This Caribbean destination beckons with a new hotel, an amazing drinks scene and endless pursuits on and under the water.
You could say that Grand Cayman is associated with two kinds of banks. One houses the offshore accounts that are the hallmark of the island’s position as a financial center; the other is found in its azure waters, including a spot where you can stand waist-deep and be surrounded by playful, graceful stingrays. This British Overseas Territory touts incredible snorkeling and scuba diving for visitors who want to venture under the sea, and ample opportunities for boating, SUPing and kayaking for those who prefer to stay on top of it. But first, cocktails, which go well beyond the expected poolside Pina Colada. Grand Cayman’s impressive drinks scene belies its tiny size, with hotel bars, swanky lounges and casual waterfront spots all coexisting with a common goal: to let you soak in your tropical surroundings with a well-made libation in hand.
It’s hard to believe, but until recently, you couldn’t sip a cocktail on a rooftop in Grand Cayman. That all changed with the opening of the Hotel Indigo, a 282room hotel on Seven Mile Beach, which houses the island’s first rooftop lounge and restaurant. Named for a species of orchid tree found in the Caribbean, Pom Pom shakes and stirs cocktails island-tinged along with light bites including ceviche and street tacos, with glorious views of the Caribbean Sea; it’s one of Cayman’s most enviable spots as the sun dips below the horizon.
If you can tear yourself away from your perch atop the building, other amenities at the Hotel Indigo include a spacious deck with an infinity pool and several dining concepts including California cuisine-meets Cayman ingredients at Catalina, rotating global fusion with an exhibition kitchen at Rasa and panAsian small plates and sushi at Milkberry, plus a poolside resto and coffee and juice bar.
If it’s award-winning crafty concoctions you crave, head next door to Library by the Sea. The drinks program at Grand Cayman’s first high-concept cocktail bar, located at the Kimpton Seafire Resort + Spa, is inspired by classic literature. The lounge was just named the 35th Best Bar in North America, and is actually situated in a working library, with shelves of titles for guests to pore over while sipping literary-themed sips.
A clarified milk cocktail with peach-infused Old Forester Bourbon and assam tea is an homage to Alice Walker’s The Color Purple, while the tangy Windmills Calling shakes lime leaf-infused gin with a homemade rhubarb and ginger cordial and lemon, topped with sparkling wine. Library by the Sea often hosts teams from other renowned global bars for popups; a recent one featured Washington, D.C.’s Allegory, (23rd on this year’s best bars list), which imported their drinks and prints representing the bar’s mural, both of which tell the story of Alice in Wonderland and Through the Looking Glass through the lens of American Civil Rights activist Ruby Bridges.
For toes-in-the-sand dining, the Seafire’s lively Coccoloba Bar & Grill serves up Mexican street food (think elote and chicken tinga) along with agave-based cocktails including a fragrant Margarita with lemongrass, grapefruit, cucumber and lime, and a Watermelon Spritz with gin, Aperol, lime and Prosecco. Nearby on Seven Mile Beach, Door No. 4 pays tribute to the classic age of tropical cocktails—with a modern twist. The refreshing Kudo Cooler shakes gin with cucumber sake, mango leaf cordial and lime, topped with soda and mango skin essence, and house-made garnishes include pickled local conch they caught themselves.
About a ten-minute drive away, waterfront enclave Camana Bay is Grand Cayman’s premier shopping destination, with designer boutiques, high-end skincare, home decor and dutyfree shopping, along with a smattering of restaurants and bars. The Porn Star Martini, a modern classic created in 2002, is having a moment on the island, and there’s no better version than at the dimly-lit lounge Next Door, where it’s topped with a silky coconut foam and arrives with a tiny coupe of bubbly. Also at Camana Bay, cigar and cocktail bar The Backroom offers a riff of the Daiquiri with overproof rum and green Chartreuse, as well as the brooding Formula 23 n ¾, with aged rum, Antica Formula, dark cacao, Averna and Angostura Bitters.
