I
t wasn’t until after college that I fully began to understand the intrinsic connection between health and beauty. Once I did, everything changed for the better. I now know that what we put into our bodies directly affects our appearance, how we age, and how we feel. Similarly, what we put on our bodies plays an equally important role as these products get absorbed through our skin. From the food we eat to the products we groom with day in and day out, ingredients matter. In the Spring issue of KIWI, we explore this connection from multiple avenues. “Beauty Food Creations” features three nutrientpacked recipes brimming with goodies to help you glow from the inside out (pg 16). On the other end of the spectrum, our story “Take the Toxins Out of Your Beauty Routine” sheds light on the top harmful chemicals that often show up in common personal care products (pg 23). After reading this article, I encourage you to head to your bathroom and count how many of these ingredients are in the brands you use. The good news is that there are many clean products on the market to replace these bad buys. Our resident makeup expert, Victoria Zeitz, rounds up a few of her top picks for you to try in “Greenup Your Glam” (pg 15). I hope these stories help you transition to a more holistic approach on your quest for beauty. With spring upon us, it’s time to get your garden in gear in a way that not only cultivates a bounty of plants and produce but also benefits the planet. “Create a Regenerative Garden at Home” teaches you simple farming techniques to draw down carbon, thus allowing you to join the fight against climate change from your own backyard (pg 13). With this story as my guide, I’ll be personally putting my green thumb to the test as I attempt to grow tomatoes and herbs at my new home. Our KIWI family, who gained a new member with the birth of my son Declan, wishes you a beautiful spring season celebrating a renewed commitment to your health and the environment.

In February of 2019, Rep. Alexandria OcasioCortez, D-N.Y., and Sen. Ed Markey, D-Mass. introduced a Green New Deal, an expansive policy plan to address climate change and the actions needed to curtail it. The goals of the resolution include achieving net-zero greenhouse
strikes to the national stage. Greta Thunberg, the original inspiration, first skipped school to protest Swedish Parliament in August 2018, demanding they pass laws to curb carbon emissions set out by The Paris Agreement. To critics of her school day strikes, Thunberg explains, “Some people say that we should be in school instead, but why should we be studying for a future that soon will be no more? And when noone is doing anything whatsoever to save that future? And what is the point of learning facts within the school system when the most important facts given by the finest science of that same school system clearly means nothing to our politicians and our society?� Thunberg was recently nominated for the Nobel Peace Prize for her efforts to fight climate change. Others like Jamie Margolin, founder and executive director of The Zero Hour in the United States, and Anuna De Wever and Kyra Gantois, leaders of the mass student walkouts in Belgium, have also spurred tens of thousands to picket #S c h oo lStr their governing bodies for the sake ike 4Cli ma te of swift climate action. On March 15, 2019 kids from 123 countries around the world skipped school to join forces in the fight for environmental protections.

5 Steps to a Planet-Friendly Backyard

Become a compost master. Collect food scraps like fruits, veggies, and coffee grounds and garden waste like twigs, leaves, and grass clippings, along with used paper products and create a compost bin in your yard. This organic matter will eventually decompose and return the nutrients to the earth in the form of microorganisms and minerals. Dark and moist compost can be added to your garden soil to replace the use of artificial fertilizers, providing an abundance of nourishment for your plants.

Ditch the pesticides. Pesticides strip the soil of their nutrients and can seep into your food and water sources, and in turn, introduce harmful chemicals to your body. Pesticide exposure has been linked to many health issues including cancer, endocrine disorders, and respiratory issues. There are many natural alternatives that can keep pests out of your garden. Depending on what you plant, you can research natural repellents that work just as well and are healthier for your family and the planet. For example, ants and mice don’t like mint and marigolds repel squash bugs and tomato worms.

Utilize cover crops. Planting cover crops in your garden will add to the variety of organic matter present, thus increasing soil health. It will also protect the soil from the heat and subsequent water evaporation. This method will stave off erosion from heavy rains, support the organisms and insects living in it, and hinder weed growth. In addition, you can protect your soil’s surface by using mulch, wood chips, and lawn clippings.

Plant Perennials. Returning year after year, these plants grow deep roots in the soil that can help trap carbon, combat water runoff, and erosion. Employing them as cover crops will help to increase the organic content of the soil and keep the soil protected after the main crop is harvested.

Practice no-dig gardening. Everytime you dig or till soil, it disrupts the life processes happening within the ground. Instead of digging, layer on your mulch/compost so that the nutrients can do their part to commingle with the dirt below it, allowing the natural processes to continue uninterrupted.

