This April also saw Banyan Tree Tianjin Riverside welcoming its first guests. By the end of this year we will have two new hot spring resorts in China, where we continue to expand rapidly with over 20 more hotels to open by 2015.

On the other hand, Banyan Tree Chongqing Beibei will feature 107 suites and villas with private hot spring pools and is located in the Beibei region that boasts of over 60 scenic spots and 104 cultural relic attractions. The 115 island archipelago is renowned for its natural beauty, but a collection of celebrated artists is bringing its stunning landscapes to life… Heaven exists, and it’s a place on earth. Situated over 1,448 km east of mainland Africa, scattered like jewels over the Indian Ocean, the 115 lush, green islands that comprise the Seychelles have been drawing visitors, tourists, and conquerors for the past 800 years. The earliest recorded sighting of the Seychelles by Europeans was in 1502, by the Portuguese explorer Admiral who passed through them and named them the Amirantes (‘islands of the Admiral’). A transit point for trade between Africa and Asia, the islands were occasionally used by pirates until the French began to take control in 1756. The islands were given the name we know them by today by Vicomte Jean Moreau de Sechelles Louis XV's Minister of Finance. Many present-day Seychellois are descendants of Africans, who were brought here by slave-traders in the late eighteenth and early nineteenth centuries, and as a result, strong elements of mainland African tradition – such as the local, rhythmic Sega dance can be distinguished in the culture. The Seychelles Kreol [Creole] language, or Kreol-Seselwa, is basically derived from French, combined with some African words.

Unique Heritage Squabbled over by France and Great Britain between 1794 and 1810, the abject poverty suffered by these slaves, and the constant struggles by French and British settlers to the island led to a mutual effort to improve their lives. This united stance provided fertile ground for the creation and development of a unique Seychellois heritage and culture. It has been an independent country since 1976, and today its laid back atmosphere, stunning scenery and friendly locals make it a prime destination for honeymooners and adventurous holidaymakers alike. And it contains some surprising attractions. For example, the Seychelles and compelling art are not necessarily words that the average visitor would put together before embarking on a trip to these alluring islands. In fact, the average visitor would expect to be bowled over purely by what he sees in front of his eyes: the lush landscape, lined with palm trees, coconut groves and bright, exotic plants and flowers; the shimmering, turquoise ocean, sunlight dancing off it like diamonds; the intensely colourful clothes of the inhabitants as they go about

their daily business; fishing SEYCHELLES boats, docked in harbour, their Anse Boileau catches of silver fish glinting as Mahé they are piled high at the local market; the impudent curves of the coco de mer shells; the tank-like carapaces of the giant tortoises… The list of sights Takamaka that the islands are famous Banyan Tree Seychelles for goes on, and on. But while memories, and photographs, are definitely something visitors will be taking away with them, a host of native and European artists are doing their best to bring what the tourists see to life in their work, creating something exceptional that will bring a vivid slice of the Seychelles back to their homes. The history of art on the Seychelles goes back

The Passions of Island Living Nature, open spaces and community are common themes in Seychellois art to this day. Local writers and poets have also used the magnificent backdrop of the Seychelles as the inspiration for historical accounts, fascinating works documenting the social history of the islands and its people, and collections of short stories and poems that evoke the passions of island living. More recently, cultural expression depicts Seychelles’ struggle, portraying popular aspirations for liberty, equality and unity. These egalitarian notions are the cornerstones of the Seychelles’ contemporary political process, and cultural expression is actively encouraged and supported by the Government. In the 20th and 21st centuries, the local art scene has been burgeoning, and the Seychelles has produced

several centuries; one of the first known canvases was painted by a freed slave, Billy King, to depict his capture on the African continent, and ‘forced exile’ to the islands.

