Ingredients: 2 cup crushed graham crackers 1/4 cup powdered sugar 1/2 cup butter 1 can sweetened condensed milk 8 oz. pkg. coconut (2 1/2 cups) 1 12 oz. package real chocolate chips

DIRECTIONS: Mix graham crackers, powdered sugar and melted butter and pat into 9 x 13 pan. Bake 12 minutes at 350°F. Mix condensed milk and coconut together and spread over crust. Bake 12 minutes at 350°F. Remove from oven. Sprinkle with real chocolate chips. Spread when melted. Cool and cut into squares. Source: www.cooks.com

Ingredients: 1/2 cup butter   1 1/2 cup packed brown sugar   1 Egg   1 1/2 cup flour   1 teaspoon vanilla   1 cup chopped pecans

DIRECTIONS: Heat oven to 350°F. Cream butter, sugar and egg. Stir in flour, vanilla and pecans. Mix well by hand. Shape into balls about the size of walnuts, place on cookie sheets and flatten to about 1/8 inch. Bake 10 to 12 minutes, or until brown. HOW TO HOST A COOKIE EXCHANGE ON A BUDGET

1. Send Evites or emails to guests in order to save money on the cost of invitations and postage. If you ask each guest to bring 6-dozen cookies and there are ten people at the exchange that means you’ll have 720 cookies. Assuming each person takes home 5-dozen cookies, you will still have 120 leftover for tasting. It is important to let the guests know the exact amount of cookies to bring. 2. Invite moms only, if possible. This way, you’re not distracted by having to follow toddlers around and you don’t feel compelled to serve snacks for kids of varying ages. 3. Nearly all types of cookies work well for a cookie exchange, though it’s best to avoid any that are extremely delicate as they can get crushed by the sturdier kinds. It’s also a good idea to steer clear of cookies that need to be refrigerated, such as lemon bars. 4. You want to know the ingredients that raise the price of certain cookie recipes? Nuts, chocolate, and liqueur – just to name a few. Mexican wedding cakes are delicious, for example, but the pecans alone can cost $6 for half a pound. If you really want to make a pricey cookie like mini pecan pie tarts, go ahead, but just shape or cut them smaller. 5. If you don’t have the time or the inclination to roll and cut out dough, simply dress up old favorites like chocolate chip drop cookies by sprinkling them with red or green colored sugar. A bottle of decorating sugar costs under $3 and will last you. 7. Another budget-priced cookie is the bar cookie. Make a batch of brownies from a mix and add a teaspoon of mint extract. Make an easy icing (confectioners’ sugar, a tablespoon of butter and milk) and tint it green using food coloring, with a dash of mint extract added for flavor.. You can add red sprinkles or chocolate jimmies, just to add that little extra something. 8. Flavor extracts are inexpensive, but can add a lot of flavor. Make

thumbprint cookies, but add a teaspoon of rum extract to the dough and half a teaspoon of rum extract to the icing. Or, add mint extract to your basic sugar cookie dough, roll out into candy cane shapes and bake. After you frost them, top with candy canes that you have crushed in the food processor or blender. 9. Try putting a holiday spin on economical old favorites like Rice Krispies treats. When you stir the cereal into the melted butter-andmarshmallow mixture, add green, red, or a combination of both colored sprinkles to the mixture. Spread it into a greased pan and cut into diamond shapes when cool. You can also flatten these out and use a cookie cutter to cut into trees, bells or ornaments. 10. When it comes to inexpensive food coloring, a little goes a long way. Color basic snickerdoodle or sugar cookie dough green, roll them out into little balls and place on a baking sheet. For beautiful holiday thumbprint cookies, make a tiny indentation in each cookie before baking and fill it with raspberry or strawberry jam. 11. If you’re really pressed for time, to the point where time is money, don’t be afraid to buy the refrigerated rolls of cookie dough and infuse them with your own special touches. Top chocolate chip cookies with some unwrapped, melted caramels, mini marshmallows and chocolate-coated chocolate candies, then bake another minute or until the marshmallows are golden – no one is likely to have also made this creative and delicious treat. 12. Keep the refreshments light. For an afternoon cookie exchange you can serve tea, coffee (add a cinnamon stick to the coffee before you brew it) and maybe hot cider (buy the store brand by the gallon and warm it on the stove or in a slow cooker, with a couple of cinnamon sticks.) Have a bowl of seasonal fruit (grapes and clementines provide color) and maybe a wedge or two of a not so costly cheese for those that need a break from the sweets. 13. Be sure to tell each guest to bring along copies of their recipe and put them right on the table next to their variety of cookie.

