Does Saving for Retirement Stress You Out? If so, you are not alone. A recent survey found that saving enough for a comfortable retirement is the top source of financial stress, even for Millennials. Worries about retirement even surpassed concerns about job security and paying off credit card debt. A common question from our clients is: How much do I need to save for retirement? The answer really depends. There are lots of general guidelines out there. Rather than rely on generic advice, the answer should depend on what retirement will look like for you. Are you planning on staying in your current home or downsizing to a smaller home? Do you plan to travel the world or stay at home working on your garden? What other sources of income will you have in retirement? All of these factors, and several others, impact how much you need to save for retirement. There are countless obstacles that can quickly derail a comfortable retirement. One such obstacle is health care expenses. It is estimated that a 65 year-old healthy couple retiring today will pay $394,954 over their lifetime in health care expenses. Another potential pitfall is relying on Social Security as a primary source of income. Currently, it is estimated the Social Security Trust fund reserves will run out by 2035 and after that will only be able to cover 77% of benefits. Another risk to having a comfortable retirement is failing to plan for time. An early retirement or a family history of longevity will impact how long your financial assets need to last. We often get asked: So what are my options? Getting your money working harder for you is an easy tactic to help achieve your retirement goal. Part of the equation is starting early to let your money compound. Another part of the equation is making sure you have the appropriate asset allocation. Be smart with your money and maximize your employer 401(k) match. A dollar for dollar match essentially doubles your money without even getting into the stock market. Tax efficiency is another way to maximize your money. The future tax benefits of a Roth account can be enormous since the earnings pulled out after 59-½ remain tax-free. I have only scratched the surface in regards to the complexities, issues and strategies for retirement planning. I strongly suggest that everyone work with a financial planner to develop a customized plan with the best retirement strategy for you. Having professional advice can help alleviate the stress of planning for retirement. Regarding wine (see p. 86), what’s your favorite type, brand or both? SARAH CONARD I tend to be a seasonal wine drinker – a nice crisp sauvignon blanc on a patio in the spring and a spicy, earthy pinot noir in front of a fire in the winter.

AMANDA DAHL If I must pick a favorite wine, there’s absolutely no denying the deliciousness of Champagne. After all, as Dom Perignon once proclaimed, who doesn’t want to taste the stars? Banfi’s Rosa Regale proves unforgettable. IMPORTANT CONTEMPORARY HOME

CONNIE MITCHELL My favorite at a recent tasting was a 2013 Herman Story Milk & Honey tempranillo blend from California. It’s a fuller-bodied red with lower acidity. Drink what you enjoy, but also explore the great variety of wine!

EDITOR ‌WHILE I WAS ATTENDING THE UNIVERSITY OF MISSOURI, IT’S safe to say that college football season was the best of seasons. There’s nothing better than seeing that sea of gold, hearing the roar of the MIZ cheer, and the sound of a cannon signifying a touchdown. Even if you aren’t a big football fan, there is one thing that many nonfans can stand behind, and that’s tailgating. Not only does tailgating get you pumped up for the big game, but also it provides you with time to enjoy family, friends and, of course, some delicious grub. In this week’s Arts & Culture section, on p. 88, LN contributing writer Shannon Weber shares four recipes to help kick off your football season with not only flavorful, but fun, fan fare. And don’t forget: A tailgate isn’t complete without a delicious drink in hand. Make sure to check out this month’s The Wine Life by LN columnist Stanley Browne on p. 86. This month’s column expands to three top wine choices perfect for tailgate pairings. Enjoy! All the best,

Alecia Humphreys

n today’s world, 77 percent of people who are released from prison reoffend in a three- to five-year time frame. That makes it the third-largest social issue in the United States, right behind poverty and disease. St. Louis-based Concordance Academy of Leadership is working to battle this problem. Concordance Academy was created to address reincarceration and its many associated social problems. It is the first holistic, integrated and evidence-driven model in the country that engages the public, private and academic communities in providing quality services tailored to reentering prisoners. Led by former Wells Fargo Advisors CEO Danny Ludeman, Concordance Academy has quickly become a leader in the movement to reduce reincarceration. The numbers behind this issue drive Ludeman to educate the St. Louis community. “There are roughly 100 million people in this country who are affected by mass incarceration,” he says. “That includes people who are currently in prison, who were formerly in prison and their immediate family.” To bring awareness to reincarceration and its associated social problems, Concordance Academy is hosting its second annual gala Oct. 22 at The Ritz-Carlton, St. Louis. The evening will feature a cocktail hour, dinner and a concert featuring countrymusic singer Brett Young. “One of the primary purposes of this gala is to get the word out about a horrendous issue that a lot of people aren’t aware of,” Ludeman says. “It is also to ask for support. Support is monetary, but we also need volunteers to rally around these people when they come home, and we need employers to hire these individuals. We want to change perceptions about this population, and remind the community that we are all created in God’s image.” Concordance Academy’s goal is to dramatically lower reincarceration rates, first in St. Louis, then across the state of Missouri, and eventually nationwide. “It’s important that while our goal is to lower reincarceration rates, we also want to do more than that by helping people live joyful and productive lives,” Ludeman says. The Academy’s curriculum includes education and job readiness, employment, substance use, mental health, cognitive and relationship skills, housing and life in the community. Six months prior to release, the Academy assesses each enrollee academically, cognitively and socially to create a customized plan for that individual. “Hope is probably lacking more for this population than for any other population in the country,” Ludeman notes “St. Louis has the opportunity to lead the nation in solving this problem once and for all.”

Field of Dreams-themed fundraiser knocked it out of the park late last month, raising more than $120,000 in net proceeds to benefit United Services for Children, a nonprofit pediatric-therapy and developmental-learning center in St. Peters. More than 300 guests attended the dinner auction in the Discovery Ballroom of Ameristar St. Charles, many of them dressed in baseball-style clothes (in keeping with the the cinematic theme). A special appeal raised money to support United Services for Children’s early-intervention program, which provides additional support for the agency’s youngest children with special needs. President and CEO Denise Liebel and Satya Veerapaneni – Wentzville plant manager with General Motors, one of the event’s sponsors – presented awards to longtime supporters of the agency. Jane Carlisle and her husband, Jim Dolson, received the 2016 Crider Award. Bax Engineering Company and its president, Cliff Heitmann, received the 2016 Community Partner Award. Carlisle, Dolson and Heitmann have volunteered many years on the agency’s boards and committees. Bax Engineering has supported the agency through donations and volunteer activities. The Field of Dreams event marked the 32nd annual dinner auction for United Services for Children. Founded in 1975, the agency provides physical, occupational and speech therapy for preschool-age children, plus early-intervention and familysupport services. The agency serves an average of 800 children annually, focusing on its mission to prepare children of all abilities to reach their full potential.

he Greater St. Louis Honor Flight hosted a special thank-you earlier this month at its Flags of Valor salute on Art Hill. The setting involved cocktails and dinner overlooking 7,000 flags, each memorializing an active-duty member of the United States military who gave the ultimate sacrifice for his or her country. A once-in-a-lifetime event, the salute guested 20 Honor Flight veterans, who thanked the sponsors for their generosity and chatted with them about the vets’ wonderful trip to Washington, D.C. The Greater St. Louis Honor Flight (a nonprofit organization) transports veterans there at no cost to them, in order to visit war memorials built in their honor. Top priority goes to America’s most-senior veterans, survivors of World War II and the Korean War, and any terminally ill veterans who wish to visit those memorials.

