RECIPES Texas Brisket INGREDIENTS: 3 1/2 fluid ounces liquid smoke flavoring 1/4 cup ketchup 1 (10 fluid ounce) bottle steak sauce, (e.g. Heinz 57) 1 (3 pound) beef brisket

DIRECTIONS: Line a shallow roasting pan with aluminum foil. Place the brisket on the foil. Stir together the steak sauce, liquid smoke and ketchup. Pour half of the mixture over the brisket, then turn the meat over and pour sauce over the other side. Wrap tightly in a double layer of aluminum foil. Refrigerate for at least 24 hours.

Preheat the oven to 250 degrees F (120 degrees C). Let the roast stand at room temperature while the oven preheats to take off some of the chill. Bake for 6 or 7 hours in the preheated oven. You can leave it in even longer if you turn the oven down to 200 degrees F (95 degrees C). Remove brisket from the oven and slice across the grain. Return to the roasting pan and serve with sauce. INGREDIENTS: 6 cups water 1 cube chicken bouillon 1 pound dried black-eyed peas, sorted and rinsed 1 onion, diced 2 cloves garlic, diced 1 red bell pepper, stemmed, seeded and diced 1 jalapeno chile, seeded and minced 8 ounces diced ham 4 slices bacon, chopped 1/2 teaspoon cayenne pepper 1 1/2 teaspoons cumin 1 teaspoon ground black pepper salt to taste DIRECTIONS: Pour the water into a slow cooker, add the bouillon cube and stir to dissolve. Combine the black-eyed peas, onion, garlic, bell pepper, jalapeno pepper, ham, bacon, cayenne pepper, cumin, salt, and pepper; stir to blend. Lose Weight the Healthy Way! While there is no “one size fits all” solution to permanent healthy weight loss, the following guidelines are a great place to start: • Think lifestyle change, not short-term diet. Think about weight loss as a permanent lifestyle change - a commitment to your health for life. Various popular diets can help to jumpstart your weight loss, but permanent changes in your lifestyle and food choices are what will work in the long run. • Find a cheering section. Social support means a lot. Seek out support - whether in the form of family, friends, or a support group - so that you can get the encouragement you need. • Slow and steady wins the race. Aim to lose 1 to 2 pounds a week to ensure healthy weight loss. Losing weight too fast can take a toll on your mind and body, making you feel sluggish, drained and sick. Celebrate Martin Luther King, Jr.’s Legacy It’s difficult to sum up the contributions of the late civil rights leader Martin Luther King, Jr. in a single day, but it is, nevertheless, a positive thing that America has an official holiday to honor his accomplishments and vision. This special commemoration is generally celebrated on the third Monday of the month of January. In 2012, this commemoration will take place January 16th. The purpose of Martin Luther King Day is to mark the tremendous legacy of an American who fought for freedom, racial equality, justice and peace, never espousing his goals with hatred or violence. He endured many difficulties with amazing courage and worked with the hope of bringing people together in unity. Observations vary from state-to-state, in that some states close schools to honor the holiday, while others still hold classes, but mark the day with special programs, lessons, activities and the like. Special activities are held throughout the country to celebrate Dr. King’s life and contributions.

The Veterans of Foreign Wars (VFW) Post 9182 in Katy, Texas officially re-opened its Veterans Memorial Museum on Saturday, November 19, 2011, after completing major renovations. When the gate opens, cars waiting in line can simply drive in the gate. The guard has no way of stopping them. 3. If you are expecting someone to come to your house, you might want to think about calling the gate and letting the guard know. This helps to expedite things. For example, if you order a pizza, either call the guard to let them know it is okay to let the pizza delivery person in or at the very least, answer your phone if the guard calls. In the future, anyone who does not receive permission to enter the neighborhoods will not be allowed through the gate. 4. Update your lists for the guards of everyone who is allowed access to your property without a phone call. If the person is not on your list and the guard cannot contact you, they will be turned away. 5. If you are having a party, please give a list of your guests (preferably in alphabetical order) to the guard on duty. If the guard does not have a list, they will call you for every person who comes to the gate. If you do not answer the phone, the guard has been instructed NOT to let them in. The LF HOA has asked our security company to attend the September Board meeting. Many issues will be discussed with the sole purpose of making our two neighborhoods the safest and most wonderful places to live in Katy. GARDENING TIPS FOR JANUARY • Birds: Provide food and fresh water. More birds die from lack of water than from lack of food. • Cacti: Semi-dormant now. Reduce watering. • Camellias: Plants may be moved. Pick up and discard fallen blooms. • Cultivation: Changes in design may now be made, new beds dug and old ones rebuilt. Correct defects in drainage. Incorporate gypsum into heavy soils: repeat in three weeks. Dig granite dust, rock phosphate and quantities of organic matter into soil. Allow time for settling before planting. • Fertilize: Daylilies, spuria, Louisiana and bearded irises with complete fertilizer. Give strawberries 1 teaspoon ammonium sulfate, keeping six inches away from plant. Fertilize pansies with manure tea or blood meal. Water in. • Fruits: Plant fruit trees. Mulch figs with grass or straw to prevent freeze damage to crown. • House Plants: Water, when surface soil is crumbly dry. Wash dust off leaves to open pores. Mist often. Inspect for diseases and insects. Reduce water for poinsettias. • Lawns: Remove thatch aerate, and feed with low nitrogen mixture.

