Aqiimuk’s Kitchen By Patricia Aqiimuk Paul, Esq. When my husband, Kevin Paul, filets salmon, I hang around a bit and ask for the salmon eggs and salmon heads. I use the heads for soup. The eggs I either boil or bake. But this a particularly large quantity. I decided to fry them in olive oil with some spices and tasty ingredients. When done, I put a large scoop in a bit of tinfoil, with a plastic spoon, and handed out to guests at the Swinomish Days Pow-Wow, asking first if they liked salmon eggs.

Ingredients Salmon eggs Olive oil Onion, minced Garlic, crushed or minced Ginger, fresh, minced Parsley Black pepper Preparation Rinse and drain the skeins of salmon eggs. In a small fry pan, heat olive oil. Add minced onion, garlic and finely minced ginger. As the onion becomes translucent, add parsley and then the eggs, maintaining a medium-low heat. Stir every minute for about 5 minutes. Cover and continue cooking an additional 10 to 15 minutes, on the medium-low heat. The eggs will separate and turn an opaque orange. Serve immediately when warm.

It was determined that no crime had been committed. 5:47 p.m.: Fraud – A La Conner resident called to report fraudulent charges on her credit card. An employee had mistakenly entered the wrong credit card information. 7:13: Bad driving – A green jeep was driving erratically on Fir Island Road near Snow Goose Farms. A deputy responded to the call but was unable to locate the vehicle.

DIDN’T DO IT – Seriously, it may look like this fur-face fellow was in the driver’s seat last week when a semi truck hit a phone line near the intersection of Fifth and Center streets in La Conner last week, but he’s not going to take the rap for it. The wires were just loosened, and there was no major damage. Still, the real driver, who is not particularly furry, wanted to stop and report it. – Photo by Don Coyote

Aqiimuk’s Kitchen By Patricia Aqiimuk Paul, Esq. When we have visitors to our raised bed garden behind our house, my husband points to my raspberry and boysenberry plants and says that those are “his wife’s” and then he points to a wild patch of Pacific blackberries just beyond and behind his carving area and proudly says that this is his berry patch. The blacktail deer that roams, grazing in our yard, have been seen eating the blackberries in Kevin’s backyard patch. I decided I had better start picking, and my first harvest was about two cups, the perfect amount for a small pie, which I adapted from this full recipe.

Ingredients 6 cups blackberries 1 cup sugar ½ cup flour ½ teaspoon cinnamon (optional) 1 tablespoon lemon juice 1 tablespoon butter or stick margarine Pastry for a two-crust pie Tinfoil Preparation Preheat your oven to a high heat, at 425 degrees F. Line a pie plate with one pie crust. In a small bowl, mix the sugar, flour and cinnamon. Pour over your berries (in a separate bowl) and mix thoroughly. Pour into the bottom of the pie crust. Sprinkle with the lemon juice. Cut the butter into thin pieces and scatter over all. Place the second pie crust over and crimp the edges, piercing the top pie crust to allow any berry juices to escape. You are baking in a hot oven, and to protect the edges of the pie from over-baking, craft coverings from thin strips of tinfoil. Crimp your fashioned tin foil coverings over the edges of the pie and leave there until the last 20 to 15 minutes of baking time. For a full-size pie, bake for 45 minutes. For a smaller version (such as illustrated), halve the ingredients, except the lemon juice and butter and bake for 35 minutes total.

Aqiimuk’s Kitchen

.

By Patricia Aqiimuk Paul, Esq. My step-mother, Dorothy, prepared this recipe in the cold Alaskan winter months. My step-brothers would gag, but I enjoyed the warm, milky buttered broth. I also enjoyed the story she shared over and over from her Pennsylvania childhood. Her country upbringing was in a rural area of Northwest Pennsylvania near Meadville, an hour away from Lake Erie. Family gatherings were held at the Meadville Wesleyan Methodist Church, to which I enjoy a wonderful memory from my childhood. Their two-story wood home was in the midst of an apple orchard, the occupation to which my step-grandfather, Byrd Eldred, made his vocation. At their dinner table was welcomed a male guest, whom my mother delightfully describes as a gentleman in a country suit, who ate his peas lined up on a dinner knife. As children, she allowed us to attempt this feat, to which we all giggled at our attempts. She prepared this dish with canned peas, and I recently made this for dinner with frozen peas that I cooked in milk and butter. You may substitute fresh peas and prepare accordingly.

Peas in Milk-n-Butter

Ingredients Peas, frozen or canned Milk, one cup Butter, 1 tablespoon Preparation To cook, add your frozen peas into a small saucepan and cover with milk, adding a dollop of butter. Warm up gradually, but avoid boiling. Cook to the length of time as indicated on the packaging. To prepare with canned peas, drain the water, and add to the small saucepan and cook as above. To thoroughly enjoy this recipe, serve in individual small bowls that will hold about ¼ or ⅓ cup of peas and milk-butter broth.
