A Heart Filled with Thanksgiving I’ve lived through 61 Thanksgivings so far and have enjoyed them all. As a kid, I loved watching the parades on TV, and looked forward to spending time with my cousins eating at the kids’ table. As a teen, I enjoyed the great food, desserts and playing some flag football with our neighbors and friends who stopped by later in the day. As an adult, I love experimenting with those dishes I see so beautifully displayed in Southern Living or making one of those traditional family recipes that have been handed down through the years. The years have given me many things to be thankful for, but this year, will be my most thankful one of all.

On June 16, my son had a massive heart attack and was dead for 45 minutes.

The great team at Duke University Hospital saved his life and brought him back to his family, which includes a wife and the sweetest 3-year-old little boy a grandmother could possibly love! He is only 40 years old and is now the first person in North America to receive a full artificial heart called a CarMat (developed by a French physician with the same name). My son and his family are currently living very close to the hospital in Durham waiting for a heart transplant. Needless to say, my world has been turned upside down for the past several months but the blessings that continue to come to our family through friends, relatives, coworkers, our church family, the amazing healthcare team at Duke Medical Center, and even from people we don’t even know, are more than I

could have ever imagined. It’s unfortunate that it takes a tragedy like this to remind us of what’s really important in life, and just how good and kind people really are. I share this story with you, not to create pity or to bring you down during this glorious holiday season. I share it because it’s important that we recognize our blessings, whether big or small, and we take the time to say “Thank You” to those who make it their mission to make our days a little bit brighter. I now have hundreds of these people in my life and I bet you do too. So, I won’t waste this Thanksgiving season looking through cookbooks or worrying about creating the perfect Thanksgiving table. I’m spending it with my family and friends, praying with all my heart that my son gets a new one, just in time for Christmas! (I hope you’ll pray with me, too!) Happy Thanksgiving everyone!

Not even the entertaining ones. You’ve heard of the skeleton who goes into a bar? Let’s forget about those for now and consider the wonder that is the living human skeleton. There are 206 bones in the intact adult human body. More than you might have thought, right? Most of these bones are in your hands (27 bones each), and feet (26 bones each). Your bones vary in size from the femur, or thigh bone, to the tiny stapes, the stirrup shaped bone in your middle ear which helps conduct sound to your inner ear.

And these bones do a lot of work for us. There is the obvious role of supporting the body and protecting internal organs, such as the brain, heart and lungs. But don’t think of them as simple support beams. For one thing, the complex structure of bones, with their honeycomblike internal matrix, makes them strong and rigid, without weighing too much. And they also carry out the vital functions of producing red

Your bones also help regulate your metabolism, acting as a storehouse for calcium, phosphorus and other minerals. The bones also store fats and maintain the acid-base balance in the blood by absorbing or releasing alkaline salts as needed. These 206 bones are connected by 360 joints of a variety of forms. (Why more joints than bones? Most bones connect with more than one other bone — think of the sternum, for example, that has a joint with each of the ribs). The joints that allow free motion, called synovial joints, are classified according to the kinds of motion they allow. Some of these are: hinge joints that can only bend in one direction, like the finger; ball and socket joints, like the hips and shoulders, that can move in all directions; and swivel joints, like the elbow and neck, that allow the connected bones to twist in relation to each other. “Bone and joint health are essential to whole body wellness,” says Dr. Micah Kirscher DNP, FNP-C, of Renew Health and Wellness, in Cornelius. “The human frame was designed to absorb forces and evenly distribute them throughout our bones as we move. However, as we age, our bodies ability to absorb forces reduces unless we are able to keep the joints and bones healthy and strong.” So how do we do right by this amazing system of bones and joints that does so much for us? Dr. Kirscher DNP, FNP-C’s first recommendation is this: “Get biannual regular check ups at your Primary Doctor to ensure that all other systems are functioning properly.” What good is a healthy frame, he asks, “if the ‘power train’ items like our hearts, lungs, and vital organs are not operating correctly?” Kirscher describes the body as “a synergistic balancing act created by a