Long before every winery and distillery was aging their bottles under the sea, Cayman Spirits Co. was doing it with their signature spirit. Seven Fathoms Rum is named at the depth at which it’s matured, where ocean currents gently sway the barrels and increase the rum’s contact with the wood, adding flavor and complexity. Learn more about it during a tour and tasting, then grab a bottle or two—it’s not only a cool conversation piece, but a fabulous sipping spirit to boot.
Even though Grand Cayman is a cocktail and spirit lover’s dream, you’d be remiss not to experience the rest that the island has to offer outside of a bar or distillery. Rent a kayak (or don snorkel gear) after dark in Bioluminescent Bay, where microorganisms make the water glow. If you’ve ever dreamed of swimming among sea stars, the shallow waters of Starfish Point are dotted with them; yes, you can gently hold the bumpy creatures, just don’t take them out of the water.
Take a catamaran tour to the North South’s Stingray City, where dozens of rays gliding through the water are more than happy to cozy up and let you pet them. (The creatures started flocking to the area after local fishermen would clean their catch and dump the scraps in the water. In case you’re wondering, they resemble huge shiitake mushrooms, and feel like rubber covered in velvet.) Nearby, the newly redeveloped Rum Point Beach Club has an open-air bar where you can order a round of their signature Mudslides, a casual, al fresco restaurant and many beach activities ranging from corn hole to volleyball to Waverunner rentals. Or, simply grab an unoccupied hammock tied between palm trees on the beach and sway the day away.

From the moment we set sail on Celebrity Cruises’ stunning ship, Edge, our adventure through Alaska began with a blend of elegance and excitement. Starting in Seattle, we were treated to a spectacular departure with champagne and cocktails on the Magic Carpet, the ship’s iconic floating platform that extended over the ocean. The view of the city’s skyline receding into the distance, accompanied by the clinking glasses and laughter, set the perfect tone for our seven-night journey.
Our first full day at sea was a blend of relaxation and entertainment. We immersed ourselves in the onboard activities, starting with a visit to the Martini Bar of course, where the bar staff crafted exquisite espresso martinis, the perfect pick-me-up to ensure we made it through dinner and a show. The Edge’s entertainment offerings were top-notch; we were captivated by the live performances in the theater, each act more impressive than the last. Later, we tried our luck at the casino, where the sound of slot machines mingled with the cheers of fellow passengers, unfortunately the casino was the only one cheering for us as we did not walk away with any winnings. As evening fell, we dined in style at Tuscan, savoring gourmet southern Italian dishes along with a glass of Cabernet from their Elegance collection by Kendall Jackson which was specifically created for the cruise line.
Our first port of call was Ketchikan, a picturesque town famous for its rich history and vibrant culture. We strolled along the historic Creek Street, with its charming boardwalks and colorful buildings. The quaint shops and galleries were a delight, and we couldn’t resist picking up a few souvenirs. The real highlight was our hike along the trails surrounding the town, where we encountered the breathtaking beauty of the Tongass National Forest. The misty morning air, the scent of pine, and the distant sound of rushing water made for an unforgettable experience.
The next day began with a majestic cruise through Endicott Arm Fjord, where the scenery was nothing short of spectacular. The fjord, marking the southern edge of the Tracy Arm-Fords Terror Wilderness, offered a 30-mile stretch of untouched natural beauty. The towering granite mountains, lush valleys, and cascading waterfalls were stunning. We were in awe as we navigated through floating icebergs, their deep blue hues contrasting beautifully with the surrounding landscape.
