November is Epilepsy Awareness Month Many people are surprised to find out that Epilepsy is as common as breast cancer and takes as many lives each year. It is a terrifying and potentially fatal disease that carries tremendous stigma. Epilepsy affects approximately 150,000 people throughout the greater Houston, Dallas and Ft. Worth areas. • Epilepsy and Seizures affect almost 3 MILLION Americans of all ages - more than Multiple Sclerosis, Cerebral Palsy, Muscular Dystrophy and Parkinson’s disease combined! • 200,000 new cases of Epilepsy are diagnosed every year. • 10% of Americans will experience a seizure at least once in their lives. • Each year in the U.S. 45,000 children under the age of 15 develop Epilepsy. • A patient’s first seizure will occur without warning. • EPILEPSY IS NOT CONTAGIOUS. • Medications do not cure epilepsy, but they may help control or prevent seizures. Medications help between 50-70% of patients. • In Texas, if you are diagnosed with Epilepsy, your doctor must certify that you are seizure free for a period of 6 months before you can drive again. • The color for Epilepsy Awareness is Purple. • THERE IS NO CURE FOR EPILEPSY… YET! Want to be the perfect holiday host or guest? Check out these tips on holiday entertaining: If you are the host: • Whenever anyone offers to help or bring a dish, say, “Yes, thank you!” • Use hollowed bread loaves as serving containers for cheeses, dips, olives, chips and small sandwiches. • Once the table settings and centerpiece are in place, sit in each chair to assure comfort • Include favorite kids’ foods, especially those they can eat neatly with their fingers. • Provide at least one low-calorie dish and a vegetarian option. Then serve a sinful dessert. • Completely clear the table of all dishes from previous courses before serving dessert. • Keep club soda nearby to clean spots or stains on the tablecloth or clothing. If you are a guest: • Arrive no earlier than the time the host has announced and no later than half an hour after the time. • Plan to stay about an hour after dinner unless travel plans or sleepy children necessitate leaving earlier. • Bring a gift and write a note of thanks afterward. • Offer to help set up for dinner and to clean afterward. • Notify the host of any special dietary needs - if you are a vegetarian, diabetic or allergic to common foods. • The best potluck dishes are those that need minimal preparation in the host’s kitchen, can be served at room temperature and require only a fork to eat.

BOY SCOUTS
Sunrise on top of the Tooth of Time at Philmont Scout Ranch. The crew from Troop 557 had all kinds of fun on the 12 day adventure, 10 days in the back country, while hiking over 70 miles and climbing to the top of Mt. Phillips at 11,736ft in elevation. They took part in all sorts of activities from black powder shooting to horseback riding to rock climbing and repelling.
Troop 557 on the highest peak in New Mexico, Baldy Mountain – 12,441 feet. We spent
10 days in the Lower Colorado Rocky Mountains covering over 100 miles. As you can see from the clothes, it was chilly the morning we reach the top of Mt. Baldy – 44 degrees. The boys did great pitching their tents every night, cooking our dehydrated meals and guiding us through all the trails and pathways. Philmont Scout Ranch is a place we will never forget!
Troop 557 traveled to Hale Scout reservation in Talihina, Oklahoma. There the scouts worked on merit badges ranging from from Archery to Wilderness Survival. Some scouts even earned the Snow Sports merit badge, something you wouldn’t think one could do in a week where the heat index was 110+, ask the scouts how they pulled it off. They also hiked, climbed and rappelled and kept cool swimming, sailing, canoeing, rowing and kayaking in Bohannon Lake.

Scouts from Troop 557 of Katy had an adventurous summer. Troop 557 was fortunate enough to get 2 treks at Philmont this summer. The older boys in the troop in one trek and the younger boys in the other.

