Dallas hosts discussion on climate change By Naima Montacer @naimajeannette

The Climate Extremes conference, affiliated with the upcoming COP21 Paris, the United Nations Conference on Climate Change, was held this past week in Dallas. In Dallas! Dallas is joining the worldwide conversation on climate change, and even City of Dallas Mayor Mike Rawlings was there with some inspiring words and remarked on the perception of our city. “I think a lot of people across this country and across the world would probably be shocked if they heard that the mayor of Dallas was hosting a conference, in Dallas, focused

on climate change,” Mayor Rawlings said, “but I think it’s important because it’s real and we gotta deal with it.” Mayor Rawlings went on to highlight the importance of dealing with climate change to continue to attract businesses to our city and help ease the effects on every member of the pubic, especially people who are most affected by extreme changes, the “have nots.” Mayor Rawlings also announced the new green initiatives by the city to combat climate change, including a goal to reduce municipal emissions by 39 percent by the year 2017. Starting in 2016 the city will begin buying renewable energy credits to reduce energy emissions to

Dallas residents David Galstyan and Ben Haschke won the "Best Use of Space" award Friday Sept. 18 at the Dallas location of PARK(ing) Day on Main Street between Harwood Street and Field Street. The event demonstrates alternative uses for urban street parking places. The installation consisted of a wooden deck with overhead trellis, outfitted with patio furniture, hanging plants and a solar panel-battery system powering a fullsized fan, a small sound system and a cell phone charging station. Brewer, who is a Dallas native and has spent the last five years as the producing director of Creative Arts Theatre & School (CATS), a nonprofit children's theatre in Arlington, takes the reins after the passing of beloved co-founder and director Jac Alder. The store offers a variety of high-end wines and spirits and a huge beer selection. “What I found is that if you treat the customer right and give them a good price and give them a good experience,” Lee said, “they will continue to patronize you.” Married with no children, Lee was born in Navasota, Texas, a small town between Houston and College Station. He received a football scholarship to Brigham Young University and graduated with a degree in communications and a minor in theology. He immediately went to work in corporate America, spending 22 years in sales and marketing for a number of major companies like Gillette, Rubbermaid, PepsiCo, MillerCoors and Bacardi USA. see BUSINESS on page 8

Primarily because patients who are on ventilators for long enough to develop these infections are usually already immunocompromised from their primary disease process. The key to decreasing morbidity or mortality for these patients is early detection. This is why it is common practice for ventilator dependent patients to get a chest X-ray each day in hopes that if a pneumonia develops it will occur early. Additionally, for those patients who require a ventilator for greater than seven days, there is some evidence to suggest that removing the endotracheal tube (from the mouth) and placing a tracheostomy tube (directly into the neck) decreases the number of days the patient is on the ventilator, thereby decreasing the risk of developing VAP. There are entire departments of hospitals and hospital systems who research these infections, establish new protocols, purchase new products, and educate the healthcare providers on ways to decrease these risks. Only time will tell which (if any) of these changes will lower the infection rate over time. Stay in your lane to reduce stress By Dr. Beth Leermakers bethleermakersphd.com

Some people love to tell others what to do or how to do it. A friend uses his GPS to tell the cabbie or bus driver the best route to take. This behavior is merely inappropriate and annoying. However, in some cases, Dr. Beth Leermakers worrying about other people’s business creates stress and strains relationships. Stay in your lane. A client uses this phrase to tell people to mind their own business. Think about the lane lines on a two-lane road. Solid double yellow lines tell people it’s not safe to cross into the other lane. Broken yellow lines indicate it’s safe to change lanes temporarily to pass another vehicle. Then you return to your lane. Some life situations require solid double lines. When there’s nothing you can do to control a situation, there’s no advantage to crossing into the other person’s lane. You may wish your husband got along better with his mother. You can ask him not to complain about her repeatedly, but there’s nothing you can do to make them get along. Therefore, you’re probably wasting your time and energy and annoying your husband, by repeatedly telling him he needs to forgive his mother. When you spend too much time in someone else’s lane, you take on their concerns, increasing your own stress and distracting you from taking care of your own business. In other situations, broken yellow lines are appropriate. It’s OK to change lanes temporarily and then return to your lane. If a co-worker requests your help on a particular project, it’s appropriate to provide assistance on that project. Afterward, return to your lane and let your coworker handle other projects on his or her own. Don’t assume one request for help means the other person wants you to be involved all the time. Watch out for these lane-changing situations: Micro-managing. If you have trouble delegating, you may hover over co-workers instead of giving them space to handle the project. After you