higher power.” Next on Kirscher’s list is preventative maintenance for the spine, such as chiropractic care. He also recommends preventative care for our joints, such as restorative yoga, assisted stretching, aqua aerobics, and light bicycling. He emphasizes daily activity that helps keep our bones strong and our joints moving as they were designed. Kirscher warns against narcotic medications and treatments that use cortisones, as these can have negative side effects that compound the original problem or complaint. Exercises, activities, diet, and supplements that support healthy joint function are important in maintaining joint and bone health, Kirscher says. According to the National Institute of Health, bones, like muscles, become stronger with exercise. The best exercises for healthy bones are strengthbuilding and weight-bearing, like walking, climbing stairs, lifting weights, and dancing. They suggest a target of 30 minutes of exercise each day. The NIH also recommends taking precautions to prevent falls that can lead to bone damage: check your home for loose rugs and poor lighting, have your vision checked regularly, and increase your balance and strength with daily walks and classes in Tai Chi, yoga or dancing. You can find detailed recommendations at www.bones.nih.gov. The NIH recommends a wellbalanced diet rich in calcium and vitamin D. Foods that are good sources of calcium include low-fat dairy products, and foods and drinks with added calcium. Food sources of vitamin D include egg yolks, saltwater fish, liver, and milk with vitamin D. Some people may need to take nutritional supplements in order to get enough calcium and vitamin D. Fruits and vegetables also contribute other nutrients that are important for

bone health. Josh Russ, PA-C, of Total Joint Vitality of Lake Norman, says he likes to remind people that there are things we can control and things we can’t control. We can’t control the aging process, for example, there’s no turning back the clock. However, we can control our lifestyle and diet. “Things deteriorate faster when we carry around extra pounds and don’t exercise,” Russ says. What to do, though, if something is not right with our bones and joints? Well, don’t just write it off to the effects of aging. “Don’t let age dictate who you are,” says Russ. “Take advantage of the resources that are out there.” “When there is a trauma, injury, or arthritic condition that has changed the anatomy and function of the bones or joints, then repair may be necessary,” says Dr. Kirscher DNP, FNP-C. He said that there are many non-surgical, non-narcotic, and non-steroidal interventions that can repair a joint that is not functioning properly, including: • Physical Therapy Rehabilitation • Electromagnetic Therapies. • Platelet Rich Plasma Therapy, • Stem Cell Recruitment Therapy • Connective Tissue Matrix Therapy • Wharton’s Jelly Therapy. Kirscher says the above mentioned therapies are designed to repair and heal bone and joint issues without harmful side effects or long term negative consequences. Work with your doctor and licensed medical providers to find the optimum treatment for bone and joint problems. It is important to note that some therapies and treatments are covered by Medicare and other insurers, while others are not. So we need to care for this wonderful system in our bodies that supports all our activity and movement. When we do the right things, we will feel it in our bones. Honors & Celebrates Local Veterans BY » Peter Eisenhauer

ana Pape was coming to the end of a successful career in the Air Force and looking to relocate somewhere with her husband. After over 20 years in both the enlisted and officer ranks, she was ready to trade in her combat boots for flip flops. She and her husband knew they wanted to live somewhere on a beautiful lake. That’s all they knew. Flying into Charlotte they were looking out their window and asked “what the heck is that huge body of water?” You can guess the rest of the story. Once they found out more about the amenities and lifestyle available around Lake Norman, Pape and her husband Chris chose the area, and moved here when she retired in 2015. So they settled in, but they did have one lingering concern. With no nearby major military facility, would they miss out on the camaraderie they had enjoyed over the years with others who had that special experience? Chris, a professional video producer, used his talents to support military families through MachoSpouse.com, an online resource and informational hub for male military spouses. It is obvious that the area honors veterans. There are memorials such as the prominent Veterans Monument at Rotary Plaza in Cornelius. The Town established the monument, inscribed with the names of over 1,100 Cornelius veterans, in 2011. In 2017, the memorial was expanded with a bronze statue of Corporal Jerry K. Crump, who had earned the Purple Heart and Congressional Medal of Honor for his service in Korea.

And Pape knew the veterans were around -- Department of Veterans Affairs statistics show around 63,000 service veterans in Mecklenburg and Iredell counties alone -- so it was simply a question of finding and connecting with all those veterans. Enter social media... The Papes set up a Facebook page and later a website to promote that camaraderie. Through the Facebook page, they promote upcoming recreational and charity events and other opportunities for veterans to get together. The website lknvetsandpatriots. com states its mission as follows: “Connecting & bringing recognition to Lake Norman (LKN) military veterans, their families & those that proudly support them.” The ‘Veteran’s Spotlight’ section of the website features profiles of local veterans. The “Patriot Spotlight” section profiles area businesses that offer special programs and discounts for military veterans. There is also a directory of area businesses that offer military discounts. Of course, the internet outreach is not an end in itself, but is meant to enhance and promote in-person networking, veteran organizations and events. Pape says that after a year of pandemic restrictions, the Lake Norman Veterans and Patriots are now hosting more events, such as a happy hour at a local brewery. The events are well attended. Pape also pointed to September’s 12th Annual Tee Off for a Veteran Golf Tournament. Over the years, the event has raised over $130,000, with all of the proceeds

