“To Help End Hunger in America”

The XHunger Club, A Scarecrow Foundation Initiative, is the newest and most innovative way that allows high school and college students to attain service hours and help end hunger in America. In addition the XHunger City Clubs allows individuals and businesses the opportunity to help end hunger in America as well. The XHunger Club simply locates a food pantry, understands their mission and then volunteers & supports that pantry. XHunger Clubs are student led and is how service learning is achieved. Service hours are attained on an ongoing basis. America does not need more food pantries, it needs more volunteers and supporters to help people in need of hunger solutions.

HISTORY OF SCARECROW FOUNDATION Why should anyone in America be hungry? We began helping existing food pantries in Knoxville on August 27, 2010. We held national aspirations from Day 1, yet knew we needed to gain experience, trust, and credibility. Harry Wade and Jimmy Buckner made an unconventional decision not to raise money for our own needs, rather to operate on a zero budget and inspire an all-volunteer organization to help people in need of hunger solutions. Larry Perry helped us gain 501(c)3 status and CPA Dennis Overton agreed to navigate our compliance obligations with the IRS. Hence, 100% of the proceeds from all of our events and campaigns continues to go directly to the nonprofits we support. We remain to date an all-volunteer charity.

uring uncertain times it becomes easy to lose focus on the things in life that really matter. When we become so engrossed with our own little world, we can be overwhelmed to the importance of all that is around. It is troubling to me that in this day and age we have forgotten where this nation came from. It is not really that surprising to me when I actually stop and think about it. I know it was really only a matter of time. When you no longer teach what happened in the past as a whole, you do a disservice to those that are in the present. Learning the good and the bad of history gives us insight on how not to repeat it. Just as running a business has a learning curve, so does everything in life. If you destroy history, you destroy the memory of not only those that have triumphed but those that have suffered. If a piece of stone interferes with you bettering yourself, it’s not the stones fault. It becomes our fault for not being able to look past the stone. As long as we keep our attention and focus on the trivial, we can never be able to focus on the meaningful. For what you set your sights on is all that you can achieve. If your sights are set on destruction, all you will receive is loss but if you set your sights on building then what you will receive is achievement. What will your focus be for the remainder of the year?

Tips for Avoiding “Maskne”

How to cope with unwanted breakouts while wearing a face mask.

Adapting to the “new normal” has meant lots of changes for our skin. Whether you wear makeup or not, you might have encountered some new skin issues as of late – namely, breakouts! Enter “maskne”: the 2020 term for mask + acne. If you’re an essential worker, entering a public place, or are wearing a face mask for any reason, you’re likely wearing it for a good portion of the day. Subsequently, people are beginning to notice a correlation between wearing a mask and acne. We know how frustrating breakouts can be – especially if your skin just got back on track after a quarantinecaused purge. Take a look at how a few changes to your routine can help mitigate new pimples from wearing a face mask. The material of your mask might also play a role in your breakout – we’ll explain later! Why (and How) Masks Might Cause Breakouts You’ve found yourself with newly formed acne after wearing a face mask for a few days, but why? There are a wide range of possible causes, but the most likely culprits are poor hygiene and adjusting to the ever-evolving mask etiquette.

1. Face Touching We touch our faces more frequently now – whether putting our face mask on, taking it off, or adjusting it. Long story short, our hands come into contact with our face more often. Though we’re washing hands more, we’re still touching other surfaces and objects. Our hands transfer dirt, grease, and sweat onto our face throughout the day. This leads to clogged pores, blackheads, and breakouts. 2. Heat and Sweat There’s no ventilation under your face mask – that’s part of what makes them effective at mitigating the spread of germs. Then comes the heat, which leads to sweat, but… where does that sweat go? There’s nowhere else for it to stay but underneath your face mask. The sweat that stays trapped next to your skin mixes with dirt and oil, leading to clogged pores. Heat can also ramp up your oil production, triggering acne breakouts. Humidity – heat mixed with your breath – can breed acne-causing bacteria. 3. Bacteria Bacteria is one of the main causes of acne. It triggers an inflammatory response in your skin leading to the red, tender bumps you know

