor-sharing South Sands’ Alaska. Reviews have been overwhelmingly positive from all quarters, although Stuart is keen to point out that he doesn’t want to become a slave to stars or rosettes, “You can lose sight of what truly matters: the customers.” For Stuart, using both seasonal and locally sourced produce remains paramount, “It’s very important to match the Menu to the seasons and, of course, to use whatever local produce is available.

Fish and seafood are sourced locally in Salcombe or bought at fish markets in Brixham, Plymouth or St Ives while meat generally comes from within a ten-mile radius. Everything on the Menu is from across the South West with the exception of a few specialist products. Stuart’s travels, extensive reading and years of experience working in various establishments have taught him the huge importance of seasonality, which poses its own test, but one he relishes since it allows him to experiment with new and exciting combinations and flavours. From humble beginnings, washing pots and pans, to training at Southampton City College and then becoming a Trainee Chef, Stuart’s love of food has grown and grown as he’s invested time, effort and energy into his passion. After working in several larger establishments, Stuart craved the intimacy of a smaller environment, which led him to the awardwinning Horn of Plenty in Tavistock, where he met his mentor, Peter Gorton, to whom he admits he owes a lot. It was during this time Stuart’s knowledge and expertise developed massively, enabling him several years later to take over from his mentor as Head Chef. Stuart now sees it as his responsibility to educate and nurture his team at South Sands in the same way Peter Gorton did with him. And his desire to educate people about food hasn’t stopped with his team: Stuart regularly hosts demonstrations at gourmet food fairs, including an interactive demonstration at the famed Dartmouth Food Festival, where people have the opportunity to sample the food they’ve watched being cooked. Stuart will hold similar demonstrations at South Sands during the winter months, followed by Dinner in the Beachside Restaurant,

Whilst Stuart insists his dishes should always look immaculately enticing, for him, it will always be about substance over style – one of the main lessons he learnt from Peter Gorton. “The food should always do the talking.” Those who have sampled the delights of South Sands’ Restaurant will doubtless testify to this. Stuart harbours many hopes and ambitions for the Beachside Restaurant and his plans for the future include making homemade cakes and ice cream. His passion and energy have been ignited by the availability and demand for local produce and uncomplicated honest food. “My main aim and desire is for South Sands to be a destination restaurant, where people know it will be very relaxed but also very refined and know exactly what they’re getting.” This ambition has certainly been realised in the time Stuart has been on-board and, if anything, it won’t be too long before the exceptional standard reaches those stars, intentionally or not. ‘Naturally’interesting South Sands’ Wine List
Liam Steevenson, who became the world’s youngest Master of Wine in 2004, talks about helping to create South Sands’ Wine List and explains why ‘natural wines’ are the next big thing … Gareth Piper and his team at the Beachside Restaurant have always taken the Wine List very seriously and have allowed us to build a selection from some of the world’s finest small wine producers that has real depth.
farmed either organically or biodynamically and then produced with the lightest of hands in the cellar, meaning no physical manipulations and no added yeasts, sugar or acids and – perhaps most importantly – no added sulphur.
This year, we have tweaked the Wine List, with some fantastic new additions from South Africa, Italy and Spain in particular. However, the most exciting development of all has been the addition of a selection of natural wines to the list.
There are risks, of course, in making wines this way: manipulations and additives are used primarily to make wines more stable, to safeguard them for the supermarket shelf. However, extremely careful handling can produce wines which survive this new process and, moreover, which are perhaps the greatest expression of pure wine you can taste.
The natural wine movement is gaining growing momentum in the London restaurant scene and particularly in France and Italy. Natural wines are simply wines made as naturally as possible,

along with Gareth. Tim works particularly closely with the natural movement and his knowledge is extraordinary. As he explained to us, “Natural wines can taste strange at first: it’s rather like asking someone who has drunk UHT milk all their life to drink milk taken straight from the cow. It’s almost a different product altogether.” In my opinion, wine, like great art or great music, should divide people and indeed should be slightly challenging. These wines certainly manage both of these things, but they are all outstanding, and a better expression of terroir you will never taste. As a merchant, it has always been about the wine. We have built fantastic relationships with winemakers all over the world, and it is a pleasure to tell their stories and to offer their wines. The last year has seen us become the International Wine Challenge Regional Wine Merchant of the Year, which has made us incredibly proud, although it is really down to the wonderful Wineries we represent and to the quality of the Hotels and Restaurants to which we sell. A journey of discovery The Paintings of Graham Fish – Words, Brian Clavin “Everyone knows that the earth changes with the seasons, but so does the sea. Living with it I have studied the sea’s cycles and tempers. In winter the sea is unsettled and edgy, the light and sky never rest, spring brings moments of calm and a new light. Even in sunny weather the changes are sharp and clear – but the most remarkable contrasts in every season are between dawn, day, evening and night. Sunrise and sunset can be breathless and dazzling with the waves reflecting every colour and mood” – Graham Fish On many of walls of the restaurant and guest rooms at South Sands Hotel are the paintings of the talented artist, Graham Fish. Graham has collaborated with South Sands management to exhibit a wide range of his paintings of the sea and South Devon to share with their customers and visitors.
To pay a visit to Graham Fish’s studio is akin to stepping off the world. Turn right at the crossroads just above Bantham village, bump down the farm lane following the signs and you will find yourself coming to rest in a collection of barns that marks Higher Aunemouth Farm.
Only a short drive from South Sands is Graham’s Bantham Art Studio. And it is well worth the drive.