give clear instructions and deadlines and tell the other person you’re available if needed (broken lines), it’s time to step back and let the other person handle it (solid lines). Trust them when they tell you “I’ve got this.” Trying to solve other people’s problems. Trying to “fix” someone else is a slippery slope. You may not have enough information to solve the problem. The other person may resent your interference. By stepping in to solve someone else’s problems, you’re saying the other person isn’t capable of taking care of herself. Even therapists are taught not to give advice or tell people what to do. Instead, therapists help people explore options and provide support and encouragement. Yes, children and adults who are not competent to make decisions need someone else to take care of them. Capable adults and, in some situations, even responsible teenagers can take responsibility for their own actions and decisions. There’s a difference between offering support and assistance (broken lines) and trying to “rescue” someone (solid lines). Think about the disservice you’re doing to the other person by taking too much responsibility for their behavior. Then ask yourself what in your own life needs attention. If your house is in order, perhaps you’d receive satisfaction from volunteering to help people who really do need your assistance. Being the food or exercise police. Telling other people what to eat or not eat, or nagging them to exercise, often backfires. Your sister may wind up eating twice as much, out of rebellion. Watching people you love make unhealthy decisions can be scary and sad, so it can be very difficult to let them make their own decisions. Instead of telling people what to do, you could say “I’m concerned about your health. Is there anything I can do to help you increase your physical activity?” If the person says yes, do what they ask. You’re temporarily crossing a broken yellow line. If they say no, stay out of it. Seam said, “Climate extremes matter for Dallas Fort Worth, everybody cares about drought, floods, heat waves, cold tornadoes, water scarcity, air quality.” Dr. Bruce McCarl, agricultural economist at Texas A&M University, outlined the change in our climate to date, the harsh effects on agriculture, and a few scenarios on what we can do about it. McCarl gave us the data leading to serious consequences. “Texas is very vulnerable,”McCarl said, “we will be squeezed.” He also made us giggle about the room temperature, throwing in, “I think they could hang meat in here.” Garrett Boone, co-founder of The Container Store, spoke of his ironic journey advocating for energy efficiency while owning an “energy hog” home in North Dallas. The vision to create a sustainable home improvement store, which empowered people to make good decisions about their home, led to Boone becoming Chairman of the Board of treehouse.co (an Austin-based green home products store). Boone answered a panel question on the success of their solar sales by highlighting the way products are sold, “You have to make the buying decision easy for people.” Good news: TreeHouse is hopefully coming to Dallas, next year! Trammel Crow rattled off some green statistics but ultimately invited members of the marketplace, city departments and community organizations to continue the conversation and collaboration at Earth Day Texas in April, an event Crow described himself as “A hotbed of activism, but based on a foundation of business.” Climate Extremes organizer and director of the SMU Hunt Institute for Engineering and Humanity, Dr. Eva Csaky, closed out the event encouraging our local community to make change happen. Csaky said: “The ultimate goal is to take action and to make some projects and initiatives happen here in Dallas that do address the intersection of climate change and poverty.” Many aspects of climate change were packed into a short forum leaving us excited for the continued build up to the COP21 in Paris. At the COP21, leaders from around the world will “aim to achieve a legally binding and universal agreement on climate, with the aim of keeping global warming below 2°C.” There are high hopes for the COP2 to be collaborative, insightful and provide the world’s leaders, including Dallas, with a high standard that we all will attain.

