GARDENING TIPS FOR FEBRUARY

FLOWERS • Plants to set: Alyssum, Calendula, Canterbury Bells, Carnations, Columbine, Cornflower. Daisies, Delphinium, Hollyhock, Larkspur, Lobelia, Nicotiana, Pansy, Petunia, Phlox (Louisiana), Shrimp Plant, Snapdragon, Stock and Verbena.

VEGETABLES • Plant beets, broccoli (plants), brussel sprouts (plants), cabbage (plants), carrots, cauliflower (plants), celery, chinese cabbage (plants), chives collards (plants), endive, kale, lettuce (leaf and head), mustard, onions (plants), parsley, garden peas, radishes, rutabagas, spinach, tomato (seeds) and turnips.

TREES AND SHRUBS • Finish all transplanting, get everything in the ground for a good spring spurt of growth. Transplant balled and burlap, containergrown, bare-root deciduous evergreen trees, shrubs, roses and vines while still dormant.

• Finish pruning roses. Weed and cultivate lightly all beds. Replenish mulch as needed.

• Control early spring insects like thrips on glads and aphids on young tender growth. Spray with Malathion, Diazinon or Orthene.

• At the end of February: peach, apple and pear fruit must be thinned to insure quality production at harvest.

• Give groundcovers a haircut. They will spread faster.

• Divide daylilies, daisies and other perennials now.

January Seasonal Produce

Beets. Choose beets that are firm with a deep red color, smooth surface and slender tap root. You can also judge freshness from the condition of the beet tops. Wilted or decayed greens may indicate a lack of freshness. However, beets that remain firm to the touch, rather than wilted or soft, may still be good. Beets can be stored refrigerated in a plastic bag or vegetable crisper for about 1-2 weeks.

The greens should be removed prior to storage. If eating the greens, be sure to thoroughly wash them in cold water. Beet greens will keep refrigerated for about 3-5 days.

Broccoli. Fresh broccoli should have fresh-looking light green stalks of consistent thickness. Bud clusters should be tight and dark green, sometimes with a purple hue. Avoid broccoli with tough stems or open, flowering bud clusters. Fresh broccoli will keep refrigerated in the crisper for up to 3 to 5 days.

Cabbage. Cabbage heads should be firm and heavy for their size.

Look for crisp blemish-free leaves with an even color that clings tightly to the head. Cabbage will absorb odors of other foods. Refrigerate uncut and unwashed in a plastic bag or container for up to seven days.

Carrots. Look for carrots that are well-shaped with firm, smooth exteriors. Colors should be vibrant orange to red orange although there are white and even maroon varieties of carrots available in specialty markets. Tops are typically trimmed closely since the leafy greens decay rapidly and contribute to the decline of the carrot itself.

Flabby, soft or wilted carrots, or those that show any mildew, decay, growth cracks or splits, should be avoided. When purchasing fresh carrots with tops, remove the tops and store unwashed in a plastic bag in the refrigerator for up to 2 weeks.

Celery. Choose stalks with rigid ribs that snap crisply when bent. The inside surface of the ribs should be clean and smooth. Leaves should be fresh with no signs of wilting. Refrigerate covered, unwashed celery for up to 2 weeks. Leave the ribs attached to the stalk until ready for use.

Grapefruit. Choose grapefruit that are heavy for their size and well shaped. The skin should be smooth with a blemish-free outer peel.

Don’t worry about any slight greening of the skin after harvesting; it does not affect the quality of the fruit. Surface marks that result from the fruit being wind-brushed against the tree do not affect the quality of the fruit either. Keep refrigerated. The fruit will keep for 7-10 days.

Grapefruit does not ripen further after harvest.

Siding Products

Greens. Cracked ice around and in packages may help extend shelf life. Keep at proper humidity levels to prevent wilting. Collard greens should be handled like spinach. Kale will freeze at 31° F, -.6° C. Do not store or transport ethylene-sensitive items with commodities that produce ethylene. Two can be lightly frozen several times without sustaining serious damage.

Herbs. Typical shelf life: bag, 5+ days; tub, 7+ days when stored at the proper temperature.

