Con este recetario digital queremos hacer un homenaje a la cultura gastronómica de calidad, hecha a fuego lento, sin prisas, entre amigos, tanto tradicional como novedosa, con la única intención de dar valor a la cocina preparada en, desde, hacia y para la familia, con productos de temporada, sanos y ecológicos.

Dedicado a todas las madres de La Almajara de Alhama.

CREMA FRÍA DE CALABACÍN

CHILLED COURGETTE SOUP

Ingredientes para cuatro personas:

Ingredients for four people:

800 g calabacín, cortado en lonchas 200 g tomate fresco, pelado y picado 4 dientes de ajo Caldo o agua, hasta cubrir 16 hojas de albahaca 1 cucharada de zumo de limón 6 cucharadas de aceite de oliva Sal Guarnición: taquitos de jamón

800 g courgeOe, sliced 200 g tomato, peeled and diced 4 cloves of garlic Water or stock to cover 16 basil leaves 1 tbsp lemon juice 6 tbsp olive oil Salt Finely diced Serrano ham to garnish

CREMA FRÍA DE CALABACÍN Poner la mitad del aceite en una cazuela. Añadir los calabacines, el tomate y el ajo y sofreírlos durante dos minutos. Añadir el caldo hasta cubrir y dejar hervir hasta que las verduras estén Dernas.

Añadir la albahaca y el zumo de limón y triturar todo.

Dejar enfriar y luego meterla en el frigorífico durante unas horas.

Servir con taquitos de jamón, flores de calabacín picadas y un hilito de aceite de oliva.

CHILLED COURGETTE SOUP Put half of the olive oil in a saucepan. Add the courgeOes, the tomatoes and the garlic and fry for two minutes. Add the stock to cover the vegetables and cook unDl just tender.

Add the basil and the lemon juice and blend well.

Leave the soup to cool a liOle and then put it in the fridge for a few hours to cool completely.

Serve garnished with small cubes of Serrano ham, chopped courgeOe flowers and drizzle with a liOle olive oil.

CREMA FRÍA DE PUERROS

CHILLED LEEK SOUP

Ingredientes para cuatro personas:

Ingredients for four people:

4 puerros + 1 para la guarnición

4 leeks + 1 for the garnish

1 patata grande, pelada y cortada en trozos

1 large potato, peeled and cut into pieces

Agua o caldo de verduras para cubrir

Water or stock to cover

Sal y pimienta

Salt and pepper

1 cucharada grande de Mascarpone

1 tbsp Mascarpone

Cebollino (opcional)

Chives (opDonal)

CREMA FRÍA DE PUERROS Cortar cuatro puerros en trozos medianos y ponerlos en una olla con la patata. Añadir sal y pimienta y cubrir con caldo o agua. Llevarlo a ebullición y hervir hasta que las verduras estén Dernas.

Dejar enfriar un poco y luego baDr todo junto con una cucharada de Mascarpone.

Meter la crema en el frigorífico hasta que esté fría.

Para hacer la guarnición de puerros, cortar el puerro en trozos de unos 5 cenjmetros y luego cortarlos a lo largo en Dras muy finas.

Freír las Dras en aceite de oliva y escurrirlas.

Servir la crema fría adornada con las Dras de puerro y unos trozos de cebollino.

CHILLED LEEK SOUP Cut four of the leeks into medium-­‐sized pieces and put them in a pan with the potato. Add salt and pepper and cover with water or stock. Boil the vegetables unDl they are just tender.

Leave the soup to cool a liOle and then blend it together with a spoonful of Mascarpone.

Put the soup in the fridge to cool.

To make the garnish, cut the leek into 5 cenDmetre pieces and then lengthways into thin strips.

Fry the strips in olive oil and drain well.

Serve the chilled soup garnished with the strips of leek and chopped chives.