a gentle sea breeze wafting over the south meadow, beyond which the blue waters glimmers.
Despite their number, not one is the same. Proof, if any were needed, that nature is the ultimate artist’s muse in her refusal to be simply represented, easily tamed by an artist’s brush and palette. The 365-series sold quickly and last year Graham put a twist on the 365 with a year of sunsets. This series was sold before it was even completed and was written up in the London press.
Somewhere out there the rest of the world lives and conducts business in its usual frenetic way. But here modern life suddenly seems remote. This is a timeless spot, made for peaceful introspection. The perfect place for an artist to create! Graham acknowledges that he is lucky, both in his choice of career and his working environment. Although he lives in Kingsbridge, he was drawn to Higher Aunemouth Farm precisely because of its otherworldly air. His pale wood-panelled studio is the centre of that ‘otherness’. “I open the door each day and step into another universe”, he admits, “one with its own, quite particular, sense of time, space and quietude. Inspiration comes easily here. It really couldn’t be more perfect for me”. Indeed, as if verifying this, Graham’s studio proves to be surprisingly larger than you’ expect from outside at ground level. A vaulted ceiling and series of skylights enhance light and space, the peaceful location and an airy serenity.
His artwork is everywhere – on the walls, the floor, tables, mounted on easels and leaning against shelving. Some are enormous, some tiny. Some are finished and some are works in progress. All are impressive, with a deceptive surface simplicity masking deeper tensions reflected in colours and textures that merits intense perusal. All comprise one of two contrasting genres – seascapes and figure-work – both of which Graham has made his unique speciality. Graham is passionate about the sea and tries to spend as much time as he can in and around water making notes and drawings. A keen surfer, he knows and respects its capricious moods and seeks to capture this in his artwork. “The sea has got inside me and touched my emotions. I think I’m obsessed by it and that is working itself out in my paintings”, he admits. “Working where I do, the sea dominates my working day – its rhythm, colour, depth and mood. Sometimes it is wild and grey, sometimes still and glitters so much it hurts your eyes to look”. Two years ago, to celebrate his 60th birthday, he committed himself to painting the same view – the seascape below his Bantham studio – every day, for the entire year in a 365-series of 6 x 8 inch miniatures that perfectly captured the myriad moods and colours effected by the ever-changing times of the day, weather and seasons.

Likewise with portraiture, Graham seeks to reflect the multi-faceted nature of the human spirit within his painting. “It is very satisfying painting portraits”, he says, “because nobody worth knowing is just one person and my portraits contain all those variations under the surface. They are thick with the complexities that lie under the skin.” Light, colour, form and composition, in other words, the traditional elements of painting occupy Graham’s mind and work. Yet he is constantly exploring different ways to answer the question, “what happens if I do this?” For Graham, painting is a Journey of Discovery and he is very conscious of having come far, but still having a long way to travel. While you are at South Sands, please do take time to look at Graham’s art. Many are available to purchase. Graham may also consider commissions for portraits or special requirements that you may have. Even better, take a bit of time to go to Graham’s studio and to meet the man behind the paint brush! Award-winning fishmonger, writer and chef, Mitch Tonks, was an accountant with little knowledge of the fish trade before he opened a fishmongers in Bath in 1995 and has since gone from strength to strength, now also having The Seahorse and RockFish Restaurants in Dartmouth and RockFish Grill in Bristol. As Consultant Chef to South Sands, Mitch has helped infuse the menu at the Beachside Restaurant with a true flavour of the sea, resulting in a mouthwatering array of fresh fish and seafood dishes.

