Mixology Masters, Presented by Porsche Irvine

The 5th Annual Mixology Masters at Porsche Irvine was an electrifying evening where top mixologists from all over Southern California came together to compete and showcase their most exciting concoctions. This one-of-a-kind mixology showdown, presented by Porsche Irvine, drew an elite crowd of beverage connoisseurs and community members for a spirited evening of creativity, camaraderie, and competition—all in support of Barks of Love Animal Rescue.

Guests were treated to an immersive experience as SoCal’s finest bartenders shook, stirred, and dashed their way to craft unique and tantalizing cocktails. Attendees had the honor of selecting the winners, making this event an interactive and engaging celebration of mixology at its finest.

The evening featured an array of gourmet bites, live entertainment, and a silent auction, along with interactive vendor experiences. A premier tasting lounge, presented by Peroni Nastro Azzurro, was a highlight of the night, featuring an exquisite culinary collaboration with Chef Kenneth Anderson. VIP guests enjoyed an exclusive lounge experience complete with wine tastings by Wiens Cellars, passed hors d’oeuvres, decadent desserts, and artisanal spreads curated by The Charcuterie Cart Co.

Throughout the main event space, guests indulged in small bites from some of the most beloved local culinary talents, including Good Choice Catering, Lola’s by MFK, The Plot, Elaine’s Bread Pudding, and Smoke Queen BBQ. Hydration was provided by Icelandic Water, while Luxe Flowers Design elevated the ambiance with stunning floral arrangements that adorned the venue.

Fable & Spirit, located in Newport Beach, offers a progressive dining experience that combines imaginative cuisine with a setting steeped in the rich mythology of Irish culture. Created by husband-and-wife team Darren and Jean Coyle, also known for their beloved Dublin 4 Gastropub and Wineworks for Everyone, this upscale restaurant elevates their culinary vision to new heights. With its warm, inviting atmosphere and innovative menu, the restaurant feels like a revelation—one we can’t believe we hadn’t discovered sooner.

Upon stepping inside, guests are immediately enveloped in an environment that is both captivating and sophisticated. The design pays homage to Irish lore with an artistic and modern twist, creating a space that feels magical yet approachable. Darren and his family welcomed us with open arms, making us feel like part of their extended family as they introduced us to what may now be our favorite dining spot in Orange County.

Every dish reflects a commitment to creativity, quality, and flavor, showcasing a menu that is both contemporary and deeply rooted in tradition. Among the standout items we sampled, the Guinness Brown Bread set the tone for the meal. Served with European butter, clover honey, and Jacobsen sea salt, this dish offered a perfect balance of rustic comfort and refined simplicity. The bread’s rich, malty flavor paired beautifully with the silky butter and subtle sweetness of the honey, making it an ideal start.

Next, the Beet Agnolotti took center stage with its vibrant presentation and nuanced flavors. Delicate pasta parcels filled with earthy beets were accompanied by chèvre espuma, toasted hazelnuts, oak barrel-aged balsamic, a hint of lemon, and crispy kale. This dish was a symphony of textures and tastes, where the tartness of the balsamic and the creamy chèvre perfectly complemented the sweet and savory notes of the beets.

Seafood lovers will love the Hawaiian Blue Prawns, a dish that exemplifies the restaurant's innovative approach. Sweet corn, pickled shallots, roasted bell pepper, and a bright citrus mojo enhanced the prawns’ natural sweetness, creating a plate that was as visually appealing as it was delicious. The combination of flavors offered a refreshing and vibrant take on a classic seafood dish.

The meal reached its pinnacle with the Smoked Short Rib, a decadent and hearty entrée that epitomized comfort food with a gourmet twist. Perched atop the scenic cliffs of Dana Point, Lantern’s Edge is the latest addition to the Laguna Cliffs Marriott Resort & Spa, offering an inspired take on coastal California cuisine. After months of development and anticipation, this signature restaurant officially opened its doors to the public on November 12, unveiling a vibrant dining experience that blends Mediterranean influences with the natural beauty of its surroundings. Overlooking the Lantern District, Dana Point Harbor, and the Pacific beyond, Lantern’s Edge is more than just a restaurant—it is a refined yet inviting space where land and sea come together.