GAZPACHO DE ALBAHACA

BASIL GAZPACHO

Ingredientes para cuatro personas:

Ingredients for four people:

1 kg tomates maduros, pelados 1 trozo de pimiento verde Media cebolleta 1 diente de ajo 100 ml aceite de oliva 8 ó 10 hojas de albahaca Sal 25 ml vinagre de Módena 10 ml vinagre de Jeréz Guarnición: dados de Mozzarella y anchoas cortadas en trozos

1 kilo of ripe tomatoes, peeled 1 piece of green pepper Half a mild onion 1 clove of garlic 100 ml olive oil 8 or 10 basil leaves Salt 25 ml balsamic vinegar 10 ml sherry vinegar To garnish: cubes of Mozzarella and chopped anchovies

GAZPACHO DE ALBAHACA Poner todos los ingredientes (excepto el queso mozzarella y las anchoas) en la baDdora y baDrlos bien hasta formar una crema homogénea .

Echar el gazpacho en un recipiente con tapadera y ponerlo en el frigorífico hasta que esté frío.

Servir el gazpacho adornado con daditos de queso mozzarella y anchoas cortadas en trozos.

BASIL GAZPACHO Put all the ingredients (except the mozzarella cheese and the anchovies) in a blender and blend unDl you have a smooth soup.

Pour the gazpacho into a bowl and cover with a lid. Put the gazpacho in the fridge unDl chilled.

Serve the gazpacho garnished with cubes of mozzarella cheese and chopped anchovies.

CREMA DE CALABAZA

PUMPKIN SOUP

Ingredientes para cuatro personas:

Ingredients for four people:

750 g calabaza, pelada, sin pepitas y cortada en dados 3 puerros cortados en trozos 2 zanahorias cortadas en trozos 1 rama de apio cortada 1 patata mediana, pelada y cortada en dados Aceite de oliva Sal y pimienta Pepitas de calabaza tostadas para la guarnición

750 g pumpkin, peeled, deseeded and diced 3 leeks, sliced 2 carrots, chopped 1 sDck of celery, chopped 1 medium potato, peeled and diced Olive oil Salt and pepper Toasted pumpkin seeds to garnish

CREMA DE CALABAZA Rehogar todas las verduras juntas con el aceite de oliva en una olla. Salpimentar.

Cubrir de agua y hervir hasta que las verduras estén Dernas.

Triturar las verduras hasta formar una crema.

Corregir de sal y servir caliente adornada con las pipas de calabaza.

PUMPKIN SOUP Fry all the vegetables in olive oil for a few minutes. Season with salt and pepper.

Cover with water and boil unDl the vegetables are just tender.

Blend the soup unDl smooth.

Check the seasoning and serve hot, garnished with the pumpkin seeds.

ENSALADA DE GARBANZOS

CHICKPEA SALAD

Ingredientes para cuatro personas:

Ingredients for four people:

200 g (peso seco) garbanzos, puestos en remojo y cocidos 3 tomates, cortados 1 cebolleta, picada 3 huevos duros 2 latas de atún 1 pimiento rojo, asado y cortado en Dras Aceitunas negras Orégano Aceite de oliva Sal

200 g (dry weight) chickpeas, soaked overnight and cooked 3 tomatoes, roughly chopped 1 onion, finely diced 3 hard-­‐boiled eggs 2 Dns of tuna fish 1 red pepper, roasted and cut into strips Black olives Oregano Olive oil Salt

ENSALADA DE GARBANZOS Cuando estén cocidos los garbanzos, escurrirlos y aún calientes ponerlos en una ensaladera y sazonarlos con sal y aceite. Dejarlos enfriar.

Cuando estén fríos, desechar el aceite del atún, desmenuzarlo y añadirlo a los garbanzos.

Añadir todos los otros ingredientes y aderezar con sal y aceite. Mezclar bien y poner la ensalada en el frigorífico durante unos veinte minutos para que coja un poco de frío pero que no esté helada.

Servir.

CHICKPEA SALAD Drain the cooked chickpeas and, while the are sDll hot, put them in a bowl and season them with salt and olive oil. Leave to cool.

When the chickpeas are cool, drain the oil from the tuna fish and break the tuna up with a fork.

Add to the chickpeas.

Add all the remaining ingredients and season with salt and olive oil. Mix well and put the salad in the fridge for about twenty minutes to chill.

Serve.