as pimples. Sweat can help transfer bacteria from your mask, your hands, and your saliva. This bacteria can stay trapped underneath your face mask; this is especially true if you use a cloth mask. Cloth can often trap bacteria more effectively than other types of materials (more on this below). 4. Hair Sometimes we put our masks on in a hurry, and hair can’t always clear the way before we put it on. Accidentally trapping hair behind your mask can lead to clogged pores, because our hair is full of natural oils. If you style your hair every morning, you can add oils and emollients to that pore-clogging mix. If we get these oils on our skin, they can be trapped inside pores. If you can, the easiest solution is to keep hair pulled behind your ears with clips, bobby pins, or headbands. Of course, styling your hair in a bun, ponytail, or other up-do can reduce this risk too. How Different Masks Can Affect the Skin The type of mask you wear can also affect how your skin reacts. There are 3 different factors to take into account: Shape Certain shapes provide less air flow and ventilation than others. Think of face masks with surgical or metal nose clips, and the N95 respirator ‘cup’ with straps at the back of your head. They’re made to fit more tightly, possibly irritating your skin and not allowing as much fresh air to circulate. This feature is also what makes certain masks more effective at

preventing the spread of germs than others. Bandanas, sleeves, and homemade cloth masks with ear bands likely fit more loosely. Just make sure they’re not ill-fitting, where they either provide no protection or chafe your skin. They’re also often made with softer materials, leading to less friction and damage to your skin barrier. Material Face masks made of natural materials, like cotton, tend to be gentler on your skin. Synthetic fabrics, like microfiber, nylon, and polyester, may prove to be a little rougher. Paper material, like that of surgical masks, can feel coarse on your skin. The irritation from a low-quality material can damage your skin barrier, leading to inflammation and moisture loss — and subsequently, acne. PRO TIP: The bottom line: choose the best mask based on fit and function – we’ll help you handle the acne part! Filter Vs. No Filter Filters are meant to protect you from virus particles that your regular face mask material may not keep out. However, a face mask with a filter often leaves skin without less ventilation. Adding a filter often means adding multiple more layers to a mask, meaning less breath-ability for your skin. As we mentioned, less ventilation often leads to trapped humidity, dirt, and sweat, which can all exacerbate or cause breakouts.

Keep in mind that we do not recommend one type of mask over another, nor do we think a potential breakout should stop you from wearing a mask. We want to empower you to ease the effects that your skin may or may not encounter from the necessity of wearing a mask, in order to protect yourself and others. We recommend following the direction of your local health officials to learn how and when to safely wear a mask.


9 Tips for Preventing “Maskne” 1. Wash your face when you get home at the end of the day. This can help remove any environmental debris from the air as well as any sweat build-up or pore blockages. Removing the grime and aftermath of a long day feels cool and refreshing, and will help keep your skin clear. Use a gentle face cleanser when you get home for the day, instead of waiting for bedtime. 2. Avoid washing your face frequently. The icky feeling of sweat and oil build-up might make you want to wash your face a ton throughout the day. Doing so, however, might strip your face of its natural oils and leave your skin dry and irritated. 3. Clean your face mask after each use. If you use a cloth mask, the CDC states that you can “include your face covering with your regular laundry.” Using warm to hot water is best for killing bacteria. Easy peasy! 4. Rotate your cloth face masks throughout the week. If you can, buy or make a couple of masks. Instead of washing one mask every day, you can clean them all at once 1-2 times a week. You’ll have a clean mask every day, and less laundry to do. 5. Opt out of heavier, oil-based products. The oil can mix with your natural sebum, sweat, and bacteria – a recipe for clogged pores. This goes for makeup especially. You want to give your skin a chance to breathe, especially if you’re using a tighter face mask. 6. Wear less makeup on the bottom part of your face. You may want to go without foundation altogether, and opt for just the eye makeup. Try a tinted moisturizer instead of a heavy duty foundation, or just spot correct with concealer.