Each morning, we started our day with specialty coffees at Café Al Bacio and today was no exception, the expertly crafted brews provided the perfect start to our adventures. We were able to take our lattes and secure front-row views of Dawes Glacier on one of the outside decks, standing over 600 feet tall, this was certainly a highlight. Although a bit far you could see the glacier’s calving displays and imagine their thunderous roars and massive chunks of ice breaking away. After this exhilarating morning, we docked in Juneau and got ready to see the sights. While in town we couldn’t resist visiting the Red Dog Saloon, where we toasted with the infamous Duck Fart shot, a quirky local tradition. Exploring Juneau’s historic streets, we enjoyed its unique blend of frontier charm and modern culture.
Skagway greeted us with its quaint, Gold Rush-era charm. We embarked on the White Pass Scenic Railway, a journey through the stunning landscapes of the White Pass and Yukon Route. The train ride, with its breathtaking views of steep cliffs, rushing rivers, and snow-capped peaks, was nothing short of exhilarating. Back in town, we explored the shops and historic sites, indulging in some local cuisine at a charming bar and grill. The day’s adventures left us with lasting memories of Skagway’s rugged beauty and rich history.
The next day was spent cruising the Inside Passage, a serene and beautiful stretch of coastal waters. Again we found a quiet spot on the top deck, where we could soak in the panoramic views of the fjords, forests, and snow-capped mountains. The calm, blue waters and the occasional sighting of seabirds (unfortunately no whales this time) made for a perfect day of relaxation and our visit to the spa later in the day was the perfect compliment.
While onboard we dined at Eden Restaurant, where the culinary experience was nothing short of extraordinary. The Reuben Raclette and the Filet Mignon and Mini Short Rib Wellington were highlights, each dish a masterpiece of flavors and presentation. The open kitchen, the innovative dishes, and the ambiance of the three-level dining space made it a dining experience we will never forget.
The final port was Victoria, where we spent the evening exploring the city’s beautiful streets and historic sites. The Inner Harbour’s scenic views, with its charming boats and colonial architecture, set a perfect backdrop for our leisurely strolls. We enjoyed a delightful dinner at a local restaurant, savoring the fresh, local seafood and the vibrant flavors of Victoria’s culinary scene. The city’s blend of British heritage and natural beauty left us enchanted, making our last evening on the cruise truly special.
One of the highlights of our time aboard Edge was the entertainment including the mesmerizing production of Colors of Life. This enchanting musical tells the story of Homer, a hero trapped in a monochromatic world who, with the help of a mysterious muse, discovers the vibrant spectrum of life's possibilities. The show captivated audiences with its gravity-defying acrobatics and breathtaking choreography, bringing Homer's journey to life in the most spectacular way. We were also blown away by the incredible talent of Marty Thomas, a New York-based renaissance man and Grammy-nominated recording artist. Thomas, who made his Broadway debut at age 11 in The Secret Garden and has starred in hits like Xanadu and Wicked, brought his powerful presence and exceptional vocal prowess to the stage. His sassy personality and showmanship was a fun way to enjoy the afternoon in the theater.
As we sailed back to Seattle, we reflected on the incredible journey we had experienced. From the luxurious amenities and world-class entertainment on the Edge to the aweinspiring natural wonders of Alaska, our cruise was a perfect blend of relaxation, adventure, and discovery. Each port offered its own unique charm, and every day brought new experiences that enriched our journey. The next morning, as we disembarked in Seattle, we knew we had just experienced a voyage of a lifetime, one that would be etched in our memories forever.

Begin with the chef's daily offering, which during our visit included a choice of Citrus Cured Salmon or a hearty White Bean Ragout. Second Course offered a choice between the Soup of the Day or a vibrant Roasted Beet Salad. For the main course selections a variety of exquisite options were featured, such as Grilled Tenderloin of Beef, Pan-Seared Chicken, Seasonal Risotto, Grandma’s Red Wine Braised Beef Short Ribs, Penne Primavera, the Fresh Catch of the Day, or Ricotta Cheese Gnocchi. To finish, dessert was the chef's daily creation, which during our ride was a delightful Seasonal Crème Brûlée.

One on One with Brittany
LATM: Brittany, it's wonderful to have you here. Let's kick things off with a fun question. What is your all-time favorite travel destination and why?