ENSALADA MURCIANA

MURCIAN SALAD

Ingredientes para cuatro personas:

Ingredients for four people:

1 bote de tomate en conserva 1 trozo de bacalao salado, cortado en trozos pequeños 3 huevos duros, cortados 2 ñoras, tostadas en una sartén sin aceite 1 cebolleta, picada Olivas negras y verdes Aceite de oliva Sal

1 large Dn of plum tomatoes in their juice 1 piece of salt cod, cut into small pieces 3 hard-­‐boiled eggs 2 ñora peppers, toasted in a frying pan without oil 1 salad onion, finely diced Green and black olives Olive oil Salt

ENSALADA MURCIANA Se cortan los tomates en trozos y se ponen en un bol junto con el jugo de tomate.

Se añaden el bacalao, los huevos, las ñoras en trocitos (sin las semillas), la cebolleta, las olivas, el aceite y la sal al gusto.

Se remueve todo y se sirve con un buen pan para mojar.

MURCIAN SALAD Cut the tomatoes into pieces and put them in a bowl along with the juice from the tomatoes.

Add the salt cod, the eggs, the ñora peppers (broken into pieces and without the seeds), the onion, the olives, the olive oil and salt to taste.

SDr well and serve with a good bread to mop up all the juices.

ENSALADA DE PATATAS

POTATO SALAD

Ingredientes para cuatro personas:

Ingredients for four people:

4 patatas, cocidas con su piel 3 huevos duros 250 g judías verdes cocidas 3 tomates 1 cebolleta 1 lata de atún Olivas negras y verdes 1 lata de anchoas Sal Aceite de oliva

4 potatoes, boiled in their skin 3 hard-­‐boiled eggs 250 g green beans, cooked 3 tomatoes 1 salad onion 1 Dn of tuna Green and black olives 1 Dn of anchovies Salt Olive oil

ENSALADA DE PATATAS Pelar las patatas, cortarlas en trozos y colocarlas en una fuente.

Cortar los tomates y la cebolleta y pelar y cortar los huevos duros.

Mezclar todos los ingredientes y aliñar la ensalada con aceite de oliva y sal.

POTATO SALAD Peel the potatoes, cut them into pieces and put them in a bowl.

Chop the tomatoes and finely slice the onion. Peel and chop the eggs.

Mix all the ingredients together and add salt and olive oil to taste.

QUICHE DE PUERROS

LEEK QUICHE

Ingredientes para cuatro personas:

Ingredients for four people:

200 g harina 100 g mantequilla Una pizca de sal 2 ó 3 cucharadas de agua fría 3 puerros, en rodajas finas 150 g queso Cheddar, rallado 5 huevos baDdos 1 cucharada de Mascarpone Sal Tomillo Aceite de oliva

200 g flour 100 g buOer A pinch of salt 2 or 3 spoonfuls of cold water 3 leeks, finely sliced 150 g Cheddar cheese, grated 5 eggs, beaten 1 spoonful Mascarpone Salt Thyme Olive oil

QUICHE DE PUERROS Para hacer la masa se pone la harina en un cuenco y se añade la mantequilla fría cortada en daditos. Se mezclan los dos ingredientes con la yema de los dedos hasta conseguir una masa arenosa. Se añade la sal y el agua poco a poco, justo lo suficiente para formar una bola. Se cubre con film y se deja reposar en el frigorífico una hora.

Después de este Dempo se esDra la masa con un rodillo y se forra un molde para quiche.

Se pincha la base de la masa con un tenedor, se cubre con una hoja de papel para cocinar y se ponen unos garbanzos encima para que no suba la masa. Se mete en el horno, precalentado a 180ºC unos 20 minutos (hasta que el borde esté dorado).

Mientras, se fríe el puerro en el aceite con un poco de sal y tomillo y se deja enfriar.

Se espolvorea la base de la masa con la mitad del queso rallado, se pone encima el puerro y se cubre con los huevos baDdos con el queso Mascarpone. Se cubre con el resto del queso rallado y se hornea a 180ºC durante unos 30 -­‐ 35 minutos. El relleno sube mucho en el horno pero al enfriarse baja.

Servir templada o fría.