being donated to local organizations that assist military veterans and their families. Funds were raised for groups including: -- Saving Grace K9s, which finds rescue dogs trainable as service dogs and pairs them with combat Veterans here in North Carolina who are struggling with Post-Traumatic Stress Disorder and/or Traumatic Brain Injury. The service is provided at no cost to the veterans. -- Soul to Soles Connection, which offers mental health treatment, with horses, focused on reducing the impact of trauma, while rediscovering confidence, compassion, and trust. -- Welcome Home Veterans at Richard’s Coffee Shop, an institution in Mooresville, about which more below. Although there is activity throughout the year, Pape says that in the Lake Norman area Veterans Day, which is always marked on November 11, is actually a weeklong celebration, with many events scheduled in various communities, including ceremonies, parades, and dinners for veterans. Originally celebrated as Armistice Day, the holiday is marked on the eleventh day of the eleventh month because it was on that day in 1918, at 11:00 am, that active conflict in what was then known as The Great War came to an end. The date was declared a federal holiday by an act of Congress in 1938. In 1954, after World War II and the Korean War, Congress amended the act at the suggestion of veteran advocates to dedicate the day to all U.S. veterans, and to change the name to Veterans Day. This year, on a national level, the theme for Veterans Day 2021


is centered on the centennial of the Tomb of the Unknown Soldier. Located at Arlington National Cemetery, the Tomb was dedicated by the Army on Armistice Day, November 11, 1921, with the burial of an unknown service member from World War I. This year, as every year, a ceremony will begin at precisely 11:00 a.m. with a wreath laying at the Tomb to honor and thank all who served in the United States Armed Forces. A living memorial honoring and serving veterans in Mooresville was initiated by a service veteran who also came to settle in the Lake Norman area after his military career. Richard Warren was born in Champaign, Illinois. He served in Vietnam as a Chief Warrant Officer and a pilot with the 68th Attack Helicopter Company, flying the Bell UH-1 Huey from 1969 -70. Warren first flew troops and then transferred to gunships. Many times he had to come in to rescue

U.S. troops surrounded by the enemy. Stationed in Germany after his tour in Vietnam, he transported Generals in his helicopter. After his service, Warren and his wife moved to Mooresville and opened a coffee shop, named “Pat’s Gourmet Coffee Shop” in her honor. After seeing a veteran who was unable to afford a cup of coffee, Richard decided to set aside a day every week to offer veterans free coffee. Soon the veterans began to bring in photos and other military memorabilia and Warren decorated the walls of the coffee shop with the veterans’ offerings. It became known as “The Most Patriotic Coffee Shop in America.” Shortly before he passed away in May, 2009, Warren made plans to establish a non-profit organization to be called “Welcome Home Veterans.” With the love and support of many people, that organization, Welcome Home Veterans, Inc. opened Richard’s Coffee Shop on the 4th of July, 2009.

Every Thursday the Coffee Shop continues the tradition of free coffee for veterans, and they gather, often more than 100 veterans of all ages, sharing memories and stories and supporting one another. Saturdays feature a music jam session with veterans sharing country, bluegrass, traditional old hymns, and patriotic music. One recent visitor wrote that “It’s the most compassionate and supporting place for vets, active duty and all who walk through it’s doors. No vet ever need be alone when you have so many good brothers and sisters to connect with and share all of your life’s experiences.” Dana Pape says that’s what it’s all about. Regardless of which branch of service, or when they served, veterans are a welcoming community. “Now more than ever, it’s important for veterans to seek each other out,” Pape says. “We need each other.”

Fall For Salmon Fall in love with salmon again with this simple one-pan meal that is bursting with autumnal flavor. Maple Pecan Crusted Salmon is elegant enough for a dinner party, but simple enough for a busy weeknight. Simply roast salmon fillets on a sheet pan with a maple syrup, dijon mustard & pecan topping over a bed of chopped sweet potatoes, Brussels sprouts, apples & shallots - it’s the perfect fall dinner! Last year, I served this at our book club holiday dinner, and to this day, those girls are still talking about ‘that delicious salmon dish’ and asking me for the recipe! In addition to being delicious, this meal is also ridiculously easy to prepare! Save time by keeping the peel on both the sweet potato & the apple, and buy a bag of fresh, washed & trimmed Brussels sprouts. And since the vegetables go in the oven first, you have the perfect opportunity to prepare the salmon, make the pecan glaze & chop the apple while the vegetables cook. Oh, and did I mention this meal cooks entirely on one sheet pan? So when dinner is over, there’s only one pan to wash! Whether you’re cooking this for a busy weeknight, or serving it at a holiday get together, this onepan meal makes a beautiful presentation and will give you raving reviews! Happy Fall, ya’ll!