At the helm of the kitchen is Chef Kristine Davis, a seasoned talent whose experience includes The Ritz-Carlton Laguna Niguel, Lido House, and Miami Beach EDITION. With a deep appreciation for the region’s rich coastal offerings, Chef Davis has crafted a menu that reinterprets classic Mediterranean and California flavors in innovative ways. Her approach reflects the essence of Dana Point’s history as a maritime hub, reimagining fresh, locally sourced ingredients into dishes that feel both contemporary and timeless.

This new outlet sets the tone for an immersive culinary experience right from the first course. The Hamachi Crudo presents a strikingly fresh and vibrant take on yellowtail tuna, expertly balanced with gin and ponzu, calpico chili foam, charcoal-kissed strawberries, radish, puffed rice, and shiso. The result is a dish that is at once delicate, zesty, and packed with umami. Equally impressive, the Grilled Maitake Mushrooms showcase a bold, earthy depth, complemented by smoked whipped feta, Fresno vinaigrette, salsify crisp, and bonito flakes—a brilliant fusion of smoky, creamy, and crispy textures.

The main courses continue to highlight the restaurant’s balance of refinement and comfort. The Wagyu Flat Iron is a standout, delivering the deep, buttery richness that only wagyu beef can offer, accompanied by snap peas, a peppery au poivre sauce, and delicate pea tendrils. COSTA COVO OSTERIA

Set within the newly redesigned L’Ermitage Beverly Hills, Costa Covo Osteria is a refined yet inviting destination for modern Italian cuisine. Handmade pasta takes center stage on the menu, with standout dishes like Grano Arso Orecchiette, where smoky, toasted wheat pasta is tossed in a fragrant garlic sauce with shishito peppers, bottarga, and pangrattato, creating a dish that is both bold and deeply comforting. The Tagliolini al Limone is an exercise in refinement, featuring delicate strands of pasta enriched with preserved lemon, Parmigiano Reggiano, and crowned with caviar, adding a luxurious finish.

The restaurant’s beverage program is equally impressive, designed to complement the coastal Italian flavors of the menu. Signature cocktails showcase inventive flavor profiles, such as the Air Mail, a vibrant and effervescent mix of lime juice, honey syrup, Plantation 3 Stars Rum, and a splash of champagne, delivering a perfect balance of citrus and sweetness. Beyond its culinary offerings, Costa Covo immerses guests in a setting inspired by Hollywood’s golden age, drawing influence from legendary art director Cedric Gibbons. The space is defined by hand-applied silver leaf ceilings, fluted pilasters, and bespoke bar chairs, seamlessly merging vintage glamour with contemporary sophistication. Adding to its artistic ambiance, a striking landscape photograph by Amir Zaki and a ceramic commission by Roger Herman introduce modern character, while rich persimmon velvet accents, lacquered surfaces, and onyx textures add warmth and depth. The furnishings, inspired by Jean-Michel Frank and Gio Ponti, paired with soft residential-style lighting, create an atmosphere that is both luxurious and inviting.

For those looking to dine under the stars, Costa Covo offers an intimate outdoor seating area surrounded by lush greenery, providing an alfresco option that feels effortlessly chic. The carefully curated wine list, featuring crisp whites, full-bodied reds, and sparkling selections, enhances the dining experience by perfectly complementing the bold yet balanced flavors of the menu.

A Taste of Coastal Italy in the Heart of Beverly Hills

Water, water everywhere. And at the Evian Spa in Evian-les-Bains, you can soak, sip, steam and more in this hydrating elixir of life.

Located in the Hôtel Royal Evian on the shores of Lac Leman—more commonly called Lake Geneva— the destination is the branded spa’s first location in Europe. That’s pretty surprising considering it’s situated in the namesake French town where the water flows. (You can tour the bottling plant just a few miles away, and use the spigots at the two Source Cachats in town to fill your Stanley with the mineral-rich water.) Opened in spring of 2024, it’s joined by locations in Tokyo, Seoul Hanoi and Doha, as well as Les Thermes D’evian in downtown Evianles-Bains, a medi-spa focused on thermal treatments and fitness

While the spa doesn’t actually fill its plunge pools and jacuzzis with Evian, you can sip all you like before and after treatments, which are inspired by the four processes of the water cycle and are designed to revitalize, refine and refresh. Celestial treatments focus on the birth of water from the clouds, rain and snow; Mineral ones pay homage to the natural filtration through rocks; Precious ones parallel the process of the water remaining underground for fifteen years to pick up its uniquely soft character; and Vitalizing treatments are a nod to where the water bursts forth from the earth at the source.