LEEK QUICHE To make the pastry put the flour in a bowl with the cold buOer which has been cut into small cubes. With your fingerDps, rub the buOer into the flour unDl it resembles fine breadcrumbs.

SDr in the salt and gradually add the cold water unDl you can form a ball. Cover the pastry with cling film and put it in the fridge to rest for an hour.

Roll the pastry out and line a quiche Dn with it. Cover the pastry with greaseproof paper and put some dried chickpeas (or baking beans) on top to stop the pastry rising. Bake the pastry in a pre-­‐heated oven (180ºC) for 20 minutes or unDl the edge is golden brown.

Meanwhile, fry the leeks in olive oil with the thyme and a liOle salt and leave to cool.

Sprinkle the pastry case with half of the Cheddar cheese, add the leeks and cover with the eggs which have been beaten with the Mascarpone. Cover with the remaining Cheddar cheese and bake the quiche in the oven at 180ºC for 30 -­‐ 35 minutes. The filling rises a lot in the oven but it as it cools it falls back into place.

Serve warm or cold.

CROQUETAS DE BACALAO

COD CROQUETTES

200 g bacalao salado, desalado 200g garbanzos secos, puestos en remojo 1 patata grande 1 cola de merluza Pan rallado Perejil picado 4 dientes de ajo picados Piñones 5 huevos Pimienta Zumo de medio limón 2 cucharadas del caldo de cocer los garbanzos

200 g salt cod, desalted 200 g chickpeas, soaked overnight 1 large potato Half a hake (the tail end) Breadcrumbs Parsley, chopped 4 cloves of garlic, chopped Pine nuts 5 eggs Pepper The juice of half a lemon 2 spoonfuls of the stock from cooking the chickpeas

CROQUETAS DE BACALAO Poner los garbanzos, el bacalao y la patata en una olla a presión y cubrir de agua.

Cocer hasta que los garbanzos estén Dernos.

Cocer la cola de merluza en agua con sal. Dejar enfriar y quitarle la piel y las espinas. Desmenuzar la carne del pescado con los dedos.

Limpiar el bacalao de piel y espinas.

Triturar los garbanzos, el bacalao, la patata, la merluza, el ajo y el perejil hasta formar una masa gruesa (con trozos de garbanzo).

Añadir el resto de ingredientes y remover bien.

Hacer croquetas con esta masa y freírlas en aceite de oliva hasta que cojan un color dorado.

Escurrirlas en papel de cocina y servirlas con alioli.

Estas croquetas son las que se usan en el guiso de cuaresma.

COD CROQUETTES Put the chickpeas, the cod and the potato into a pressure cooker and cover with water.

Cook unDl the chickpeas are tender.

Cook the hake in water with salt. Leave it to cool and discard the skin and the bones.

Discard the skin and the bones of the cod.

Mash the chickpeas, the cod, the potato, the hake, the garlic and the parsley to form a lumpy mixture (with pieces of chickpea).

Add the rest of the ingredients and mix well.

Form croqueOes with this mixture and fry them in olive oil unDl they are golden brown.

Drain them on kitchen towel and serve them with garlic mayonnaise.

These croqueOes are also used in the typical Lent stew.

GUISO DE CUARESMA

TYPICAL LENT STEW

Ingredientes para cuatro personas:

Ingredients for four people:

12 ó 16 croquetas de bacalao (ver receta) 200 g garbanzos (peso seco) puestos en remojo 1 cebolla 3 dientes de ajo 3 tomates maduros, rallados Pimentón 4 trozos de bacalao salado, desalados Harina 2 huevos baDdo Aceite de oliva 3 patatas 2 huevos duros 75 g caracolas de pasta (opcional) 1 tallo de hierbabuena Sal

12 or 16 cod croqueOes (see recipe) 200 g (dried weight) chickpeas, soaked overnight 1 onion 3 cloves of garlic 3 ripe tomatoes, grated Pimentón (ground red pepper) 4 pieces of salt cod, desalted Flour 2 eggs, beaten Olive oil 3 potatoes 2 hard-­‐boiled eggs 75 g pasta shells (opDonal) 1 sprig of mint Salt

GUISO DE CUARESMA Cocer los garbanzos en una olla con agua y sal.