• Pests: For petal blight prevention, spray azaleas and camellias as flowers open. Spray for scale with dormant oil solution if temperature will be above 35˚ and below 85˚ for next 48 hours. Always read and heed manufacturer s directions before spraying. • Propagation: Ivy cuttings root easily this month and next. Root cuttings of shrubs in mixture of loam and coarse sand; keep damp and semi-shaded until rooted. • Prune: Fruit trees in advance of new growth. Prune to groom and shape. Do not remove too much. Remove dead wood from trees and shrubs before spring buds swell, but do not prune spring bloomers. Prune crape myrtles. Prune nandina and others of similar growth habit by cutting unwanted canes out at base of plant. • Roses: Annual pruning about the middle of February, just before the spring buds break. To prevent later appearance of disease in the old beds, keep garden clean of debris and weeds. Complete preparation of new beds for roses. • Transplanting: January is one of the best months to transplant woody plants, both evergreen and deciduous, especially trees. Energy will be expended on roots instead of foliage. Learn ultimate size and cultural needs of tree or plant before buying. Consider dwarf varieties to avoid crowding later. Group plants of similar cultural needs. Do not work wet soil. Assure good drainage. Keep plants moist. • Vegetables: Prepare beds, preferably raised for drainage, with about 50% humus, including rotted manure. • Winter Protection: Expect freeze any time; plan for protection of tender plants. Water. Remove coverings, particularly plastic, when temperature rises. Protect low plants with dry leaves, pine needles or soil mulch, but remove when weather warms.

Kindergarten students at Pattison Elementary participated in a theme day called Wacky Wednesday. They dressed up Wacky and during their writing lesson they focused on spaces, lowercase letters after the beginning of a sentence, periods, using the word wall, etc. It was a fun day filled with all things Wacky!

There were many outstanding potatoes, so special guess judges helped determine a winner at each grade level. The winning students received a gift certificate to use at the upcoming Fall Book Fair. Cinco Ranch Students “Scare Away Hunger” Members of the Future Business Leaders of America at Cinco Ranch High School decided they would take a stand in the fight against hunger instead of trick or treating this year. The group spent their Halloween collecting nonperishable foods for needy families in the Katy Independent School District for the annual “Scare Away Hunger” campaign. The students, led by sponsor John Bryan, split into six groups and hit the pavement asking their neighbors to donate canned foods to their project. Under the direction of club co-presidents Ashley Ramsey and Selena Ibeig, the group collected 1,369 cans for their local chapter.