Cub Scout Pack 543 from Exley Elementary School The Exley Cub Scout Pack 543 worked hard, along with parents and siblings, to make sure the school grounds were very clean for the start of school! The photos were taken on Saturday, August 20th. The Scouts have performed this clean-up every Saturday before school starts for several years.
Homeschool Pack 393 Cub Scout Pack 393 is a homeschool pack that serves the Katy area. If you have a boy between the ages of 6 and 10 (entered first grade through fifth grade this fall) and are wanting them to join an activity that is full of fun learning experiences, this is the group for you. Cub Scout Pack 548 and Daisy Troop 17516 raised money through popcorn and cookie sales and donated part of the proceeds to the beautification of Kilpatrick Elementary School. The children also helped plant the butterfly garden in front of the school.

Pet Poops/You Scoop When your pet poops during your walk, be prepared to scoop and trash. This is a growing issue within the community. Come with a scooper and a recycled grocery bag or anything else. It may not be the most fabulous way to walk your pet, but it does show your respect for every homeowner and our beautiful community. Pet feces damages lawns and many residents are working hard to maintaining their grass!
Pets on Leashes...Fort Bend County It is the law in Fort Bend County that all pets must be vaccinated for rabies, registered and restrained. All animals, when outside of an owner’s means of restraint (i.e., in a fenced back yard), must be on a leash. For the safety of all residents, please use all precautions with your pets and keep them on leashes when walking pets in the community, even if you feel your pet is harmless. If you see ANY animal roaming freely in the subdivison, immediately call Animal Control at 281-342-1512. Even if you recognize the animal, be very careful approaching it, as you do not know how it will react; if you can safely retrieve the animal, then call the owner. Otherwise, Animal Control is your best and safest option.
Stop That Barking! Dogs left alone all day get lonely, bored and restless. Many find relief in barking. Some respond noisily to any and all activity. Nothing is as annoying as incessant barking-even for dog lovers. If your dog is a yapper or a yowler, please consider some of these bark-abatement ideas to keep the noise down in your area. Your neighbors will thank you!

• Training. Always the first recommendation for any behavioral problem! Training not only helps your dog, you’ll be surprised how much it helps you, too. You may get some insight into why your dog barks so much, or what it is trying to communicate. • Citronella collars. A humane alternative to the electric-shock, anti-barking collar and costs about the same. • Confinement. Sometimes simply bringing an outspoken dog indoors or confining it to a crate cuts down on the disturbance to neighbors. • For inside dogs, reduce stimulus. Close drapes to help muffle street noise, or leave a radio on to mask it. • Companionship. Dogs are pack animals; they need companionship-a cat, bird or another dog. Consider a mid-day visit from a pet-sitting service or drop your pooch off at a friend’s place or a day-care facility once or twice a week.

Animals that are not properly restrained pose a threat to all our residents. While you may know your pet is friendly, an animal running at someone who is walking by is very scary for that person. Many children are afraid of animals and become frightened, which could result in the child getting hurt trying to avoid the animal. Veterinary Public Health (formerly called Harris County Animal Control) advises that “All dogs and cats must be kept under restraint while in the unincorporated areas of Harris County, Texas. The custodian of a dog or cat is not authorized to have, harbor or keep any unlicensed dog or cat, nor to allow any dog or cat to become a stray.” Restraint is defined as “the control of a dog or cat under the following circumstances: 1. When it is controlled by a line or leash not more than six (6) feet in length, if the line or leash is held by a human being, who is capable of controlling or governing the dog or cat in question 2. When it is within a fully enclosed vehicle 3. When it is on the premise of the custodian and the animal does not have access to sidewalk or street.” While it may be nice to have your animal out in the yard while you work or play, it is against the law, unless the animal is properly restrained.

Once completed, Segment E will allow an alternative route for commuters and businesses along U.S. 290 traveling to the West Houston Energy Corridor.

The church has been installing new lighting, screens, projectors and systems upgrades to maximize possibilities for meaningful and exciting worship. Sept. 25th was the first Sunday for the congregation to experience the new amenities. One of Jastram’s goals were to make the service more intergenerational and family friendly. She also hopes to see more of the arts incorporated into worship including dance and visual arts. Previously, Jastram has led the musical portion of worship at St. Martin’s Lutheran in Sugar Land, New Hope Lutheran in Missouri City and Grace UCC in Alief. Her background as a missionary child raised in Japan matches well with Living Word’s emphasis on global mission.