BUCKING FOR BABIES

Photos and story by Diane Anderson

N

urses for Newborns recently held its third annual Bucking for Babies fundraiser at PBR St. Louis: A Cowboy Bar at Ballpark Village. Guests were invited to make pledges and to ride a Brahman bull. Everyone enjoyed cocktails and light snacks, while listening to country-andWestern music – and, of course, raising funds for a very important cause. Many newborns are born at risk, without health care or the bare necessities to live. The organization’s nurses provide in-home medical care to babies, along with food, clothing, diapers and a chance to survive. Also, by supporting babies born to homeless mothers, the organization’s nurses can mentor struggling mothers and serve as an added lifeline to babies.

Thirty million adults and children in the United States have diabetes. Working to bring these numbers down and stop diabetes are the American Diabetes Association (ADA) and its St. Louis chapter. Every year, ADA St. Louis sponsors a camp for children with diabetes at Trout Lodge in Potosi. This camp gives kids the opportunity to have fun and learn how to better manage their diabetes. and prevention,” Marek says. “We want to provide easy-to-understand health information to help prevent diabetes and live better with it.” Starting with this educational aspect early on is important. The ADA hosts a camp for kids ages 7 to 17 at Trout Lodge in Potosi each June to provide them with the opportunity to learn more about managing their diabetes and, of course, to have fun. “This is a medically safe environment for these campers, and we have a team of medical professionals there all week monitoring the children,” Marek says. “The whole team – endocrinologists, nurses, dietitians, social workers – supports these children so their parents can have that peace of mind. These kids grow and become more independent with their diabetes care. Each activity they participate in is tied back to managing their diabetes.” The ADA doesn’t turn away any family who can’t pay for camp, and many of the campers come from underserved families. “We provide scholarships and financial assistance for camp, because a lot of these kids wouldn’t be able to go otherwise,” Marek says. “Every time the kids return from camp, the smiles and experiences they get … You can’t put a dollar sign on that.” During the Oct. 22 gala, a portion of the live auction called Fund the Need will take place, where attendees can raise their paddle for a designated dollar amount that will be restricted to fund the camp. hen a disease affects 10 percent of the population, rallying around prevention and research is key. The American Diabetes Association (ADA) and its St. Louis chapter are committed to educating the public about how to stop diabetes and support those living with it. Each year, the St. Louis chapter hosts a gala to raise funds and spread awareness. This year’s gala will take place on Oct. 22 at the Hilton St. Louis at the Ballpark. Area director Michael Marek says the evening will consist of a VIP cocktail reception, a general cocktail reception, dinner, a program, a live auction and live music. “People often ask me, ‘If I support the ADA, where does the money go?’” Marek says. “We have four areas we’re always working toward.” The first is research, which the ADA funds. He notes that the ADA currently invests $700 million in 4,500 research projects, many of which are taking place at Washington University in St. Louis. “Today, people are living longer, healthier lives thanks to research,” he says. The second aspect is advocacy, ensuring that people have equal opportunities to education, recreation, employment and more. The third is health care excellence. Marek notes that the association will help meet the demands for health care by providing health care officials with the information they need to better provide quality care for people with diabetes. The fourth area is total wellness. “We’ve always been on the front lines of education

his client in Webster Groves reached out to Morgan Brown of Morgan Elizabeth Interiors to redesign the great room of her Mediterranean-style home. The client aimed to blend the house’s architectural style with her midcentury-modern pieces. “The whole house was pink, green and yellow,” Brown says. “We had to do a major paint transformation.” After settling on the right neutral color, one that wouldn’t take away from the intricately detailed limestone fireplace, the rest came into place. Originally painted pink, the fireplace inspired the style of the overhead light. Brown says she added the medallion above the Anthropologie fixture to match the details of the fireplace. Many of the remaining pieces in the room were antiques the client already had, including the black end table and tan chair, which is from Warson Woods Antique Gallery. Other accessories in the room follow a black-and-gold color scheme. “I love black and gold,” Brown says. “We wanted to add gold pieces, like the candlesticks, to frame the fireplace and keep it really simple.”

Serene Spa

St. Louis-based firm The Design Source Ltd. makes a dream master bath come true.

W

hen a family was searching for the perfect place to call home, a modern mansion in Ladue featuring a stunning master bath had them sold. The dreamy bathroom was brought to life by Kris Keller and her team at The Design Source Ltd., who worked with Jeff Bogard of St. Louis-based luxury home builder R.E.A. Homes, to create the airy spa retreat for a local couple and their young daughter. As president and founder, Keller knows master bath customizations are at the top of homeowners’ wish lists, so she jumped at the chance to transform a blank slate into a unique master bath when her team was asked. Keller envisioned a serene spa: The luxurious modern design centers on an expansive, openended, walk-in Kohler spa-shower, with a white-and-gray vertical backsplash to complement the largesquare porcelain floor tiles of the same color palette. In addition to the stunning shower, a 63-inch, freestanding, contemporary bathtub by Lesa is nestled close to a series of narrow windows that let in ample light and views of the beautiful yard, a contemporary take on the traditional picture window. For plenty of prep room and storage space, large Cambria quartz countertops and cabinetry custom-designed by The Design Source and provided by Beck/Allen Cabinetry are used for the hisand-hers vanity areas, complete with square sinks from Duravit and brushed satin nickel faucets, all well-lit by hidden LED recessed lighting in the tray ceiling. And for the lady of the house, the team added a separate vanity area nestled into a corner, outfitted with a custom-designed floating mirror and ample storage space. Touches of abstract artwork, from paintings to sculpture, complement the room. To complete the tranquil space, there is also a separate commode room. Keller combined style, storage and function to create a long-lasting, luxurious bath – a room in the house that she says often deserves more design attention. “The clients enjoy this master-bath retreat with their young daughter, who loves to play in the open shower,” she says.