The 18,000-square-foot spa boasts six individual treatment rooms as well as two that are reserved for couples. Guests staying at the luxe Hôtel Royal can don their robe and slippers and take a dedicated elevator that delivers them directly to the spa’s front door. After check-in, they’re escorted to a waiting room, where a film projected on a domed screen on the ceiling shows the journey from snowfall to bottle.

The focal point of the facilities is a blue-tiled pool surrounded by patio lounge furniture, with a large painting that shows the nearby mountain peaks from which the snowmelt turns into the iconic mineral water. An indoor jacuzzi adjacent to the pool is joined by a larger, freeform one outside that’s set amid rocks and accessible via zero entry steps from inside; hydrotherapy jets target different muscle groups. Inside, you’ll also find a sauna, steam room, cold plunge pool and snow room— perfect to engage in contrast bathing said to improve circulation and reduce inflammation.

Among the treatments, the Visage Lumière facial stands out. It’s touted as an instant skin booster that can counter the dry skin you might have after a few days in the Alps. It starts with an exfoliating scrub to slough off dead skin cells, followed by a facial massage and a mask; the effect leaves the face hydrated, plump and glowing.

The popular Le Minéral is a less expected massage option that eschews the typical oil for talc. After a foot bath and exfoliation with a pumice stone, the therapist uses motions including kneading and stretching to soothe joint pain and soreness. While it’s certainly a unique treatment, those who prefer deep-tissue massages should know that it veers on the light-to-medium side, pressurewise. However, it certainly elicits an overall feel of calm and well-being.

You can continue that vibe in the relaxation room, where upholstered chaise lounge chairs are topped with cozy blankets with the brand’s eponymous logo. Nearby, a cart displays a selection of teas and post-treatment snacks. Or, pop open another bottle of the famous still or sparkling water and continue your rejuvenation from the inside out.

What was your inspiration behind the signature cocktail that helped you win the Mixology Masters this year?

The inspiration behind my signature cocktail came from my heritage. As a first generation Indian American, I’ve always been connected to the rich culture of India, from Bollywood films to the vibrant spices and flavors found in our cuisine. I wanted to create a cocktail that was fresh and unexpected while celebrating the essence of my culture.

Can you describe your creative process when crafting a new cocktail? What are the key factors you consider when designing a drink?

When crafting a new cocktail, I focus on two key elements, balance and aesthetics. First, I try to ensure that the flavors complement each other. For example, in my winning cocktail, I created a saffron cardamom syrup, which is quite sweet on its own. To balance that sweetness, I paired it with passionfruit liqueur, which brings a tartness to the drink. The result was a perfectly balanced sip — not too sweet, not too tart. I also pay close attention to presentation. A cocktail should be a full sensory experience, so I love incorporating playful or interactive garnishes that spark curiosity and elevate the drink’s visual appeal. A thoughtful garnish can turn a simple cocktail into something truly memorable.

How do you stay ahead of the trends in the constantly evolving world of mixology?

Staying ahead in the mixology world is about continuously learning and being open to new ideas. I keep a close eye on emerging trends through social media and industry events, but I also look outside the traditional cocktail scene for inspiration whether it’s from food, art, or my travels. At the same time, I think it’s important to stay true to your own style. While trends can inspire new creations, I focus on incorporating bold, authentic flavors that reflect my heritage and personal experiences. For me, it’s about finding a balance between what’s trending and what feels true to my vision as a mixologist.

What challenges did you face during the competition, and how did you overcome them?

One of the biggest challenges I faced during the competition was managing the unexpected. In a fast-paced environment, things don’t always go as planned whether it’s an ingredient running low or needing to adjust a recipe on the fly based on feedback. I overcame these challenges by staying adaptable and confident in my craft. I leaned into my creativity and trusted my instincts to deliver the perfect sip.

Who or what has been your biggest influence in shaping your mixology style and philosophy?

One of my biggest influences has been my heritage and the way my culture brings people together over food and drinks. Growing up in an Indian household, I learned that sharing meals and drinks is a way to celebrate and create lasting memories. That sense of community and connection is something I try to bring into every cocktail I create. Travel has also shaped my approach. Exploring different countries and tasting unique flavors inspired me to think outside the box and experiment with new ingredients and techniques. It’s pushed me to embrace creativity while always honoring my roots.