do. It is healthier to focus on unprocessed, natural forms of carbohydrates and to look for whole grains over white, processed grains. Fibrous foods are also a source of carbs, and your body loves fiber for healthy digestion, weight control, blood sugar control and disease prevention. The best sources of carbohydrates are vegetables (yes, even kale has carbohydrates!) and fruits. If your body does well with beans, whole grains and oats, these can contribute to your carbohydrate intake as well. • Fat: do not be afraid of fat, please! Not only is fat the most satiating macronutrient (it helps you stay full!), but it is also the most efficient energy-providing macronutrient and is necessary for many, many of your body’s critical functions (like vitamin absorption, growth and development, and cell function). Great sources of dietary fat are avocados, olives, fish, nuts, seeds, coconut and healthy oils. • Protein: critical for your body’s growth, muscle/ tissue repair and muscle mass preservation, protein is a healthy eater’s dream. It helps a meal feel substantial, keeps you full and energized, and powers your body as it gets stronger and faster! If you eat meat, high-quality meat and fish can fulfill most of your body’s protein requirements, but vegetables, beans, nuts, dairy and eggs can also provide protein. What’s the solution, then? A balanced diet, including carbohydrates, protein and fat in moderate quantities, is far and away the healthiest option. To get this, we need to return to the basics of eating real food! A simple meal of a chicken breast with vegetables sautéed in olive oil satisfies all food groups, as does a vegetable omelet with avocado and a side of berries. It doesn’t have to be complex or restrictive, but it does take some thought. This week, I hope you strive to fit in a balance of macronutrients!

If you look at popular diet trends over the last several decades, you’d be confronted by several dramatic shifts. In the ’80s and ’90s, we began thinking of fat as the enemy, and lowfat and fat-free products became synonymous with health. Fatfree SnackWell’s cookies became our “guilt-free” indulgences, and Twizzlers were “free” foods because they didn’t contain fat. What happened to our waistlines and our medical bills, though? They both swelled dramatically. Next, we entered the low-carb era, where carbohydrates were sworn off as the single food group making us fat. Paleo enthusiasts rejoiced, and low-carb tortillas, crackers and bars lined every supermarket aisle. Take a look Megan Lyons at the health data again, and you’ll see that the swelling continued. What’s the problem with either of these two approaches? When food manufacturers remove the fat, they often replace it with sugar or salt. When food manufacturers remove the carbohydrates, they often replace them with processed saturated fats or hydrogenated oils that, while carb-free, are a major hindrance to our health and weight-loss goals. Without getting too detailed, here are a few nutrition basics. The three macronutrients are carbohydrates, fats and proteins, and they’re called macronutrients because they’re the nutrients your body needs in the largest quantities (micronutrients, on the other hand, are vitamins/ minerals and are needed in far less quantities). As a Dallas renovation business owner, I’m seeing more homeowners who are devoting a larger portion of their remodel budget towards the mudroom. Yes, the mudroom, also know as the laundry room in Texas. Mudrooms are an essential part of the home, and obviously their main purpose is to keep dirt, debris and other remnants of the day outside of the home. However, we’re seeing homeowners take this century-old concept to the next level. A well-organized and welcoming mudroom is really becoming a growing trend, and prospective homebuyers are taking notice. A mudroom remodel doesn’t have to be lavish or overdone. You don’t want to overcomplicate the renovation. The remodels I’ve designed are centered on creating a designated space that meets the family’s needs, especially if they have children. The design should really be about organizing all your go-to supplies when you’re running out the door. A logically designed mudroom can also increase the value of your home. Buyers who are on the lookout for organization and storage space could seal the deal. Mudrooms can also help extend the life of your flooring, meaning you won't have to shell out big bucks in replacement costs. A smart mudroom design can also save families on

energy costs. I suggest adding an energy-friendly door on the inside of your mudroom to help keep the outside air locked away from the rest of your house. As we move into fall and winter, an energyefficient mudroom acts as a transitional space from inside to outside, so it doesn't need to be heated like the rest of your house. By Sara Newberry When I told people I was visiting Ethiopian restaurant Lalibela, responses ranged from “Huh?” to “Yum, I love Ethiopian food!” I fall squarely on the latter half of that spectrum. I love the spongy injera, the thin bread used in place of utensils to pick up food from the giant communal plates; I love the beautiful presentation of the different dishes on the giant communal plates; and I love the range of flavors and textures you’ll find during an Ethiopian meal. Many Ethiopian dishes are seasoned with a spice mix called berbere, which is a combination of several herbs and spices, including chiles, garlic, nigella seeds, ginger and basil. While the ingredients are generally standard, the proportions can vary from cook to cook, much like garam masala in India. The flavors are similar to those found in Indian food as well. Be prepared to share: The entire meal is served family style. The way to go is to order the vegetarian combo and a couple of meat dishes as well. (If you are feeding several people or you’re eating meatless, go for the “super super vegetarian combo.”) All of the vegetarian choices are delicious, but the beet salad and the collard greens (gomen) were my favorites. A garlicky stew of carrots and cabbage was another winner. Stews of