MAPLE PECAN CRUSTED SALMON INGREDIENTS 1 large sweet potato – cut into 1 inch cubes 1 large apple – cut into similar size cubes (with peel) 1 lb. Brussels sprouts – trimmed & halved 2-3 large shallots – ends trimmed off, peeled & cut in similar size as other veggie 4 (5 oz.) salmon fillets 1 tbsp olive oil Pecan Glaze 2/3 cup pecans – finely chopped 2 tbsp dijon mustard 3 tbsp organic maple syrup 1 tbsp olive oil ½ tsp paprika 1/4 tsp salt 1/4 tsp black pepper

DIRECTIONS Preheat the oven to 425 degrees. Line a large sheet pan with non-stick foil or parchment paper. Toss chopped sweet potatoes, Brussels sprouts & shallots with 1 tablespoon of olive oil (can be done in a zip-top bag or bowl) & spread on a sheet pan. Sprinkle with salt & pepper. Roast vegetables for 15 minutes. Meanwhile, rinse & pat dry salmon fillets, mix all pecan glaze ingredients in a small bowl, & chop the apple. After the vegetables cook for 15 minutes, remove from the oven. Toss vegetables with a spatula, and push them to the edges of the pan to make room for the salmon fillets. Place salmon skin side

down on sheet pan, & spoon pecan mixture on top of each fillet. Sprinkle chopped apples around the salmon. Roast for 10-12 more minutes, or until the fish flakes with a fork. Serve immediately! Makes 4 servings. NOTES • You can cook & serve the salmon with the skin on. It’s difficult to take off before cooking, and is messy to remove after cooked without disturbing the lovely maple glaze. But, the cooked salmon is forktender, and easily comes off the skin as you take a bite. • Sweet potatoes do not have to be peeled! But it’s truly your preference. Easy As Apple Pie These Glazed Apple Hand Pies give you all the yummy apple pie vibes, but with no fork required! They are the perfect dessert for Fall dinners or equally delicious with your morning cup of coffee. Simply fill store-bought pie crust with a delicious apple, cinnamon & brown sugar filling, and brush with a sweet glaze for an easy and delicious Fall treat! One of my favorite memories as a child was stopping at roadside farm stands with my Dad to get a basket of apples to take home. Mom and I would make so many delicious treats with those apples! Since then, I always look forward to Fall apples, and incorporating them into all kinds of dishes - especially Glazed Apple Hand Pies! I hope this recipe inspires you to visit your local apple orchard or farm stand, grab some apples and get baking!

GLAZED APPLE HAND PIES INGREDIENTS

¼ cup (½ stick) unsalted butter 2 pie crusts (1 store-bought box of 2) 3 unpeeled apples (Gala or Fuji) - finely diced 1/2 cup brown sugar 1 ½ tablespoons lemon juice 1 teaspoon ground cinnamon ½ teaspoon kosher salt 1 tablespoon cornstarch 1 tablespoon water All-purpose flour - for work surface 1 large egg - lightly beaten Glaze ½ cup sifted confectioners sugar 1 tablespoon milk (nut or dairy)

DIRECTIONS 1. Preheat the oven to 375 degrees F°. Line 2 large baking sheets with parchment paper. Melt butter in a large skillet over Medium heat. Add apples, brown sugar, lemon juice, cinnamon & salt. Cook, stirring often, until the apples are tender, about 11-12 minutes. 2. Next, whisk together cornstarch & water in a small bowl. Stir cornstarch mixture into apples. Cook, stirring constantly, until mixture has thickened and apples are glazed, 1-2 minutes. Remove from heat, and cool at room temperature, about 30 minutes. 3. Meanwhile, on a lightly floured surface, roll out 1 pie crust to 1/4” thickness. Using 4”cookie cutters, cut out circles from each pie crust. (Yields 8 per crust) Place in 1 layer on prepared baking sheet, refrigerate for 15 minutes. Repeat with second pie crust.