Tom kha gai is a traditional coconut and chicken soup in Thai cuisine. This vegetarian version is almost raw and stuffed with beauty-boosting vitamins and antioxidants. The most beautiful noodles are carrot noodles made with a spiralizer, but a potato peeler will also do the job. If you want, you can quickly heat the soup in a saucepan, but it should not come to a boil.
MAKES 2 SERVINGS CARROT NOODLES
2 carrots SESAME & TAMARI-MARINATED MUSHROOMS
10 mushrooms, either white button or shitake 1 Tablespoon sesame oil 1 Tablespoon tamari soy sauce
1. Peel the carrots, then, using a spiralizer, turn them into noodles or shave into thin ribbons with a potato peeler. Set aside. 2. Cut the mushrooms into decently large pieces. Pour the sesame oil and tamari into a bowl. Massage the mushrooms in the liquid and let marinate for about 15 minutes. 3. Coarsely chop the tomatoes and lemongrass, then blend with the coconut milk, chili paste, and lime juice until smooth. Season with the fish sauce and salt, if using. 4. Divide the carrots and mushrooms between 2 bowls. Pour in the soup and top with cilantro and coconut pieces.

It also boosts the skin’s defense against sun damage, which means not only protection against cell damage but also a smoother, deeper, and more durable tan. However, sun protection with factor 30 is still a nonnegotiable must. Carrots also contain vitamin C and biotin, which is important for the hair.

This is the world’s most skin-friendly pasta dish, topped with pumpkin “parmesan” that will make your hair stand on end. Nutritional yeast flakes have the most unsexy name in the food pantry, but they have a unique umami cheese flavor and the B-vitamin content is fantastic for hair and nails. Vegans often lack B12, so nutritional yeast should be a constant companion. Mix the flakes with zinc-rich pumpkin seeds for a raw “parmesan” that is totally addictive. Store what’s left over in a tightly sealed glass jar in a cool, dark place.
MAKES 2 SERVINGS PASTA
1 large zucchini MARINARA SAUCE
1 small white onion 2 garlic cloves 1 Tablespoon olive oil 1 (14½ oz) can diced tomatoes 1 Tablespoon organic vegan bouillon powder (not cubes) 2 teaspoons honey 2 teaspoons dried thyme 10 cherry tomatoes GARLIC-FRIED MUSHROOMS
8 oz mushrooms (cremini mushrooms work well) ½ Tablespoon olive oil 2–3 garlic cloves
1. Combine the pumpkin “parmesan” ingredients in a food processor until they are evenly distributed. Scrape the mixture from the edges as necessary, but don’t process it too long. You want a crumb-like texture, not butter. 2. For the garlic-fried mushrooms, slice the mushrooms into quarters. Heat the olive oil in a skillet. Add the mushrooms and crushed garlic. Sauté until golden, then season with salt and pepper. Set aside. 3. For the sauce, finely chop the onion and garlic. Heat the olive oil in a deep saucepan. Sauté the onion over medium heat until translucent, about 5 minutes. Add the garlic and cook, stirring, for a few minutes. Pour in the diced tomatoes and bouillon powder and cook until the sauce begins to bubble. Reduce the heat, cover, and let simmer for at least 20 minutes—the longer the better. 4. Meanwhile, using a spiralizer, turn the zucchini into spaghetti or shave into long, thin ribbons with a potato peeler. 5. Season the tomato sauce with the honey, thyme, and salt and pepper. Halve the cherry tomatoes and stir into the sauce. Add the zucchini “spaghetti” and stir everything until well combined. Finally, add the mushrooms. Serve sprinkled with the pumpkin “parmesan.”