At Lalibela, the vegetarian combo, with doro wat (chicken stew) and tibs (sautéed meat), is served family style over injera, Ethiopian spongy bread. lentils, yellow split peas and chickpeas round out the plate. Wat means “stew” and doro wat, or chicken stew, is considered the most popular traditional dish in Ethiopia. The doro wat at Lalibela is intensely spiced but not overly spicy. Tibs are grilled or sautéed pieces of meat, often cooked with onions and jalapeños. Zilzil tibs are made from beef, and at Lalibela they are fiery. Yebeg tibs, made from lamb, are less spicy but just as flavorful. This is a perfect “gateway” dish for anyone that is apprehensive about trying one of the stews right off. The atmosphere at Lalibela is what you might expect from a tiny restaurant located in a strip mall. A huge

TV dominates one corner of the restaurant, and it is invariably tuned to sports. On both of my visits my guest and I were either the only ones in the place or one of just a few tables, so we felt OK about taking our time while enjoying our meal. Service is warm and friendly, and I’ve found the servers more than willing to offer suggestions if I’m having trouble deciding what to order. If you’re curious about trying Ethiopian food, Lalibela is a great place to start.

Piquant with finely chopped onion, shallot and Peppadew, the brand name for bottled mild, sweet-hot South African peppers, Rapscallion’s “3-cheese pimento cheese” is part of the Down South Mezze Plate at the Lower Greenville Avenue restaurant. The full share plate includes boiled peanut hummus, “charcuterie of the moment,” grilled flatbread and benne wafers. This ain’t yo momma’s pimento cheese. There’s a whole bathtub of ingredients combined for a very special flavor combination. That includes Rapscallion pickled shallot and onion made in-house. Use fresh onion and shallot to taste for your convenience but know the taste will be somewhat different.

Cruising the Danube can be practically beautiful

wald.world@yahoo.com I’m sailing the blue Danube, second longest river in Europe. River cruising is the only way to see certain sites, such as the magnificent rock sculpture of King Decebalus carved into a Romanian mountainside facing the river, rivaling Mount Rushmore. And because we go slowly, no one gets seasick. The Danube begins in the Black Forest of Germany and meanders through Europe, ending at the Black Sea ocean resort of Constanta. I joined the trip in Budapest and got to experience the culture of many

Balkan countries in Eastern Europe as we pass through, including Hungary, Croatia, Serbia, Bulgaria and Romania. Eastern Europe is very geo-politically unstable; each country harbors its own intrigue. If you like history, conflict, culture and religion dating from Roman times, the Balkans are an excellent fit. I am cruising with 140 mostly retired passengers, almost all of whom are lifetime learners eagerly trying to put the pieces together — better late than never. They take on the arduous task of clearing customs and border procedures as we cross from one country to the next. On my particular cruise during daylight hours we docked.

Sightseeing tours of riverside cities are offered for no additional cost. Divided into four smaller groups, most passengers choose to participate. Crowds are minimal, just a handful of other river cruisers. Few remain to sunbathe on chaise lounges on the ship’s sundeck. The charm of the river

cruise is partly practical. You get picked up at the airport, taken to the ship, unpack once, and the ship becomes your floating hotel. As most docks are located within walking distance of center city, you easily walk to most places, eliminating the need to negotiate taxis and public transit. One advantage of river cruising is also a disadvantage: all your meals are included, so you never have to search for a place to eat and probably will gain a few pounds. Sometimes, however, you may want to sample local cooking. With average monthly Balkan salaries less than $1,000 a month, eating out is so reasonably priced as to be almost free. In Belgrade a group of eight ventured out to eat. We ordered beer, wine and dessert along with excessive food. When we worked through the exchange rate to calculate the final bill, we thought there was a mistake — it amounted to less than $80 with tip! Using a different currency in each port provides mental exercise, but there really is little need for money. Currency

