Mini Cake for Two
{ Cupcakes for Two } serves 2
1 Egg White 2 Tablespoons Sugar 2 Tablespoons Butter, Melted 1 Teaspoon Vanilla ¼ Cup Flour ¼ Heaping Teaspoon of Baking Powder Pinch of Salt 1 ½ Tablespoons Milk 1. Preheat oven to 350° 2. Place 2 cupcake liners in the center most spots of your muffin tin 3. In a medium bowl, whisk egg white and 2 Tbsp. sugar until combined 4. Stir in 2 Tbsp. melted butter and 1 tsp. of vanilla until mixed 5. Stir in ¼ cup flour, a heaping ¼ tsp. of baking powder and a pinch of salt until combined 6. Mix in 1 ½ Tbsp. milk 7. Divide batter equally between the 2 liners in your tin 8. Bake at 350° for 10-12 minutes or until slightly brown on edges 9. Let cool completely before frosting, See page 2 for the Mini Cake assembly

{ Mini Cake } serves 2
1. Make recipe described above 2. Once cupcakes are completely cool, cut the top off one to level out 3. Place leveled cupcake on serving tray crumb coat 4. Position second cupcake on top of first, making sure there is enough icing in the middle of the two to hold the top in place 5. Crumb coat second cupcake 6. Frost as desired. I used a star tip and made a ruffled pattern by starting at the bottom of the cakes and working my way back and fourth all the way to the top. Repeat this on all 4 sides 7. For the top pipe in continuing circles until covered 8. If desired, sprinkle sanding sugar on top and embellish with melted chocolate hearts (To make chocolate hearts just melt red chocolate down and put into a piping bag or ziploc bag. Pipe into heart shapes onto a piece of foil to harden.)