BC: So far, my favorite trip was to Puerto Vallarta where I stayed at Hotel Mousai. We actually filmed Vanderpump Rules there, and I loved it so much that I had to go back for my 30th birthday! We rented a small yacht and spent the day watching whales—it was absolutely magical.
LATM: That sounds amazing! What are your top three travel essentials that you never leave home without?
BC: I always pack my iPad, EarPods, and chargers because I love listening to music and watching shows while I get ready. I need sound 24/7! Skin care is another must, especially sunscreen for those hot tropical trips. And of course, a bottle of Casamigos Blanco—it’s not a vacation without a little tequila!
LATM: We completely agree! Can you share a travel mishap or funny story from your adventures?
BC: One time, I was at a Backstreet Boys concert in Las Vegas and I rolled my ankle while walking to the bathroom. It happened right in front of everyone because we were sitting at the bottom, so the whole crowd saw me fall on my face! The hotel medics had to come to my room to check on me, but luckily I just rolled my ankle in my heels. We laugh about it now!
LATM: Ouch! I’m glad you can look back and laugh. Speaking of travel, do you prefer traveling solo, with friends, or in a group?
BC: I love traveling with friends, having a few drinks, and watching movies together. We always start the movies at the exact same time

so they’re synced—it’s like our private theater with drinks and snacks! I also love traveling with my son, Cruz. He’s such a great traveler and it’s so sweet to see him cuddle on the plane. Experiencing new places through his eyes makes everything feel brand new to me too.
LATM: That sounds like a lot of fun! Who on the cast would you travel with and where would you go?
BC: Honestly, I’d travel with all of them! Kristen and I have had some epic trips together.
LATM: Speaking of the cast, what drew you to join The Valley?
BC: We just felt like the time was right to come back to reality TV. We were excited to introduce some of our other amazing friends and show our lives as parents. So much had changed since our Vanderpump Rules days.
LATM: What’s one thing about The Valley that fans would be surprised to learn?
BC: We were in talks about the show for at least two years, doing Zooms and picking the cast far in advance! Everyone on the show are real friends, and that’s what makes it so special, just like VPR.
LATM: Can you share any behind-the-scenes moments that were particularly memorable or funny?
BC: This was Cruz’s first time filming, and he was amazed by the cameras and all the buttons on the sound guy’s equipment! Also, my dog Kingsley loves to sit on the camera guys’ laps and sometimes licks them, which makes it hard not to laugh—it’s adorable!
LATM: That’s so cute! How do you and the cast members build chemistry off-screen?
BC: We’ve all been friends for years, so it comes naturally. Off-camera, we try to spend as much time together as we can and are very involved in each other’s lives.
LATM: Can you tease any exciting plot developments or twists coming up in season 2?
BC: Season 2 is going to be insane! We start filming in July, and I can already tell it will be even more dramatic than season 1. We all have so much going on in our lives that many people will relate to.
LATM: How do you handle the pressures and expectations that come with being on a popular TV show?
BC: It can be rough at times, but I try to stay positive and focus on the good parts. I hope by being open, I can help someone going through similar experiences, even if it’s just to laugh at the craziness for a bit.
LATM: What do you hope viewers take away from watching the show?
BC: I hope people can escape their own lives for a moment and have fun with us! Whether it’s separations, postpartum, pregnancy, marriages, or friendships, I hope we can help someone along the way. The show is so relatable, and that’s why it’s so successful.
LATM: Can you share any upcoming projects or plans you have outside of the show?
BC: I’m always staying busy with different brands and ideas! Our bar, Jax’s Studio City, is doing great, and our podcast “When Reality Hits” is out every Thursday wherever you listen to podcasts.
LATM: Does season 2 plan to incorporate any trips for the cast?
