A Smile to Remember

The energy was inspiring and felt throughout the room during a most magical evening as I joined over 200 attendees for the 2 nd annual Smiles for Hope Gala, held on September 16, 2019 at The Lighthouse Knoxville. Smiles for Hope is a charity founded in 2017 by Dr. Smita Barole, D.D.S. This charity started as a vision for restoring the teeth of women who found themselves in unfortunate situations stemming from domestic violence and/or drug use resulting in dental complications for which they had no help. Dr. Barole was approached by the YWCA to provide temporary yet urgent dental care for its residents, but she quickly realized that these women, as well as hundreds of others like them, were limited as to where they could receive dental care in the community. Dr. Barole not only recognized this gap and lack of resources, but she became determined to do whatever she could to help these women in need.

She decided to establish the Smiles for Hope charity, aptly named, as it gave hope to women who once felt they had none. As founder and president, her vision is now a reality where she and her team of volunteers has empowered over 300 women with beautiful smiles they can be proud of. Her entire team donates their time and efforts towards this extraordinary cause, totaling nearly $250,000 in costs of dentistry to date, provided free of charge. The gala was an absolute success where 100% of the donations will be used directly towards helping these women. Smiles for Hope has a mission; to provide free dental care to women in need, to rebuild self-esteem and hope. Smiles for Hope gives these women a fighting chance towards rebuilding their lives not only for themselves but also for their children, families and their communities.

This beautiful journey has resulted in an awe-inspiring partnership between Dr. Barole and YWCA, where she dedicates one Saturday per month to work her magic. She has also collaborated with Susanna’s House and Dr. Craig Towers, MD, a high-risk OB/GYN with The University of Tennessee Medical Center. This year’s gala sponsors, Mital D. Patel, Attorney at Law and East Tennessee Oral and Maxillofacial Surgery, P.C made this incredible night possible. The evening ended with Dr. Barole’s words resonating through the hall as we held back our tears listening to testimonials,

“One woman at a time, one smile at a time…we have seen the tears and we have seen the transformation…that may be their past but their future will be different.”

always find myself reading the inspirational quotes my friends share and think...well that’s nice or how true.... and think, I need to remember that one. However once I scroll past what they wrote, I quickly forget what it says. There are many reasons for forgetting, but the main one for me is procrastination, the fact I think I’ll revisit the saying and write it down later. As we all have done I’m sure. Why do we all wait until a designated time to “start”? Whether its a job, eating healthy, working out, a hobby or something else; we seem to give our selves an out by putting time constraint and conditions on a particular time frame. 2020 has been the year referred to as hindsight or great vision. What better “time “ to do things different. “It’s a terrible thing, I think, in life to wait until you’re ready. I have this feeling now that actually no one is ever ready to do anything. There is almost no such thing as ready. There is only now.” -- Hugh Laurie So look for some new improved changes this year for Hushh as we strive to bring you more story about this region and the people who live here. Eliot After all the fireworks have gone off, the confetti have cleared the air, every champagne bottle has been popped, and the New Year has officially rung in, most people begin to look ahead. The next 365 days are envisioned through hopeful resolutions as to what changes, restoration, and commitments the New Year will bring. It all looks beautiful, it all looks promising, but for the individual, the 365 days preceding this New Year, tell of why it is profoundly important. No one understands this on a day-to-day basis better than Mark Enix. Mark is a local, second-generation jeweler, who owns Fountain City Jewelers in Knoxville, TN. For Mark, being a jeweler is about restoring the past. It’s taking an heirloom, and making it new again, or completely redesigning it, so the next generation will enjoy wearing it. Preparation has already begun for his journey to Antwerp, Belgium, the Diamond Capitol of the World.

