Mermaids, Jellyfish & oncoming Traffic:
The Summer of 1984 B y

I
really don’t remember much about the 1984 World’s Fair in New Orleans … except for the enormous topless mermaids gracing the entranceway as I stood in line with my dad and eight more of my sweating family members, but for a 9-year-old boy, I guess that is all you really need. It was the first leg of our family road trip that summer; it started with my immediate family leaving Malvern, Ark., in the middle of the night to meet up with other family members in Pine Bluff. There were 10 of us: my evangelist father, my mother, my 6-year-old brother Brandon; my aunt and stick-in-the mud uncle (by marriage); my denim cut-off jean-shortswearing uncle and his 7-year-old daughter; my grandmother; and my mom’s youngest sister. We all crammed into two cars: a maroon station wagon with gold and white stripes and a light blue Ford LTD. Luckily, for our safety and wellbeing, short shorts, mesh tank tops and half-shirts were popular back then. What today would certainly be really bad fashion was actually a lifesaver in the sticky summer of New Orleans as we filed into the World’s Fair. The image of the mermaids stayed with me long after driving out of New Orleans. I remember little else until we stood on the beach in Biloxi, Mississippi. The disgustingly-brown Gulf of Mexico waves hardly lapped, and I think there was even a bit of a stench. Seeing as how not many people were swimming in the Gulf, the adults decided we’d take a boat ride out to Ship Island, an incredible island that was once an old fort during the 19th century. As our boat to Ship Island took us farther and farther from the Mississippi coast, we became surrounded by beautiful, pristine water, as if we were taking a ferry out of a fecal bath and landing in the Caribbean. the soft, white sand and jumped into the water. I did notice the adults were freaking out over these ugly, transparent landmines they called jellyfish that littered the luscious shoreline, but I had no time for such worries. Then, when we were nearly finished with our fabulous swimming excursion, my brother Brandon took a full-blown hit to the torso. You would have
thought it was the end of the world. Family members thrashed through the water. Adults screamed. Children cried. People gathered to witness the carnage. The horror! Oh, the horror! The absolute terror of what turned out to be a small child being grazed by a jellyfish. The Jellyfish Massacre took a close second to the Topless Mermaids, and we moved on eastward. Next stop was Mobile, Ala., and the USS Alabama Battleship. Now, I am a little fuzzy on the details of what exactly happened next. Maybe it was the distraction of the squelch from the CB or maybe it was the sheer splendor that is known as Mobile, but whatever it was, it distracted my father. We were separated from the other car in our caravan. My father knew we were supposed to go through a tunnel to get to the battleship, so we were all relieved when we saw the curve leading into the tunnel. Resting assured that we were on the right track, I noticed the brilliant lights of the tunnel that was about to engulf us in its illumination. Then, I noticed the headlights. As we were nearly through the curve leading into the tunnel — in the wrong direction — my uncle shouted, which jarred my father out of his trance, thus caused him to swerve into the correct lane and avoid a head-on collision. We sat in silence as my Uncle Denim’s swear — a word that sounds very similar to what we were on our way to see — echoed throughout the cavernous station wagon. Topless mermaids, a jellyfish massacre and now the tunnel of death ... what could possibly be next? It didn’t take long to find out. After the USS Alabama, we headed to our final destination, Pensacola, Florida. My Uncle Stick-in the-Mud was a bit of what most people consider to be a jerk. My dad had gone snorkeling on the other side of the sparkling white sand dunes with my Uncle Denim whilst my brother and I chased seagulls and picked up
shells. After I had not seen my dad for a while, I became alarmed that something bad might have happened. I panicked. I found Uncle Stick-in-the-Mud, who matter-of-factly told me that my dad was stung by an electric eel and had died. What? Surely I heard him wrong, so I asked again. “Yep, he was killed by an electric eel,” repeated Uncle Stick-in-the-Mud, as he laughed. Having witnessed the sheer devastation of a jellyfish sting just a few days
prior, I could only imagine stumbling upon the charred remains of my father. I ran around the beach with tears flowing from my face while the wind spackled the powdery sand onto my boney cheeks. Instead of concealing my emotions, the mixture of tears, sand and snot gave me the appearance of a tusked creature grieving for the loss of its father. I then saw my father emerge atop a sand dune, uncharred and very much alive. I ran to him and wrapped my frail, lanky frame

around his legs. I could not have been happier to see him. Slobber, sand and pure emotion stuck to the limbs of the man who had stood with me in the shadow of giant, topless mermaids, splashed through the Gulf to save my brother from certain jellyfish slaughter and nearly driven me to my death a few days earlier, but for me, it was a very magical moment in the summer of 1984. And though I didn’t know it then, it would be one of several I would never forget.