Rebozar los trozos de bacalao en harina y huevo, freírlos en aceite de oliva y reservar.

En el mismo aceite se hace un sofrito con la cebolla, el ajo, el tomate y un poco de pimentón.

Cuando los garbanzos estén Dernos se destapan y se añaden el sofrito y las patatas. Cuando las patatas casi estén se añaden las croquetas de bacalao, el bacalao rebozado, las caracolas de pasta (si se van a usar), el huevo duro y el tallo de hierbabuena.

Dejar hervir unos diez minutos y servir.

TYPICAL LENT STEW Cook the chickpeas in a pressure cooker with water and salt.

Coat the pieces of cod in flour and beaten egg and fry them in olive oil. Set aside.

In the same oil fry the onion and garlic and then add the tomato and the pimentón.

When the chickpeas are tender add the onion and tomato mixture to them and the potatoes.

When the potatoes are just tender add the cod croqueOes, the cod pieces, the pasta shells (if using), the chopped hard-­‐boiled eggs and the mint.

Cook for ten minutes and serve.

LENTEJAS

LENTILS

Ingredientes para cuatro personas:

Ingredients for four people:

300 g lentejas 1 cebolla, picada 2 zanahorias, picadas 1 tallo de apio, picado 4 dientes de ajo 1 hoja de laurel Un tallo de perejil Un contramuslo de pollo, sin piel 2 chorizos 2 patatas, peladas y cortadas en cuatro 1 cucharadita de pimentón Sal y pimienta Aceite de oliva

300 g lenDls 1 onion, finely chopped 2 carrots, diced 1 rib of celery, finely chopped 4 garlic cloves 1 bayleaf 1 sprig of parsley 1 chicken leg 2 chorizos 2 potatoes, peeled and cut into quarters 1 teaspoon of pimentón Salt and pepper Olive oil

LENTEJAS En una cazuela sofreír la cebolla, la zanahoria, el apio y el ajo en aceite de oliva.

Enjuagar las lentejas en agua y añadirlas a la verdura junto con el muslo de pollo, el chorizo, las patatas, el laurel, el pimentón, el perejil y la sal.

Cubrir todo con agua y llevarlo a ebullición. Bajar el fuego y dejar cocer hasta que las lentejas estén Dernas.

Sacar el muslo de pollo, deshuesarlo y devolver la carne limpia a la cazuela.

Servir.

LENTILS Put a liOle olive oil in a pan and gently fry the onion, carrot, celery and garlic.

Rinse the lenDls in cold running water and add them to the pan along with the chicken leg, the chorizo, the potatoes, the bayleaf, the pimentón, the parsley and some salt.

Cover these ingredients with cold water and bring to the boil. Turn down the heat and simmer unDl the lenDls are tender.

Remove the chicken leg, discard the bone and put the lean meat back into the lenDls. Serve.

MIGAS

MIGAS

Ingredientes para seis personas:

Ingredients for six people:

1 kg de harina de trigo 1 litro de agua 150 ml aceite de oliva 8 ñoras 6 pimientos verdes italianos 200 g de tocino salado 300 g de salchicha fresca 2 manojos de ajos Dernos Sal

1 kilo plain flour 1 litre of water 150 ml olive oil 8 ñoras (dried round red peppers) 6 green Italian-­‐style peppers 200 g salted pork belly 300 g fresh Spanish sausages 2 bunches fresh young garlic Salt

MIGAS Mezclar en un lebrillo el agua con la harina y la sal hasta conseguir una masa homogénea.

Poner el aceite en una sartén, freír los ajos y apartarlos.

Freír los pimientos y apartarlos junto a los ajos.

Freír las salchichas en trozos pequeños y cuando estén, freír el tocino. Apartar.

Tostar las ñoras en el fuego y trocearlas.

En el aceite sobrante se incorpora la masa de harina y poco a poco se va removiéndo y cortándo con una espátula para ir formando las migas. (Esto tardará unos veinte minutos).