Mushrooms. Look for firm, evenly colored mushrooms. Avoid those that are broken, damaged or have soft spots, as well as those that seem damp. A good mushroom will have a good smell. Store fresh mushrooms, unwashed, in the refrigerator for up to three days.

Oranges. Reach for firm fruit that is heavy for its size. Take a sniff too. There should be a distinct citrus aroma. Avoid shriveled or soft fruit. Keep your oranges at room temperature. They should last for about two weeks. Make sure to turn them often and check for signs of mold, especially in a high humidity environment.

Spinach. Choose leaves that are crisp and dark green in color with a nice earthy fragrance. Avoid limp, damaged leaves with yellow spots.

Refrigerate unwashed spinach in a plastic bag for up to three days.

Before using, rinse thoroughly to remove grit.

Squash. For summer squash like zucchini and yellow squash, look for blemish-free skins and average size selections. Overly large choices may be stringy with tough exteriors. For winter squash such as pumpkins, look for shells without crack, bruises or decay.

Pumpkins should be fully ripe with firm rinds, bright orange color and heavy weight. Summer squash can be stored refrigerated for 3 to 5 days. Winter squash can be stored whole in a cool (50 to 60 degrees F) dry area for several months.

Sweet Potatoes. All varieties of potatoes should be uniform in size, clean, firm and smooth. Avoid potatoes with wrinkled skins, soft dark spots and cut surfaces. A green tinge - indicative of prolonged light exposure - is caused by the alkaloid solanine, which can be toxic if eaten in quantity. Store potatoes in a cool, dark and airy place uncovered. They will keep for several weeks.

Turnips. Look for smooth-skinned, firm turnips that are heavy for their size. The color will be light-purple on the top fading to bright-white at the bottom. Avoid turnips that are soft, spongy or blemished. Cut off turnip greens and bag them separately for storage (greens keep for just a few days). Roots can keep for about a week when placed in a plastic bags in the refrigerator. www.picktexas.com

Groundhog Day

Groundhog Day, February 2nd, is a popular tradition in the United States. It is also a legend that traverses centuries, its origins clouded in the mists of time with ethnic cultures and animals awakening on specific dates. Myths such as this tie our present to the distant past when nature did, indeed, influence our lives. It is the day that the Groundhog comes out of his hole after a long winter sleep to look for his shadow. If he sees it, he regards it as an omen of six more weeks of bad weather and returns to his hole.

If the day is cloudy and, hence, shadowless, he takes it as a sign of spring and stays above ground.

The groundhog tradition stems from similar beliefs associated with Candlemas Day and the days of early Christians in Europe and for centuries the custom was to have the clergy bless candles and distribute them to the people. Even then, it marked a milestone in the winter and the weather that day was important.

According to an old English song: If Candlemas be fair and bright, Come, Winter, have another flight; If Candlemas brings clouds and rain, Go Winter, and come not again.

According to an old Scotch couplet: If Candlemas Day is bright and clear, There’ll be twa (two) winters in the year.

Another variation of the Scottish rhyme: If Candlemas day be dry and fair, The half o’ winter to come and mair, If Candlemas day be wet and foul, The half of winter’s gone at Yule.

The Roman legions, during the conquest of the northern country, supposedly brought this tradition to the Teutons, or Germans, who picked it up and concluded that if the sun made an appearance on Candlemas Day, an animal, the hedgehog, would cast a shadow, thus predicting six more weeks of bad weather, which they interpolated as the length of the “Second Winter.”

Pennsylvania’s earliest settlers were Germans and they found groundhogs to in profusion in many parts of the state. They determined that the groundhog, resembling the European hedgehog, was a most intelligent and sensible animal and therefore decided that if the sun did appear on February 2nd, so wise an animal as the groundhog would see its shadow and hurry back into its underground home for another six weeks of winter.

This passage may be the one most closely represented by the first Punxsutawney Groundhog Day observances because there were references to the length of shadows in early Groundhog Day predictions.

