November 2011 HAVE A PERFECT THANKSGIVING!

November is Epilepsy Awareness Month Many people are surprised to find out that Epilepsy is as common as breast cancer and takes as many lives each year. It is a terrifying and potentially fatal disease that carries tremendous stigma. Epilepsy affects approximately 150,000 people throughout the greater Houston, Dallas and Ft. Worth areas. • Epilepsy and Seizures affect almost 3 MILLION Americans of all ages - more than Multiple Sclerosis, Cerebral Palsy, Muscular Dystrophy and Parkinson’s disease combined! • 200,000 new cases of Epilepsy are diagnosed every year. • 10% of Americans will experience a seizure at least once in their lives. • Each year in the U.S. 45,000 children under the age of 15 develop Epilepsy. • A patient’s first seizure will occur without warning. • EPILEPSY IS NOT CONTAGIOUS. • Medications do not cure epilepsy, but they may help control or prevent seizures. Medications help between 50-70% of patients. • In Texas, if you are diagnosed with Epilepsy, your doctor must certify that you are seizure free for a period of 6 months before you can drive again. • The color for Epilepsy Awareness is Purple. • THERE IS NO CURE FOR EPILEPSY… YET! You can learn more and help find a cure at www.epilepsyfoundation.org.

Want to be the perfect holiday host or guest? Check out these tips on holiday entertaining: If you are the host: • Whenever anyone offers to help or bring a dish, say, “Yes, thank you!” • Use hollowed bread loaves as serving containers for cheeses, dips, olives, chips and small sandwiches. • Once the table settings and centerpiece are in place, sit in each chair to assure comfort • Include favorite kids’ foods, especially those they can eat neatly with their fingers. • Provide at least one low-calorie dish and a vegetarian option. Then serve a sinful dessert. • Completely clear the table of all dishes from previous courses before serving dessert. • Keep club soda nearby to clean spots or stains on the tablecloth or clothing. If you are a guest: • Arrive no earlier than the time the host has announced and no later than half an hour after the time. • Plan to stay about an hour after dinner unless travel plans or sleepy children necessitate leaving earlier. • Bring a gift and write a note of thanks afterward. • Offer to help set up for dinner and to clean afterward. • Notify the host of any special dietary needs - if you are a vegetarian, diabetic or allergic to common foods. • The best potluck dishes are those that need minimal preparation in the host’s kitchen, can be served at room temperature and require only a fork to eat.

Local Veteran Groups Meet If you are an honorably discharged War Time Veteran or currently serving on active duty and want to associate yourself with fellow Veterans, please consider joining one of the following groups. (Each organization has its own requirements for membership.)

Recycling Lake Forest, Lake of Buckingham and Best Trash take great pride in their recycling program and efforts. Recycling takes time and effort on both sides. Best Trash will collect papers, plastics, aluminum and tin cans and glass that are placed within the provided recycling bin. Please remove caps, liquids and food products from inside the containers. Best Trash will recycle any plastic container which has a number (1-7) printed on it within the recycling logo. They DO NOT recycle grocery sacks, newspaper delivery sacks, nor the plastic wrap enclosing 24 packs of water bottles, dog food, etc. They DO NOT recycle light bulbs. If items exceed container capacity, please place them adjacent to bin well marked as recycling materials. If you find items left in your bin, it means they are not recyclable. Please dispose of these items in your trash container for the next scheduled pick up. Please only use the recycle bins for recyclable materials, not as an extra trash container.

Lake Forest of Kelliwood Help Our Security Guards Help You!

Homeschool Pack 393

We have chosen to have 24 hour security in our neighborhoods because we want to be safe. With a little help from all of the residents, we can make our security even better!

Cub Scout Pack 393 is a homeschool pack that serves the Katy area. If you have a boy between the ages of 6 and 10 (entered first grade through fifth grade this fall) and are wanting them to join an activity that is full of fun learning experiences, this is the group for you. To learn more about both scouting programs, upcoming summertime events and 393 please e-mail Sam Randolph at sumosam@sumofam.com.

1. Every resident needs to have a clicker in every car to open the gate. If you do not have one, please contact Crest Management to find out about getting one. Contact Heather with Crest Management at 281-579-0761 ext. 636. If you choose not to have a clicker, you will be stopped at the gate and the guard will have to check you in the same way they would check a guest in.