The response was phenomenal and group members say they exceeded their expectations. The students gathered at the Red Oak Grill on Mason Road in Katy on the evening of Halloween to drop off and package the goods. They also enjoyed a nice meal and held a costume contest, judged by the restaurant‘s employees. Later, they counted and transferred the cans into boxes and loaded them into two big trucks to be delivered to Katy Christian Ministries. Group members say they are happy to do their part to assist the local food banks that are already stretching their resources to meet growing demands in a weak economy.
CINCO RANCH HIGH SCHOOL CRHS Choir Students Advance to Region Congratulations to the Cinco Ranch High School choir students who participated in the second round of auditions for a chair in the Texas Music Association’s All-State Choir. The students pictured each earned a chair in either the Mixed or Treble Region Choirs. Of these students, 28, will advance to the Pre-Area audition for the Texas All-State Choir. Demographic Update Shows Continued Growth for Katy ISD
During the October 24th Board of Trustees meeting, Dr. Pat Guseman, president of Population and Survey Analysts (PASA), presented the 2011 Demographic Update that shows steady growth for Katy ISD, at a rate of approximately three percent each year over the next five years. While slightly slower than the rapid growth experienced between 2001 and 2009, the report shows approximately 23,000 additional students moving to the district during the next 10 years. Firethorne has committed to Katy ISD’s Partners in Education (PIE) as the first KEYS Scholarship Platinum Sponsor for 2011. As a KEYS sponsor, Firethorne is helping to create scholarships for students who have participated in KEYS through their senior year. This is the first year that PIE has opened sponsorship levels for KEYS, with 100 percent of the sponsorship dollars going directly to KEYS Scholarships. Former KEYS student Eduardo Reyes and his KEYS mentor Jim Burns visited Firethorne representatives last week to thank them for their generous support. The KEYS (Keep Encouraging Youth toward Success) mentor program is offered to Katy ISD students who are on the brink of success. Often, these students have been challenged by life circumstances outside of their control. Mentors meet with their students on campus each week during the school year, in between the school day. When Reyes’ mentor first met him, it wasn’t with the intent of becoming his mentor, it was with the intent of helping him organize his backpack, locker and life. After several weeks of helping Reyes get organized, Burns naturally fell into the role of becoming his mentor. For the next six years, Burns helped Reyes recognize his gifts, talents, intelligence and encouraged him to pursue his dreams. Firethorne, a 1,400-acre residential community in Katy/Fulshear, is actively involved with Katy ISD through programs such as Junior Achievement and the Partners in Education annual Promise to Read and Food for Families programs. Firethorne is located near the crossroads of I-10 west and FM 1463. KEYS’ annual event Ties & Tiaras, hosted at Agave Road on March 1, 2012, will celebrate mentors while supporting the KEYS Scholarship Fund. Featuring student performances throughout the come-and-go event, the 2012 Mentors of the Year will also be announced. Hundreds of gifted and talented elementary students enjoyed getting together at the Katy Parents of Gifted & Talented (KPGT) GT Create Date, to make puppets out of recyclable materials. Students and parents let their imaginations loose as they turned trash to treasure at this fun event co-sponsored by KPGT and KISD. Led by professional puppeteer Greg Ruhe from Puppet Pizzazz and professional artist Taylor Perry, the children enjoyed an inspiring and hilarious puppet show before launching into their own creations. The Katy Parents of Gifted and Talented (KPGT) organization was formed in 1987. It is a non-profit organization. KPGT aims promote the welfare of gifted and talented students by empowering KISD families and educators with information, resources, tools and voice to ensure opportunities that encourage gifted students’ passion for learning. POPE JOHN XXIII HIGH SCHOOL STUDENTS WIN BIG AT TAPPS STATE CROSS COUNTRY CHAMPIONSHIPS: Senior Aaron Murray and Junior Maria Gonzales won medals at the TAPPS State Championship Cross Country Meet in Waco, Texas. Murray, who joined the Pope John cross country team just last year, took home the first place medal for the second time. His 4,800 meter course time of 15:30.6 minutes was the fastest time across all divisions. This first place win earned him the title of Boys 4A State Champion for the second year in a row. Junior Maria Gonzales took second place in the 4A Girls Division, running the 3,200 meter course in 12:20.5. This is Maria’s first year to place at the state meet and only second to participate, with a 3-minute improvement over her time in 2009 as a fresh man. Pope John XXIII lead runners Dylan Brokmeyer and Maria Gonzales near the finish line in San Antonio’s Rock ‘N’ Roll Half Marathon.

Katy Bulldogs Win World Series The Katy Bulldogs 12U Elite Baseball team was able to prevail in the National Cooperstown Tournament of Champions World Series in Oneonta, New York during the week of July 16-22, 2011. In facing

some stiff competition from all across the country, their record for the week was 9-1-1, finishing off the series with a 17-7 win over the OC Hitmen from California in the championship game. Every member of the team contributed to the week’s success with key defensive plays, consistent pitching and a total of 44 homeruns throughout the week. The Katy Bulldogs consisted of players from all over the Katy and Bellville areas: Tyler Cauchy, Connor Fay, Jared Inlow, Connor McIntyre, Caleb Mendoza, Trey Morris, Devin Pitre, Carter Smith, Matthew Stockard, Kaleb Thompson, Garrett Walker and Matthew Zuniga. Coaching staff included: Macky McIntyre, Gene Thompson, Cody Guidry and Javier Mendoza. Along with a few roster changes, the Katy Bulldogs have moved up to 13U Premier level and are now known as the Texas Sluggers. Houston Fire Fighters Making Houston the City with the Biggest Heart FOR MDA It’s official, Houstonians through the Houston Fire Fighters raised a record breaking $509,961 for the Muscular Dystrophy Association making them the #1 Fill-the-Boot department in the country for the last 9 out of 10 years raising more than $6.3 million during that time.

For more than 50 years fire fighters have helped MDA by filling their boots with donations from the citizens of their community. Houston Professional Fire Fighters Local #341 will begin their 2012 Fill-theBoot fundraising campaign for the Muscular Dystrophy Association on Saturday February 11, 2012 during the hours of 10 AM and 2 PM. Fire Fighters will also be out March 10th, April 14th and May 12th to collect funds for the campaign. The Fire Fighters rely on support and donations from the community for the success of the campaign. Proceeds raised during the street-side campaign will help support MDA services and research programs, including MDA’s outpatient clinics at Texas Children’s Hospital and The Methodist Neurological Institute. Money raised from Fill-the-Boot also sends young people ages 6-17 to MDA summer camp, held in Burton, Texas.

This is an interactive program for children, ages 0 to 18 months and their caregivers. Each session will last about 20 minutes, featuring nursery rhymes, songs and finger plays. • TOTALLY TODDLER STORYTIME - Toddlers, ages 18 to 36 months, are invited to participate in our Totally Toddler Storytime, which will be held on Tuesdays, at 10:15 AM and 11:15 AM and Wednesdays, at 10:15 AM. • Afternoon Art- Glue, paper, scissors, markers, fun and more! Come to the library and let imaginations soar. On Wednesday, January 11th and January 25th at 4:30 PM, the library will host Afternoon Art for ages 6-11.
