I

love this time of year because of the feeling of nostalgia it produces. Rediscovering all of my favorite ornaments, baking the same sugar cookies I’ve made for decades, hitting the always crowded light show at the Wanamaker building in Philadelphia—that’s Christmas to me. The best part about these holiday rituals is that they are all done with the family and friends that light up my life. So while you hurry from party to party, stay up late wrapping every last gift, or get bogged down by the price of it all, remember that it’s the people that make the memories. Pumpkin White Bean Hummus Active Time: 10 minutes

1 clove garlic 2 15-ounce cans of white beans, s uch as cannellini, drained and rinsed ¼ cup plain Greek yogurt 1 cup pumpkin puree 3 Tablespoons olive oil, plus more for drizzling

1 Tablespoon lemon juice ½ teaspoon cumin ½ teaspoon coriander ¼ teaspoon sea salt ¼ teaspoon black pepper Toasted pumpkin seeds (optional) Smoked paprika (optional)

1. Place garlic in a food processor and pulse until broken into small pieces. Add remaining ingredients and continue to pulse until well combined. 2. Place hummus in a serving dish and drizzle with olive oil. Finish with a sprinkle of pumpkin seeds and smoked paprika. cups butternut squash, peeled and cubed cups whole milk, divided Tablespoons butter Tablespoons unbleached, all-purpose flour

4 ounces Fontina cheese, shredded 1 15-ounce container whole milk ricotta 1 large egg white 2 teaspoons fresh sage, minced ½ teaspoon black pepper

1. Bring a pot of water to a boil. Add squash and cook until tender, 12-15 minutes. Drain and puree in a food processor with ½ cup of milk. 2. Preheat oven to 375˚. In a pot, heat butter over medium-low heat. Stir in flour and cook one minute more. Whisk in 1 cup milk and cook, whisking occasionally, until mixture starts to thicken. Add the butternut squash puree and continue to cook until mixture has thickened. Remove from heat and stir in Fontina cheese, to complete the béchamel sauce. 3. Prepare remaining filling and noodles. Whip together ricotta, egg white, sage, and black pepper in a bowl. In a separate bowl, combine spinach and scallions. Cook noodles according to package directions (or use no-boil noodles). 4. To assemble lasagna layers, pour ¼ of the béchamel sauce into the bottom of a 9-by-9-inch pan. Layer three noodles, then ½ of the ricotta, ½ of the spinach mixture, and another ¼ of sauce. Repeat once more and finish with the remaining three noodles and ¼ of béchamel sauce. Top with mozzarella cheese. 5. Place in oven and bake until cheese is bubbling and golden, 35-45 minutes. Makes 9 servings Per serving: calories 328, fat 16 g, protein 18 g, carbohydrates 27 g, fiber 4 g, sugar 5 g

½ cup whole milk ½ pound Brussels sprouts, quartered ½ cup pecan pieces 1 Tablespoon fresh rosemary, minced 1 Tablespoon fresh chives, minced 1½ cups vegetable broth

1. To make cornbread, preheat oven to 350˚ and lightly grease an 8-by-8-inch pan. 2. Combine flour, cornmeal, baking powder, and sea salt in a bowl. Stir to combine. In a separate bowl, whisk together eggs, maple syrup, melted butter, and milk. Pour into dry ingredients and stir until batter is combined. Pour into prepared pan and bake until golden and springs back when pressed, 25-30 minutes. Let cool completely, cut into ½-inch cubes, and place in an airtight container for 2-3 days before using. (Cornbread should be slightly stale before using in the recipe.) 3. On Thanksgiving, preheat oven to 350˚. Bring a pot of water to a boil, add Brussels sprouts, and blanch for 6 minutes. Drain and combine with cornbread cubes along with pecans, rosemary, and chives in a large bowl. Pour vegetable broth over and continue to stir/toss until well combined. 4. Transfer stuffing to a 9-by-9-inch pan and bake for 35-45 minutes until golden brown. Makes 8 servings Per serving: calories 217, fat 12 g, protein 5 g, carbohydrates 14 g, fiber 2 g, sugar 5 g

1. Preheat oven to 400˚. Cut vegetables into ¼-inch cubes and toss with 1 Tablespoon of the olive oil, salt, and pepper. Spread into a single layer in a large roasting pan. Roast until vegetables are tender and starting to brown, 30-35 minutes. Remove from oven and stir in toasted walnuts. 2. In a small bowl, whisk together olive oil, vinegar, and maple syrup until combined. Pour over warm vegetables and stir to coat. Serve hot. Vanilla Cupcakes with Cranberry Filling and Whipped Cream Active time: 25 minutes

1½ cups unbleached, all-purpose flour ½ teaspoon baking soda ½ teaspoon baking powder ¼ teaspoon sea salt 1 cup plus 2 Tablespoons maple syrup, divided ½ cup 2 percent or whole milk ½ cup butter, melted and cooled slightly