Students Continue the Tradition of Strong Performance on AP Exams Katy ISD’s tradition of increasing student participation and strong performance on Advanced Placement (AP) exams continues as the district recently learned that each one of its six high school campuses showed an increase in the number of students participating in the exams. In addition, every high school campus exceeded the state and national percentage of AP students making a qualifying score of 3 or better on the exams. Katy ISD is among the 388 U.S. public school districts (one of only 23 in Texas) to be listed on the 2011 College Board AP Achievement List. This list identifies districts that simultaneously achieved increases in access to AP courses while maintaining or improving the rate of students earning a score of 3 or better on the exams – the score that generally qualifies a student for college credit. In May 2011, more than 3,000 Katy ISD students took more than 7,200 AP exams, with 79 percent of the exams earning a score of 3 or better. This reflects a 24 percent increase from 2010 in the number of exams earning these high scores. Advanced Placement and PreAP courses are designed to challenge students beyond grade level academic courses and prepare them for success in future advanced coursework. Katy ISD recognizes that support and encouragement from the campus, the teacher, and parents are critical to student success. Therefore, the district follows an inclusive enrollment model for AP and PreAP courses that provides support systems for student success.

MCMEANS JH FIND Creative ways to learn about cell structures in Science McMeans Jr. High 7th grade students recently made animal cell replicas in very different ways. Each student created a model of a cell and labeled the organelles. They had to know the function of each organelle. Shane’s cell was constructed on a base of wood with a working electronic panel. Corresponding buttons show the parts and light up when pushed. Journi’s cell was very colorful and constructed in a bucket. The cells were on display in the library for all the students to see.

McMeans Junior High NJHS recently held a donation drive to help those in need that lost their homes and belongings in the recent wild fires. They collected things of all types from clothing, toothbrushes, water, canned food, school supplies and even some pet food. They collected items all through September.

SLHS and Studio VII Garner More Accolades Award winning theatre troupe Studio VII from Seven Lakes High School captured more awards this past spring and summer. The Tommy Tune Awards nominated the school for numerous categories and won the top spot for Best Scenic Design and Best Supporting Actress, as Carley Nunn took the prize. The fall Equinox is a good time of year to start thinking about preparing your home for winter, because as temperatures begin to dip, your home will require maintenance to keep it in tip-top shape through the winter. Autumn is invariably a prelude to falling winter temperatures, regardless of where you live. It might rain or snow or, as David Letterman says, “Fall is my favorite season in Los Angeles, watching the birds change color and fall from the trees.” Did you know there is only one state in the United States where the temperatures have never dipped below zero? Give up? It’s Hawaii. Here are ten tips to help you prepare your home for winter: 1) Heating System Inspection • Call an HVAC professional to inspect your furnace. • Stock up on air filters and change them monthly. • Consider switching out your thermostat for a programmable thermostat. • Remove all flammable material from the area surrounding your furnace. 2) Get the Fireplace Ready • Cap or screen the top of the chimney to keep out rodents and birds. • If the chimney hasn’t been cleaned for a while, call a chimney sweep to remove soot and creosote. • Buy firewood or chop wood. Store it in a dry place away from the exterior of your home. • Inspect the fireplace damper for proper opening and closing. • Check the mortar between bricks and tuck-point, if necessary.

3) Check the Exterior, Doors and Windows • Inspect exterior for crevice cracks and exposed entry points around pipes; seal them. • Use weather-stripping around doors to prevent cold air from entering the home and caulk windows. • Replace cracked glass in windows and, if you end up replacing the entire window, prime and paint exposed wood. 4) Inspect Roof, Gutters & Downspouts • If your weather temperature will fall below 32 degrees in the winter, adding extra insulation to the attic will prevent warm air from creeping to your roof and causing ice dams. • Check flashing to ensure water cannot enter the home. • Replace worn roof shingles or tiles. • Clean out the gutters and use a hose to spray water down the downspouts to clear away debris. • Consider installing leaf guards on the gutters or extensions on the downspouts to direct water away from the home. 5) Service Weather-Specific Equipment • Drain gas from lawnmowers. • Replace worn rakes. • Clean, dry and store summer gardening equipment. • Sharpen ice choppers and buy bags of ice-melt / sand. 6) Check Foundations • Rake away all debris and edible vegetation from the foundation. • Seal up entry points to keep small animals from crawling under the house. • Tuckpoint or seal foundation cracks. Mice can slip through space as thin as a dime. • Inspect sill plates for dry rot or pest infestation. • Secure crawlspace entrances.