Cuando las migas estén doradas mezclarlas con los ingredientes anteriores y servir.

Las migas se podrán acompañar con fruta de la temporada: melón, granada, mandarinas, etc.

MIGAS Mix the flour, the salt and the water in a bowl un8l you obtain a smooth ba;er.

Put the oil in a frying pan, fry the garlic and set aside. Fry the green peppers and set aside with the garlic.

Break the sausages into small pieces and fry them in the same oil. Reserve. Fry the belly pork and set aside.

Toast the ñoras (dried red peppers) in a frying pan without oil and break them up into small pieces.

Add the flour mixture to the remaining oil in the frying pan. Fry the mixture, s8rring all the 8me and cuKng the ba;er into small pieces with the spatula to form the migas (crumbs). This will take about twenty minutes.

When the migas are golden brown, mix them with the other ingredients and serve.

Migas are tradi8onally served with seasonal fruit: melon, pomegranate, mandarins, etc.

ARROZ CON VERDURAS

VEGETABLE RICE

Ingredientes para cuatro personas:

Ingredients for four people:

4 alcachofas, en cuartos 1/2 coliflor pequeña, en trozos 1/2 pimiento rojo, en daditos 3 tomates maduros, rallados 1 puñado de guisantes frescos 1 manojo de ajos Dernos 400 g arroz Sal Aceite Azafrán Caldo de verduras

4 arDchokes, in quarters 1/2 small cauliflower, in florets 1/2 red pepper, in cubes 3 ripe tomatoes, grated 1 handful of fresh peas 1 bunch of fresh garlic 400 g rice Salt Olive oil Saffron Vegetable stock

ARROZ CON VERDURAS Poner la coliflor en una bandeja de horno con un poco de aceite de oliva y sal y asarla durante 20 minutos a 200ºC. Reservar.

En una paellera echar un poco de aceite de oliva y freír los cuartos de alcachofa con los ajos Dernos.

Añadir el pimiento rojo y freír.

Añadir el tomate rallado y un poco de sal.

Cuando el tomate esté, hay que echar el arroz y remover bien.

Añadir el caldo de verduras caliente, el azafrán, los guisantes y la coliflor.

Dejarlo a fuego medio hasta que esté el arroz en su punto.

Dejar reposar 5 minutos y servir.

VEGETABLE RICE Put the cauliflower on a baking tray with a liOle bit of olive oil and salt and roast for 20 minutes at 200ºC. Put aside.

Put some olive oil in a paella pan and fry the arDchokes and the garlic.

Add the pepper and fry.

Add the grated tomato and a liOle salt.

When the tomato is fried, add the rice and sDr well.

Add the boiling vegetable stock, the peas and the cauliflower.

Lower the heat and cook unDl the rice is just done.

Take off the heat and leave to rest for 5 minutes before serving.

OLLA GITANA

OLLA GITANA (GYPSY STEW)

Ingredientes para 6 personas:

Ingredients for 6 people:

250 g garbanzos 250 g alubias blancas 1 gajo de calabaza 200g judías verdes planas 1 pimiento verde, cortado en trozos grandes 1 tomate entero 2 patatas 1 cabeza de ajos, entera Unos tacos de jamón Pimentón Azafrán Sal Aceite de oliva

250 g chickpeas 250 g cannellini beans 1 large slice of pumpkin 200 g flat green beans 1 green pepper, cut into large pieces 1 tomato, whole 2 potatoes 1 bulb of garlic, whole Pieces of Serrano ham Pimentón (ground red pepper) Saffron Salt Olive oil

OLLA GITANA Cocer los garbanzos y las alubias (que previamente han estado en remojo toda la noche) en una olla express durante veinte minutos.

Destapar la olla y añadir las verduras, el jamón, el pimentón, el azafrán, un poco de sal y un chorro de aceite de oliva.

Cocer durante 30 minutos.

Desechar la cabeza de ajos. Pelar el tomate, trocearlo y devolverlo a la olla.

En un mortero, picar un diente de ajo y machacarlo con un poco de calabaza.

Devolverlo a la olla.

RecDficar de sal y servir.