1. Preheat oven to 375˚ and line a muffin tin with 12 paper liners. 2. In a bowl, whisk flour, baking soda, baking powder, and salt to combine. In a separate bowl, whisk together ½ cup maple syrup, milk, butter, eggs, and vanilla extract. Pour into dry ingredients and stir until just combined. Divide batter in the muffin tin. Bake for 18-20 minutes until cupcakes spring back when pressed and have domed. Remove from oven, let cool for 5 minutes, then transfer to a rack to finish cooling. 3. In a saucepan, combine cranberries with ½ cup maple syrup and cinnamon. Bring to a boil, reduce to a simmer, and let cook until cranberries are soft and starting to break down, 4-5 minutes. In a small bowl, combine cornstarch with 1-2 Tablespoons water, stirring to dissolve starch. Pour into cranberry mixture and continue to cook until mixture thickens. Remove from heat and let cool. 4. To assemble, take a small knife and cut out a small chunk in the center of each cupcake. Spoon 1-2 Tablespoons of cranberry filling into the center. Finish filling cupcakes and set aside. 5. Once muffins are cool, beat heavy cream until it forms stiff peaks. Whisk in 2 Tablespoons maple syrup. Spread or pipe the whipped cream onto the cupcakes and sprinkle with a bit of cinnamon and extra cranberries to serve. Makes 12 cupcakes Per serving: calories 442, fat 25 g, protein 5 g, carbohydrates 52 g, fiber 1 g, sugar 28 g

Apple Ginger Snaps These are sneaky because they’re good for you, won’t make your kids have a sugar crash, and taste like a cookie should. 1 cup palm sugar, plus ¹/³ cup for rolling ¹/³ cup unrefined coconut oil ¹/³ cup molasses ¹/³ cup applesauce 2 Tablespoons grated fresh ginger 1¾ cups whole wheat flour ¾ cup flax meal 1 teaspoon baking soda 2 teaspoons ground cinnamon 1 teaspoon ground clove ½ teaspoon ground nutmeg ¼ teaspoon salt ²/3 cup rolled oats (optional)

1. Preheat oven to 350ºF. Line two cookie sheets with parchment paper. 2. In a food processor, combine the palm sugar, coconut oil, molasses, and applesauce. Process for three minutes until completely liquefied. 3. In a medium bowl, stir together all the dry ingredients except the oats. Using the pulse function on your processor, add the dry mix in three batches. Take care not to overprocess. Once everything is almost mixed in but not yet fully incorporated, return the batter to the bowl and finish mixing with a spatula. 4. Pinch off tablespoon-size pieces of the dough. Roll each cookie first in the oats and next in the palm sugar. Gently flatten each cookie on the parchment, leaving ½ inch between each. 5. Bake for 15 minutes. Remove from oven and cool on a rack.

Pecan Clouds Howard’s take on a really simple cookie her grandmother used to make is a lightly sweetened, crunchy meringue mounted with chopped pecans. 2 ¾ ¼ ½ 1 2

1. Preheat oven to 250ºF. Line a cookie sheet with parchment paper. 2. In a mixer fitted with the whisk attachment, whisk the egg whites to medium peaks. Slowly add the sugar, salt, and nutmeg and continue to beat the whites to stiff peaks. Gently fold in the vanilla and the pecans. 3. Use a spoon to dollop tablespoon-size clouds onto the cookie sheet. Bake for 30 minutes. 4. Turn the heat off and let the cookies sit in the oven an additional 10 minutes. Peppermint Bark This treat just screams holiday! Plus, the no-bake recipe is easy to make with kids. 1½ cups peppermint candies 1½ cups semisweet chocolate chips 2 cups white chocolate chips

1. Line a cookie sheet with parchment paper and spray generously with nonstick spray. 2. Unwrap the peppermint candies and put them in a plastic, sealable bag. Let your kids stomp on the bag a few times to break up the candies. Alternately, you could use the food processor to do this. You’re looking for broken pieces of peppermint but not peppermint powder. 3. Melt the chocolate in a double boiler and spread it evenly onto the cookie sheet. Let it sit and start to harden as you melt the white chocolate in the same fashion. 4. Pour the white chocolate over the semisweet layer and allow your kids to swirl it in slightly with a skewer or fork. You’re hoping for pretty swirls and designs. 5. While the chocolate is still warm and soft, sprinkle the peppermint candies all over the top. Slide the cookie sheet into the fridge to harden. 6. When the bark is firm, have your kids help you break it into random pieces. Makes about 40 pieces Per piece: 114 calories, 5g fat, 1g protein, 17g carbohydrates, 0g fiber, 16g sugar

SWEET POTATOES Why we love them: Full of vitamins A and C to support vision, immune, and bone health, sweet potatoes offer an excellent source of beta-carotene, an antioxidant that protects the body from free radicals. With the peak sweet potato season falling between late October and December, this delicious veggie can be whipped, mashed, fried, or baked into almost any holiday fare.

How to choose them: Pick a small or medium sized sweet potato with firm, smooth, and even-toned skin. How to store them: Sweet potatoes should be stored in a cool, dry place to avoid hardening the center. Try keeping them in the basement, away from heated areas of the house.

Delicious ways to use them: Whether sliced into crispy fries, roasted in a seasonal medley, or spiced up

with sweet or savory seasonings, there are so many ways to enjoy this yummy root vegetable. You can even whip them into a pie for the holidays or add them to a savory chili to warm you up on cold winter nights.