14. Have everyone in your exchange bring just one or two extra dozen cookies and you can make up plates of cookies for homebound elderly or residents at homeless shelters. Encourage everyone to bring some canned food and you can donate these to a local soup kitchen, as well. After the party has cleared and you present your family with a huge tray of holiday treats, they will be thrilled. You’re giving them cookies that look and taste store bought, but were actually made with a secret ingredient: love. And that’s really what this holiday season is all about. Enjoy! Salt Dough Snowman Ornament

By: Amanda Formaro Difficulty: Very Easy Age: 5 and up

Creating salt dough is a fun activity for kids and it’s a great material to use to create homemade ornaments, so this is like two crafts in one! For this ornament, kids can shape the dough into a simple snowman that would be a great gift to give a friend for the holidays. What you’ll need: 1 tablespoon salt 2 tablespoons flour 1 tablespoon water Bowl Spoon Cookie sheet Toothpick Paint: white, orange and black Paintbrush Ribbon Acrylic sealer spray How to make it: Place flour, salt and water in a bowl and mix with the spoon. Once the dough is combined, pick it up in your hand and knead it with your fingers until smooth. Remove a small piece of dough for making the nose and roll the larger piece of dough between your palms to form a ball. Press the ball down onto the cookie sheet with the palm of your hand, flattening it out. Roll the small piece of dough with your fingers into a carrot shape. Press firmly but gently onto the round flattened dough. Insert toothpick toward the top of the head, but not too close to the edge. Move the toothpick in a circular motion to enlarge the hole so that it is big enough to run a piece of ribbon through. Bake ornament at 250 degrees for 2 hours. Remove from oven and let cool on a rack. When completely cool, paint the round section white and the nose orange. Use the handle end of a paintbrush dipped in black paint to dot on the snowman’s eyes and mouth. Let dry. An adult should spray the ornament with a couple of coats of sealer. When dry, tie a ribbon hanger through the hole in the top. Tips: If you want to create a perfect circle, place dough inside a round biscuit or cookie cutter and spread with your fingers. Salt dough will break if dropped, so be sure to handle the ornament with care. The oven step can be skipped if you allow the ornament to dry overnight.