permanently five years later and sculpt full time. His simple but elegant figures capture the essence of the islanders he encounters every day – at work, fishing, or playing. His studio is situated in the picturesque bay of Anse de la Mouche, on Mahé. Another Brit, Andrew Gee, trained at St Martin’s College of Art in London in fashion and textiles, and to this day works in silks, as well as with acrylics. His watercolours capture beautiful, vibrant panoramic beach landscapes, as well as kaleidoscopically coloured fish and underwater life. Gee came to the Seychelles in 1993 as a fashion and textile instructor at the School of Art and Design, and developed a fascination with the local culture and heritage. Based in Baie Lazare, on Mahé, he also runs a well appointed guest house, Maison Soleil. Not far from Gee in Baie Lazare is based Italian-born sculptor Antonio Filippin, whose complex carvings are works of art made of coral and wood, intended to express his philosophy of the harmony of life. He likes to use natural materials found in his adopted homeland to bring his dreamlike visions to life.

several artists of international repute. Since the country’s independence in 1976, contemporary artists have trained in universities and art colleges all over the world, bringing back with them a variety of different styles, and working with a range of materials.

Londoner Tom Bowers trained in sculpture, is known throughout the islands – and beyond for his beautiful, serene bronze pieces. Bowers' artistic career included a stint studying photography, followed by work in the advertising industry, though he kept up with sculpture throughout. A family holiday to the Seychelles in 1981, where he fell in love with the country’s natural beauty, prompted him to move there

The art alone would be reason enough to visit the Seychelles, Bato Lo Mouyaz, George Camille but the islands are regularly developing new ways to ensure that guests can enjoy the local culture and heritage, from the Colonial architecture to the spicy Creole cuisine. Don’t miss the Kreol Festival, held in October, perhaps the biggest and most important event in the Seychelles cultural calendar. Firstly, there is Seychelles-born Nigel Henri. Henri did his degree in art and graphic design at the University of Sussex in the UK, and returned to his homeland in the early 1990s, subsequently taking up a position as a graphic design teacher at the Seychelles National College of the Arts, then at

His work is colourful – using splashes of bright pink, yellow, blue – and bold, evocative of the community feel that resonates throughout the islands. His studio is in the village of Beau Vallon, on the northwest coast of Mahé, and his works are displayed at a handful of galleries throughout the Seychelles, such as the Gallerie Passerose on Praslin. One of the pillars of the Seychelles art community, Henri is the founder of the Association for Visual Arts (AVA) and co-founder of CENAC, which are both NGOs set up to promote art in Seychelles.

There you will find the iconic coco de mer palm trees, shaped comically like a pair of female buttocks, and a renowned symbol of the islands around the world; so much so, that it is even what appears on their passport stamp. And you must take a trip to the stunning nature reserve island of Curieuse, which is populated by the friendly and endearing giant tortoises.

Cultural Life in the Islands A National Art Gallery was inaugurated in 1994, in the capital, Victoria, on the main island of Mahé. The majority of the most exciting artists have studios, and their work shown in galleries, on Mahé itself. Visitors who have a few days to spend on this, the archipelago’s largest island, should consider doing an artists’ trail, meandering gently through the villages and towns, looking out for signposts indicating a gallery or artist’s home or studio, and spending time absorbing the artworks within. So, who are the ones to watch out for?

the Seychelles Ministry of Culture and Information. Working mainly in acrylic paints, he produces big, bright canvases which depict cultural life in the islands – locals jostling in front of stalls on market day, lively gatherings of groups of friends and underwater scenes.

Finally, the iconic paintings of Mahé born George Camille represent perhaps the best, and strongest, portrayals of Seychelles life. From watercolours to acrylic collages, and work in embossed copper and mixed media, his faux naif but evocative and lively depictions of everyday pastimes, local landmarks, and even elegant nudes, would grace any living room wall. His main studio, Sunstroke, can be found in Victoria, and some of his works are also displayed in the villas at Banyan Tree Seychelles.

The Annual Seychelles International Carnival of Victoria is held every April, to celebrate the diversity and multi-culturalism of the islands. Representatives from the world’s most famous carnivals take part in a three day parade of floats and activities. Nature lovers should not miss a stroll around the Vallee de Mai, a UNESCO Heritage Site and 3.6 square meters of palm forest which has existed since prehistoric times.