“By keeping jewelry in the family, and giving it a new life, I get to help customers find mementos they will use to celebrate the most important moments in their lives. As an example, for many women, their engagement ring is their most prized possession, and selecting the one that represents their love is priceless. For others, they might be choosing a piece that they can pass on to their children one day. For men, I get to help guide them to a gift that makes them feel like a hero. Why would I ever want to do anything else?” Enix said. When Mark was a child, he apprenticed under his father in his family’s jewelry store. He started at the bottom. Until he learned all aspects of his father’s trade, Mark polished rings for .50¢ a piece, and wrapped presents for a $1.00 a package to earn his way. As he matured in age and skill, his father promoted him to the work bench. Every day, Mark would work on the repairs scheduled for the day, but as soon as he was finished, he would slip away to work on his own custom


designs when no one was looking, honing skills he values today. Throughout his youth, Mark’s father taught him many lessons, but what Mark recalls most, were the people that would come in to meet with his father. They needed something special, and each one would leave with a bag in their hand and a smile on their face. His father taught him to value everyone’s jewelry like it was the most important item he had held all day, because to them, it was. Mark enjoys helping customers design beautiful, custom pieces, that they have been dreaming of their whole life, but he also understands that not everyone wants to design something specific. Some pieces are exceptional and need to be created from scratch, while others feel as if those items in the case were already designed just for them. “When you see them sitting in the case, it is as if they were just waiting for you to find them,” Enix said. Whether custom made, or branded, Mark tells customers they will know it’s theirs when they find it.

A time of new beginnings and fresh starts also comes with a time of deserved reflection. So, as Fountain City Jewelers looks back on the influence of 2019, Mark Enix is excited to introduce into 2020 the things of new. outdoors Can I plant trees and shrubs in Winter? Even though it’s late in the season, your shrubs will be happier in the ground than in pots. Ideally, trees and shrubs need about a month to establish roots before a heavy freeze, but it’s actually ok to plant them anytime the ground is workable. Here are a few tips for seeing your late-season plantings through the winter: Avoid stimulating growth: Don’t fertilize or overly amend the soil. You can add a little compost and bone meal (to stimulate root growth), but hold off on fertilizer until spring. Don’t disturb the plant: Avoid pruning, and be very gentle with the roots while planting. The shrub won’t have time to recover from damage, and it’s going to be stressed enough as it is. Keep plants watered: The worst part of cold damage is caused by desiccation, or drying out. Keep new shrubs watered every week or two until the ground freezes, and especially right before a heavy freeze. Watch out for frost heaving. Apply Mulch: Add mulch to keep newly planted shrubs insulated. If you’re planting cold-sensitive trees or shrubs, you can add extra protection by wrapping or banking the plants with burlap or leaves on cold nights. Be sure to uncover in the morning.

If the ground is frozen solid and unworkable, you can store unplanted shrubs in a sheltered spot with a southern exposure until avble to plant. Bank with leaves or mulch to keep them insulated and make sure to water. Once growth starts in early spring, prune away any damaged branches, shape up your plants, feed with a balanced fertilizer, and they should recover nicely. The only trees you should totally avoid planting in winter are evergreens. Unlike deciduous trees and shrubs, evergreens hold on to their foliage in wintertime, and it’d be really hard for them to establish their roots and preserve their needles’ moisture levels with a limited water supply in winter.

Time for Breakfast

So what would a 1920’s family actually cook for breakfast? Unlike their predecessors in the 1900’s (who actually munched on rice, cold meat, and jellied veal — yeah, we know — for breakfast), folks during the jazz age loved a good ol’ pancake. Hmm “Flapjack”, “Flapper” coincidence? Fortunately for us, some things never change. But, were pancakes the same as they are today? Lucky for you we did a little research and if you want to try your hand at an old-fashion 1920s-style pancake, check out this recipe. And according to the actual recipe from the 1920’s, we found on the Melissa K. Norris blog, pancakes from this time were gluten-free, egg-free, and refine sugar-free. The recipe instead includes buckwheat flour, cornmeal, yeast, water, salt, molasses, and baking soda.

1920’s Overnight Buckwheat Pancake Recipe This buckwheat pancake recipe is not your ordinary pancake, and there is nothing quite like a weekend morning breakfast of hot-off-the-griddle pancakes. Especially when the batter can be made the night before, making these an overnight fermented pancake recipe. Score! This heritage recipe was found among my great-grandmother’s recipes, in a cookbook released in 1921. Unlike most modern buckwheat pancake recipes, this one incorporates yeast into the batter, which rises overnight and is cooked in the morning. Batter can also be saved from the first batch and used for subsequent batches without adding more yeast, similar to a sourdough starter. For those who may have allergies, these buckwheat pancakes are also gluten-free, egg-free, and refined-sugar free, although this was probably not even a consideration when the recipe was written! Sweetened only with molasses, they are an enjoyable breakfast treat served with fruit, drizzled with maple syrup, or topped with yogurt. Cooked pancakes also keep well in the fridge for a few days, and freeze well, too. I also like them toasted and spread with peanut butter.

