WHEN SUNSET TOWER HOTEL owner Je Klein opened San Vicente Bungalows in 2018, he took with him the legendary Dimitri Dimitrov, the Tower Bar’s maître d’ and man about town. Dimitrov’s replacement, Gabé Doppelt, had no restaurant experience, but she did have a suitably glamorous backstory—as former editor of Mademoiselle and lieutenant for Condé Nast legends Tina Brown and Anna Wintour. For the past four years, as Dimitrov charmed the ultra-A-list crowd at the private Bungalows, Doppelt finessed the egos of the Tower Bar’s still-star-studded clientele.
