You can manage the heat by adding more or less jalapeños and it stores wonderfully in an airtight container for several days in the fridge. Ingredients: 2 mangos, diced 1/2 red onion, diced 1/2 cup cilantro, chopped 4 Roma tomatoes, diced 2-4 jalapeños, seeds removed and diced Juice from 2 limes 1 tablespoon olive oil Salt and pepper to taste

Instructions:

Mix all ingredients in a large bowl and allow to marinate for 15 minutes.