7. Avoid touching your face with dirty hands. You may need to touch your face when adjusting your mask, putting it on, or taking it off. Try to ensure your hands are clean while you do so. Use hand sanitizer or wash your hands before reaching up. 8. Hydrate skin. Moisture loss is one of the biggest causes (and effects) of irritation. As we know, irritation can cause and worsen breakouts. Spritz rose water or aloe vera juice on thirsty skin throughout the day. Use hydrating serums before and after wearing a face mask. 9. Use a moisturizer before leaving your house. If you know you’re going to be wearing a mask for an extended amount of time, it’s important to moisturize beforehand; you might not be able to throughout the day. Use a nourishing ingredient, like shea butter or sea buckthorn oil, to seal in hydration and soften skin. Lightweight moisturizers are our personal favorites, to keep skin from feeling too hot and heavy inside your mask. Whatever shape, material, or filter you use, adapting to a face mask means changes to your skin care and makeup routine. To ease and avoid breakouts, these changes might make your morning more minimalistic as you cut products out of your routine. These changes might mean using lighter products that suit your skin better during this time. You may have to compensate with more hydration and less occlusive ingredients. Whatever the case, breakouts don’t make you less worthy – so treat yourself and your skin gently!

drive Winter Is coming So make way I don’t know about you, but during this whole “Rona” pandemic, I have had to pay more attention to clutter that had been silently taking over my house. I took advantage of this and pretty much cleared it out ~ to the garage! Now winter’s coming and where am I going to put my car? So now my focus is organizing my garage! You wouldn’t believe how it transformed my home into a less cramped, more spacious oasis without forcing me to buy an expensive fix such as a storage building or building an addition on to my house. Now, during the spring & summer, parking in the driveway was no big deal, and frankly I was in denial of how my garage had become an over crowded & cluttered mess, making simple tasks such as searching for tools feel like I was scouring a haystack in search of a needle. Organizing my garage created extra room in my home while allowing me to now park my car in the garage, protecting it from the Autumn heat and I’ll be able to keep it warmer in the winter too. If you want to turn your garage into something more than cluttered storage units, then you can employ the following strategies to transform these largely overlooked areas into more valuable spaces.

* Choose the right day. Garages tend to be separate from the rest of the homes they’re a part of, meaning the only way to organize a garage is to first remove all items from the garage and into the driveway. Because items removed from the garage will be exposed to the elements, you should choose a day that’s temperate and sunny to clean their garages. If possible, opt to organize your garages in early fall when there are additional hours of daylight. This protects you from having to work in the dark should the job take longer than they initially anticipated. * Discard or donate duplicate items. Duplicate items are some of the main culprits behind cluttered garages. As garages gradually become more cluttered, you may buy tools you already have simply because you cannot find the original. When organizing the garage, create separate piles for duplicate tools, placing still-useful items in a pile that can be donated to neighbors, local charities or organizations and another pile for old tools that are no longer useful. * Host a garage sale. Fall is the perfect time for that, temperatures are cooling down and people are done with vacations now that school is back in session. Those of you who want to organize you garages and make a buck at the same time can host garage sales. Make only those items that are still functional available for purchase, and let neighbors and bargain hunters do the bulk of your organization work for you. Don’t forget to spread the word about your garage sale too-

a great local resource is the Get Local classifieds paper. You can place garage sale ads for free in print and on-line through them, plus they put it on Facebook & Twitter. GetThriftyGetLocal.com. * Designate areas of the garage for certain items. Once the items that won’t be going back into the garage have been sold, donated or discarded, organize the garage by designating areas for certain items, making sure to separate items that can pose safety risks. For example, store kids’ bicycles and outdoor toys in a corner of the garage that is opposite the corner where potentially dangerous items such as power tools and gas cans will be stored. Keep the center of the garage open for vehicles. * Periodically park cars in the garage. You may be thinking- well isn’t that why I did this in the first place? Yes. But we are creatures of habit and we do have Holiday shopping season ahead of us and if you’re like me, I tend to “hide” things in the garage, so I will stop parking in the garage so my kids will be less likely to notice them. But if you can improve your chances of maintaining your now wonderfully organized garages over the long haul by periodically parking in the garage. Doing so not only prevents the gradual buildup of clutter that can slowly take over a garage, and of course protects your vehicle too.