The resort’s event sales team and banquet division also worked hard throughout the event to satisfy any needs or requests from the client and guests.

Tell us a little about how it’s like to work in a kitchen; and your culinary journey the past couple of years? Over the past few years, I have had the opportunity to travel to many Saffron branches within the Banyan Tree group throughout the world. Each country offers new experiences and challenges for me. Some branches have very small kitchens while others have ones that are far too big. But that is not as important as the fact that I got to meet colleagues from different corners of the world who, like me, are working towards a common goal. I have learnt so much from each person I meet on my trips regardless of their position. I am very proud to be part of this team to introduce the world to authentic Thai cuisine.

What are some of your favourite Thai dishes? My favourite dishes are Som Tum (Papaya Salad), Phad Krapao Hmoo (Stirfried Pork with Basil and Chilli), and Larb Phed (Minced Duck Salad, Chilli and Thai Herbs). I never get bored of these dishes. They are intensely flavourful, quite spicy and sour.

She sits down with Under The Banyan Tree for this exclusive interview. We talk to Chef Renu about her passion of sharing beautiful contemporary Thai cuisine to the world at Saffron. Can you share with us on what inspired you to join the culinary world? Have you always known that you would be a chef someday?

There are many wonderful aspects of Thai Cuisine. First of all, Thailand is abound with fresh herbs and spices. These are the heart of Thai food as they are the key ingredients of curry paste and the foundation for most Thai dishes. Coconut or coconut milk is also fundamental to the success of Thai cooking. We have great quality coconuts in Thailand with the perfect balance of sweetness and thickness. We use coconuts as key ingredients in many

My inspiration comes from my family. I remember my mother cooking us meals almost every day from a very young age, and we never seemed to get bored of the taste of them even once. I always wondered why that is. Maybe it’s what they call “The Rhythm

of Life” - something that every Thai woman should own. And that’s what got me started. I always think that when I prepare a dish, I must put the very best in it. The best ingredients, the best preparation, and the very best of myself so that the diners can truly enjoy every dish that I create. Growing up, I never thought that one day I would become a chef, mainly due to the fact the I am a woman. I always thought that chefs

We heard that you have had several opportunities to demonstrate your skills as a guest chef in hotel restaurants around the world. Where have you been and what do you like most about these trips?

These include not only Banyan Tree hotels but other renowned hotels and resorts. I have had the honour to act as an ambassador of Thai food with the Department of Thai Exports, and have visited countries such as China, Dubai, Germany, India, Indonesia, Korea, Macau, Malaysia, Maldives, Mexico, Portugal, Seychelles and Vietnam. I have gained experience and knowledge from each and every one of my trips. I am particularly pleased that I have had the opportunity on countless occasions to work alongside 3 Michelin Star chefs. I learnt new techniques and methods that I have brought home to apply to Thai food at Saffron. This is the type of experience that I would like all Saffron chefs to have the opportunity to experience. This is one of the many things that Banyan Tree has given me, and I am very grateful for.

Thailand is also famous for its cheap street food – what would you recommend first time tourists to try? First and foremost, Phad Thai (Wok Tossed Noodles). Other must try dishes are Tom Yum Goong (Spicy Prawn and Lemongrass Soup), and Mango Sticky Rice. I recommend these three dishes because whenever I travel to other countries and taste the Thai food there, I feel that it’s these three dishes that are always best when in Thailand.

Apart from Thai food, what other types of cuisine do you like, and wish most to master? I would love to be able to master the art of Chinese food. I am fascinated by the techniques they use to assemble each dish and the way they select the ingredients they use for cooking. They use only fresh ingredients and each dish has a story behind it. But most importantly for me, many Chinese dishes possess medical and healing qualities derived from the herbs and ingredients used, which I am very interested in. What is the biggest compliment you have ever received from a guest? I am very glad when I see that guests are enjoying the food I have prepared for them. When they say that the Thai food they have had at Saffron is the best, it really makes me feel happy with the work I have done. This motivates me to continue to pursue my journey in developing and spreading the art of Thai Cuisine.