Remodeling dos and don’ts When it comes to bathroom remodeling, Keller says the primary reasons many homeowners wish to transform their baths are to add more personalization, enhance function and expand square footage. But bath renovations take careful planning and execution, she notes, so working with a professional team to implement all aspects of the remodel is vital. “Work with a seasoned professional who you trust and can collaborate with during this sometimes-daunting process – [as] most renovations require on-site creative problem-solving,” Keller says. “A reputable design firm will recommend creative solutions for space planning, as well as creating the aesthetic most pleasing to you.” Keller also advises homeowners to stay away from trends. “They come and go quickly; great design and beautiful materials are timeless,” she says. “Always think in terms of a space that will feel effortless and current 10 years from now. Careful selection of materials and finishes ensure a gracious and timeless bath.” As for the bath-remodeling budget, homeowners should keep in mind that plumbing fixtures, as well as quality cabinetry, will be the major costs, Keller says. Additionally, she adds that the bathtub can be a big expense when clients desire a free-standing, water-jetted tub. Keller also cautions homeowners to avoid common pitfalls, such as forgetting to factor in enough countertop and cabinet space. “People need and want great and abundant storage in a bath, so space planning is critical,” she notes, adding that homeowners should choose a design plan that includes an appropriate space for the commode and avoid one that requires moving plumbing – a major, costly project. The Design Source team gets to know clients to ensure it is exceeding all of their wants and needs through a comprehensive design. Keller says it’s all about attention to detail, such as adding ample electrical outlets, receptacles for hair dryers and specific areas for vanity and shaving needs. “[Homeowners] spend a lot of time in the bath and want to feel pampered and taken care of as [they] prepare for the day, so be sure you are including the elements of a great bathroom,” Keller says. “Think outside the box, and create a stunning space – bathrooms deserve to be amazing!” The Design Source Ltd., 636-391-7640, thedesignsourceltd.com

Stephen Gruszka of Berkshire Hathaway HomeServices Alliance Real Estate

By Amanda Dahl ‌Stephen Gruszka recognized at an early age what a home meant to him. Pairing families with the perfect residence seemed a natural next step. “Growing up, I would go to open houses whenever one was nearby,” Gruszka says. “I finally decided [becoming] a Realtor was the [right] career path for me – and it was a great decision.” Despite his inclination, the road to success in the housing industry proved much trickier than expected. “I got into the industry at the top of the market in 2005. Not long after, talk of the real estate bubble started – and before I knew it, the bubble burst,” he recalls. “That only helped [me] in developing great tools to strengthen my skills. I am thankful for the clients, who put their faith in me, and the great support team at Berkshire Hathaway HomeServices Alliance Real Estate. The mentorship I received helped me to succeed.”

The lessons he learned during that tumultuous time proved invaluable as he built his clientele. “Real estate is always changing. Staying on top of the local market and trends keeps me engaged. [I find it very] exciting and active,” he says. “In this current market, both buyers and sellers need to be prepared and educated to make fast decisions.” Gruszka’s incredible work ethic equips him to be the client’s best advocate when it comes to buying or selling one’s home. “Working hard to do the best you can everyday will get you far. I try to live by that,” he says. From his youth to now, real estate has proven invigorating every step of the way for Gruszka. “The process can be a rollercoaster. You hope the end result is positive for [the clients]. There are challenges with

Q&A

Camille Moore of Rebel + Ruse

PhotoS courtesy of Rebel + Ruse‌AND Sandy Gutierrez Photography ‌

By Denise Kruse

‌Camille Moore, owner, metalsmith and designer at Rebel + Ruse, began to make jewelry in 2012 while on an Air Force deployment to South Korea. Moore made pieces for her own use, but the jewelry caught the eye of friends and family who began requesting custom items of their own. After leaving the military in 2015 to attend graduate school full time, Moore began to build the Rebel + Ruse brand, creating unique rings, necklaces and cuffs from recycled sterling silver, using traditional metalsmithing techniques and stones handpicked from southwestern lapidary artists. Where/how did you learn metalsmithing? Is there a difference between traditional metalsmithing techniques and modern? I took a couple metalsmithing lessons through Craft Alliance and St. Louis Community College to learn the basics, but for the most part, I’m self-taught. I’m constantly researching techniques and working to advance my skill set, but I’m more inspired by the traditional/revitalist side of the craft overall. Traditional metalsmithing techniques refer to the processes of fusing and soldering metal by hand, chasing and repoussé, etc. More contemporary techniques include practices like enameling, or fusing layers of “glass” onto metal, similar to glazing in ceramics. I’d love to explore more contemporary and specialist techniques, but for now I’m focused on perfecting the basics. How is the sterling silver recycled/sustainable? Sustainable means the products are made with reclaimed/recycled metal or with third-party certified, ethically mined metal. Jewelers can send their “scrap” silver to silver suppliers to be recycled for future use. Unmined silver can be reclaimed from old jewelry, computer parts, etc., then recycled into new jewelry. I only purchase my silver through companies that offer post-consumer or recycled options and whose silver is mined sustainably – mining that attempts to reduce the environmental impact and improve working conditions for miners. Sterling silver as a precious metal can be continuously recycled with minimal loss in quality, and it’s important for me to use eco-friendly materials in my work. Where did you find your stone sources? What can you tell us about these lapidary artists? My sources took a bit of research, trial and error, to find. I’ve developed a good working relationship with several lapidary artists from Arizona and Nevada who cut and treat the stones themselves. These artists are often jewelers who learn lapidary skills for their work and supply stones to fellow jewelers. For me, it’s important to find the best-quality turquoise possible at reasonable prices for my customers. I try to source turquoise that’s as close to natural as possible, and I only purchase Americanmined stones. Natural turquoise is a stone that hasn’t been altered in any way but isn’t the most ideal for jewelry; it can easily crack, crumble and lose color over time. The stones I purchase, and most stones on the market, have been stabilized and sometimes enhanced, or chemically/electrically treated color preservation and hardening. This treatment translates to extended wear without deterioration. The amount of material a specific mine produces and the extent of treatment dictate how much each stone costs. I never use synthetic, imitation or lab-grown stones, however. I source my turquoise stones directly from lapidary artists to ensure I receive highquality product from a reliable source. Where do you get your style inspiration? Since my own personal style is so eclectic, I’d say I gather inspiration from infinite sources. My mood, my supplies and the specific stone I’m working with often dictate a piece’s direction. As far as design, my pieces range from minimalistic, simple bands to ornate turquoise pieces in a pastiche of traditional Native American jewelry. I’m inspired by art, fashion, nature – anything I find beauty in can be translated into jewelry design. I create things that I’d like to wear, and I don’t like to limit myself to one specific style. What kinds of custom orders have you received in the past? Or what is your creative process for custom orders?

Custom orders are often done to re-create previously sold design in a specific size for a buyer. My favorite customs, however, are the ones completely inspired by the buyer. I’ll sometimes have a commissioner come to me with a specific stone or design idea they wish to bring to life. I love this because it’s a chance for me to design something in a way I otherwise wouldn’t have, and I always learn something new. How has the response been so far since you opened up shop? The response has been really positive and humbling since opening in January this year. I’ve gotten to collaborate with other St. Louis makers on photo shoots ranging from wedding collections to children’s wear, even hairstyle art. The best part of creating my business has been meeting other makers in the community. I’m humbled at the support I’ve seen from my family, friends and community. What kinds of shops carry your products? Right now my pieces retail at Ruby Francis clothing on Cherokee, May’s Place antiques and vintage on Ivanhoe, and Urban Matter home accessories and gifts boutique in south St. Louis. I’m also a resident artist at MindScape Gallery in Chesterfield Mall and retail at Muse Clothing in Columbia, Missouri.

