5 Elegant Recipes Using Recipe Mix - Vegetable 1. Hot & Cold Classic Knorr Spinach Dip Appetizers

Makes: 4 cups | Preparation Time: 10 min | Chill Time: 2 hr INGREDIENTS  1 cup Hellmann's® or Best Foods® Real Mayonnaise  1 package Knorr® Vegetable recipe mix  1 container (16 oz.) sour cream  1 box (10 oz.) frozen chopped spinach, cooked, cooled and squeezed dry  1 can (8 oz.) water chestnuts, drained and chopped (optional)  3 chopped green onions DIRECTIONS  Combine all ingredients and chill about 2 hours. Serve with your favorite dippers to your favorite people.  Hot Mini Phyllo Cups: Fill mini phyllo cups with 2 to 3 tsp. dip. Sprinkle each with shredded Parmesan cheese.  Cucumber Bruschetta: Thinly slice a seedless cucumber on the diagonal, then top each slice with dip and garnish with snipped chives or thinly sliced green onion.  Endive Dippers: Pipe or dollop dip onto leaves. Recipe Serves: 6 | Preparation Time: 10min | Cooking Time: 50 min INGREDIENTS  4 eggs  1 1/2 cups milk  1 cup shredded Swiss cheese  1 box (10 oz.) frozen chopped spinach, thawed and squeezed dry  1 package Knorr® Spring Vegetable recipe mix  9-inch frozen deep-dish pie crust DIRECTIONS  Preheat oven and baking sheet to 350°.  In large bowl, with wire whisk, beat eggs lightly. Blend in milk, cheese, spinach and Knorr® Spring Vegetable recipe mix. Pour into frozen pie crust.


 Bake on baking sheet 50 minutes or until knife inserted halfway between center and edge comes out clean.

3. Spring Vegetable Quiche

Recipe Serves: 6 | Preparation Time: 10 min | Cooking Time: 50 min INGREDIENTS  4 eggs  1 1/2 cups milk  1 cup shredded Swiss cheese  1 box (10 oz.) frozen chopped spinach, thawed and squeezed dry  1 package Knorr® Spring Vegetable recipe mix  1 (9-in.) frozen deep-dish pie crust DIRECTIONS  Preheat oven and baking sheet to 350°.

 Beat eggs in large bowl with wire whisk. Beat in milk, cheese, spinach and Knorr® Spring Vegetable recipe mix. Pour into pie crust.  Arrange pie on baking sheet and bake 50 minutes or until knife inserted halfway between center and edge comes out clean.

4. Curried Vegetable Couscous

Recipe Serves: 4 | Preparation Time: 5 min | Cooking Time: 10 min INGREDIENTS  3 cups water  1 package Knorr® Vegetable recipe mix  1/4 cup raisins [or golden raisins or currants ]  1/2 tsp. curry powder  2 Tbsp. olive oil  1 box (10 oz.) couscous  0 slivered almonds, (optional)


DIRECTIONS  Bring water and next 4 ingredients to a boil in a medium saucepan, stirring frequently. Reduce heat and simmer covered for 2 minutes. Stir in couscous then remove from heat and let stand covered for 5 minutes.  Fluff couscous with fork before serving. Garnish with slivered almonds and chopped fresh parsley. Your taste buds will thank you for this!

5. Vegetable Hummus

Makes: 3 1/2 cups | Preparation Time: 10min | Chill Time: 2 hr INGREDIENTS  2 cloves garlic  2 cans (15 oz. ea.) chick peas or garbanzos [or garbanzos], rinsed and drained  1 package Knorr® Vegetable recipe mix Knorr® For the Love of the Flavor

 1/2 cup water  1/2 cup olive oil  2 Tbsp. lemon juice  1/4 tsp. ground cumin DIRECTIONS  Process garlic until finely chopped in food processor. Add remaining ingredients; process until smooth. Chill at least 2 hours.  Stir hummus before serving. If desired, add 1 to 2 tablespoons additional Olive Oil. Serve with your favorite dippers.