Es mejor dejarlo reposar unas horas y luego calentarlo antes de servir.

OLLA GITANA (GYPSY STEW) Cook the chickpeas and the beans (which have previously been in soak overnight) in a pressure cooker for 20 minutes.

Open the pressure cooker and add all the vegetables, the ham, the pimentón, the saffron, a liOle salt and a glug of olive oil.

Cook for another 30 minutes in the pressure cooker.

Discard the bulb of garlic. Peel the tomato, chop it and return it to the pan.

Crush a fresh clove of garlic and mash it with a piece of the cooked pumpkin.

Return it to the pan.

Check the seasoning and serve.

It is beOer to leave the stew to rest for a few hours and reheat it just before serving.

RISOTTO CON ALCACHOFAS

RISOTTO WITH ARTICHOKES

Ingredientes para cuatro personas:

Ingredients for four people:

1 cebolleta, picada 2 dientes de ajo, picados 1 puerro, picado 4 alcachofas, cortadas en cuartos 1 puñado de guisantes frescos Medio vaso de vino blanco 400 g arroz Caldo de verduras caliente Unas hebras de azafrán Unos taquitos de jamón (opcional) 100 g queso Parmesano, rallado Una nuez de mantequilla 2 ó 3 hojas de hierbabuena (opcional)

1 onion, finely chopped 2 garlic cloves, finely chopped 1 leek, finely sliced 4 arDchokes, cut into quarters 1 handful of fresh peas Half a glass of white wine 400 g rice Hot vegetable stock A pinch of saffron strands Diced Serrano ham (opDonal) 100 g Parmesan cheese, grated A knob of buOer 2 or 3 mint leaves (opDonal)

RISOTTO CON ALCACHOFAS Poner un poco de aceite de oliva en una cazuela y sofreír la cebolleta, el ajo y el puerro.

Aparte, cocer las alcachofas en el caldo con el azafrán hasta que estén Dernas. Reservar.

Incorporar el arroz a la cazuela y saltearlo unos minutos. Añadir el vino blanco y remover hasta que se evapore el alcohol.

Añadir los guisantes y las alcachofas a la cazuela.

Añadir una taza de caldo caliente al arroz y remover hasta que el arroz lo absorba. RepeDr esta operación, taza a taza, hasta que el arroz esté casi hecho.

En este momento se añaden los taquitos de jamón y la hierbabuena (si se van a usar), la nuez de mantequilla y la mitad del queso Parmesano.

Dejar reposar dos minutos y servir espolvoreado con el resto del queso Parmesano.

RISOTTO WITH ARTICHOKES Put a liOle oil in a pan and lightly fry the onion, garlic and leek.

At the same Dme cook the arDchokes in the stock with the saffron unDl they are tender. Drain the arDchokes and set aside.

Add the rice to the onion mixture and sDr for about two minutes before adding the wine. SDr unDl the alcohol has evaporated.

Add the peas and the arDchokes to the pan.

Add a ladleful of hot stock to the rice and sDr unDl the rice has nearly absorbed the stock.

Repeat this operaDon, ladleful by ladleful, unDl the rice is just tender.

At this moment, add the ham and the mint (if using), the knob of buOer and half of the Parmesan cheese.

Leave to rest for two minutes and serve sprinkled with the remaining Parmesan cheese.

BUÑUELOS DE CALABAZA

PUMPKIN FRITTERS

1 kg calabaza, sin pepitas ni piel, cortada en trozos 2 huevos 150 ml leche 1 sobre de levadura Royal 500 g harina blanca Aceite de oliva Azúcar y canela para rebozar

1 kg pumpkin,peeled and without seeds, cut into pieces 2 eggs 150 ml milk 1 packet (15 g) bicarbonate of soda 500g plain flour Olive oil Sugar and cinnamon for dusDng

BUÑUELOS DE CALABAZA Se cuece la calabaza en agua hasta que esté Derna. Se escurre y se machaca con un tenedor.

En un recipiente se baten los huevos, se añade la leche, la levadura Royal y la harina y se mezcla bien. A esa masa se echa la calabaza y se remueve.

Se va echando la masa, cucharada a cucharada, en una sartén con aceite caliente.