Jenny Hill’s design background and passion led her to found Lonesome Traveler, a St. Louisbased company specializing in neckties.

herever Jenny Hill goes, she’s on the hunt. Whether down the street to a local shop, exploring an antiques store or estate sale, browsing in cities across America and even abroad, Hill is always looking for eye-catching, colorful, high-quality fabrics just waiting to become statement neckties and pocket squares for her creative line of accessories, Lonesome Traveler. “Choosing the fabric is the most creative and fun part of the process in making my line of Lonesome Traveler products,” Hill says. “Each season I search for patterns and colors that are timeless as well as bold. Many are vintage, and others are newer fabrics that I find either here in St. Louis or throughout my travels.” Whether her goods are made with vintage or new fabrics, Hill seeks out natural fibers, tending to prefer cotton and linen, and because some fabrics are available only in limited quantities, her stock changes as she replaces older fabrics with new finds. “I have worked with silk – and can upon custom request – but cotton and linen lend to the more casual and rustic look that Lonesome Traveler embodies,” she says. Although quality is a concern, Hill relies heavily on her instincts, selecting patterns that catch her eye, including florals, stripes, plaid, gingham and ikat in a wide range of colors. Some items even feature animal designs such as white-tailed deer and horses. Hill established Lonesome Traveler when she moved to Dallas for a year with her fiancé in 2014. “We knew it was a one-year contract and that we would be moving again, and I wanted to start a project that I could take with me when we moved,” she says. Hill had been working in the fitness industry as a trainer and decided that it was a good time to explore a more creative pursuit, so while also working at a vegan diner in Dallas, she taught herself to make neckties on her off days. “I always wanted Lonesome Traveler to be a business, rather than a hobby, as I’ve always preferred being self-employed,” she continues. A website and a few craft shows later, Lonesome Traveler was officially up and running. Hill took the name Lonesome Traveler from the Jack Kerouac book of the

same title. He’s one of her favorite authors, and Lonesome Traveler explores themes involving new beginnings and self-discovery, both of which resonate with Hill. Yet, she points out that although she has lived in a number of cities, she tends to surround herself with friends, so the name of her business is also

a somewhat wry commentary on her own social nature. Hill taught herself to sew as a teenager before attending the University of Wisconsin-Madison and majoring in interior design, which required the study of color theory and drafting. “Making neckties really ties together my ability to sew and my technical skills I learned on the drafting table,” Hill says. “I have always loved décor, fashion and design, especially menswear. Menswear has always been more constrained than womenswear, and I enjoy seeing how people push those boundaries. One pleasant surprise I’ve found is that a good portion of my neckties are being bought and worn by women, both for everyday wear and especially for weddings.” Outfitting wedding parties has become a specialty for Hill, who began filling large, custom orders in response to customer interest. “Wedding orders are my absolute favorite orders to do,” Hill says. “Clients are beyond excited to wear the neckties and give them as gifts to their groomsmen. Plus, I always get to see amazing photos in the end, and it makes me feel so proud that people want to include my neckties on their big days.” Bold florals are the most popular wedding patterns, such as the summery Capulet’s Garden’s sage, pink and cream floral pattern that pairs with either chambray, black or navy suits. In addition to neckties, Hill offers complementary accessories that are also popular groomsmen gifts, including monogrammed tie clips, cuff links and pocket squares.

“The cuff links were a solution for my wedding orders, as they are fabric to match the neckties,” Hill says. “The tie clips are brass and leather with either single-letter or full monograms, which I dye and stamp in-house. I originally looked into outsourcing the tie clips, but by making them in-house, I can control the lead time for monogrammed products, which I try to keep under three days, as well as the quality. Also, I find it so fun to mix leatherwork into my normal routine of sewing.” Clients interested in custom wedding packages meet with Hill in her studio or at a fabric store, where they collaborate on choosing color, pattern and material. “I try to do as much custom fabrics for weddings as possible because I find the grooms want to be just as unique as the brides,” she says. This fall, Hill will introduce a line of aprons and smocks in natural linen or indigo dyed in two different patterns. Besides ordering online or making an appointment to shop Hill’s local studio, those intrigued by Lonesome Traveler products can find them in the St. Louis area at Urban Matter, Union Studio, Ruby Francis and May’s Place. She also shares via Instagram (@lonesome_traveler) a lot of vintage and unique neckties, which are always for sale upon inquiry. Prices range from $15 to $62, depending on the product. 1211 Childress Ave., St. Louis, 847-452-1478, ltoutpost.com

Omalu: From Brain Trauma, Triumph

By Dr. Benjamin Ola. Akande

‌Y

ou might say Bennet Omalu entered this world fighting. Omalu was born in the late 1960s amid one of the deadliest and most-harrowing conflicts on the African continent: the Nigerian Civil War, sometimes called the Biafran War. In that conflict, more than 1 million people, most of them members of Omalu’s Ibo ethnic group, died from disease or starvation – or were slain by government troops. The nearly three-year war attracted attention from prominent figures like Pope Paul VI and John Lennon. To survive, Omalu and his family relocated from their ancestral village and lived as refugees under perilous conditions. Through a combination of luck, the grace of God and a relentless will to live, the Omalus – father, mother and all seven children – survived. Subsequently, Omalu carried that familial relentlessness through a long and distinguished career as a forensic pathologist and neuropathologist. Perhaps no experience tested Omalu’s resolve better than his first encounter with a mysterious brain disease that was killing former football players. More specifically, in 2002, Omalu began looking

into the death of “Iron” Mike Webster, an erstwhile Pittsburgh Steelers center. Omalu suspected Webster died from a form of dementia caused by repeated blows to the head, and he coined a name for this brain disease: chronic traumatic encephalopathy (CTE). But his efforts to make a significant contribution to neurological research earned Omalu powerful enemies. For more than a decade, he battled the NFL, the most powerful sporting organization in the United States, over his research on athletes’ concussions. In the process, he was threatened, mocked and harassed. But his strong will prevailed. Today, thanks to Omalu, most Americans know of CTE and of the debilitating brain injuries many athletes suffer because of repeated blows to the head. In 2015, Omalu’s lengthy ordeal became the subject of Jeanne Marie Laskas’ book Concussion, expanded from an earlier article for GQ magazine. That same year, Hollywood legend Will Smith portrayed Omalu in a film of the same title, and Omalu’s story also was featured in the 2013 PBS Frontline documentary League of Denial.