7) Install Smoke and Carbon Monoxide Detectors • Some cities require a smoke detector in every room. • Buy extra smoke detector batteries and change them when daylight savings ends. • Install a carbon monoxide detector near your furnace and / or water heater. • Test smoke and carbon monoxide detectors to make sure they work. • Buy a fire extinguisher or replace an extinguisher older than 10 years. 8) Prevent Plumbing Freezes • Locate your water main in the event you need to shut it off in an emergency. • Drain all garden hoses. • Insulate exposed plumbing pipes. • Drain air conditioner pipes and if your AC has a water shut-off valve, turn it off. • If you go on vacation, leave the heat on, set to at least 55 degrees. 9) Prepare Landscaping & Outdoor Surfaces • Trim trees if branches hang too close to the house or electrical wires. • Ask a gardener when your trees should be pruned to prevent winter injury. • Plant spring flower bulbs and lift bulbs that cannot winter over such as dahlias in areas where the ground freezes. • Seal driveways, brick patios and wood decks. • Move sensitive potted plants indoors or to a sheltered area. 10) Prepare an Emergency Kit • Buy indoor candles and matches / lighter for use during a power shortage. • Find the phone numbers for your utility companies and tape them near your phone or inside the phone book. • Buy a battery back-up to protect your computer and sensitive electronic equipment. • Store extra bottled water and non-perishable food supplies (including pet food, if you have a pet), blankets and a first-aid kit in a dry and easy-to-access location. • Prepare an evacuation plan in the event of an emergency.

Slow Cookers are a Cook’s Best Friend By The Paula Deen Test Kitchen
More leisure time and a homemade meal? Save money on groceries, use less electricity, and enjoy better flavor? You bet! And with a slow cooker, you don’t even have to be there while your dinner cooks. With the invention of the original Crock-Pot® in the 1970s, we’ve been able to layer ingredients in our slow cookers, leave the house for work or play, and come home, hours later, to an inviting aroma-filled house and evening meal. Rival still manufactures the Crock-Pot®, but many other manufacturers are in the game with competitive models. The “crockpot” moniker has become an icon for any slow cooker. These days, choices are not limited to 2-temperature manual units; they also come programmable, with multiple time and temperature settings, countdown timers, built-in thermometers, and automatic temperature shifts to warm in case you are late getting home. There are slow cooker sizes and settings to fit your family’s individual needs. Though shape is not necessarily a deal breaker when purchasing, it is a consideration. A money-saving attribute of slow cooking is that tougher, less expensive meats are rendered meltingly tender and juicy. Larger roasts and whole chickens fit better into an ovalshaped model and will cook more evenly, although you can trim them to fit into a round one. It’s easy to adapt your favorite oven or stovetop recipes to slow cooker cooking. Regardless of yield, if your dish normally cooks in 15 to 30 minutes, you can count on 1 1/2 to 2 1/2 hours cooking in a slow cooker on High power or 4 to 6 hours on Low. If it takes 35 to 45 minutes, you should allow 2 to 3 hours on High power or 6 to 8 hours on Low. Main dishes like roasts and stews that cook up to 3 hours will take 4 to 5 hours on High or more than 8 hours on Low. For instance, Sweet Merlot Beef Stew should cook in about 4 hours on High or 8 to 10 hours on low; after you brown the meat, add everything to the slow cooker for the total cooking time, including the onions and mushrooms. Other tips for successful recipe conversion: *To eliminate excess fat, remove skin from poultry and trim excess fat from meats before cooking. Pre-brown meats, and drain before adding to the crockpot, especially ground meats.