PREPAREYOURLAWNFORWINTER Every weekend of the last few months you have spent mowing, weeding, edging, and trimming your lawn so that it will look its best. In order to ensure your lawn makes a complete recovery after winter hibernation, you may want to spend the fall taking steps to help your lawn survive the winter months ahead. Winterizing a lawn varies depending on where you live and how harsh a typical winter is. There are certain key tasks to complete before you can rest for the winter season. * Remove fallen leaves and debris. Leaf cleanup is among the tasks homeowners dread the most. Raking leaves can be arduous, but it is well worth the effort. Fallen leaves can smother the grass and lead to dead spots and decay next season. Wait until the majority of the leaves have fallen from the trees before you begin to rake; otherwise, you could find yourself repeating the process throughout the fall. Mulched leaves can be added in small amounts to garden beds to provide rich organic material for next year's crop of flowers. Be sure to pick up any twigs and other debris as well. Additional debris can become up trapped under snow and hinder grass growth when spring arrives. * Cut your lawn short. Unless the season is unseasonably wet and warm, your lawn shouldn't grow too much in October and November. Continue to cut your lawn until there is no visible growth for about two weeks. It pays to give it a short cut before frost arrives so that long piles of dead grass will not smother any new growth in the spring. Also, long grass tends to bend down upon itself, trapping moisture that can lead to fungal diseases like snow mold. * Aerate the lawn. Soil can be compacted over time, especially in yards that see heavy foot traffic. You can rent an aerator from a lawn supply store so that water and fertilizer can reach the soil.

* Fertilize. Now is the time to give the lawn fresh food to overwinter and also replenish the strength of the root system. All summer long the lawn has been depleting the soil of nutrition, but autumn presents a great opportunity to strengthen those roots. Consider a slow-release formula designed for winterizing that will feed the lawn all winter long. * Edge the garden beds. Take advantage of the cooler weather and slow-growing grass to re-edge around flower beds. Even though the grass above the surface of the soil will stop growing, the roots will remain viable and the lawn will still be sending out rhizomes and tillers to produce new grass blades in the spring. These can easily encroach on garden beds. Edge now so you will have less work to do in the spring. * Trim hedges and trees. If there are any overhanging tree branches or shrubbery blocking sunlight from reaching the lawn, cut back these areas once the foliage has thinned. Take advantage of your town's leaf and twig pickup services. * Seed bare patches. Scour the lawn for bare patches and put down some seed in these areas. The cooler weather will enable the seeds to germinate without having to compete with weed growth. Once you have prepared your lawn for the winter you can bring in any lawn tools that need repair and have them set and packed away for the spring.

Just a Humble Girl and Her Hounds

A Heart for Others Candy did not start out on the path to work with or train hounds. Her primary occupation is a nurse, which you could say does make since for her to be in search and rescue too. However, nursing was not her first choice. When I asked Candy why she become a nurse her reply was, “Becoming a nurse was a complete God thing.” Candy’s desire in high school was to go to the University of Miami and become a marine biologist, but in her junior year, her parents had started going through a divorce. Then when she graduated high school her parents went separate ways and as a result she could not qualify for financial aid to go. Up until this point everyone in her family had went to Carson Newman College in Jefferson City. So that is where her and her mom headed. After taking the ACT, Candy was excepted into the biology department. At the end of her freshman year of college she was meeting with her advisor, who was the head of the biology department and he told her they had a really good nursing program and that he thought it would be a good fit. However, Candy still had hopes of making it to Miami and fulfilling her dream to be a marine biologist and told him that she didn’t think that nursing was for her. Candy laughed while telling the story and said ‘this is no joke, the next semester when I went to enroll, I was already listed as a nursing major, I had nursing classes and was in the nursing curriculum and so that’s what I did.” She never intended to become a nurse but said nursing came so naturally. Candy said that nursing school was like reading the Encyclopedia Britannica everyday, but the clinical aspect came so easy, like she had done this her whole life. Twenty seven years later she still loves her profession. She said “sometimes it is super hard but that you also get to be there for others to help them during their hardest times”, and anyone who knows Candy can attest that she is the first one to help those in need. After nursing school, Candy starting working at Fort Sanders where

she still is today. She started out on the respiratory floor for about six months before transitioning to the observation unit then going into ICU. Working in the units for seven to eight years she became interested in surgery and began working in the O.R. for almost sixteen years. Her next move was to the Data collections and process improvement and is now the Stroke Vascular research nurse for Fort Sanders. She is in charge of all research studies and getting people enrolled in them while keeping up with vascular data. However she still has a lot of patient interaction and says it is the best of both world’s. My next question is an obvious one- wondering how in the world she became interested in working on search and rescue. Much like nursing, training hounds was another “God thing”. Candy