Ingredients 2 cups buckwheat flour 1/2 cup cornmeal 2 1/4 tsp yeast 2 cups warm water 1 tsp salt 2 Tbsp molasses, divided 1 tsp baking soda

To Use Starter: Pour the starter into a large bowl and add: 2 cups buckwheat flour 1/2 cup cornmeal 2 cups warm water 1 tsp salt 1 Tbsp molasses

Beat first 6 ingredients (only using 1 Tablespoon of molasses) in large bowl until smooth. Cover the bowl and leave overnight. The next morning, stir in 1 tsp baking soda and another tbsp of molasses. Cook on a greased pan – my cast iron frying pan does the best job with these pancakes. Cook until bubbles form on the top, then flip and cook on the other side. If desired, save 1 cup of batter, stored in the fridge, to start the next batch of pancakes. The batter should keep up to 3 days in the fridge. I give mine a quick shake or stir daily to keep it from separating.

In the early 1920s, family moonshiners were among countless small and big-time illegal alcohol producers during Prohibition. Some of these moms and pops bottled their own liquor at home. They used a small still to ferment a “mash” from corn sugar, or fruit, beets, even potato peels to produce 200-proof alcohol, then mix it with glycerin and a key ingredient, a touch of juniper oil as a flavoring. To turn this highly potent liquid into a rank “gin,” they needed to water it down by half. But their bottles often were too tall to fit under the spigot in the kitchen sink, so they used the one in the bathtub.

Outside of our well-crafted classic cocktails and talented staff, we are known for being Knoxville’s one and only speakeasy. Once, this secret spot was known only to the most plugged-in locals and guests but, these days, Knoxville’s finest line up in the alley to gain entrance.

But few could tolerate the bad taste of this “bathtub gin.” Bartenders in speakeasies blended ounces of it with various mixers from bitters to soda pop, juices and fruit garnishes, to hide the flavor of the poorly made alcohol. While mixed drinks certainly predated Prohibition (the origins of the rum drink “Mojito” may date back to the 16th century), they were necessary during Prohibition. The Prohibition era’s speakeasies made the cocktail fashionable. In large cities and rural areas, from basements and attics to farms and remote hills and forests across America, moonshiners and other bootleggers made it virtually impossible for Prohibition Bureau agents to enforce the Volstead Act’s national ban on making and distributing liquor. The bureau seized almost 697,000 stills nationwide from 1921 to 1925. From mid-1928 to mid-1929 alone, the feds confiscated 11,416 stills, 15,700 distilleries and 1.1 million gallons of alcohol. The bigger stills were known to churn out five gallons of alcohol in only eight minutes. Commercial stills in New York could put out 50 to 100 gallons a day at a cost of 50 cents per gallon and sell each one for $3 to $12. By 1930, the U.S. government estimated that smuggling foreign-made liquor into the country was a $3 billion industry ($41 billion in 2016). Grocery and hardware stores legally sold a laundry list of what home distillers and beer brewers needed – the gallon stills, bottles, malt syrup, corn sugar, corn syrup, hops, yeast and bottle cappers. Americans, based on Prohibition Bureau estimates, brewed 700 million gallons of homemade beer in 1929. Chain grocery markets such as Kroger and A&P sold the popular beer-making ingredient malt syrup in cans. By 1927, national production of malt syrup hit nearly 888 million pounds – enough to make more than six billion pints of homemade beer.

This chill cocktail is made up of gin, lime juice, and seltzer. But in its earliest incarnation, the Rickey favored bourbon over gin. The shift to gin in the 1920s is believed to have occurred because bathtub gin was more readily available, as it required no aging. F. Scott Fitzgerald was a fan of the revised Rickey, and he referenced it in a pivotal scene in The Great Gatsby.