4. In a small bowl, whisk together the egg and 1 tablespoon of water. Remove one pan of chilled dough circles from the refrigerator, and brush some egg wash around the outer edge of each dough circle, and scoop only 1 tablespoon of cooled apple filling onto each pie circle. (If you scoop more than 1 tablespoon, your hand pies will burst open.) Fold pie over filling. Crimp the edges with your fingers, then use the tines of a fork to seal. Finally, use a small knife to cut a couple slits into the top of each pie. 5. Brush the egg wash over the pies and bake for 14-16 minutes or until golden brown. Allow to cool while preparing glaze. 6. Whisk together powdered sugar and milk until smooth. Add more powdered sugar if glaze is too runny or more milk if the glaze is too thick. Brush glaze over slightly cooled hand pies. You can double-coat the glaze if you like more. Allow glaze to harden, and enjoy! Yields: 16 pies LimitlessMagOnline.com | November 2021 23

Beneficiary Designations:

A Wonderfully Simple Estate Planning Technique That Can Go Terribly Wrong!

I

f you are like most people, a large part of your wealth consists of “non-probate” assets: assets not controlled by a written Will, but instead controlled by a “Beneficiary Designation” or “Pay on Death” directive which directs who will receive that asset at your death. Common examples of nonprobate assets include life insurance policies, annuities, 401(k) plans, and Individual Retirement Accounts (IRA’s). When purchasing these types of assets (or starting a new job where you receive a retirement or life insurance policy as a benefit), you will be given

an opportunity to name the person(s) who will receive the money at your death. This is a wonderful (and wonderfully simple) way of ensuring that your assets go to your intended beneficiaries at your death, without having to go through a formal probate/ estate administration proceeding. Beneficiary Designations can be revoked or amended at any time, as many times as you like. The bad news is that the Beneficiary Designation is basically “set in stone,” meaning that no matter what your Will says, the money goes to the person named as beneficiary.

Why does this matter? Consider the angst and frustration of Donna, whose husband, Ralph, just died owning a life insurance policy with a death benefit of $1 million. Ralph was previously married to Monica, but they divorced in 2015. Ralph had been advised that the divorce would revoke any provisions in his will in favor of Monica, and he felt good about that (even though he had torn up that old will just to be on the safe side). When he married Donna, he made sure to have a new will prepared leaving his entire estate to Donna. What Ralph didn’t do was change his Beneficiary Designation on his life


insurance policy after his divorce from Monica. Imagine Monica’s surprise when when she submitted a claim for the policy proceeds and was told she was not entitled to them. How can this be? Unlike the provisions made for a spouse in a written Will, which are automatically revoked by state law upon divorce, Beneficiary Designations are governed by your contract with the company, and by law, the company must pay the funds out to the current beneficiary on file. So the harsh outcome for Donna, who desperately needed the money to keep paying bills, making house payments, etc., was that the insurance company was required to pay the money to Ralph’s ex-spouse. Not divorced and not planning on it? Great. Your Beneficiary Designations probably designate your spouse as your primary beneficiary and your children as contingent beneficiaries should your spouse predecease you. You may have

already had a Will prepared naming a trustee and providing for a trust for your children in case your death occurs while they are still very young. However, if your Beneficiary Designations simply named your children as beneficiaries, without naming the trust set up for them under your will, the children will receive the money, not the trust. If any child is under age 18, the court may have to appoint a guardian to hold those funds until the child reaches age 18. Just imagine putting $1 million dollars into the hands of an 18-year-old (or even some 30-year-olds!). What if I just name my “estate” as beneficiary of my life insurance policy? That way, the money will definitely pay to the people named in my Will. It may……or it may not. If you die with a significant amount of debt, those creditors are entitled to seek payment from your estate (including that life insurance money). However,

that same money, paid directly to the person named as beneficiary on the Beneficiary Designation, will pass to them free of the claims of your creditors. Good estate planning should never overlook attention to Beneficiary Designations. It only takes a few minutes to check the beneficiary and make any changes with a simple form, oftentimes online, so the change is processed immediately. As with your Will, you should also review these items from time to time to ensure they are still accurate and reflective of your wishes.