2

The Lakes in Katy

November 2011

2. Do not open the gate from across the road. When the gate opens, cars waiting in line can simply drive in the gate. The guard has no way of stopping them. 3. If you are expecting someone to come to your house, you might want to think about calling the gate and letting the guard know. This helps to expedite things. For example, if you order a pizza, either call the guard to let them know it is okay to let the pizza delivery person in or at the very least, answer your phone if the guard calls. In the future, anyone who does not receive permission to enter the neighborhoods will not be allowed through the gate. 4. Update your lists for the guards of everyone who is allowed access to your property without a phone call. If the person is not on your list and the guard cannot contact you, they will be turned away. 5. If you are having a party, please give a list of your guests (preferably in alphabetical order) to the guard on duty. If the guard does not have a list, they will call you for every person who comes to the gate. If you do not answer the phone, the guard has been instructed NOT to let them in. The LF HOA has asked our security company to attend the September Board meeting. Many issues will be discussed with the sole purpose of making our two neighborhoods the safest and most wonderful places to live in Katy. You will be notified of any additional changes to the post orders for our security guards. Thank you for your cooperation!

McMeans Jr. High 7th grade students recently made animal cell replicas in very different ways. Each student created a model of a cell and labeled the organelles. They had to know the function of each organelle. Shane’s cell was constructed on a base of wood with a working electronic panel. Corresponding buttons show the parts and light up when pushed. Journi’s cell was very colorful and constructed in a bucket. The cells were on display in the library for all the students to see.

MCMEANS STUDENTS ARE All decorated and ready for school! McMeans Jr. High 7th grade student, Robin Poole, has her locker all decorated and organized for school. Several students used their interior design skills to make their lockers more like home before school started. Robin decorated with cute paper that is held up with matching magnets, matching accessories and a small purple matching rug.

KEYS Mentoring One mentor, one student, one hour per week. KEYS brings adult role models into Katy ISD schools to motivate, encourage and inspire students on the brink of success. Mentors meet with their student on campus at a pre-designated time each week. As mentor and student build their relationship, they decide together how to spend their mentoring time. Whether spent playing games, reading or just talking, that one hour a week makes a tremendous difference in the life of a child. To be a KEYS Mentor, you need: • A belief in the potential of every child • Criminal history background check in compliance with the FCRA • One hour per week to spend with a child, on campus during the school day, during the school year • Participation in a brief campus KEYS orientation before you begin • Successful completion of a KEYS application and subsequent approval process

Students Continue the Tradition of Strong Performance on AP Exams Katy ISD’s tradition of increasing student participation and strong performance on Advanced Placement (AP) exams continues as the district recently learned that each one of its six high school campuses showed an increase in the number of students participating in the exams. In addition, every high school campus exceeded the state and national percentage of AP students making a qualifying score of 3 or better on the exams. Katy ISD is among the 388 U.S. public school districts (one of only 23 in Texas) to be listed on the 2011 College Board AP Achievement List. This list identifies districts that simultaneously achieved increases in access to AP courses while maintaining or improving the rate of students earning a score of 3 or better on the exams – the score that generally qualifies a student for college credit. In May 2011, more than 3,000 Katy ISD students took more than 7,200 AP exams, with 79 percent of the exams earning a score of 3 or better. This reflects a 24 percent increase from 2010 in the number of exams earning these high scores. Advanced Placement and PreAP courses are designed to challenge students beyond grade level academic courses and prepare them for success in future advanced coursework. Katy ISD recognizes that support and encouragement from the campus, the teacher, and parents are critical to student success. Therefore, the district follows an inclusive enrollment model for AP and PreAP courses that provides support systems for student success. Katy ISD offers AP courses in English, mathematics, science, social studies, fine arts, computer science and languages other than English. For more information about AP or PreAP, visit www.katyisd.org/gt.

Community Education Community Education offers evening and on-line classes to adults for fun, enrichment and learning. Some of the classes offered are Foreign Languages, Arts and Crafts, Finance, Computer, Sewing, Dance and Music. For information on these and many other classes and to view the fall schedule, go to www.katyisd.org/com_edu or call 281-396-6365.