Another February 2nd belief, used by American 19th century farmers, was: Groundhog Day - Half your hay. New England farmers knew that we were not close to the end of winter, no matter how cloudy February 2nd was. Indeed, February 2nd is often the heart of winter. If the farmer didn’t have half his hay remaining, there may have been lean times for the cows before spring and fresh grass arrived. The ancient Candlemas legend and similar belief continue to be recognized annually on February 2nd due to the efforts of the Punxsutawney Groundhog Club.

RECIPES Three Cheese Chicken Bake

INGREDIENTS: 1/4 cup chopped onion 1/4 cup chopped green pepper 1 tbs and 1-1/2 tsp butter or margarine 1/2 (10.75 ounce) can condensed cream of chicken soup, undiluted 1/2 (8 ounce) can sliced mushrooms, drained 1/2 (2 ounce) jar chopped pimientos, drained 1/4 teaspoon dried basil 1/2 (8 ounce) package noodles, cooked 1-1/2 cups diced cooked chicken 1 cup ricotta or cottage cheese 1 cup shredded Cheddar cheese 1/4 cup grated Parmesan cheese 2 tablespoons buttered bread crumbs DIRECTIONS: In a skillet, sauté onion and green pepper in butter until tender.

Remove from the heat. Stir in the soup, mushrooms, pimientos and basil; set aside.

In a large bowl, combine noodles, chicken and cheeses; add mushroom sauce and mix well. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees F for 40 to 45 minutes or until bubbly. Sprinkle with crumbs. Bake 15 minutes longer.

INGREDIENTS: 4 large baking potatoes, baked 3 tablespoons vegetable oil 1 tablespoon grated Parmesan cheese 1/2 teaspoon salt 1/4 teaspoon garlic powder 1/4 teaspoon paprika 1/8 teaspoon pepper 8 bacon strips, cooked and crumbled 1 1/2 cups shredded Cheddar cheese 1/2 cup sour cream 4 green onions, sliced

DIRECTIONS: Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use). Place potatoes skins on a greased baking sheet. Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper; brush over both sides of skins. Bake at 475 degrees F for 7 minutes; turn. Bake until crisp, about 7 minutes more.

Sprinkle bacon and cheddar cheese inside skins. Bake 2 minutes longer or until the cheese is melted. Top with sour cream and onions.

Serve immediately.

VIPS (Volunteers in Public Schools) in Cy-Fair ISD center the attention of their service on supporting students and staff and making a significant contribution to the education of children. BAILADORAS BEGIN CONTEST SEASON

After a football season filled with great half-time performances, the LCHS Drill Team got right to work on competition dances. They kicked off the Contest Season at the Crowd Pleasers Winter Showcase held at Dulles High School on December 10th. This competition focused on solos, duets, ensembles and officer groups.

Dance officers Nicole Miller, Paige Houghtaling, Amy Redmond, Anna Berry and Kourtney Zarker received several awards in the Officer category including Best in Class for their Lyrical, Modern and Novelty routines as well as Outstanding Choreography and Crowd Pleaser awards for Lyrical. Officer Jazz received 2nd Runner Up. The officers earned Super Sweepstakes status for 3 routines scoring over 90 and were declared Grand Champions in the Officer Category.

Social officers Alexis Karis, Victoria Petruzzi, Lizzie Stallings, Margo Elder and Erin Poerschke received 2rd Runner Up in that category.

Elisa Kelley was a finalist in the Senior Solo Division. Kingsley Credeur and Maddie Sheedlo received 1st Runner up in the Duet Division.

Nicole Miller, Amy Redmond and Elisa Kelley received 2nd Runner Up in the Trio Division. Two Small Ensembles received awards including: Paige Houghtaling, Jessica Jansen, Lauren Montalbano and Kourtney Zarker (1st Runner Up) and Kingsley Credeur, Courtland Klein, Maddie Sheedlo and Katelyn Vincik (2nd Runner Up).

Fun, Fair, Positive Soccer Spring Registration Now Open Registration for Fun, Fair, Positive Soccer (FFPS) is open for boys and girls ages 4 to 18 for the spring season. Games start on April 7, 2012. FFPS offers children a fun and fair experience, including one practice per week, a full uniform and trophy for every player, equal playing time, opportunities to play every position, co-ed/balanced teams, positive coaching and more. No tryouts are required.