Bump&Run

F

or golf, learning to have an arsenal of shots from around the putting surface gives every golfer a chance to get the ball in the hole sooner! One of those shots to refine is a chipping technique called the bump and run. It is a great option to leverage when you have a flat approach to the pin and minimal trouble (no bunkers or water to get over). The bump and run is a type of chip shot in which the goal is to keep the ball very low and run the ball more than it flies. You should expect that when the ball is in motion, the ball will be in the air 1/3 of the time and on the ground 2/3 of the time, eventually ending in the hole. When we land in a position on the hole that gives us an opportunity to get the ball rolling close towards the

pin, opt for the bump and run. Start by selecting a club with less loft like a 5 iron, 7 iron or hybrid (with practice, you’ll discover which one you’re more comfortable to use for this shot). Then, let’s work on your setup. The setup promotes the bottom of the golf stroke to be in front of the ball, allowing you to de-loft the club before the club contacts the ball. Setup you stance with your feet close together, about a club head width apart, and the ball position back towards your right foot. This allows for your head to be just in front of the ball towards the target. As you swing the club, you’ll keep the butt of the club pointing towards your naval and the grip of the club will stay between your forearms throughout your stroke – no bent wrists! Swing, hit, and turn through.

Practice the bump and run at your local chipping green and you’ll soon learn your distances. The results will follow and hopefully you’ll have less strokes to get the golf ball in the hole! A Rosé

OUTLOOK

France’s Provence region is a cultural and culinary delight. It’s fun and delicious to dive into it.

alking to friends, I often find that there are a couple of misconceptions about Provence. Some think of Provence and the south of France, in general, as one continuous Saint Tropez; luxury yachts, beautiful beaches, a sun-drenched environment of bikinis and Speedos. Nothing could be further from the truth. Most of the coast of Provence is rugged and rocky. And, apart from several large cities, the interior is mostly rural landscape that is based mainly on limestone rock and thick undergrowth. A landscape that surrounds cozy little villages and lots of Roman history. A second misconception revolves

around Provence’s main wine, rosé. In Provence, rosé, from numerous sub-regions, accounts for over 90% of the volume of wine produced. There’s a myth about rosé that it is an easy-drinking wine for casual occasions such as pre-dinner drinks or aperitifs. In my mind that stems from its positioning at many dining establishments. A lot of times rosé wines are placed in the “blush” category. My reaction? When a server mentions “blush,” I pale. Provence rosés are serious wines. Wine has been made in this region for at least 2,600 years, they should have gotten it right by now. The wines are shaped by the limestone and under-

growth I talked about. The undergrowth is mix of aromatic, resinous herbs like rosemary, sage, bay leaves and thyme. There are also shrubs like juniper and artemisia as well as lavender and mint. The French call this whole thing, “garrigue.” Open a fresh jar of herbes de Provence and you’ll get what I’m talking about. And hints of garrigue are in Provence rosés, along with the wine’s delicious crispiness and fruits. Added to the garrigue and limestone, there’s one more factor that shapes Provence wines, the mistral. The mistral is a strong, cold wind that roars down the Rhone Valley from Lyon to Marseille, pulling in air from the foothills of


the Alps. Thanks to this wind, Provence sees a great deal of sunshine. The wind blows away clouds, leaving bright blue skies and fresh air behind. And, from a grape point of view, it dries up any mildew-creating moisture. Over 300 days of sunshine a year and healthy grapes help create Provence’s wines. One of my all-time favorite rosés comes from the small sub-region of Bandol. These wines have so much going on when you taste them. And Bandol leads me to a tale that helps describe Provence. The first thing is that, in Provence, you feel like you’re in a different country than Paris and the north of France. North and south are so different in culture and cuisine. My wife, Mary Ellen, and I were in the town of Toulon, close to Bandol. Lunch was in a small, family-run restaurant. I was explaining to the owner that my wife and dairy products don’t get along too well and I asked him if the restaurant used any butter in the kitchen. I got a long, pitying look; a sort of silent, French version of, “Bless your heart.” His response was, “Monsieur, you’re in Provence.” What he meant was, “Why would we allow butter into the kitchen when we have such great, local olive oil.” Two different countries! Perusing the wine list, I came up with a choice of a rosé from Bandol. I got a slow nod and a comment; “that wine is from just a few kilometers from here.” The mood had gone from pitying to full approval. To go with the wine I ordered a grilled daurade (sea bream). I got the slow nod again. Perfection. A deliciously complex, local wine with some fresh-from-the-Mediterranean seafood. Another Provençal tale comes up with one more flavor of the region. A group of us were in the region exploring wines. As an exploration center, we treated ourselves to a stay for a number of days at a restored Provençal mansion outside the town of Aix-en-Provence. We did indulge ourselves. Each evening, before dinner, we indulged by noshing on a cheese platter and trying some of the wines we’d discovered during our various vinous forays. This was not a cheese platter made up of little cubes of cheddar cheese and some crackers. “Monsieur, you’re in Provence.” These were fabulous local cheeses; and lots of them to choose from. It was more like the cheese section at a gourmet delicatessen. Add to that a fresh baguette and you’re in heaven. The cheese platter kept us indulged over several evenings. My wife and I go back to Provence as often as we can. It sounds like an old cliché but Provence is an experience, not just a destination. It’s a state of mind. A very tasty one. Anyone with misconceptions about Provence and its wines is welcome to them. We can’t wait to return to that “other country” in southern France.