CY-FAIR CHAMBER OF COMMERCE 2011 Mobility Forum

Chamber members and non-members are invited to participate in the discussion on how the region addresses mobility challenges in the face of continued growth. There will be two sessions with a luncheon in between. The featured speaker is Commissioner Ned J. Holmes. Holmes is a commissioner of the Texas Transportation Commission, which oversees statewide activities of the Texas Department of Transportation. Additional forum speakers will be: Steve Clark, PE, ARUP; Mark Ellis, Gulf Coast Rail District and Texas State Representative Allen Fletcher. Currently, the chamber is working with the Texas Department of Transportation on the re-designation application process of U.S. 290 to an interstate status. The status change could possibly allow additional federal funds toward the proposed improvements of U.S. 290 along with allowing greater visibility for domestic and international firms seeking to relocate in the Cy-Fair Houston market sector. In addition, the construction of the SH 99; Segment E (I-10 West to U.S. 290) has begun with an anticipated completion over the next 18-24 months. Once completed, Segment E will allow an alternative route for commuters and businesses along U.S. 290 traveling to the West Houston Energy Corridor. The Mobility Forum will be Thursday, November 3rd from 10:30 AM to 2:00 PM at the Berry Center, 8877 Barker Cypress. Individual tickets are $60 and sponsorship tables of 10 range from $600 to $2,500. Lunch will be served. For more information, contact Casey Cargle at 281-3731390 or casey@cyfairchamber.com or visit www.cyfairchamber.com.

Living Word Lutheran Church in Katy is pleased to announce that Lisa Jastram of Sugar Land, TX, has joined the staff as the 9:30 AM contemporary worship leader. Jastram is no stranger to the Katy area having performed in many of the area churches, libraries and schools with Oasis for Children, her educational entertainment venture. She comes to Living Word at an exciting time in the life of the church as they complete their Envision Project begun less than a year ago. The church has been installing new lighting, screens, projectors and systems upgrades to maximize possibilities for meaningful and exciting worship. Sept. 25th was the first Sunday for the congregation to experience the new amenities. One of Jastram’s goals were to make the service more intergenerational and family friendly. She also hopes to see more of the arts incorporated into worship including dance and visual arts. Previously, Jastram has led the musical portion of worship at St. Martin’s Lutheran in Sugar Land, New Hope Lutheran in Missouri City and Grace UCC in Alief. Her background as a missionary child raised in Japan matches well with Living Word’s emphasis on global mission.

Slow Cookers are a Cook’s Best Friend By The Paula Deen Test Kitchen

More leisure time and a homemade meal? Save money on groceries, use less electricity, and enjoy better flavor? You bet! And with a slow cooker, you don’t even have to be there while your dinner cooks. With the invention of the original Crock-Pot® in the 1970s, we’ve been able to layer ingredients in our slow cookers, leave the house for work or play, and come home, hours later, to an inviting aroma-filled house and evening meal. Rival still manufactures the Crock-Pot®, but many other manufacturers are in the game with competitive models. The “crockpot” moniker has become an icon for any slow cooker. These days, choices are not limited to 2-temperature manual units; they also come programmable, with multiple time and temperature settings, countdown timers, built-in thermometers, and automatic temperature shifts to warm in case you are late getting home. There are slow cooker sizes and settings to fit your family’s individual needs. Though shape is not necessarily a deal breaker when purchasing, it is a consideration. A money-saving attribute of slow cooking is that tougher, less expensive meats are rendered meltingly tender and juicy. Larger roasts and whole chickens fit better into an ovalshaped model and will cook more evenly, although you can trim them to fit into a round one. It’s easy to adapt your favorite oven or stovetop recipes to slow cooker cooking. Regardless of yield, if your dish normally cooks in 15 to 30 minutes, you can count on 1 1/2 to 2 1/2 hours cooking in a slow cooker on High power or 4 to 6 hours on Low. If it takes 35 to 45 minutes, you should allow 2 to 3 hours on High power or 6 to 8 hours on Low. Main dishes like roasts and stews that cook up to 3 hours will take 4 to 5 hours on High or more than 8 hours on Low. For instance, Sweet Merlot Beef Stew should cook in about 4 hours on High or 8 to 10 hours on low; after you brown the meat, add everything to the slow cooker for the total cooking time, including the onions and mushrooms. Other tips for successful recipe conversion: *To eliminate excess fat, remove skin from poultry and trim excess fat from meats before cooking. Pre-brown meats, and drain before adding to the crockpot, especially ground meats.