Candy has acquired over 20 years working and training SAR (Search and Rescue) dogs. Her current K-9 working companions are Barnabas, a 8.5 year old Bloodhound, and Pearl, a 1.5 year old Porcelaine Hound. Both are trailing and cadaver certified through NNDDA and Archaeological Cadaver K-9. In addition to Candy’s service with SAR she is a full time nurse at Fort Sanders Regional Medical Center for 27 years and a bonded Deputy with Campbell County Sheriff Department. always loved the look of Bloodhounds and after receiving her first bloodhound, Cletus, as a gift 20 years ago she starting looking into the breed and their capabilities and thought search and rescue was interesting. Candy wanted to give it a try and went to a Search and Rescue Seminar right outside of Nashville. It wasn’t expensive or far away, so her and Cletus went to check it out and turns out Cletus loved it. They started going to more seminars up and down the east coast since there was nothing here locally at the time. They would go to five or six seminars per year trying to learn as much as they could. As there was still nothing here locally, Candy’s experience and advanced training had come to people’s attention and they starting asking for her help. Well that fell right in line with her journey to find her ministry, her calling. Candy was always wanting to give back and this brought three of her favorite things together, helping people, dogs and being outdoors. Now she is starting to help people train their own search and rescue dogs. Cletus stared out as trail search and rescue, then when he was two, going on three, Candy took him to a Cadaver Search Seminar to see how he would react. She knew that since he loved to work that he would need something for when he got older. Trail (search and rescue), can be demanding and cadaver is more of a grid search. Well just like with trail, Cletus excelled at cadaver search and was certified right away. He loved working

She wanted it to be a biblical name since so much prayer went into finding this dog. One of her favorites in the Bible is Barnabas ( the encourager). That name certainly fits this now eight year old hound. Barnabas took to trailing only two days after he flew home and was cross trained to cadaver when he was just a year old. Surprisingly, Candy didn’t stop there. The next addition came about two years ago with the beautiful and high spirited Porcelaine hound (a French Hunting Hound), named Pearl. It was Steve’s turn to pick the next dog and he definitely wanted another search and rescue dog. Pearl is outgoing with a bit of sass, but like Barnabas is eager to please and has made a perfect addition to their team. Both dogs are trailing and cadaver certified through NNDDA and Archaeological Cadaver K-9. Candy and her hounds have been members of KPD SAR Team since it started in 2005. KPD SAR is a well structured and managed team, that trains extensively every month in search and rescue techniques and tactics. Candy is most certainly one of the most compassionate people I have ever known. In addition to nursing and fulfilling a great need in our community for search and rescue hounds and handlers, Candy battles several autoimmune diseases.

so much he worked up until the week before he died actually finding a body under water. After Cletus’ death Candy was devastated and had decided she wasn’t going to continue or even have another dog. However, everyone around her told her how much they needed her and how her training others was so vital to the area. Candy starting praying. She said, “I tell people it may sound horrible but I prayed more for my next Bloodhound then I did my husband”, but of course she points out she still prayed for her husband, with a smile. Candy knew that she didn’t want to continue something if God wanted that chapter of her life to be over. So one day while Google searching hounds, she came across a breeder in Texas that had a male bloodhound, immediately Candy fell in love with the look of his face. He didn’t look anything like Cletus, but she was really drawn to this dog. After talking it over with Steve ( Candy’s husband), she contacted the breeder and told her what she was looking for. Candy explained that she didn’t need a heavy frame dog but needed one that could go for miles especially in the heat. The breeder said that she was getting ready to breed the male Candy liked and should have the kind of pup she was needing. So after praying again, her and Steve decided she should get one of the pups. Hopping on a plane, Candy flew to Texas. The

Diagnosed with her first autoimmune disease at the age of seventeen, she has never let it stand in her way. You will not ever hear her complain or refuse to jump right in and help. She is one of those souls that after even just a few times of being around her, you will feel just like part of her family. She even referred to me as “Sis”, just like she does many others. At the end of our meeting and interview, she gave what she thought was an off-handed comment of who she was, but inadvertently named the title of this story, “Just a humble girl and her hounds”. I am proud to know her as I am sure many can say the same, and all are humbled that we can call her friend, “Sis.”