Omalu twice has testified before Congress and served as an expert witness in hundreds of trials. He has a string of degrees from prestigious institutions like Pittsburgh’s Carnegie Mellon University and an even longer chain of medical certifications. Along the way, Omalu has become more than just an unlikely celebrity medical doctor; he has become a terrific role model and an inspiration to all people, particularly the young. His uncompromising commitment to truth forms a study in perseverance, and he remains a paragon of hard work, high ethical standards, discipline and scholarly excellence. More than anything else, perhaps when we most need it, he vividly reminds us of the promise of the American Dream.

The High Schooler’s View of College Applications

By Janis Murray

F

or most high school seniors, the college application process is the first time an outside decision-making institution asks, “Tell me about yourself.” Grammatically, the sentence isn’t even a question, but rather, an imperative. When I present this question to a client, it usually results in a pause of confusion, immediately followed by, “Well, what do you want to know?” The analogy I often use is of a giant roulette wheel spinning round and round with all those little holes along the perimeter; the student may not know which hole to drop the white marble in. This is normal. General requests are new and even scary for young adults. Specific requests are much easier, like, “What did you have for breakfast?” The answer may be eggs. “What’s your favorite color?” Red. But making your life relevant in a college essay, in 650 words or less, is tough! So let’s start simple. Colleges are curious about the future because you may be spending the next four years on their campus. They are asking for a glimpse of who you might be as a budding citizen going forward. This requires college essay writing that is expository, from the Latin word meaning to expose. I agree that this is different from a literary analysis, a compare-and-contrast paper for an English class or a research paper. It’s riskier too for the

Colleges are curious about the future because you may be spending the next four years on their campus. They are asking for a glimpse of who you might be as a budding citizen going forward. young, sensitive psyche. Because while sharing one’s own introspection may be safe and private in a diary, putting our thoughts out there for the world to see can fuel judgment. This may be wrong or, worse, sound like you’re bragging – something we are all taught not to do! Plus, we need to grab the college’s attention and keep it. Most diaries don’t do that. So the answer is somewhere in the middle – what I call personal journalism. Start with the who, what, when, where and why of your life – choosing one or two, not all. Focus on what you have done in the past and what you have learned as a result. These examples help you prove what you say is true, reflecting values and depth. And

no, you don’t have to be sure of everything. If you think you are sure of everything at age 18, I can assure you, you’re wrong. Give the college a glimpse of you, your goals and how you see life going forward. It’s the start of a story that will take years to tell.

umanity is predictable, with our species’ endless drive for more. No sooner do we invent the wheel before it’s used to create trade networks and weapons of war, stonework, and feats of engineering and architecture. Within just a few short years of the creation of the first modern automobile in 1885, humanity made such vehicles faster and formed the first motor sports. And ever since Karl Benz showed us a world without the horse and carriage, it’s safe to say humanity became obsessed with the automobile. The term sports car has been applied in many ways. To some, it simply means a car that’s fun, while others have a more rigid definition. I fall into the latter category, in large part because of my upbringing around British sports cars of the ’50s, ’60s and ’70s. No one will argue with a declaration of the low-slung and nimble Austin Healey 3000 and MGA two-seaters as being “proper” sports cars, with their thin canvas tops applied only as an afterthought. And for good reason: Those cars serve the simple purpose of painting the faces of their riders with ear-to-ear grins. For me, those cars created the blueprint of a sports car, to give what’s needed for true enjoyment and little more. Majestic as they were, however, they weren’t without flaw. Ideas like reliability, comfort and safety simply hadn’t become priorities yet – enjoyment came first. And it is the undeniable enjoyment cars of that mold provide that spawned a few generations of fanatics. It could easily be argued that the success of small, British-style sports cars led to the development of the first Corvette. At a time when America was making cars defined in terms of water displacement, the release of the small and nimble Corvette was a shock. And let’s not forget that Carol Shelby’s AC Cobra began life as a British creation, the AC Ace. Whether cars that fit more like jackets is your style or not, it cannot be argued that the British mold left a lasting impression that still exists today. Just when the sports car era was hitting its stride, the fuel crisis of the ’70s also hit. Shortly afterward, fears of looming federally mandated rollover protections struck, and just like that, we saw the long, dry decade known as the ’80s that deprived us of fun topless cars. These cars didn’t disappear, however; manufacturers knew customers would never stop wanting fun behind the wheel, and so, likewise, development didn’t stop in the ’80s. Once normalcy returned toward the end of the decade, the savior of the British sports car mold came from an unlikely source. Japanese underdog Mazda released the first Miata at the Chicago Auto Show in February 1989 and, in doing so, changed the automotive landscape. Mazda didn’t create a new blueprint with the Miata; it instead reminded us all of the classic British sports cars we had come to know and love. But what the Japanese did, which the Europeans never could, is produce a four-wheeled smile-inducer that was also drivable daily. The automotive press was positively ecstatic about the new Mazda: About the only 10-best list the Miata didn’t find itself on was the FBI’s “most wanted.” Demand far outstripped supply; if Mazda could have built 100,000 of that vehicle in the first year, the company would have sold every one. What made the Miata hugely successful was in-your-face

obvious. Because of humanity’s timeless desire for pleasure, the idea had already been well established as popular that what we want most is a car that gives exactly what’s needed for smiles per hour and little else. Mazda was the perfect dark horse to release such a car, as it had received similar acclaim for similar reasons with the introduction of the RX-7 in 1978. The small Hiroshima-based company knew how to build cars that connected driver and road intimately. In fact, with the development of the first Miata, Mazda used a philosophy called Jinba ittai, which translates to “rider and horse as one.” That was nearly three decades ago, and the Miata, now known as the MX-5, has become far and away the bestselling two-seater of all time. It’s easy for mission creep to come into play, as humanity’s desire to build bigger and better often leads to spoiling simplicity. Mazda, however, has stayed rigidly pure to that concept and, in doing so, has essentially cornered the market on the classic British style. I reviewed the 2016 MX-5 some months ago and was smitten, nay, infatuated with the car. The Miata and MX-5s of years past had always been so very close to what I wanted, but they just missed the mark in some small way. Early ones were a bit too small, later ones were just too cute, and the stereos installed had always been laughable. Yes, they all delivered the driving experience, but living with one was something I’d never considered. That all changed with the newest iteration. The new MX-5 is complete in every way. Cuteness has been replaced with real edge and honest sex appeal. At 6 feet 2 inches and 190 pounds, I don’t feel at all constrained by the

interior. And the stereo in the new car is legit rather than laughable. My infatuation for this new car was something I just couldn’t shake, so much so that I recently purchased one. In fact, the exact car I tested was still available on the Bommarito lot, and as I walked up to my old friend after months of absence, it still recognized and connected to my phone. I couldn’t fill out the paperwork fast enough. Post-honeymoon, I can honestly say the 2016 MX-5 doesn’t belong on 10-best lists just for the year – but for all time. As with the Miata of 1989, it didn’t create a new idea, but after all this time and urge to stray from those ideals of purity, it’s that purity that has remained and been refined, to the point of a head-shaking “How can it get any better?” More than the well-known driving experience, it was the livability that sold me. A car that can do all that, start at $24,915, deliver in the neighborhood of 40 miles per gallon and have no problem holding $200 worth of Wal-Mart haul in the trunk is pretty hard to talk yourself out of. Clearly there’s a demographic that will never show interest in such a car: those who demand more space or those in the market for a Hellcat, for example. But if you’re shopping for the closest thing in today’s world to a teleportation device, something that carries you to a place of stress-free liberation, the new MX-5 should be No. 1 on that list. The MX-5 is truly a car that must be experienced firsthand to be understood, which has always been the case with the classic British sports car.