The Benefits Of A Best Friend BY » Jean Spangler

ho else but a best friend could tell you that the pants you’ve cherished for 10 years are “hideous” and never to wear them again. Some might get offended, but my best friend of 40-plus years says it in a way that I find hysterically funny. In many ways, my best friend Angie and I, are total opposites. She grew up and lives in eastern North Carolina. She is not of my political bent. She is extremely petite. I am anything but. She puts on lipstick (pink gloss) even when she has no plans to go out. I didn’t begin wearing lipstick until I was 35 and to this day, it’s my least favorite part of my makeup routine (or should I call it my makeup shortcut). Pink is her favorite color and it looks great on her. It makes me look like an aging baby doll. Angie is also highly organized. She can put her hands on an extra toothbrush in mere seconds at her house, while it might take me a half hour of scrounging through my cluttered bathroom drawers to find one. Together, we’ve each seen each other through divorce and the ups and down of our children who are six months apart and grown adults now living ironically in the same place in Colorado. Throughout our friendship, I have been able to tell her anything, and I mean anything. She doesn’t judge or is quick to want to “fix” things. She listens and always offers a perspective

I may not have thought of. She does this in a way that is gentle, kind and encouraging. I trust her with my deepest secrets and my deepest worries. I found out recently how much I trusted her on one of her visits to Davidson. As I was leaving for an appointment I said, “If you get bored, my bookshelves are a mess, how about seeing what you can do to make them look better while I’m gone?” When I came home my bookshelves were drastically less cluttered. As a book lover I had crammed numerous books into these shelves. While I was gone, my books had been replaced with pieces of artwork and pottery that I love as well. At first glance, I gulped at the dramatic transformation. After a couple of weeks, I realized that the shelves did look less cluttered and more attractive. On another visit she took one look at my closet full of clothes and declared “you need help.” I readily accepted because she was right. My closets were full of clothes that I hadn’t worn in years because I found them “classic” while she used the term “outdated.” She took control by making me sit in a chair while she pulled out shirt after shirt, skirt after skirt, and dress after dress. She would pull out a blouse I bought just a few months ago and declared it “hideous,” always said with a laugh. While some would find this insulting, I knew she was right. After

three hours of this purging, my closets were beautifully organized and full of clothes she felt did not draw attention to what I call “my problem areas”. It takes a best friend who loves you enough to tell you the truth…and nothing but the truth in a way that isn’t offensive. Although Angie and I often have different political views, we are able to talk in a way that respects the other. She delivers her views without using a sledgehammer. She picks her words carefully and she often knows me better than I do myself. I know that whatever I share, it stays with her and only her. A best friend is a great bonus in life. They make life more complete, exciting and fun. A best friend leaves you smiling, not scowling. Best friends can also make life more stress-free and create a comfort zone in any situation. Best of all, a best friend allows you to be yourself…the good, the bad, and the ugly and still care for you. There’s no pretending with Angie – she knows where all my skeletons are buried. We don’t keep score about who called who last or when we visit. We can go for months without seeing each other and pick up where we left off. Humor is a cornerstone of our friendship. After all, who can tell you that the cobra-patterned pants you thought were so cool were really rather “frightening” and they should go to a thrift shop ASAP? That’s a best friend.