BC: In season 1, we went to Big Bear, which is beautiful, but I hope for season 2 we get to go somewhere with a beach! Mexico or the Bahamas would be nice! [laughs]

HYATTZILARA,CAPCANA
In the exclusive gated community of Cap Cana, the Hyatt Zilara Cap Cana is an adultsonly tropical escape perched on the oceanfront on Juanillo Beach. Several miles of sandy beaches stretch in both directions, two adjacent poolscapes deliver equal doses of either vibe-y energy or peaceful tranquility—whichever your penchant—and thoughtfullydesigned seating areas scattered throughout the property on several levels with fire pits and sumptuous sofas lend a convivial feel to a meet up over morning lattes or evening cocktails.
But perhaps the biggest draw of this 375-room all-inclusive resort is the elevated food and beverage program, starting with the Caribbean’s coolest and most unique culinary experience. The recently-launched Blind Butcher is billed as a sensory journey that’s inspired by a fable about a namesake legendary chef who journeyed through the Andes in search of indigenous ingredients to use in dishes to “move the heart and soul.” Hosts in safari garb stationed behind a faux butcher counter escort diners into the restaurant through an oversized retro refrigerator door; once inside, they’re greeted by a trapeze artist on a circular swing. Guests’ dining experience starts in a way before even being seated, as design elements are indeed a feast for the eyes, including lush foliage dangling from the ceiling and Victorian chandeliers with mini crimson shades; a gentle push on a bookshelf reveals a hidden door that takes you to an al fresco bar. While sampling artfully-presented dishes like sous vide pork arepas topped with shaved truffle and perched atop a bowl of popcorn, an over-the-top chilled seafood platter and Wagyu tenderloin that arrives atop a smoldering mini charcoal grill, guests are treated to roving performances from tango dancers and showgirls clad in feathers and sequins. It’s a worthy upcharge for such a transportative evening.
Other epicurean surprises at the Hyatt Zilara Cap Cana that are included for all guests include Journeys, an Indian concept modeled after a train station for The Maharajas’ Express, complete with a dining car. Chef Mukesh Chand turns out what might be the best Indian dishes at any all-inclusive resort, including fish butter masala and dal tadka. Brandos melds French and Tahitian fusion for fragrant signature plates like poisson cru, mahi mahi in vanilla sauce and sea bass confit with passion fruit.
Accommodations run the gamut from rooms with ocean views to swim-up suites with private balconies, each featuring one king or two queen beds, daily stocked minibar, 24hour in-suite dining and rainfall showers and spa tubs in select suites. It’s worth the splurge to upgrade to the niceties included with Club Level accommodations, including a separate pool with chairside service, dedicated check-in and check-out lounge, personalized concierge services, top shelf bar and even a restaurant specifically reserved for Club guests. Inspired by colonial sugar mills, Shutters Beachside serves up Peruvian-Caribbean cuisine, including an entire menu of ceviches and tiraditos, Peruvian skewers and seafood rice.
If you’re one of these travelers whose workout clothes always stay tucked away in your suitcase, you may actually be tempted to take out your sneakers and yoga pants after you peek at the impressive 14,000-square-foot multi-room fitness center with separate areas for cardio, strength training, TRX training, spinning and yoga and Pilates classes. But wellness here also encompasses treatments at Larimar Spa, a 27,000-square-foot space inspired by cenotes that features 14 treatment rooms, an outdoor lagoon and a hydrotherapy circuit.
If you’re so inclined, you can head over to the sister property, Hyatt Ziva Cap Cana, which is open to guests of all ages and basically mirrors the Hyatt Zilara. Reciprocity means you can dine at any of their restaurants or bars, lounge by the pool or zip down the waterslides.
But honestly, the vibe and layout of the Zilara is so inviting and so zen-inducing, that the most appealing after-dinner activity is to order a Carajillo or Espresso Martini nightcap from cafe/coffee cocktail bar Deja Brew and install yourself on one of their sofas next to a fire pit filled with shimmering stones.