*Brown chops and roasts to caramelize the outsides for richer flavor and attractive appearance. For Low Country Smothered Pork Chops, prepare the chops as directed and layer in the cooker with the strips of green pepper, onion, garlic, half of the broth, and Worcestershire. Add more broth as needed to thin the gravy.

*Vegetables, especially roots like potatoes, rutabagas, and carrots, cook more slowly than meats, so cut pieces uniformly and add them at the beginning. (It can take 8 to 10 hours on Low for a “baked” potato to cook until tender!) Italian Chicken and Vegetable Soup is a perfect example; just put all the ingredients into the slow cooker, reserving half a can of broth to add at the end of cooking, if necessary. Let it cook 2 to 2 1/2 hours on High or 4 to 6 hours on Low. *Most stews, soups, and other braised dishes require less liquid. If you end up with too much, pour it into a saucepan and reduce it until flavorful and thickened. If you need more liquid, it can be added at the end of the cooking time. *Cheese, milk, cream, and other dairy: Add dairy products close to the end of cooking. *Uncooked rice, however, requires standard liquid amounts. It cooks fast, so add it to the slow cooker during the last hour of cooking on High or 2 hours on Low. It is better to cook pasta separately and add it before serving. *Most slow cooker liners are removable, allowing you to fill it up to a day before cooking. Remove the stone liner and assemble the casserole in it; cover and refrigerate until you are ready to cook. You can prepare Chicken and Rice Casserole ahead and cook it 1 1/2 to 2 hours on High or 4 to 6 hours on Low or until it is hot, stirring in cheese during the last hour of cooking. *Spices tend to loose their power during long, slow cooking; be ready to re-season towards the end.

Sweet Merlot Beef Stew Recipe
Courtesy of Paula Deen Ingredients 4 slices bacon, rendered 2 lb chuck roast, cut into 2” pieces 1 1/2 t Salt Freshly ground pepper 2 T Flour1/4 C Steak Sauce 1 1/2 C Red Wine 1 1/2 C Water 1 t fresh thyme 2 Garlic Cloves, minced 1 lb Pearl onions 1/2 lb. Button Mushrooms, chopped 2 T Fresh parsley, chopped
Directions In a medium saute pan fry bacon until crisp. Remove bacon and reserve. Brown beef slowly on all sides in the bacon fat. Sprinkle with salt, pepper and flour. Toss to coat evenly. Place beef in a heavy 4 qt. saucepan. Add reserved bacon (chopped), Paula Deen Merlot Steak Sauce, wine, water, thyme and garlic. Cover and cook over low heat for 1 hour. Add onions to stew and cook for an additional 30 minutes.

Ingredients 2 tablespoon olive oil 4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1 3/4 pound) 1 small onion, chopped 1 cup sliced carrots (about 3 small) 2 1/2 cup sliced zucchini (about 2 medium) 2 (14.5-ounce) cans diced tomatoes with basil, garlic, & oregano 2 (14.5-ounce) cans chicken broth Grated Parmesan, optional Directions In a large Dutch oven, heat olive oil over medium-high heat. Add chicken, and cook for 10 minutes, stirring frequently. Add onion and carrot, and cook for 5 minutes. Stir in zucchini, diced tomatoes, and chicken broth. Bring to a boil; reduce heat, and simmer, uncovered, for 30 minutes. Top each serving with grated Parmesan cheese, if desired.
Chicken and Rice Casserole
Courtesy of Paula Deen Ingredients 1 10 3/4 ounce can condensed cream of celery soup 1 4 ounce jar pimentos 1 8 ounce can water chestnuts, drained and chopped 2 14 1/2 ounce cans green beans, drained and rinsed 3 cup diced cooked chicken 1 medium onion, peeled and diced 2 tablespoon butter or vegetable oil 1 cup mayonnaise 1 6 ounce box long-grain wild rice, cooked according to package 1 cup grated sharp cheddar cheese 1 pinch salt Directions Preheat oven to 350 degrees F.
Heat butter or oil in a small skillet over medium heat. Add onion and saute until translucent, about 5 minutes. Remove from heat and transfer to a large bowl. Add all remaining ingredients to bowl and mix together until thoroughly combined. Pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly. Let stand for a few minutes before serving.