HOW TO MAKE A GIN RICKEY • Gin • Seltzer water • Lime juice • Ice • Maple syrup Add gin, seltzer water, and lime juice to a highball glass. If adding sweetener (Maple syrup), stir it in to combine. Add ice and serve.

This saucy cocktail was created from mixology master Ada Coleman, a well-regarded bartender at The Hotel Savoy in London. The Hanky Panky is her biggest claim to fame, created to appease the thirst of a celebrated but exhausted actor Sir Charles Hawtrey. Coleman says the name came from Hawtrey’s exclamation on taking his first sip, “By Jove! That is the real hanky-panky!”

HOW TO MAKE A HANKY PANKY • 1 1/2 ounces gin • 1 1/2 ounces sweet vermouth • 2 dashes Fernet-Branca • Optional: dash orange juice • Garnish: orange peel In a mixing glass filled with ice, pour the gin, sweet vermouth, and FernetBranca. Add a dash of orange juice if you like. Stir well, for at least 30 seconds. Strain into a chilled cocktail glass. Twist an orange peel over the drink to express its oils, then lay it over the rim as a garnish.

A bathtub gin-based cocktail that came to fame in Prohibition was this sweet treat. Rather than straight up sugar, this cocktail combines gin with honey, lemon juice, and orange juice. These sweet ingredients were intended to smooth off the jagged edges of the illegal hooch. Honey was seen by some as a bizarre ingredient (sugar was far more mainstream), and this drink earned some sneers for its floral sweetness.

HOW TO MAKE A BEE’S KNEE’S • 1/2 cup honey • 1/2 water • 2 ounces gin • 3/4 ounce fresh lemon juice • ice • Garnish: lemon peel Bring honey and water to a simmer, whisking to dissolve the honey. Let cool completely. For each cocktail, combine gin, fresh lemon juice and 3/4 ounce of the honey syrup in an ice-filled shaker. Shake and strain into a glass; garnish with a strip of lemon peel.

Rey Pineda “Filibilly”

K

noxville artist/songwriter/ musician Rey Pineda moved from Japan to East Tennessee in December 1988 and he has developed roots in this area and calls it his home. Folks here refer to him as “Filibilly” — the Filipino Hillbilly. Since 1997, he has been performing blues, folk, reggae and Americana with friends and other local musicians he invites to his shows. “The arts have been my life. I’ve been an artist, musician, stage actor, puppeteer, photographer, videographer,” Pineda says. “I never doubted my role in life. It was very obvious from childhood that I was born an artist.”

Pineda worked as illustrator, graphic designer and blogger at The News Sentinel 1990-2016. He played music with a blues trio The Delta Souls 1997-2001 and the band he formed in 2001 The Pineda Band. Currently, he performs in a duo with Natalie Lawson and another project, The Kapitan Islander Band. Pineda was born on April 5, 1959 in the Philippines. The first time he held a pencil when he was 3 years old, he started drawing. Singing also came natural for him. He began singing in public at second grade at his Catholic school Holy Angel Academy. He studied fine arts at Far Eastern University in Manila in 1975-78. His first

job after college was as an illustrator for The Bulletin Today, the prime newspaper in the Philippines in 1980s. In 1983, he codirected a television puppet show for GMA Radio Television Arts called The Luvvets. “I believe in being a positive force. I don’t watch horror movies because they freak me out and mess with my sleep. Also, I think there’s enough horrible crap in the real world,” Pineda says. Pineda grew up in the slums of Angeles City in the Philippines where thugs and goons with guns ran rampant committing

murderous acts witnessed on a daily basis during the pre-martial law years which was imposed in 1972 by Ferdinand Marcos, one of the worst dictators in modern history. Martial law did not solve criminality, it worsened with thousands of extrajudicial killings. “I grew up under martial law. I got into a lot of trouble when I turned 15. My youth was stolen from me by Ferdinand Marcos. I started dabbling with drugs and bad company and I turned from a student scholar into a wrecking ball activist,” Pineda says.

Although you see him smiling a lot, that doesn’t mean he’s known no hell in his life’s journey.