KATY PAINTING

*Brown chops and roasts to caramelize the outsides for richer flavor and attractive appearance. For Low Country Smothered Pork Chops, prepare the chops as directed and layer in the cooker with the strips of green pepper, onion, garlic, half of the broth, and Worcestershire. Add more broth as needed to thin the gravy.

Interior & Exterior Painting Home Repairs • Pressure Washing HardiPlank Installation • Sheetrock & Texture

*Vegetables, especially roots like potatoes, rutabagas, and carrots, cook more slowly than meats, so cut pieces uniformly and add them at the beginning. (It can take 8 to 10 hours on Low for a “baked” potato to cook until tender!) Italian Chicken and Vegetable Soup is a perfect example; just put all the ingredients into the slow cooker, reserving half a can of broth to add at the end of cooking, if necessary. Let it cook 2 to 2 1/2 hours on High or 4 to 6 hours on Low. *Most stews, soups, and other braised dishes require less liquid. If you end up with too much, pour it into a saucepan and reduce it until flavorful and thickened. If you need more liquid, it can be added at the end of the cooking time. *Cheese, milk, cream, and other dairy: Add dairy products close to the end of cooking. *Uncooked rice, however, requires standard liquid amounts. It cooks fast, so add it to the slow cooker during the last hour of cooking on High or 2 hours on Low. It is better to cook pasta separately and add it before serving. *Most slow cooker liners are removable, allowing you to fill it up to a day before cooking. Remove the stone liner and assemble the casserole in it; cover and refrigerate until you are ready to cook. You can prepare Chicken and Rice Casserole ahead and cook it 1 1/2 to 2 hours on High or 4 to 6 hours on Low or until it is hot, stirring in cheese during the last hour of cooking. *Spices tend to loose their power during long, slow cooking; be ready to re-season towards the end.

Tips for “Black Friday” Black Friday is the day after Thanksgiving and is known as the busiest shopping day of the year. The name comes from an accounting term - red ink means a negative profit margin; black ink means a positive profit. Check out these tips on maximizing Black Friday: 1. Check Out the Ads: Your local Thanksgiving Day newspaper will be packed with ads, coupons, and circulars. This will be your number one source to local Black Friday savings and it will also help you organize your day to maximize savings. 2. Do Your Research Before Friday: If you are hoping to scoop up a deal on Friday on a big-ticket item, get your research out of the way asap. Being knowledgeable about the products you want to buy will help you avoid being sucker-punched with loud advertising for poor products. 3. Compare Prices: Utilize price-comparison Internet shopping sites to assist you in comparing product prices. Compare the “options” included with the product. Some retailers will low-ball the advertised price on a stripped down product and then you will be charged extra for the necessary parts. 4. Early Bird Shopper Discounts: The Early Bird Shopper is the real winner on Black Friday. Stores offering Early Day Shopper Specials, but with no “rain checks”, which means once they run out of the products, you are out of luck. 5. Night Owl Discounts - Thanksgiving Eve: Internet shoppers can beat the Early Birds by shopping online in the pre-dawn hours of Black Friday. Many retailers will be posting their Black Friday specials, which can be ordered, online and picked-up at your local store. Special “Web Only” deals will also be available starting as early as Thanksgiving eve. 6. Bring the Ads: Many stores offer a “lowest-price” guarantee; be sure to bring a copy of the exact product being advertised for less. 7. Know the Store Policies: Knowing the store policies on returns can help you determine where to buy. Many retailers are including restocking fees and shorter return deadlines. Almost all of the major retail chains require receipts for returns and exchanges and many keep a database of individuals who abuse return policies. 8. Gift Receipts: Gift receipts generally include a description of the item purchased but do not disclose the price paid. Including a gift-receipt should help insure a hassle-free return experience for gift recipients. 9. Cash is King: Enough said.