I’ll be honest. This pizza is really best for a day when you have the time and energy to spend a little longer in the kitchen, and for me, that day is rarely Friday. Dealing with cauliflower rice is... well, crumbly. But sometimes it happens. We turn up the party music in our little kitchen and fill our glasses with rich red wine. And when you sit with a crisp, 100 percent beauty-proofed pizza in your palm, it’s worth the work. In many cauliflower recipes, grated cheese is used in the dough, but I go with nutritional yeast flakes to get that cheesy flavor and a hearty dose of the hair-loving B vitamins.
MAKES 2 SERVINGS 1 large zucchini MARINARA SAUCE
1 small white onion 2 garlic cloves 1 Tablespoon olive oil 1 (14½ oz) can diced tomatoes 1 Tablespoon organic vegan bouillon powder (not cubes) 2 teaspoons honey 2 teaspoons dried thyme 10 cherry tomatoes GARLIC-FRIED MUSHROOMS
8 oz mushrooms (cremini mushrooms work well) ½ Tablespoon olive oil 2–3 garlic cloves salt and pepper PUMPKIN “PAREMSAN”
cilantro leaves fresh coconut pieces Per serving: 467 calories, 36 g protein, 55 g carbs, 22 g fiber, 8 g sugar
1. Preheat the oven to 400°F. Cut the cauliflower florets into small pieces and process in a food processor to a rice-like consistency. Steam the cauliflower rice for 7 minutes—this will help you to squeeze out more liquid. Let the cauliflower cool, then transfer it onto dry paper towels (or into a nut milk bag, if you have one) and squeeze out all the liquid. It takes about 2 minutes before it is dry enough. Don’t cheat and skip this step! 2. Beat the egg. Mix the almond flour, buckwheat flour, nutritional yeast flakes, oregano, thyme, rosemary, and salt into a mound. Add the cauliflower and beaten egg. Mix together, then knead to a dough. Divide into 5 equal balls, then press them into round pizza crusts, the thinner the better (some olive oil on the hands can make this process easier). Place on a baking sheet lined with parchment paper. Bake in the middle of the oven for about 20 minutes. 3. Mash the avocado, crushed garlic, and lemon juice to a completely smooth, fluffy cream. Stir in the chili flakes and season with salt. Put in the refrigerator. 4. Slice the mushrooms thinly. Using a potato peeler, slice the zucchini into ribbons. Take the TOXINS Out of Your Beauty Routine BY MAUREEN FROST
When it comes to health, it’s crucial to not only care about what you put in your body, but also what you put on your body. According to the Environmental Working Group (EWG), women use an average of 12 personal care products daily while men use an average of six. These beauty and personal care products do not follow the same stringent regulations that food does. There are no industry-wide safety standards and the Food and Drug Administration does not conduct any testing before these products hit the shelves. This leaves the consumer plenty vulnerable for coming into contact with toxic ingredients that are then absorbed, inhaled, or ingested into the body. With longtime use, which is common in beauty and personal care, this toxic exposure can do real damage. Studies have shown some beauty product ingredients cause cancer, damage the reproductive system, and act as hormone and endocrine disruptors. While there are many toxins lurking in shampoos, lotions, and cleansers, below you’ll find some of the top ingredients to look for and avoid when making an informed purchase. Phthalates According to the CDC, phthalates are plastics used as dissolving agents in products ranging from vinyl flooring to soaps and shampoos. The EWG says this family of chemicals has been shown to damage the male reproductive system. Sometimes phthalates hide under the misnomer of “fragrance”. Parabens This chemical is commonly used as a preservative. The Campaign for Safe Cosmetics lists it as an endocrine disruptor with links to skin cancer and reproductive damage. Coal Tar Used in hair dyes, shampoos, conditioners, and more, this toxic chemical is a known human carcinogen. The EWG says hairdressers in the U.S. are exposed to this chemical regularly in hair dye. It is banned as an ingredient in hair dye in Europe. Ethanolamine Compounds (MEA, DEA, TEA And Others) This family of chemicals is used in shampoos, soaps, mascaras, foundations, and more. According to the Campaign for Safe Cosmetics, they have been linked
to liver tumors. The European Commission has classified them as known carcinogens and prohibited their use in beauty and personal care products. Formaldehyde & Formaldehyde Releasers According to the EWG, formaldehyde is a known human carcinogen. Although use in personal care products has decreased, it is still found in some hair straighteners. Formaldehyde releasers, used to kill bacteria, can irritate the skin and cause allergic reactions. They are still readily found in cosmetics and personal care products like shampoos, body washes, and soaps. Artificial Fragrance Fragrance as an ingredient can be misleading as it is often used as an umbrella term for different ingredients. While not always the case, brands can lump possible toxic ingredients under the “fragrance” label without coming out and naming them. According to the EWG, there are 3,100 stock chemicals, some of which have been linked to hormone disruption and sperm damage, that can be classified under the term “fragrance”.

BROCCOLI WHY WE LOVE IT: Packed with potent antioxidants, broccoli is a fantastic vegetable that’s low in calories and rich in essential vitamins, minerals, and fiber. Not only can it help reduce inflammation, but it also promotes bone, heart, and colon health.
HOW TO CHOOSE IT: Broccoli heads with tight, green florets and firm stalks will always be an ideal option. The greener it is, the more beta-carotene—an important antioxidant—it has. Avoid ones that appear yellow or dry with browning stems, as they are overripe.
HOW TO STORE IT: Keep unwashed broccoli refrigerated in an open plastic bag and use within three to five days. You can also wrap broccoli in a damp paper towel or freeze it for up to 12 months..