Una vez elaborados los buñuelos, se rebozan en una mezcla de azúcar y canela.

PUMPKIN FRITTERS Cook the pumpkin in water unDl it is tender. Drain and mash the pumpkin with a fork.

Beat the eggs in a bowl. Add the milk, the bicarbonate of soda and the flour and mix well. Add the mashed pumkin to this mixture and sDr. Heat plenty of olive oil in a frying pan and when it is hot take spoonfuls of the mixture and fry them unDl they are golden brown.

Drain the friOers on kitchen towel and dredge them in a mixture of sugar and cinnamon.

Ingredientes:

6 huevos 500 g azúcar 275 ml aceite de oliva 250 ml zumo de naranja 1 cucharada de bicarbonato Canela y ralladura de limón al gusto 1.5 kg harina

6 eggs 500 g sugar 275 ml olive oil 250 ml freshly squeezed orange juice 1 dessertspoon of bicarbonate of soda Cinnamon and grated lemon rind, to taste 1.5 kg plain flour

TORTAS DE NARANJA En un recipiente, baDr los huevos con el azúcar. Añadir el aceite.

Disolver el bicarbonato en el zumo de naranja y añadir a la mezcla de huevos junto con la canela y la ralladura de limón.

Incorporar la harina poco a poco hasta obtener una masa bastante espesa.

Con las manos untadas de aceite, ir cogiendo trozos de la masa y formando bolas que se ponen en una llanda forrada con papel vegetal.

Hornear las tortas en un horno precalentado a 180ºC hasta que estén doradas.

Dejar enfriar y servir.

ORANGE CAKES Beat the eggs with the sugar in a large bowl. Add the olive oil.

Dissolve the bicarbonate of soda in the orange juice and add to the egg mixture along with the cinnamon and the grated lemon rind.

Gradually add the flour, mixing with your hands, unDl you obtain a sDff dough.

Smear your hands with a liOle olive oil and form evenly sized balls with the dough. Place the balls on a baking sheet which has been lined with greaseproof paper. Make sure there is plently of space between each ball.

Bake the cakes in a preheated oven (180ºC) unDl they are golden brown.

Leave to cool and serve.

CORDIALES (ALMOND SWEETS)

1 kg almendras 400 g cabello de ángel 200 g azúcar 4 huevos Canela y ralladura de limón a gusto Obleas

1 kg almonds 400 g cabello de ángel* 200 g sugar 4 eggs Cinnamon and grated lemon rind, to taste Rice paper *Cabello de ángel is a type of pumpkin (cucurbita ficifolia) which is is sweetened and used in cakes and pastries. It is sold ready prepared in Dns and is available from most supermarkets.

CORDIALES Picar las almendras. Es importante que no estén hechas un polvo, sino que haya trocitos de almendra.

En un recipiente, echar las almendras, el cabello de ángel, el azúcar, la ralladura de limón y la canela. Mezclar bien.

Añadir los huevos uno a uno y remover la masa bien con las manos.

Distribuir las obleas en una llanda forrada con papel vegetal.

Con las manos, ir cogiendo bolas de la masa y depositándolas encima de las obleas.

Hornear los cordiales en un horno precalentado a 180ºC hasta que estén dorados. Hay que tener cuidado de no quemarlos.

Cuando estén fríos hay que reDrar el exceso de oblea. Guardarlos en un recipiente herméDco.

CORDIALES (Almond sweets) Grind the almonds. It is important not to reduce them to a powder. The almonds should be in small pieces.

Put the almonds in a bowl along with the sweetened pumpkin mixture (cabello de ángel), the sugar, the lemon rind and the cinnamon. Mix well.

Add the eggs one by one and use your hands to incorporate them evenly into the mixture.

Put the sheets of rice paper onto a baking tray which has been lined with greaseproof paper.

With your hands, take small balls of the mixture and put them onto the rice paper. Make sure they don’t touch.

Bake the sweets in a preheated oven (180ºC) unDl they are golden brown. Be careful not to burn them.

When they are cool remove the excess rice paper around each sweet. Store them in an airDght Dn.