n the Shaw neighborhood, new signage will soon replace the marker on the late local mainstay Mama Josephine’s. Comfort-food fanatics need not fret, however; the spot’s latest proprietors intend to carry on Mama Josephine’s family-focused tradition of from-scratch cooking with their own flavorful flair. Fives Ace Bar-B-Que opened in the 720-square-foot space in April. The menu combines a few favorites from Mary Samuelson’s Mama Josephine’s menu with Five Aces’ brand of home-style barbecue. The concept comes from Air Force veterans Antonio and Toshia Ellis. Antonio Ellis grew up in Sikeston, Missouri, learning how to cook at an early age from family members, including his grandmother, who was a professional chef. Fives Aces, which gets its name from the shared initials of Ellis and his four sons, began in local parking lots.

While he was grilling in his University City backyard a few years ago, the fragrant scent of barbecue began to attract the attention of friends, family and neighbors, who encouraged Ellis to make his smoked meats available for sale. He vended at local events such as the St. Louis Swap Meet before deciding to open his own storefront. His agreement with Samuelson was a serendipitous one. He approached her through a Craigslist ad not for the space, initially, but for a set of dishes. A couple of months later, an interest in dining room wares turned into a complete buyout of the business. “We talked for a long time and found out that we had a lot of things in common, like being from the South and cooking pretty much the same way – the same style,” Ellis says. “We just had a great rapport. We were on the same page. She asked me if I wanted to cook the next

day at the restaurant, and I gave it a try. It was well received, and next thing I knew, I was buying her out. “Because she has a full-time job already, the long hours at the restaurant just weren’t healthy for her. She needed to focus on retirement,” Ellis explains. “But I had no intention of any of this happening. It all still feels surreal to me.” Samuelson worked with Ellis to perfect the execution of her mother’s recipes, including fan favorites such as chicken and dumplings, catfish, chicken-fried steak and meatloaf. To complement the comfort classics, Ellis cooks up pork steaks, baby-back ribs, beef brisket, turkey ribs and more. Meats get cooked over an open flame with hickory wood and Ellis’ signature no-salt seasoning technique. To develop his special blend of herbs and spices, he and

his sons sat down at the kitchen table with nearly 40 different seasonings, tirelessly testing combinations until they landed on an addictive concoction good enough to eat with a spoon. Ellis works with two steel smokers – dubbed Big Daryl and Charlotte after beloved family members – to cook up his specialties. Choose from dishes such as rib-tip or pulled pork sandwiches with salads and sides including crispy broccoli salad, candied yams and fried okra. House-made desserts include peach cobbler and pecan pie. “This place is the perfect marriage – Mama Josephine’s paired with my style of barbecue. [Samuelson’s] very sincere about what she does, and I am, too,” he says. “This isn’t just about Five Aces. This is about carrying on her mother’s legacy. I honor and respect her enough to treat her items on the menu with as much love as my own.”

‌Story:  A young man sits in a London jail in 1909, awaiting possible execution for murder – one he says he didn’t commit. For the record, though, Monty Navarro is penning his memoirs, which he titles A Gentleman’s Guide to Love & Murder. Two years earlier, Monty was an impoverished lad who’d just buried his mum. Shortly thereafter, he’s visited by a mysterious woman named Miss Shingle, who informs Monty he actually comes from an aristocratic family. Miss Shingle also tells him that his mother was disowned by the stately D’Ysquiths for eloping with a Spanish musician, who subsequently died. Having been told that he’s ninth in line for the earldom of Highhurst, Monty informs his beloved Sibella Hallward of his potential wealth. She coolly replies that he’d have to kill eight people to inherit the title and riches of the Earl of Highhurst. She says she’s fond of Monty, but especially warms to the thought of riches – something that Monty’s rival, Lionel Holland, can provide her. Monty sets out to dispatch his eccentric, quirky relatives one by one. Along the way, though, he meets his attractive cousin Phoebe. As Monty nears his goal, Sibella grows fonder of him, even though she’s already married Lionel. Monty loves Sibella, but he’s attached as well to Phoebe. What’s a gentleman killer to do? Highlights:  Based on an early 19th-century novel by Roy Horniman, Israel Rank: The Autobiography of a Criminal – also the inspiration for the classic 1949 film Kind Hearts and Coronets – A Gentleman’s Guide to Love & Murder is a lighthearted, decidedly British romp that belies its ghastly moniker. The touring company now onstage at The Fabulous Fox Theatre delivers plenty of laughs, as well as a pleasing number of tunes to keep an audience regaled with the grisly tales of the bizarre D’Ysquiths et al. Other Info:  The Fox has selected a witty work to open its 2016-17 series in amusing fashion. A Gentleman’s Guide to Love & Murder won four Tony Awards in 2014, including Best Musical, Best Book of a Musical and Best Direction. Why not? The clever book penned by Robert L. Freedman, who also wrote the lyrics with composer Steven Lutvak, recalls the work of the Monty Python troupe. In fact, one can envision original Python member Terry Jones essaying the sundry and wacky D’Ysquith characters so amusingly portrayed (mostly) by John Rapson in typical Python style.

By Mark Bretz

It’s a jolly good romp along the way, due in no small part to the bright and brisk direction of Darko Tresnjak, who also guided the original Broadway production. Tresnjak incorporates the inspired projection design of Aaron Rhyne, which even includes a fall from a church steeple that pays homage to Alfred Hitchcock’s classic 1958 film Vertigo. Rapson is a busy chap as he dons the wardrobes of the myriad daffy D’Ysquiths, like the Reverend Lord Ezekial D’Ysquith and the humorously exaggerated bodybuilding zealot Major Lord Bartholomew D’Ysquith. In true traditional English-hall form, he’s a hoot in drag as Lady Hyacinth D’Ysquith as well. Kevin Massey is jolly good as the sincere if treacherous Monty Navarro, especially in comic interludes with the statuesque Kristen Beth Williams as the avaricious Sibella and Adrienne Eller as the beautiful and elegant Phoebe. Both women excel at their musical interludes, too, even if the pleasant numbers aren’t especially memorable or groundbreaking. If you consider yourself a card-carrying member of the Monty Python fan club, A Gentleman’s Guide to Love & Murder could be one of the highlights of your year. Take a Pythonesque “silly walk” down the aisles of The Fabulous Fox Theatre, and enjoy it.