Culinary heaven; slow cooked eggs and a sip of Txakoli

San Sebastián, a smallish city in the northeast of Spain, is a culinary capital and an unforgettable place to visit.

he Basque country is located in the northeast corner of Spain. It’s part of Spain but it is culturally worlds apart from it. In fact, over many years there was a bloody, armed conflict as some Basques fought to separate from Spain. All of that is, hopefully, over. Peace has broken out and the Basque city of San Sebastián has emerged as a culinary utopia. San Sebastián boasts one of the highest number of Michelin stars per square meter in the world—way higher than the likes of Paris or New York. Moving down the culinary scale from avant-garde haute cuisine, the Basque country has its own version of tapas food, known as pintxos. And there are plenty of pintxos bars in San Sebastián. Our destination, when we visited San Sebastián some years ago, was on one of the most famous streets of the Old Town. A street where it seems that every other door leads into a pintxos bar. It might as well be named “Pintxos Street.” Let’s deviate a little bit into the world of Basque wine. Deviating even further, Basque country has its own language and it’s nothing like Spanish. it’s unrelated to any other European language. You have to have a smattering of it to get into the local wine. The most common wine is Txakoli. There’s no “ch” in Basque. Instead it’s spelled “tx”—so the wine is pronounced “cha-ko-lee.” These are wines that are not often seen around the lake. So, in my opinion, it’s well worth a visit to San Sebastián to try them out. That’s what we did. Back to Pintxos Street. We were in town for lunch. Haute cuisine seemed a little to much for lunch and we were looking for something a little more substantial than a pintxos bar. We settled on Bodegón Alejandro, a casual taverna. Bodegón Alejandro is definitely in the comfortable, bistro class. Also, it is closely associated with a multi-Michelin-starred chef, Martin Berasategui. So, we hit a home run— traditional Basque cuisine with a splash of culinary inspiration. As I said, Bodegón Alejandro is on Pintxos Street. Actually, it’s one story below the street, down a narrow flight of stairs. We were there a little early for lunch and so we had the place, pretty well, to ourselves. There was a group of us, so we started of with a bottle or two of Txakoli; what else?

My choice as an appetizer was spectacular. So spectacular that I have, literately, forgotten the rest of what I dined on. One of the specialties of Bodegón Alejandro, some of that splash of culinary inspiration, is a dish that features slow cooked eggs. On the day we dined there, the speciality was slow cooked eggs on top of, what looked like, hash potatoes along with a base of roasted pepper sauce. This dish was truly amazing. And, as I said, it completely erased the rest of the meal from my mind. I am absolutely sure that the rest of lunch was terrific but I can’t get my mind off slow cooked eggs. I was in culinary heaven. To me, it doesn’t get much better than this; a cozy atmosphere, fresh and local ingredients creatively cooked in a traditional style. I’ve spoken to people many times about this great place. And, without being egged on, I’ve talked, time and again, about that wonderful moment at Bodegón Alejandro. The city’s location is a little off the beaten path but its rewards are well worth the effort to get there. San Sebastián and Bodegón Alejandro keep calling. In the words of a famous movie role, “We’ll be back.”

grew up a South Alabama country boy, and November meant hunting season. The first day of squirrel season came in November, usually on a school day. I would ask Mother if I could skip school to go hunting—always risky as Mother was a teacher at my school. Yet once I was old enough to carry a shotgun into the woods by myself, she let me go. She covered her bases when she wrote me an excuse the following day that said, “Mickey was absent yesterday because he went squirrel hunting.” My Mom was tough! Hunting in November, in my memory, was always and especially connected to the Thanksgiving celebration of hundreds of years before. When I was big enough to hunt with my Daddy, he took me rabbit hunting on Thanksgiving morning. The woods were not far from our house, and our dogs were as eager as we were to hit the woods. Even in south Alabama, it was generally frosty on Thanksgiving morning, which made it easier for the beagles to pick up the scent of the cottontails. Most times, we returned empty-handed, but not with empty hearts. Thanksgiving for me will always bring memories of a cold morning in the woods with my Daddy and the beagles and returning to the smell of Mama cooking turkey and dressing. s the holiday season kicks off with the trick-or treat energy of Halloween, November’s focus transitions to the celebration of Thanksgiving, and the very beginnings of our country. This handsome Jack Russell Terrier mix came to Piedmont Animal Rescue from a local animal shelter. He was terrified and easily spooked by loud noises. In the safety of his fabulous foster home, Fraizer is gaining confidence and coming out of his shell. He is still nervous in new surroundings and situations, and will need a loving, patient home where he can continue to live his best life. He is a sweet, affectionate boy who is good with cats and other dogs. A home with small children would not be ideal since he currently scares very easily. Fraizer is approximately 6 years old and around 20 pounds. Adoption fee: $300

Maize Sweet Maize is doing great in her foster home. She is still timid but is coming out of her shell and showing her personality. Maize is a 9-month-old pit bull mix who is about 35 pounds. She gets along with other dogs, is crate trained and is close to being fully house trained. Maize is a smart girl. She has learned to sit and to go to her crate on command. Adoption fee is $400.
