he opening day of Maine’s fishing season, April 1st, will arrive in just a few short weeks. To help both new and experienced anglers get their gear in order the Mollyockett Chapter of Trout Unlimited is bringing together all the essentials under one roof during the Western Maine Fly Fishing Expo on Saturday March 19th at the Bethel Inn Conference Center. There will be more than 35 exhibitors in the main conference room, a large selection of fishing related silent auction items, a kid’s fly tying bench, well known guest speakers — and in the evening, a special showing of the latest Fly Fishing Film Tour feature film. This year’s exhibitors include guides and outfitters, sporting camps in Maine, New Brunswick and Labrador, fishing equipment representatives, fly fishing shops, fly tiers, bamboo rod builders, artists, authors and several organizations associated with fly fishing. The guest speaking line up starts with Robert Romano — acclaimed author of fishing related novels, stories and essays — who will share his extensive knowledge of fishing in the Rangeley region. Award winning fly tier Selene Dumaine will demonstrate tying flies using Carrie Stevens’ viseless in-hand method. Bill Pierce, Executive Director of the Rangeley Outdoor Sporting Heritage Museum will present the history of fly fishing in the Rangeley region, and Robin Reeve, Managing Partner of Labrador’s Three Rivers Lodge will talk about fly fishing for Labrador’s legendary brook trout. As always, there will be a kid’s fly tying bench manned by experienced fly tiers throughout the day. Each child who ties a fly will be entered in a raffle for one of four free fly tying kits. Winners need not be present at the drawing. This event is the primary fund raiser for

Introduction to Fly Fishing Join us for an instructional series presented by the Mollyockett Chapter of Trout Unlimited. If you have ever been curious about or had an interest in learning to fly fish this series of instruction is a great way to learn about this fascinating sport. FF 101 Wednesday April 13th at the First Congregational Church, 17 East Main St, South Paris, Maine from 7:00p.m. until 9:00p.m. Topics include understanding fly tackle: rod, reel, line, leader and fly, biology of fish, and their natural foods, fly fishing tactics, and fly casting. Presenters include Master Maine Guides, expert fly fishermen and fly tiers, and certified fly casting instructors. FF 102 and 103 Saturday June 4th and Saturday June 25th from 6:00a.m. until noon at the Wild and Androscoggin Rivers confluence in Gilead, Maine. On the water instruction on fly casting, rigging the fly rod and gear, reading the water, fly selection, tactics and techniques for fishing with nymphs, wet flies, streamers, and dry flies. Instructors include Master Maine Guides, certified casting instructors, and experienced fly fishermen/ women. Participants should bring their own waders. Fly rods and flies will be available if you do not have your own. The Grand Opening for this benevolent new resource will take place later in the
spring. The Expo is open from 9:00a.m. till 4:00p.m. with a $5.00 entrance fee. At 7:00p.m. Carter Davidson of Gray Ghost Productions will present the 2016 Fly Fishing Film Tour’s feature film for an additional cost of $15.00 per person. Everyone eats. The foods that power us up and down mountains and across rivers and ponds — whether on skates or in a canoe — arrive in stores from sources around the world: a global marketplace. It was not always so. Not long ago most of the food people consumed was grown and produced within their community, or perhaps the next one over. In Bethel, we are lucky to enjoy the products of many small farms that practice food sovereignty: the idea that local growers, distributors and consumers can coalesce around the ecologically sound and sustainable production of healthy food. BL took a ride over to Moon Dance Farm in Andover to speak with Laurie Vogt Bailey about what she makes and how she makes it. 12

BL: What a beautiful spot! How did you get started on the path to creating this place? LVB: I started with horses, my first love. I began by offering lessons in Classical Dressage, a way of riding in harmony with, rather than against, the horse. Of course we had hens, and a vegetable garden that produced way more than we could eat. Many months of reading and research about how to create a sustainable farm eventually led me to a couple of great books: Goat Song, by Brad Kessler, and The Year of the Goat, by Margaret Hathaway. In 2011 we jumped in and added 3 Oberhasli Swiss dairy goats to our livestock collection. They love the climate here and have a quiet, inquisitive nature. BL: Of course. Your delicious selection of cheeses and yogurts are what caught our attention in the first place. How many goats does it take to make all these products? LVB: Well, with the encouragement and advice of our breeder we have grown the herd to 14 milking goats. They yield enough milk to produce several different artisanal cheeses. And cheesemaking is so fascinating. It’s the perfect mix of old-world food production and modern technique — a blend of art and chemistry. Camembert was our first cheese, which took a lot of work. First, the Camembert is cultured, then molded. Next, for the first two days, the cheeses are patted and turned over every six to twelve hours, paying constant attention to the ambient temperature and humidity. Over time we have added a Feta, a Chèvre, a Fromage Blanc and a Cajeta, which makes a fantastic caramel flavored dessert. BL: Do you have other products besides this full selection of cheeses? LVB: We always have fresh goat’s milk available and our farmhouse cottage cheese is drier than the average store bought cottage cheese, more like a crumble. For something a bit different, there is a hint of syrupy goodness in our Barely Maple Yogurt. Goat cheese is so rich and satisfying that it makes every one of our products full to bursting. Very few herbs or flavorings are added, allowing the subtle flavors of each of our offerings to shine through. I am proud of the care and forethought that goes into my work and stand behind everything I produce.