And without the heat and humidity, outdoor workouts become much more comfortable and, after an unusual summer, many of us are ready to get back to some sort of fitness routine. Fall weather, especially for our area, offers some of the best outdoor workouts all year long.

When exercising outside, layer your clothing. Before your body warms up, you may feel chilled, but once the blood gets pumping, you’ll feel overdressed.

Fitness classes give an energy you gather from other people when you workout in a class setting that you often don’t get working out by yourself.

Walking, hiking and cycling are all awesome ways to get your blood pumping, so discover park trails and take in some new scenery while you’re walking, biking, or just get out and throw the Frisbee around. Haev a dog? Play a vigorous game of fetch. If you’re near a lake, try kayaking or canoeing for an excellent whole-body workout and a great change of pace. And remember, it doesn’t have to seem like exercise to be a great workout.

Work out with a buddy or hire a personal trainer. Get your workouts on the right track from day one with the accountability a work out buddy or trainer can give that will keep you motivated and on track.

Can’t make it to the gym? Be an active TV watcher. While you watch, you can walk or run in place, do standing lunges, do tricep dips off the couch, or lift weights. During commercials, do pushups or sit-ups. In a one-hour show, you probably have close to 20 minutes worth of commercial interruption. Try Something New When the gym & working out indoors lead to boredom and burnout, it’s a great time to try something completely different. Instructions Preheat oven to 350 degrees F. Grease a 9×9” baking pan, set aside.

Ingredients 1 1/2 cups old-fashioned oats 1 tbsp. ground flax seed 1 tsp baking powder 1/2 tsp sea salt 2 tsp pumpkin pie spice 1 tsp ground cinnamon 1 tsp. ground or fresh ginger 1/4 tsp. ground nutmeg 1/2 cup pumpkin puree 1 large egg lightly beaten* 1/4 cup pure maple syrup 3/4 cup unsweetened almond milk 1 tsp vanilla extract 1/3 cup diced apples +1/2 apple thinly sliced as the topping 2 tbsp. pumpkin seeds

In a small bowl mix together the oats, flax seed, baking powder, salt, pumpkin pie spice, and cinnamon. Set aside. In a large bowl, mix together the pumpkin puree, egg and maple syrup. Stir until combined.Add the almond milk and vanilla and stir until completely combined. Add in the apples and mix together one more time. Add dry ingredients to the wet ingredients and stir until completely combined. Pour batter into prepared baking dish. Slice the remaining apple into very thin slices and arrange on top of the oatmeal along with the pumpkin seeds. Bake in the preheated oven for 30-35 minutes or until the stop is set and slightly browned. Remove from oven and let the oatmeal cool to room temperature. Drizzle with almond butter and top with extra low sugar granola if desired! Store in the fridge for up to a week — the cold pieces taste great too!

Ingredients for a 8, 2 x 11, or 8 inch mold FOR GLUTEN-FREE COCONUT AND ALMOND BASE: 275 g ground almond 175 g honey 115 g grated coconut 4 Tbsp water 120 coconut flour pinch of salt 50 g coconut oil 3 tsp unsweetened cocoa powder FOR THE BLOOD ORANGE, SAGE AND TAMARIND CREAM: 540 g blood orange juice, approximately 6 oranges 16 sage leaves 4-5 large tamarinds 3 large eggs 85 g unsalted butter 175 g sugar pinch of salt 4 1/3 gelatin sheets (8 g) 1 Tbsp hibiscus flowers FOR DECORATION: blood orange, strawberries, sage leaves, kumquats, edible flowers

Instructions

Make coconut and almond base. In a large bowl add the ground almond together with the grated coconut, the coconut flour and salt. Mix with a spoon. Add the honey together with the coconut oil and start to integrate the ingredients. We will have to work a little with our hands to get the ingredients to amalgamate. Incorporate the cocoa powder and mix. Add the water little by little and integrating at the same time. We will have to get a dough that does not break but without exceeding when hydrated. Transfer the mixture to the mold. Best to do it in small portions. Once we have all the mixture distributed, press with a small glass, small rolling pin or hands to level the mixture.