However, this has brought unexpected good news for those looking to rent, as many owners are now choosing to put tenants in if the market’s not strong enough to sell. “There’s an ongoing trend for people moving into rented accommodation while they wait for a suitable property to come up, especially families with school-age children, keen to get into the catchment area of Kingsbridge Community College.” Despite this, there remains a general shortage of good-size family houses for rent, “Even with a budget of £2k a month, it’s still really hard to find something.” However, compared to London, prices are “relatively reasonable” she says, “It’s weeks versus months: for one week’s rent in London, you can get one month here.” The current economic climate has also benefited those seeking holiday lets, as more and more top-end properties are being offered, many of them for the very first time. “Some owners can’t justify their houses being empty for nine, maybe 10, months of the year. They want the property to ‘wash its face’ but don’t want to commit to a six-month let.” Another interesting trend is towards people taking six-month residential lets as holiday lets, “They’ve cottoned onto the fact that, in July and August, they can pay the same price for one month in a rental property that they would for one week in a holiday let.” South Sands Boutique Hotel & Beachside Restaurant | 103

A few words...
on Salcombe Estuary Rowing Club. They were also used as the ‘white van’ of the sea back then, carrying everything imaginable including, no doubt, the odd barrel of brandy that had fallen off a passing ship at dead of night! They were also used as lifeboats before the RNLI took off. There had always been a few kept in Cornwall and the Isles of Scilly, and these were raced for recreation on a regular basis. The sport started to grow until a group of Cornishmen got together in the ‘80s to standardise the design and to found the Cornish Pilot Gig Association, which is our governing body. SERC was founded back in the early ‘90s by a group of local people as a way of keeping the art of rowing alive in the town. Not so very long ago, if you had a small boat, you had to row it or sail it, but it was becoming the norm for every small boat to have an outboard engine. The Club started off with the purchase of four small GRP rowing dinghies which are still used extensively by Club members and also for teaching rowing to children, which takes place on a Wednesday evening each week in the summer. Any Club member may help themselves to these boats to use whenever they like. The next stage in the Club’s evolution came in 1997, when a local benefactor, Neil Jephcott, had a Cornish Pilot Gig built, and put it on loan to the Club. This boat was Wolf, which the Club now owns and which is still in very regular use. At that time, the Cornish Pilot Gig was undergoing something of a renaissance, which continues to this day at an amazing rate. They were originally working boats, which as their name suggests were mainly used to ferry seagoing pilots onto incoming ships far out in the Western Approaches and since this trade was very competitive the boats needed to be very fast and very seaworthy.
In the early ‘90s, they held the first World Championships – as it was jokingly called – which consisted of 17 boats! The event is still held in Scilly every May but now comprises 130 boats and counting! There are now Gig clubs up and down the West Country in pretty much every port, and it’s still growing as a sport at a very high rate. SERC bought its second Gig, Cadmus, in 2004 and added Bolt in 2007, and all three are regularly in use by Club members, from teenagers to septuagenarians as well as committed racing crews of both ladies and men.
We cater as a club for rowing of all ages and all abilities and aspirations. We have regular sessions for beginners to try their hand, and social rowing for those who want to row to a pub or take a bottle of wine and some nibbles out to watch the sun go down. We also attend events as far afield as London, Ramsey Island in Wales, Cork and Muiden in Holland as well as numerous club regattas up and down Devon and Cornwall. We are at present investigating the purchase of a GRP Gig, to use for training and to take the pressure off the wooden Gigs, which will hopefully save us time and money on maintenance, and we are also intending to replace one of the wooden boats with a new one in the next year. Steven Hall speaks with Karen Woodley and her TV celebrity daughter, Cheska, about Amelia’s Attic and their love of Salcombe From the moment Amelia’s Attic opened its doors in 2006, it was an instant hit, “It just took off”, Karen tells me, with a tinge of surprise in her voice. But it comes as no surprise to me, as my own wife and kids are ‘repeat offenders’, coveting just about everything in her shop.

I catch up with Karen’s now-famous daughter, Cheska – star of ‘Made in Chelsea’, PR girl, blogger, social butterfly – fresh from the ‘Dark Knight Rises’ red carpet and her appearance on ‘Big Brother’s Bit On The Side’. What does she think’s so special about the shop? “It’s a family business. There’s a lot of passion and love behind it. And prices are really good, especially compared to London.” “Some customers have been coming for years and years. They always pop into the shop. It’s more than just a shopping trip; it’s a fun time out!” Products adorn tables, mirrors and the walls. “Clothes are hung on antique rails, on pearl hangers – every day, someone must tell us how much they love our hangers!” Clothes are the biggest sellers, especially party dresses, “Our number one seller is the ‘Portia’ dress: I could sell that all day, every day – it’s two dresses in one, as you can tie it different ways.” And what about her customers? “It’s a mix of locals and visitors, but second-homers are especially important to us – we know them, they know us. And what about Salcombe? “It’s one of the most beautiful spots in the country and is a very happy place to be.” Driving home that evening, I recall Cheska’s description of Amelia’s Attic as “a haven of beautiful things that every girl would want”. When. The idea for Salcombe Dairy was born amidst the sun, sea and sand of a beach in Devon. Peter Howard, a most enterprising man, retired from the Merchant Navy and proudly announced to his wife that he would start an ice cream company. Salcombe Dairy was established in 1981, based in a small stone-built shed at the bottom of Coronation Road in Salcombe, and we still use today the very same base ice cream recipe which 148 | South Sands Boutique Hotel & Beachside Restaurant