F

ootball season is upon us, which means our families and friends are gathering together, donning team colors and huddling around large flat-screen TVs to cheer on our favorite teams. This year, switch up your football fare. Upgrading doesn’t have to mean fancy – simply begin with your favorites, and rethink them a bit. Buffalo wings can be a little tired; try wings smothered in a Korean hot sauce and scattered with peanuts. Never serve slow-cooker pulled pork again: Make a superior spice-rubbed version in your oven in the same amount of time. Reinvent your

menu, and you’ll be the MVP, no matter who wins the game. Strategy is critical: Making this much food at one time requires a well-laid plan. A double oven makes things easier, but if you have a single oven, stagger your hot items. Better yet, bake your wings in the morning before throwing your pulled pork in, but leave the sauce off. Once the pork is out and resting, reheat the wings at 400°F for 15 to 20 minutes until hot, toss in the sauce and finish the bake time. Save the nacho bar for halftime: People love something new and piping hot on the table midgame. Close out the meal with sweet and fun ice-cream sandwich “footballs.”

Gochujang Hot Wings With Coconut-Cilantro Dip Gochujang, a Korean hot sauce similar to but sweeter than Sriracha, is a perfectly unexpected choice for hot wings. You’ll find it in any well-stocked grocery store. Serves | 8 to 10 | Coconut-Cilantro Dip 1 Tbsp olive oil 3 Tbsp finely diced shallot 1 clove garlic, minced 2 tsp grated fresh ginger 2 Tbsp rice wine vinegar 1¼ cups Greek yogurt or sour cream ⅔ cup full-fat coconut milk juice of 2 limes 1 bunch fresh cilantro, roughly chopped Gochujang Hot Wings 6 lb chicken wings, separated, tips discarded 3 Tbsp olive oil sea salt and freshly ground black pepper ½ cup gochujang ¼ cup soy sauce 3 Tbsp rice wine vinegar 2 Tbsp chile-garlic paste 2 Tbsp granulated sugar 1 tsp mustard powder To Serve ¼ cup crushed peanuts 2 scallions, white and green parts, cut in thin rings ¼ cup roughly chopped fresh cilantro leaves 2 to 3 limes, sliced into wedges

| Preparation – Coconut-Cilantro Dip | In a medium skillet over medium-high heat, heat olive oil. Add shallot and cook until tender, 1 to 2 minutes. Add garlic and ginger, and cook until fragrant, 30 seconds. Remove from heat and stir in vinegar. In the bowl of a food processor or blender, add yogurt and coconut milk. Add lime juice, cilantro and shallot mixture; blend until smooth and mixture is freckled with cilantro leaves. Transfer to jar and refrigerate at least 1 hour. | Preparation – Gochujang Hot Wings | Preheat oven to 400°F. Line 2 lipped baking sheets with heavy-duty aluminum foil, up and over sides. In a large bowl, add wing pieces and olive oil; toss until coated. Divide onto prepared pans, leaving space between pieces. Season generously with salt and pepper. Roast for 45 to 50 minutes until wings are browned and crispy. While wings roast, in a medium bowl, combine remaining wing ingredients; whisk to blend. Set aside. When wings are cooked through, remove from oven and toss in gochujang mixture until coated. Remove foil from baking sheets, and place wings back on hot pans, spreading out in a single layer. Place back in oven until sauce has heated and wings have begun to caramelize, about 8 minutes, watching carefully so wings don’t burn. | To Serve | Pile wings on a platter and garnish with peanuts, scallions and cilantro leaves; set lime wedges alongside. Serve with chilled coconut-cilantro dip.

Spice-Rubbed Oven Pulled Pork

Having a little extra fat on the pork is especially nice if you’re making this the day ahead and rewarming; it stays juicy and moist on its own, without the need to add extra liquid. Toasting the spices makes a huge difference in your flavor, too, so don’t cheat and skip that step. Serves | 8 to 10 | Spice Rub 2 tsp whole fennel seeds 2 tsp whole cumin seeds 1 tsp coriander seeds 6 juniper berries 4 allspice berries 1 Tbsp kosher salt 1 tsp freshly ground black pepper 2 tsp smoked Spanish-style paprika 2 tsp garlic powder 1 tsp chile powder ½ tsp ground ginger ¼ tsp cayenne pepper Pulled Pork 5 to 6 lb bone-in pork shoulder, excess fat trimmed as needed spice rub (recipe above) 1 20-oz bottle barbecue sauce 1 package dollar rolls

| Preparation – Spice Rub | In a cold stainless steel skillet over medium heat, add fennel, cumin and coriander seeds. Toast, flipping seeds frequently to prevent burning, until fragrant and toasted. Remove from heat and transfer to mortar and pestle. Add juniper and allspice berries, and crush with pestle until finely ground. Add remaining spices and stir until combined. Set aside. | Preparation – Pulled Pork | Preheat oven to 325°F. Line a large lipped baking sheet with heavy-duty aluminum foil, up and over the sides. Set out pork shoulder for at least 30 to 45 minutes to take off chill. Using your hands, rub spice rub firmly into all sides of pork shoulder, and place fat-side up on prepared baking sheet. Cook for 3½ to 4 hours until meat is nicely browned and falls easily from bone when pulled. Remove from oven and cool for 30 to 40 minutes until easy to handle. | To Serve | Shred pork from bone and transfer to slow cooker set on warm. Serve with barbecue sauce on dollar rolls.

Halftime Loaded Skillet Nacho Bar

They’re called halftime nachos for a reason: They take mere minutes to make, and partygoers love something to munch on when they get up to stretch and refill drinks. These are vegetarian as written, but I advise the meat-lovers to throw some of the spice-rubbed oven pulled pork on these in lieu of or in addition to the beans before adding toppings. Serves | 4 to 6 | Cheese Sauce 2¼ cups 2 percent milk 2 Tbsp unsalted butter 2 Tbsp all-purpose flour 4 oz shredded Monterey y Jack ccheese 4 oz shredded d shar sharp white cheddar cheese 1 4-oz ccan Hatch green chiles, drained

| Prepar eparation – Cheese Sauce | In a small saucepan, heat milk until steaming, stirring occasionally. Meanwhile, in a large saucepan over medium heat, melt butter; add flour and whisk until smooth and cooked, 3 to 4 minutes. As you whisk, slowly stream milk into flour mixture; raise heat to medium high, and continue to whisk until mixture is smooth and bubbling, and thickens slightly. Slowly add both cheeses, whisking as you do so, until smooth consistency forms. Decrease heat to low and stir in chiles; keep warm until ready to use.