Preheat oven to 345ºF/175ºC. Bake at medium height for 12 minutes. Remove and place on a rack. Prick the whole base with a fork and let it cool completely, then prepare the blood orange, sage and tamarind cream.

Let the mixture stand and reduce its temperature to 131º-122ºF/55º-50ºC. Strain the mixture through a strainer or sieve to remove solids. Drain the gelatine sheets and add to the mixture. Whisk until completely dissolved. Pour over the baked base and place in the fridge. Let it solidify completely, ideally let it rest overnight.

Fill a bowl with very cold water and put the gelatin sheets inside to hydrate them. We must do it 15 minutes before using them. Squeeze the blood oranges to obtain the juice. Pour into a blender and add the chopped sage leaves together with

Cook to medium heat without stopping stirring, this way we will avoid it sticking to the bottom of the saucepan and forming lumps. Cook stirring constantly until the mixture reaches 181,4ºF/83ºC, for accurate results use a digital thermometer. It is important that the mixture does not reach boiling point. It will take about 10 minutes, so patience! Remove from the heat and add the hibiscus flowers.

Decorate the tart just before serving so that the fruit and flowers are fresh. Place blood orange slices, strawberries, sage leaves, slices of kumquats and edible flowers. Serve and enjoy, of course! ;)

Ingredients 4 dashes of Orange Bitters 2 ounces Bulliet Rye 1 ounce St. Germain Elderberry Liqueur 2 1/2 ounces Orange Honey 2 ounces Lime Juice (sweetened or unsweetened to taste) 1 ounce Tamarind Simple Syrup 1 Tablespoon Orange zest Instructions Prepare in bowl. First combine your liquid ingredients then add your orange zest. Use shaker to chill and serve in chilled glass. When you head out at night to stargaze, take your family or friends with you, be prepared for a cool night, and let your eyes adjust to the wonder above. Here are some ideas to make your experience memorable:

At Home Sleep in your backyard on a starlit night. Watch the stars and planets move across the night sky. Make a red flashlight. Use red paper or cellophane to cover a white flashlight. This will help you navigate at night without compromising your night vision! Can you see the stars as well in your backyard with the porch light on? Try different light bulbs, even different light fixtures, so that you can see the stars better. Warm, amber colors are soft on the eyes.

In the Wilderness Look for the Milky Way stretching across the night sky. What looks like a faint cloud is actually the light from millions and millions of distant stars. The Milky Way is our home galaxy and is best seen in summer and fall evening skies. If the full moon is up, the Milky Way will be hard to see. Try going for a night hike instead! Let your eyes adjust to the moonlight and keep your flashlight turned off (but available for safety if needed).

In a National Park Camp under the stars. What better way to experience the great outdoors than camping in a national park under a starfilled sky? National parks are great places to get to know the animals that are nocturnal—wildlife that is awake at night and asleep during the day. Sit quietly and listen for these creatures. Many national parks offer night sky programs, from telescope astronomy events to full moon walks with rangers. Other parks also have night sky programs, so be sure to check with your park if you are interested.

Experiencing the Obed The Obed Wild and Scenic River looks much the same today as it did when the first white settlers strolled its banks in the late 1700s. While meagerly populated due to poor farming soil, the river was a hospitable fishing and hunting area for trappers and pioneers. Today, the Obed stretches along the Cumberland Plateau and offers visitors a variety of outdoor recreational opportunities. Starry night skies are an important part of the special places the National Park Service protects. Our national parks hold some of the last remaining harbors of darkness and provide amazing opportunities to experience this critical resource. Obed Wild & Scenic River is one of these special places with a truly dark night sky. Among Obed’s interpretive themes is a primary goal to reconnect life and nature by discussing the value of quiet, solitude, and even darkness in the noisy, frenetic, and developed world of the 21st century.