LVB: I have long been keenly in tune with the rhythm of the moon as she cycles through her seasons, and I believe that a harmonious relationship between horse and rider must flow as a dance. INGREDIENTS • 1 tablespoon all-purpose flour, plus more for dusting • 1 sheet frozen puff pastry, thawed (a 9 1/2- by 9-inch sheet from a 17.3-ounce package) • 1 cup mascarpone • 1 1/2 teaspoons kosher salt • 1 large egg, beaten • 1 lemon, zest finely grated (about 1 tablespoon) • 1 tablespoon chopped

fresh chives 1 tablespoon chopped fresh tarragon 1 pound pencil asparagus, woody bottoms trimmed off 1 tablespoon olive oil Freshly ground black pepper Lightly dressed greens, for serving
DIRECTIONS • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Lightly flour the work surface and roll out the puff pastry to a 9- by 12-inch even rectangle. Transfer to the prepared baking sheet. • Combine the mascarpone, 1 1/4 teaspoons of the salt, the flour, egg and lemon zest, and then fold in the chives and tarragon. Spread over the puff pastry, leaving a 3/4-inch border. Make small cuts around the border about 1 inch apart with the tip of a paring knife. • Toss the asparagus with the olive oil in a bowl. Lay half of the asparagus in a neat row across the surface of the tart so the tips meet the edge. Do the same in the opposite direction with the remaining asparagus. Season with the remaining 1/4 teaspoon salt and some pepper. Bake until the border of the tart is deep golden and puffed and the top is lightly spotted golden brown, about 25 minutes. Let cool for 5 to 10 minutes and serve. • Serve with lightly dressed greens.
Spring Pea Soup INGREDIENTS • 3 tablespoons extra-virgin olive oil • 1 clove garlic, lightly crushed • 1 1/2 cups sliced leek, white and pale green parts only • 3/4 cup diced celery • 2 1/4 cups chicken stock mixed with 2 1/4 cups water • 1/2 cup heavy cream • 4 1/2 cups shelled English peas (about 4 1/2 pounds unshelled) • 3 tablespoons coarsely chopped fresh Italian flat-leaf parsley • 1 teaspoon minced fresh thyme leaves • 1/8 teaspoon powdered ascorbic acid (1 tablet vitamin C crushed) • Sea salt, preferably gray salt • Freshly ground black pepper • Creme fraiche, basil oil, finely sliced fresh chives, or prosciutto bits, optional DIRECTIONS • Heat the olive oil in a large saucepan over moderate heat. Add the garlic and let it sizzle for about 1 minute, then add the sliced white and pale green parts of the leek and celery. Stir often while cooking until the vegetables soften, about 8 minutes. Do not let them color. Then pour the diluted stock into the saucepan and bring to a simmer.
• Add the cream to the vegetable mixture and bring to a simmer. Add the peas and return to a simmer. Adjust the heat to maintain a gentle simmer and cook until the peas are just tender, about 8 minutes. Add the parsley and thyme and simmer for 1 minute longer, then remove from the heat. Transfer in batches to a blender with the ascorbic acid and puree, adding more of the stock-water mixture as needed to thin the soup to a pleasing consistency. Pour soup into a bowl set in an ice bath and stir until cooled. (we want to cool it down as quickly as possible) Serve soup with optional garnishes. • Chef ’s Tip: Ascorbic acid helps keep the green color in pureed herbs and vegetables. If you have vitamin C tablets on hand, just crush one with a rolling pin and add it to the mixture in the blender. Note that you’ll need a blender to puree the soup. A food processor doesn’t make it smooth enough.

The History of Women & Skiing Ski Museum, Bethel Historical Society to celebrate Women’s History Month with collaborative program Two organizations which have collaborated on numerous occasions, the Bethel Historical Society and the Ski Museum of Maine, have once again teamed up this March to create a Woman’s History Month presentation entitled Sisters of Skade: Women in Maine Skiing 1870-2016. “Skade is the name of the ancient Norse goddess of hunting, mountains, winter and skiing,” explains Randy Bennett, executive director of the BHS. “We felt that a program that focused on women in Maine skiing would be interesting, new and fresh.” The Bethel Historical Society, as the foremost preservationist group in a region boasting two Alpine and three Nordic ski resorts, will play host to the Kingfield-based Ski Museum, which has created a number of public events in Bethel during the last couple of years in anticipation of opening an annex in the near future. The Ski Museum’s goals jibe with Bethel Historical’s plans to ramp up its public profile during their 50th anniversary year. “Maine women have always been in the vanguard of the sport and business of Alpine and Nordic skiing,” says Ski Museum President Wende Gray. “The Sisters of Skade lecture and follow-up discussion will be the foundation for the Ski Museum’s continued research and promotion of these Maine women’s accomplishments.” The first section of the talk, titled “Oyster Stew and Background Music,” will look at very ordinary women who made a major, positive impact on the sport via traditional women’s roles.