Loaded Nachos 2 Tbsp olive oil ½ cup finely diced shallot 2 poblano peppers, stemmed, seeded, ¼-inch dice 1½ cups fresh or frozen corn (thawed if frozen) sea salt and freshly ground black pepper 1 12- to 13-oz bag blue or mixed-color tortilla chips 1 15-oz can black beans, rinsed 1 to 2 oz shredded Monterey Jack cheese

| Preparation – Loaded Nachos | Preheat broiler and set a rack 8 inches from top of oven. In a large, heavy skillet set over medium-high heat, heat olive oil; add shallot and cook until softened, 1 to 2 minutes. Add peppers and corn, increase heat to high and cook for 8 to 10 minutes until vegetables are nicely charred in places. Remove from heat, season to taste with salt and pepper and keep warm.

To Serve 1 12-oz jar pickled jalapeño rings 16 oz sour cream 3 to 4 avocados, sliced 2 bunches fresh cilantro, roughly chopped 1 bunch scallions, cut in thin rings 8 oz crumbled queso fresco

september 23, 2016 | LadueNews.com

In a 12-inch cast-iron skillet, spread out half of tortilla chips and top with half of black beans. Drizzle 1 cup cheese sauce over top, leaving a 1-inch border around edge of chips. Top with half of corn-pepper mixture, and drizzle another ½ cup cheese sauce. Repeat with another layer of chips, beans, cheese sauce and vegetables; finish with shredded Monterey Jack over top. Place in oven to broil for 10 minutes until cheese is bubbling, browned on top and heated through. | To Serve | Place all ingredients in separate bowls and set up as a toppings bar. Serve nachos immediately straight out of cast-iron skillet alongside toppings.

Homemade Graham Cracker Ice-Cream Sandwich “Footballs otballs”

These ice-cream sandwiches are a perfectly sweet end nd tto any Super Bowl party. Make these with any ice-cream flavor you wish, or forr a m more indulgent treat, mix crushed chocolate candy into softened ice cream, refr freeze and assemble. Yields | 16 to 20 sandwiches | Graham Crackers 1¾ cups unbleached all-purpose flour, more forr dusting du surface 1½ cups graham flour 1 tsp baking soda ½ tsp kosher salt 1 cup room-temperature unsalted butter ⅔ cup tightly packed brown sugar 3 Tbsp 2 percent milk 2 Tbsp honey 2 Tbsp molasses ½ tsp pure vanilla extract Royal Icing 2 large egg whites 4 cups powdered s dered sugar, plus more to thicken as needed 1 tsp pure vanilla extract 1 gallon vanilla bean ice cream (for assembly)

| Prepar paration – Graham Crackers | In a large mixing bowl, add both flours, baking soda and salt; whisk until combined and set aside. In bowl of a stand mixer on high, beat butter and sugar until light and fluffy, 7 minutes. Scrape down sides of bowl, and add milk, honey, molasses and vanilla, then beat until incorporated, 3 minutes, scraping down bowl as needed. Set mixer to low and add flour mixture to butter mixture in 2 parts; stir until just combined and mixture comes together. Release bowl from stand, and use a spatula to incorporate any dry patches. Transfer dough to counter, press together and shape into a 1-inch flat rectangle. Wrap tightly in plastic wrap, and refrigerate at least 4 hours. Preheat oven to 350˚F, and line 2 rimless baking sheets with parchment paper. Remove dough from refrigerator, and set out on counter to soften slightly. Lightly dust work surface with flour, and roll out dough to ¼-inch thickness. Use an oval or football-shaped cookie cutter to cut out crackers, and set 1 inch apart on prepared sheets. Bake both sheets at once, rotating halfway through, for 15 to 17 minutes, until crackers take on a small amount of color around edges and bottom, being careful not to overbake. Remove and let cool on pans for 5 minutes, then transfer to a wire rack to cool completely. | Preparation – Royal Icing | In a large bowl using an electric mixer, beat egg whites until foamy. Beat in powdered sugar 1 cup at a time, beating after each addition until incorporated. Stir in vanilla until combined, and check consistency: Icing should be smooth but solid enough to hold its shape when piped. Add more powdered sugar as needed to thicken, or use a little water to thin out until desired consistency is reached. Add icing to a piping bag with a rounded tip, and decorate half of crackers with lacing, then trim to resemble footballs. | Assembly | Place cooled cookies on work surface, and remove ice cream from freezer. Using a small (1-ounce) ice-cream scoop, scoop 2 balls of ice cream onto an undecorated graham cracker, 1 right next to the other. Press a decorated cracker on top of the ice cream, firmly from center, until ice cream reaches edge of crackers. Use an offset spatula to smooth around perimeter so ice cream is even. Place all in a large, airtight container, and store in freezer immediately after assembling until ready to serve; if needed, layer between sheets of parchment paper to protect decoration. Remove from freezer and serve immediately when ready.

ENTERTAINMENT: Feature Story

DANCE ST. LOUIS

C

oming off a celebration of 50 years, Dance St. Louis is gearing up for year 51. With a continued mission of bringing to the region world-class dance that otherwise wouldn’t be seen here, Dance St. Louis kicks off this year’s season on Sept. 30 with Analogy/Dora: Tramontane from Bill T. Jones / Arnie Zane Company. Executive director Janet Brown says this group hasn’t been to St. Louis for many years, and the new piece they’ll be performing through Oct. 1 is exciting and fascinating. Jones did an oral history with his mother-in-law, a woman named Dora Amelan, who was a 95-year-old French Jewish nurse, social worker and survivor of World War II. “[Jones] became fascinated with Dora’s story,” Brown says. “He was inspired by her heroism to overcome everything she went through, and that’s what inspired him to create this piece.” The presentation will be performed by the small

company of dancers, along with some speaking parts and musicians. “I think it’s going to be amazing,” Brown says. “Nobody’s ever seen anything like this.” Following Analogy/Dora: Tramontane is a performance of Romeo & Juliet by Grand Rapids Ballet on Nov. 4 and 5. Brown says the themes in Shakespeare’s works are universal, especially a work like Romeo & Juliet. “To tell this story of these two young people struggling with social barriers that separate them is a timeless story,” she says. “And it’s certainly one that can be told in movement.” Brown notes that fans of contemporary ballet will enjoy this performance because it’s fresh, new choreography. People who enjoy classic ballet will enjoy Romeo & Juliet, too, she says, because of the high level of technique the company brings to the performance. “Grand Rapids Ballet is really on the rise,” Brown says. “Artistic director Patricia Barker is a rising star who has taken the dance company to a very high level

of performance.” The remaining performances for the 51st season are in 2017: PNC Arts Alive New Dance Horizons V: Women Who Inspire, Taj Express: The Bollywood Musical Revue and, as the finale, the 10th annual Emerson Spring to Dance Festival in May. “People today have a wonderful range of opportunities to see the performing arts in the form of film, video, television, etc.,” Brown says. “But there’s a completely different element that comes with live performance.” She says people who haven’t seen live professional dance or have only seen it a few times have the chance to “experience the hair on the back of their neck standing up” with these performances. “We’re going into our 51st season looking forward to 50 more years,” Brown says. 3310 Samuel Shepard Drive, St. Louis, MO, 63103 314-534-6622, dancestlouis.org