exchanges abound to change small amounts for souvenirs, coffee and ice cream. For large purchases, credit cards are generally accepted. Depending on your ship, assigned dining room seating may be required, or you may have open seating. Whatever the situation, you will dine with people you don’t know, at least at the beginning. If you prefer to eat in quiet with a book, it can be done; but consider whether this is the right form of travel for you. Being open to new ideas and friendships is encouraged by the program directors. One thing’s for sure, you won’t go hungry with the five-course dinners, each with alternative dishes to suit different diets. It’s easy to see why river cruising is the fastest growing segment of the travel market. What do you want to see? A river cruise can probably get you there. Johnny Depp’s performance in ‘Black Mass’ is scary good By Chic DiCiccio

Boston. He clearly idolizes the Bulger boys and wants his career to echo theirs, even if he has to break the law to do it. Edgerton conveys sliminess and confidence at all times, simultaneously eliciting pity and disgust. Edgerton’s fantastic acting is overshadowed by Depp’s jaw dropping performance, which borders on flawless. Whether inspired by the material or knowing that he desperately needed it, Depp has never been remotely close to this perfect. He may not even have needed the fantastic make up to create one of the most chilling villains to appear on a movie screen.

The strangest thing about “Black Mass” is that one thing is both the best and worst aspect of it. The best thing? The energy and charisma that Johnny Depp brings to the role of James “Whitey” Bulger. The worst? Depp’s engrossing performance almost makes you like one of the worst people in recorded human history. In “Black Mass,” Johnny Depp has abandoned the eccentric whacko bit and become the fully realized character actor that he truly is. He disappears as the sociopathic Bulger, leaving behind the silly ticks and vanity that has filled his filmography for more than a decade. This is his masterpiece. “Black Mass” begins in 1975 with Whitey as a small time thug whose Winter Hill Gang is battling with the Angiulo Brothers (nice things are not said about Italians in this movie) for control of south Boston. Bulger’s gang includes his right hand man Stephen Flemmi (Rory Cochrane), Kevin Weeks (Jesse Plemons) and his brutal hit man, Johnny Martorano (W. Earl Brown). It turns out that FBI agent John Connolly (Joel Edgerton) grew up with Bulger and his brother turned Massachusetts state Senator Billy Bulger (Benedict Cumberbatch). After some persuasion, Whitey agrees to give Connolly dirt on the Angiulo Brothers while getting protection from the FBI. From there, Whitey rises to the top of the Boston crime world as he and the FBI eliminate his competition. Whitey becomes

Johnny Depp plays James “Whitey” Bulger in “Black Mass.” increasingly more paranoid about rats in his network (self-aware much?) and Connolly’s boss, Charles McGuire (Kevin Bacon), puts the screws to him regarding the lack of true, hard evidence from his prize informant. Unfortunately, “Black Mass” goes in about one hundred different directions. There are far too many subplots that are never fully tied up, such as the disappearance of Whitey’s wife, Lindsey (Dakota Johnson), from the entire movie. There are many storylines and characters crammed into the relatively short 122 minute running time, which causes a few actors’ screen time to suffer. Luckily, director Scott Cooper knows where the bread is buttered and “Black Mass” rarely goes without either Depp or Edgerton on screen. Cooper and cinematographer

Masanobu Takayanagi created a movie that looks like it was made in the 1970s, all with the look and feel of Martin Scorsese’s best films but without completely ripping him off. Cooper also fashioned this more like a horror movie than a basic gangster thriller. The constant fear that these maniacs could pounce at any moment is always present, almost making Depp’s Bulger as terrifying as the shark from “Jaws.” There is an argument to be made that “Black Mass” is less than the sum of its parts. If not for the dominant performances from Depp and Edgerton, there is a chance this would be an average biopic about yet another infamous criminal. The two of them put in career-defining performances and couldn’t be more of polar opposites. Edgerton plays Connolly as a wannabe tough guy from south