What advice would you give to aspiring bartenders or mixologists who are looking to break into the competitive cocktail scene?

Believe in yourself and your creativity. Mixology is an art form with endless possibilities, from unique flavor combinations to interactive garnishes and innovative techniques. If you have an authentic idea and you’re passionate about what you’re creating, you deserve a spot in the competition!

How do you see the role of sustainability and local ingredients in the future of cocktail creation?

There’s definitely a growing movement toward using fresh, local ingredients in cocktails, and I believe it’s going to play a huge role in the future of mixology. Every region has unique flavors and ingredients that can completely transform the cocktail experience. Using locally sourced ingredients not only supports sustainability but also allows us to create drinks that tell a story about a place or culture. Personally, I love experimenting with fresh, seasonal ingredients — they bring out the best in cocktails while reducing the need for artificial flavors. I think we’ll see more bartenders embracing the idea of creating cocktails with locally sourced ingredients that reflect their communities and environments.

Now that you’ve won the Mixology Masters title, what’s next for you? Are there any exciting projects or plans on the horizon?

I have a few exciting things in the works! My focus now is on making Indian flavors more accessible in the world of mixology. I’m currently developing a line of artisanal cocktail syrups that highlight Indian spices and ingredients, including the saffron cardamom syrup featured in my winning cocktail. These syrups will be available starting March 2025, and I’m beyond excited to provide a globally inspired option in the mixology industry.

Hotel Nell is housed in a building that used to be the Bolgiano Seed Company, which was founded in Baltimore in 1819 and opened in D.C. for 1931. For decades, the company sold high-quality seeds for vegetables, flowers and lawns—including for the National Mall. The hotel is named for the company’s matriarch, a strong businesswoman and mother who for decadesservedasthecompany’spresident.

The hotel’s 106 accommodations are designed in a minimalist,industrialchicstyle,withdeeptonesofblue, green or orange, hardwood floors, painted beams in the ceilingandminimalnaturallight,whichlendsatouchof broodinesstotheatmosphere.Roomsaredividedintosix different categories, including the Neil Loft Suite, which has a king bed, sofa seating, dining table for six, a fullsize refrigerator and wet bar and touches including live plants. There are three distinct food and beverage concepts. The rooftop Treehouse is a Tulum-inspired restaurant and bar filled with lush greenery, bamboo and indoor and outdoor seating and boasts perfect sunset views. Shareable plates include street corn-like ribs with cotija cheese and seasoning and ceviche tostadas with mango, avocado and red pepper. You’ll want to order all the tacos, including tender braised brisket slathered with chimichurri and cauliflower toasted with General Tso’s sauce and sesame seeds. Wash it all down with agave cocktails like the signature Margarita, a pomegranate and hibiscus Paloma or Mexican take on the Negroni with mezcal, Tequila and Cocchi Americano; be sure to savesomeroomforfluffypastelitosfilledwithguavacream.

Downstairs adjacent to the lobby, Bolgiano’s Pantry serves breakfast and lunch. Standouts include shakshuka with still-runny eggs, avocado toast with watermelon tomatoes and a Niçoise salad with confit tuna. There’s also a selection of smoothies, açai bowls andorganicfreshjuices.

This restaurant is also the site for the Hotel Nell’s recentlylaunched cooking school. Here, couples, groups or even singles can select from among 20 hands-on classes to learn how to prepare Indian curries, Spanish paella and French fare. Classes are spearheadedbychefandIraniannativeSayehTavangar,who’sbeen on the Food Network and can also teach budding chefs how to make Persian cuisine including koofteh, khoresh and tahdig, with ingredients sourced from Union Market. And you can sip a glass of bubbly or Spritz from the full bar while you’re prepping and chopping.

Next to launch at the hotel will be Singing Tiger, a subterranean noodle den with private karaoke rooms. Though there’s no onsite gym, the hotel has partnered with Work DC Fitness to offer guests access to high-intensity workouts; guests can also take yoga and relaxation classes at Treetop through Yoga With Deep + Nancy. In keeping with Union Market’s reputation as a neighborhood rich with street art, Hotel Nell has artwork throughout the hotel, including prints in rooms and a three-story mural that’s the focal pointoftheinteriorcourtyard.