Registration fee includes a full uniform (shirt, shorts and socks), trophy, trained positive coaches, nice fields and background checks on all volunteers. All major credit cards are accepted.

All Twelve Viper Patrol members achieve Arrow of Light! Pack 435 celebrated the graduation of twelve fifth grade cub scouts of the Viper Patrol from Copeland Elementary Pack 435 in December 2011. These boys all earned the highest achievement of Cub Scouts, the Arrow of Light They were treated to a wonderful campfire ceremony to celebrate their achievement performed by Boy Scouts from the Order of the Arrow. Later, at the Pack meeting, they received their awards, watched by family and friends and the Pack 435 community. All these boys will now move on in their lives, having made friends and shared many experiences in Cub Scouts that will set them on the right path. Ten of the group have already chosen to move forward with local Boy Scout Troops. Congratulations to them all. The Cy Falls High School 2012 Project Prom committee is excited to announce our annual Casino Night, “Denim & Diamonds,” to be held on Saturday, February 18, 2012. The Cy-Fair Women’s Club held its first business meeting for the year on January 5th. On February 2nd, we plan to continue our business meeting and hope to play Bunco if time permits. During the beginning portion of our February meeting we will have Nancie Craft visit with our group to offer us great deals for Rodeo Carnival Tickets.

We are looking forward to visiting with her.

CWC is a service organization that gives back to the community, so all funds raised will go right back to the community in scholarships for graduating high school seniors, at Lone Star College, Cy-Fair and grants to other non-profits in our community, as well.

Membership for the Cy-Fair Women’s Club is open to all ladies in Northwest Houston/Cypress neighborhoods. Currently we meet the first Thursday of most months at West Houston Church of Christ.

Our meetings begin with social time and refreshments at 7:00 PM immediately followed by a program at 7:30 PM. The church is located at the corner of Queenston and West Road.

For more than 50 years fire fighters have helped MDA by filling their boots with donations from the citizens of their community. Houston Professional Fire Fighters Local #341 will begin their 2012 Fill-theBoot fundraising campaign for the Muscular Dystrophy Association on Saturday February 11, 2012 during the hours of 10 AM and 2 PM. Fire Fighters will also be out March 10th, April 14th and May 12th to collect funds for the campaign.

The Fire Fighters rely on support and donations from the community for the success of the campaign. On Sunday, February 19th, the Bishop of the Texas Annual Conference of the United Methodist Church, Bishop Janice Huie, will be in northwest Houston to consecrate the new West Road Campus of Cornerstone United Methodist Church. The West Road Campus of Cornerstone United Methodist Church located at 18081 West Road (across from the CFISD Berry Center) currently consists of a worship center and education wing. The 12.84 acre plot of land was purchased by Cornerstone in 2004. The new worship center was opened in October, 2010 and the education wing was opened in August, 2011. Cornerstone’s main campus is located at 15919 Ridge Park Dr. (across from Lowery Elementary School). The Ridge Park Campus is currently up for sale and following the sale of the property, Cornerstone hopes to continue adding to the West Road Campus with the addition of a Phase 3 building project. The “Consecration Ceremony” will be part of the Sunday morning worship service at 10:45 AM. Although Cornerstone normally has three worship services each Sunday, in honor of this special event, there will only be one service that day. Following the worship service and consecration ceremony, Cornerstone will host a “Meet and Greet the Bishop” reception in the education wing. How would you feel if you saved a kid’s life? StandUp For Kids is an all volunteer organization dedicated to saving the lives of at-risk and homeless kids through volunteer outreach efforts. Every day throughout the US thirteen kids die on the streets from abuse, disease and suicide. According to recent statistics Houston has up to 2,500 kids living on the streets at any given time. The Mothers of Young Children (MYC) group was organized by St. Cuthbert Episcopal Church to minister to families with young children throughout the Northwest Houston community. Both stay at home and working parents are invited to participate in the group. The group supports and prays for one another, shares information and ideas on child rearing and builds lasting friendships. Most importantly, MYC’s focus is on God and God’s presence in families.