Christmas-the Diet Destroyer

In terms of holidays, Thanksgiving, the day spent by many gobbling down a week’s worth of calories in one sitting, is widely considered to be the mother of all diet wreckers. The good news however, is that once the dinner does come to a close, so does the bulk of the over eating. Sure, you may indulge in a leftover helping of stuffing or two (it always tastes better the day after, doesn’t it?), but you probably won’t stuff yourself to the point of pant-unbuttoning again. Christmas, on the other hand, is a stealthier diet destroyer. Though there is also a main meal, it is the lead up – all those holiday parties - that causes the most damage. The punch bowls of eggnog, the plates of Christmas cookies, it’s tough not to be tempted. Keep your family’s holiday spirit high, but your waistlines low, with these easy ways to keep your diets on track: Know Your Trigger Foods There are certain kinds of food that get even the most dedicated dieters every time. Once they start, they just can’t seem to stop, no matter how strong their willpower appears to be. Some constantly crave sugar. For others, it’s saltier foods. If you have difficulty eating a just few potato chips for example, you may want to eliminate them altogether so that you don’t set off a feeding frenzy. For kids, sugar is a given want during the holidays. Try to limit the sugars in their line of sight. If you can’t do that, let them have a few but help them pace themselves. Fill Up On Fruit Although eating lots of fruits and vegetables sounds like something to add to your list of New Year’s resolution, there’s no time like the present. This may not prevent you from popping a cheese puff or two, but you will have at least given your body some healthy fuel. For the kids, make up small plates of fruit. Try arranging it in interesting patterns. Let your child see you eating fruit rather than the sweet stuff. It’s hard to convince them if you are not practicing what you preach. Drink Sensibly You’re aware that drinking too much alcohol can give you a throbbing headache the next morning, but did you know that it can also wreak havoc on your diet? Among the biggest culprits is the holiday favorite, eggnog which contains over 350 calories per cup. You can make it more diet-friendly “light” eggnog or using milk instead of cream. Add extra ice to alcoholic drinks to water them down. And be sure to also drink several glasses of water to detoxify your system. Obviously, make sure the kids get the virgin eggnog and be wary of eggnog made with raw eggs. Practice Mindful Eating Stay aware of what, when and why you are eating. It’s easy to lose track of how many cups of eggnog or cookies you are consuming at a holiday gathering. Before you reach for another goodie on the buffet table, ask yourself, “Am I hungry or am I eating simply because the food is in front of me?” Slow down the process by remembering to chew your food thoroughly before taking another bite and to savor the taste. Make sure your children are kept busy. They graze when they are bored just like we do. And grown up parties can be pretty boring for kids. Bring plenty of games, maybe even save a special one that you can break out just for the party. If you are throwing the party and it’s kid friendly, make sure you have a few crafts and fun projects for your littlest guests. Get Back On Track If you’ve spent the day eating more of Aunt Sally’s fruitcake then you care to admit, enjoy the indulgence, then get back to eating healthy as quickly as possible. Try not to throw up your hands in defeat if you’ve overdone it. Continue to focus on eating as healthfully as possible, no matter the amount of calorie-fests. Remember, it’s important to set examples for your kids during these holidays. They take their cues from you. KISD Receives Top Rating in Schools FIRST Financial Accountability Rating System

Katy ISD has earned a rating of Superior Achievement under the Financial Integrity Rating System of Texas (FIRST) for the 20092010 fiscal year. Katy ISD has received this top rating for each of the nine years that Texas districts have been rated through Schools FIRST. Schools FIRST is a statewide rating system created to ensure that school districts are held accountable for the quality of their financial management practices, while achieving improved performance in the management of their financial resources. The Schools FIRST accountability rating system assigns one of four ratings, with the highest being Superior Achievement, followed by Above Standard Achievement, Standard Achievement and Substandard Achievement. Approximately 784 out of the 1,029 school districts in Texas received the Superior Achievement rating this year. Katy ISD also recently announced that it has been named a FiveStart District in the Texas Comptroller’s Financial Allocation Study for Texas (FAST) – one of only 23 districts in Texas to receive this rank for two consecutive years.

On October 15, 2011, the KYF Senior Varsity Saints football players wore pink socks, pink mouth guards and pink sweat bands and the cheerleaders wore pink socks and pink hair ribbons to represent Breast Cancer Awareness month. Two Churches, One Message: LDS and Catholic Churches Present Annual Christmas Concert

The combined choirs of Epiphany Catholic Church and the Katy Stake of the Church of Jesus Christ of Latter-day Saints will present their annual Christmas concert on Sunday, December 11, 2011, 7:30 PM, at Epiphany Catholic Church - 1603 Norwalk Drive in Katy. The concert will feature traditional Christmas music, as well as holiday songs from other cultures. The event is open and free to the public. Katy LDS Churches Join with Brookwood Community for Bike Rally

On October 16th, Katy congregations from the Church of Jesus Christ of Latter-day Saints (LDS) joined with the Brookwood Community for a special bike rally and carnival. The Brookwood Community is a residential facility and vocational program for adults with disabilities. The bike rally or BW15 provided residents with a fun, inclusive bike ride. Some Brookwood residents rode tandem bikes with volunteers from the churches. Others rode independently on either regular or specially modified bikes. Church members from the Katy 3rd and 4th wards, two congregations from the south Katy area, provided food and drinks for the participants. The LDS volunteers also came to support the residents with cheering and encouragement. After the bike rally, the Katy churches provided a carnival with games and activities for the residents at the Brookwood community. This event was part of a broader Houston-wide “Day of Service” in which many Houston area Latter-day Saint congregations participated. The Brookwood community is located in Brookshire, Texas and provides an educational environment that creates meaningful jobs, builds a sense of belonging and demands dignity and respect for adults with disabilities.