My thoughts on 2019 and the New Year What a year it has been! 2019 was a wild ride for me. My new life as a full-time musician has been like a magic carpet ride. I was able to reinvent my previous life of a stressed graphic artist at the News Sentinel to a laid-back, free and easygoing existence. In all my life, I had never imagined that I will end up being a musician having the opportunity to play with so many other artists who also felt the call of music and the arts in their lives like I did. In January, the inimitable vocalist Jen Wolery and I competed at the International Blues Challenge in Memphis, Tenn., representing the Smoky Mountain Blues Society of East Tennessee. The experience changed my life as a musician. By no means did I expect our duo to win because we were competing with national and international acts. I considered it a great opportunity and honor to be among the best of the best as I tried to absorb whatever tips and lessons there was for me to learn regarding the blues. The indomitable spirit of the blues definitely abounds in Beale Street. I had a nice conversation with North Carolina guitarist and storyteller Jon Shain about the importance of telling your own story. He has competed in the IBC a couple times before and he shared a lot of lessons from his past trips. When I was talking to him, I had no idea that he will be the winner of the top award in the IBC 2019 solo/duo category. When I returned to Knoxville, my musical perspective totally changed. I started believing in myself more and set out to book more gigs. As I endeavored to do this, the bookings started coming and my continuing education on guitar became easier to comprehend. Among the people who have tremendously helped me this year are Phil Hardison, a jazz

guitar player who have unselfishly shared with me his style of playing and helped me get bookings in jazz clubs, Don Anderson, owner of Knoxville restaurant and bar Tennessee Tap House, Chris Keever, owner of Oak Ridge venue Crafter’s Brew and James Gilley, owner of marketing and booking agency ProMotion. Natalie Lawson and I started Rey Natalie Duo and played on a consistent basis throughout the year. We played venues such as CRU Wine & Bar, Tennessee Tap House, Schulz Brau Brewery, Crafter’s Brew, Echo Bistro & Wine Bar, Drink. the wine dive., Gettysview Country Club, Asia Cafe, Bluhen Botanicals, and some private parties. Teaming up with an amazing 22-year-old singer is both challenging and rewarding. It has benefited both of us in many ways. Her youthfulness kept me feeling young and I started teaching her public relations, music business and professionalism. On May 10, 2019, we made an appearance on WBIR Channel 10 Live at Five at Four show where we performed “Dreams” by Fleetwood Mac. Right after the television performance, we went busking in the Market Square bustle in Downtown Knoxville. We went from stars to beggars in a matter of minutes. It was so liberating to perform out in the open. I didn’t mind the strange looks and jeers, being considered as a couple of homeless panhandlers. It was all about the experience, and the guts to boldly sing in a public arena. This year has been full of opportunities. In July, we participated in the two-day event Musicfest at West End in Farragut which featured several local bands. Then the Rey Natalie Duo performed at Crowne Plaza Ballroom at a benefit dinner for Volunteer Ministry Center sponsored by Sugarlands Distilling. This event was attended by more than 300 guests

and featured Sam Venable as host and speaker. I also got to play a few gigs with Meredith Cabe Whitehead, vocalist with the marvelous trio Freequency. Playing with Meredith was so much fun. She’s a seasoned performer who also have a great sense of humor and impeccable work ethics. Other musicians I played with include: harmonica player Dave “Pignose” May, percussionist Tod Sheley, bass player Curt Hutchison, harmonica player/singer Greg Stewart, Nashville singer/ songwriter Kimberly Cleveland, vocalist Audrey Pleasant, my son Warren Pineda, and many more in our local blues circle jams. On Nov. 9, I shared the stage with several guitarists and harmonica players at the Roger Hay Birthday Bash at the Open Chord. You won’t meet another musician who has more enthusiasm as Roger Hay. He loves to play, he lives and breathe it. The shindig was attended by more than 50 local stars and more than 100 blues fans. My first gig in Gatlinburg happened on Dec. 27 at the Gatlinburg Brewing Company. I performed with Karen Kartal, an Oak Ridge Symphony Orchestra violin soloist. The addition of her instrument in my presentation was an amazing surprise. I believe that her talent could be a tailwind that will make me play more professionally. The year 2019 was capped by a surprise performance at the jazz club Drink. the wine dive. on New Year’s Eve. Jen Wolery messaged me Dec. 27 and asked if I would play with her at Drink. In a couple of days, Jen and I assembled a band comprising the two of us and adding Karen Kartal and Shirley Herbert, a local vocalist. By Rey Pineda

As I make an entrance to 2020 my heart is filled with gratitude. I count my blessings and focus on the positive despite all the many difficult challenges facing me on a daily basis. With all the strife going on in this country and the world, there is a constant reminder to us all that there is always a light shining at the end of the tunnel.My desire is to be the positive force that I had always dreamed of becoming. My dream is to play music ‘til I kick the bucket like BB King. What a wonderful honor that would be!