Fighting the Good Fight: Three Journeys in Weight Loss

t’s not an easy fight, but it’s a battle worth winning. According to the Centers for Disease Control and Prevention, 66 percent of adult Arkansans are overweight, with a body mass index, or BMI, of 25 or greater, and nearly 40 percent fall into the obese category, with a BMI of 30 or greater. Obesity is the second leading cause of preventable death in the United States and significantly increases a person’s risk for hypertension, type 2 diabetes, coronary heart disease, several cancers, stroke and osteoarthritis, to name a few. These Arkansans aren’t just fighting the weight-loss battle, they’re winning it. While each path taken may differ, each goal is the same: to live a healthier life.

irgil Miller’s weight-loss journey started with a Facebook post on March 3, 2011: “Got up at 4 this morning, started walking at 5. Did three miles. My goal is to walk five miles per day. I have to do this for my mind, my body and spirit and my heart. I need your encouragement, my Facebook family.” By the end of the day he had 44 “likes” and 30 comments. “I had literally hundreds of people following my posts every day,” the now 60-year-old Miller said. “I had people walk up to me and say, ‘I read your post. Keep up the good work.’” A former track runner for Arkansas Tech University, Miller was in great shape most of his life. It wasn’t until he saw a photo of himself in AY Magazine in 2010 that he knew he had a problem. “You don’t gain weight overnight,” he said. “It sort of creeps up on you over the years.” So Miller posted on Facebook and hit the road walking. And he walked … and walked. He walked for 268 days consecutively, regardless of the weather. For more than 200 days, he walked eight miles each morning. He walked all the way down to 198 pounds. “The hard part was continuing to walk every morning,” Miller said. “But then I got into a groove and I actually looked forward to it. Once the weight started coming off, it was pretty exciting.” Through it all, Miller posted on Facebook; he calls it his “walking partner.” He also began practicing portion control, claiming “I wanted to eat what I wanted to eat. I just ate less.” As he walked, he also gained a lot of attention. Word spread, and soon everyone was talking about Miller’s Facebook walking plan. He was interviewed for print and on the radio, featured by the Minority Health Commission and gave what his daughter calls “his testimony” at Ouachita Baptist University in Arkadelphia. But that was never his intention. “I wanted to be healthy, and I wanted to have less stress,” he said. “That’s really why I started. I’m not jogging anywhere. I’m not running anywhere. I’m just walking, and that’s what works for me. That’s my story. That’s my journey.”

Edamame Salad and Spinach Salad with Nectarines, Blueberries and Lime Balsamic Vinaigrette

hile weight loss is largely a function of “calories-in, calories-out,” maintaining good health is largely a function of the quality of those calories. Here are some ideas for getting “superfoods,” foods that contain quality, nutrient-dense calories, into your life in a tasty way. Each of the salads combines flavors and textures in a “the whole is greater than the sum of the parts” way. The spinach quesadillas and the black bean hummus make easy sitting-on-the-deck snacks with a glass of wine. Kids love the cinnamon blueberry toast, and because it is easy to prepare, they can help. Here’s to healthy, tasty eating.
Kale Avocado Salad yIELD: four to six servings
• 2 tablespoons shredded fresh basil leaves
to taste with freshly-ground pepper. Pour over the

• 1 bunch kale • 1 orange, peeled and sliced, juice reserved • 1 fennel bulb, fronds removed • 2 ripe avocados • 1 tablespoon Dijon mustard • 1 tablespoon freshly-squeezed lemon juice
Cook the edamame according to package directions, either on the stovetop or in the microwave. Drain and run under cold water to cool. Put the cooled edamame into a medium bowl, and add the remaining ingredients. Gently stir to combine. Serve chilled.

Wash and dry the kale; strip the leaves from the stems and shred into bite-sized pieces. Discard the stems or use for compost. Put the kale in a large bowl, and add the orange pieces and reserved juice. Slice the fennel and add to the kale orange mixture. Halve the first avocado and remove the pit. Cut each half with a checkerboard pattern, then scoop out and toss with the kale. Halve the second avocado, scoop into a separate bowl and mash gently. Add the mustard, lemon juice and oil, and combine until smooth. Taste and adjust seasonings, adding a pinch of salt and a bit of fresh black pepper, if desired. Add the avocado dressing to the kale, and toss to combine. Serve immediately.

• 1 12-ounce bag frozen edamame • ½ cup dried cranberries • ½ cup crumbled feta cheese

• 4 8-inch whole-wheat tortillas • ½ cup crumbled Feta cheese • ½ cup low-fat cottage cheese • 2 cups fresh baby spinach • 1 green onion, minced, optional • 1 teaspoon lemon juice

• Black pepper, to taste
• ¼ cup fresh mint leaves
• 1 teaspoon canola oil
• 1 nectarine, halved, pitted and thinly sliced • ½ cup fresh blueberries