The more I sang the more things started opening up.“ Rhett’s first single with his new record label Essential Records was “When Mercy Found Me“ off the album Come To The River. The following day, he worked with Moriah Peters to write and perform “Just Pray“ in memory of the victims and gave it away for free.

Not a crafter? Here’s why you should consider becoming one during the pandemic.

Picking up an old craft or delving into a new one is a positive way to get through the coronavirus pandemic, according to mental health experts. “You might try knitting or something new; individuals should find what grabs them — that’s so important for creativity,” said clinical psychologist Mark Runco, who is director of creativity research and programming at Southern Oregon University. Why crafting helps. The brain “is a very adaptive organ with survival mechanisms,” Runco said. “It’s hardwired to pay attention to threats, and its fear response can be activated by triggers such as negative news.” Crafting can calm us because it shifts our attention away from such triggers, he said. It also gives people a sense of productivity and is “an excellent way to break up the monotony of the day,” he added. Research is now turning to how specific crafts can contribute to wellbeing. The pandemic and crafts Many businesses, including yarnspirations. com, Joanns and Michaels, have seen an uptick in interest since the pandemic started. Yarnspirations notes that its “Llama No Drama” and “Bernat Fat Cat” crochet stuffies have been very popular with customers; Michaels and Joanns has seen a 150 percent increase in viewers of Facebook Live tutorials with Lynn Lilly, founder of Craft Box Girls, and has also ramped up its how-to videos and stepby-step project instructions based on demand. It recently launched free online classes that include such topics as coaster-making and painting. Emily Brown, an associate director at the Memorial Sloan Kettering Cancer Center in New York City, said she turned to knitting at the start of the pandemic even though she doesn’t consider herself a craft person. “I needed something to cleanse my mind; knitting calmed me because it is a repetitive

activity, and very soothing,” she said, noting that she would not “in a million years have had the time to do it otherwise. You don’t have to be creative to give crafting a try and reap its benefits. With so many possibilities, how do you know where to begin? For beginners, try yarn-based crafts. These are often a good starting point, because many people have fond memories of loved ones knitting or crocheting. If you’re a rugged type of person, build bird houses, or something for the environment. There are many free online classes on topics that include cloth dyeing, building a bird house and making jewelry. The bottom line is that you want to create something concrete, yet something that warms the heart and creates a bit of joy. Luckily here in Knoxville we have several DoIt-Yourself crafting venues that can help you find something wonderful to create that you can share with your family or friends. Places like AR Workshop even has take home kits for all ages. Take this unique time as an opportunity to create something beautiful, learn something new and take time to contribute to your overall well-being.

Nathan Cottrell has always been fast. He was born 3 weeks early, the last of 4 kids, weighing in at 9 lbs 5 oz. He rode a two wheeled bike just before turning 4. He played every sport starting out, but football was his favorite. In those younger football years, if/when he could get outside, he scored every time, sometimes 3 and 4 times per game. He told his mom, when he was 7, that he thought God made him to play football. Fast forward 17 years, and what a ride it has been. His high school team went to state his junior year for the first time ever. They didn’t win, but were able to return his senior year, this time, coming home with a win, and the MVP title for Nathan. Nathan received a full ride to Georgia Tech, where he redshirted his freshman year with a torn ACL. The extra year of

eligibility, gave him the option of getting Masters, well almost, 2 classes short! Nathan did have the chance to participate in Pro Day, just before COVID ended the remaining ones on the schedule. This resulted in being picked up by the Jacksonville Jaguars as an undrafted free agent following the last NFL Draft Day. He just played in his first NFL game on Sept 6, being in for all of the Special Teams plays. There have definitely been really high highs, and really low lows! The only constant, has been his family’s support and their faith in Jesus Christ! He believes that God does have a plan. His plan is the very best, even when it may not seem like it at the time. Prayer does change things! At the very least, it changes our perspective and focus, and allows us a glimpse of the bigger picture! Whatever happens from here, to God be all honor and glory!