“The best thing about a picture is it never changes, even when the people in it do.” -Andy Warhol Local photographer John Black has been capturing the hearts and images of Knoxville for over 32 years now and has 20-20 vision as to what lies ahead as we begin the New Year. John grew up in Scotland, and it was there he began his love affair with horses. His hometown held Medieval festivals where children could slip away into a fairytale land filled with Queens and Carters, Clydesdales and costumes. The mystery of the enormous creatures captivated John’s boyish dreams and manifested themselves into the true art that exists on his canvases today. Photography is what brought John to America in 1987, where he settled in Knoxville, TN and has remained ever since. After 32 years, this community has become home to John, and locals who know him feel the same way. Starting out, John was in commercial photography where he captured the face of businesses, and the people that ran them. Mastering the art of making a “head shot” interesting, John began to be approached by other genre groups in the industry. Without pause, John’s focus transitioned into weddings, where he used the skills that he had developed to shoot business profiles and expanded on them to freeze moments in time. John thought he would rest in wedding photography for a while, but to his surprise, it wasn’t long until he expanded his portfolio again. Many of the same couples whose weddings he had photographed, were now having children, and requesting his talent again to capture their new families. At first, John resisted the idea, because after all, the likelihood of children staying clean, cooperative, and in position for extended periods of time, is for lack of a better word, difficult.

Albeit, the requests kept coming in, and so John decided to give it a “shot.” To no one’s surprise but perhaps humbly his own, he was a natural. His engagement with the children allowed for their tiny personalities to shine, and for their parents to harness a stage of life that would pass far too quickly, and even one day, seem all a blur. As life does, John came full circle around a year ago, when he received a request from a friend to photograph her horse. If you have seen a John Black equine portrait, you will understand the sentiment behind the statement that John Black has “reconnected with his first love”. John is active in many local charities, since his reconnection with his first love, he’s had the opportunity to put his gift to use at Horse Haven of Tennessee. Horse Haven is a local animal shelter, whose mission is to rescue, rehab, and rehome Tennessee’s neglected and abused equine through program of shelter, education as well as promote long term adoption placement is prevalent. Art is a subjectively biased interpretation of the artist’s subject. Artists show their own unique vision of a scene, which provokes a reaction from us, the viewer. Their ‘job’ if you like, is to make us see a scene and to execute it in a way that engages the viewer. Unlike any other visual image, a photograph is not a rendering, an imitation or an interpretation of its subject, but an actual trace of it. A photograph captures a moment in time in its actuality, whereas something like a painting or drawing, however accurate, is essentially a rendering of whatever the artist chooses to see. John Black’s Photography encompasses the very nature of art. His portraits capture each moment in time, and not only provoke reactions out of each viewer, but each viewer differently. Some viewers do not appreciate the artistic value in photography. In today’s age of social media and digital photography, there is a belief that anyone can take photographs, and instantly post them as that. Further, photographs do not require cameras anymore. Almost all mobile phones have cameras that are interconnected with various social media mediums to upload images onto. And,

by being able to download digital copies, or post images seconds after they are taken with various generic filters attached, we have somehow stripped the photograph of its’ humanity. “There is one thing the photograph must contain…the humanity of a moment.” – Robert Frank By devaluing the skill that lies in being able to translate a vision into a finished product, we have suppressed the stories pictures are intended to tell, and by the people intended to tell them. Over the past 32 years, John Black has been required to make several adjustments to his photography portfolio and doesn’t expect anything less as he looks forward to 2020. However, one thing will remain- despite the digital era we are in, where instant gratification is expected, John Black Photography will not compromise the quality and skill level that exists in each one of his productions.