How is working at Banyan Tree Bangkok different from the other hotels or restaurants you have worked at? I have been working for Banyan Tree for 10 years. I have become so at home here, it truly feels like my second home. The associates here are very kind and at ease with one another from the very first day. Unlike other restaurants and hotels I’ve worked at, Banyan Tree not only accommodates your well being but your entire family. This is the main difference I see. We also get the chance to develop

What are the top 3 dishes guests should try at Saffron? I would recommend guests to try the “Assorted Appetiser”, “Salmon Salad”, and “Chicken Green Curry”. These dishes are my favourite as I feel I have truly captured the essence of what Saffron stands for. The Assorted Appetiser is a compilation of Thai flavours combined in one dish. The Salmon Salad represents the coming together of Thai flavours, Thai herbs, and the delectable Salmon fish. The Green Curry represents the rhythm of Thai cooking. The curry paste is created with care by our chefs to reach the perfect balance of sweet and spice.

To wrap up, can you share a Thai recipe that the readers can easily replicate at home? The Salmon Salad is an easy dish that I would recommend. The ingredients can be found no matter what country you are in and the dish is also rich in omega 3. Combine mint leaves, basil, finely sliced lemongrass, flaked pomelo, crushed chilli, crushed garlic, lime juice, fish sauce, and a pinch of sugar with grilled Salmon. Toss gently to avoid bruising the green vegetables and serve. The seasonings can be adjusted based on your personal preference. This is very simple and is a very refreshing and healthy dish.

They say we should not trust a skinny chef. Tell us how do you keep slim and fit while cooking up such irresistible food all the time? When cooking, we should always taste the food, but just taste. We should never eat too much until we are full. We should eat food that is beneficial

Kids Camp Empowering people through education and local projects, the Banyan Tree Management Academy (BTMA) is committed to the goals of Advancing People Development, Management Excellence and Learning with Integrity and Meaning. In line with its aim to better local communities, BTMA conducted their annual week long kids’ camp at the Angsana Laguna Phuket property in late April 2013. Open to children of Laguna Phuket associates, the educational camp focused on imparting information technology skills and featured interactive learning in both classroom and outdoor settings. 30 children aged nine to 14 participated in this enrichment camp. Under the guidance and supervision of Laguna Phuket-based associates, the children learned and honed valuable techniques such as teamwork, elementary webbased research methods, communication skills and more. Junior participants aged nine to 11 worked on the theme, “Amazing Elephants”. Through researching the topic on the web and the PowerPoint presentation of their ideas on the

5% of the costs of all dives were donated to the Banyan Tree Green Imperative Fund, supporting community and environmental projects around the world.

24-hour Diving Event Taking an active role in the protection and remediation of global ecosystems, Angsana Ihuru, Maldives organised a 24-hour diving event in its house reef in April 2013. In celebration of the 14th anniversary of the Rannamaari Wreck sinking and to raise awareness for reef and marine life conservation, the “10 to 10 Rannamaari Wreck” event was a huge success.

With shimmering waters so clear that visibility can stretch up to fifty metres, striking scenes of Rannamaari’s underwater world is a delight to observe by daylight and starlit night. 70 people representing 12 nationalities and underwater photojournalists participated in this unique tribute to the marine biodiversity of the Indian Ocean. Webcasted on angsana.com and Facebook, the wreck’s resident giant moray eels, scorpion fish, stingrays, groupers, batfish, squirrelfish, nurse sharks and fusilier fish were on full display.

Established by a group of artists who are passionate about celebrating the Vietnamese culture and way of life, Viet Artisans aims to sell meaningful handicrafts to tourists, create sustainable jobs for rural residents, and preserve traditional customs. Providing free training, a school was set up to educate and employ residents from rural and disadvantaged communities in Vietnam.

As a non-profit organisation, Viet Artisans continuously requires support from the community through financial contributions, volunteerism and corporate partnerships. In 2008, Lily Phan, the founder of Viet Artisans, met Claire Chiang, the co-founder of Banyan Tree Hotels & Resorts, at a Corporate Social Responsibility event in Vietnam.
